Founded in 2021, Barter Outlet is Billingsgate Fish Market’s most trusted and exciting marketplace for guv’nor Pat Wingshan Wong’s wares. We talk to the Billingsgate family of fishmongers and seafood lovers to exchange stories and remember the good old days with an archive of objects collected over two years. Embracing the culture of barter/banter in the market, the Barter Outlet will open shop in the market’s own Piggy’s Cafe. I tried to capture their work gestures, how they put the foot on the shelf. When I did the barter, they were not interested, I guess maybe they didn’t like the way I drew them. This sketch became the first unsuccessful barter exchange. 5

There’s always so much going on in Fawsitt fish. They always sing, dance and perform together as a group. They love to make jokes with each other. They voted Tony and Steve the most humorous guys in the shop and nominated them to do a comedy for the show.

It had a long queue outside the market, So I sketched outside the market. However, it’s cold, and my fingers keep freezing. My security friend Evo came to chat with me, he kept checking my sketching process every now and then.

Simon, the owner of Bards Shellfish, continued feeding Sammy the seal, a female seal in the fish market, for twelve years. But he said he never fed her using the fish from his own shop, he used to buy from other people’s shops.

This is Paul, who is one of the owners of Fawsitt Fish. It’s his 50th birthday. They decorated their shop and wore birthday hats and Lee, the other owners of the shop, sang the K-Pop song ‘Gangnam Style’ to celebrate.

He insisted on having this pose, so I am trying my best to capture it. They rarely open the fridge, but because it was during Christmas and New Year Eve, they open the fridge to attract more customers.

Bobby used to be a boxer and a taxi driver. He enjoyed fighting in the ring, and he also enjoys working in the fish market. He was a porter in the old market with his number 4 porter badge, but he lost it. Now his new number is 500.

Jeff is a porter. I drew him when he was talking with Ben, a delivery man. He always wears red and green in the market, it is very iconic. He had to have knee surgery because of the hard labour at the market, now he has recovered and gone back to work. He was in the Silverback football team in the past.

I never met the same person in the shop, as the shops always have so many fishmongers. I met Dick, who wears a scarf around his neck, in the cafe only once. During the pandemic, he had paid leave to stay home till September. Finally I got the token from Stuart.

I tried to capture Scott and Greg in the drawing. Scott has been to Hong Kong, so we chatted in the Cafe. Greg is always quite quiet, but the fact is he likes to play jokes and ‘banter’ with others. When I talked with Fawsitt Fish, Greg would come and cover someone’s head with a plastic bag.

‘Ask me next time’ and ‘not now’ are the responses I always hear from Jeff. As Jeff’s father used to be a porter, he promised to give me the Bobbin, the porter head. His office has many medals and certificates. One of them was issued by the City of London Corporation to the whole fish market, to thank them for their help in regenerating the Docklands in 1982.

Steve’s father Eddie started the business in 1980. Steve has worked with his dad since he was 21 years old, now for thirty years. He thinks it is so different now compared with the old Billingsgate. He described in the past that there was no bottom line, people kept making fun of each other, so much fun and the banter never stopped. His best friend is John from Mick’s Eel.

Once I started my project, he kept asking if I could draw a portrait of him. He is studying an Economics degree in London and he works part time in the market, so everyday after work here he needs to resume school. After a few months, I drew this sketch for him, but some days later, I didn’t see him anymore. Some of his colleagues said he went back to India.

Ron works for many shops. Although he works in Polydor, he also helps deliver for SIMMO’S (Billingsgate) Ltd. and some other shops. He wears white work pants with a green band everyday. I bartered his knife, which he used for cutting paper boxes for decades.

Lee is one of the shop owners, Tony is one of his colleagues. When I asked them to give me a pose, they did this. I remember when they saw the drawing, they laughed so hard and said they can’t share this with their wives.

‘Would you like to have a part time job here?’ As I had promised the manager of the Fishnet, I gave them the drawing during Christmas as a gift. His wife invited me to take a parttime job there, we discussed the salary and schedule. But I finally did not take it and I felt a bit sorry.

He sometimes gets annoyed when seeing me, but last time he said I have to consider finding a job here, as everyone likes me, and he is also happy to see me every time.

Terry used to be a Chelsea team football player, and in the past owned a shop called Ovenell with his father in the fish market. The shop was acquired by West & Son and now he enjoys the day when he finishes work by checking the football match every morning in the cafe.

There is a super long queue outside the fish market. Martin waved his hand and tried to explain to the security to get me in. He kept reminding me next time to tell security that I am his friend to get in. After I entered the market, I talked with my security friend Evo, then Martin came over and worried the security wouldn’t let me in again.

Henry and Alan just finished their breakfast and were taking a rest from work. Henry put his feet on the chair and played on his phone, Alan looked at nothing. Alan worked in the fishmarket for 18 years, since he was 17 years old.

Even the shop name is ‘British’ Exotics. I had asked Mathew the reason why, but he didn’t answer very clearly, he said because this is their community. I finally bartered for their flag.

Ginger is Mark’s older brother. He has worked here for almost thirty years, and he is the master Eel cutter. Sitting next to him on the right-hand side is Simon, the popular big eel chef in the market. He worked in Mick’s Eel two year before.

They are a three-generation fish shop, Henry (grandson), Scott(son) and Bobby (father). Bobby isn’t in the shop everyday. Although he is already 70 years old, I can feel how he loves to work with his son and grandson. We can’t hear each other very well because of my accent. But he will ask me to send him an email, and try to find different ways to communicate.

Mark loves fashion. He wears a hat covered with poppy pins and several feathers, a baby lobster necklace and colourful socks everyday. When I asked to barter for his hat, he asked me for something more valuable, like a watch, as a guarantee. After I showed him Laurie’s porter badge, he trusted me. He kept saying ‘If you don’t bring it back, I will be very upset’.

Michael is the third generation of Jame Nash and Son. His grandfather started the shop before WWII. I like to visit their office after they finish work in the market hall, as they are always very welcome. They always closed after other shops. At the beginning, they bartered with me for their cutter, which they used for several years, but I rejected and asked for other things. After several weeks of bartering, I exchanged the boots from Azeem.

After three weeks of negotiation, I got the shark skeleton from Paul, the shop owner, who inherited the shop from his dad. The shop is named by him and his dad, John and Paul. I was quite surprised that they really considered giving me this. After the first day giving out the sketch, I keep convincing them for different reasons.

They worry the skeleton will be too fragile to deliver and if I won’t come back after I take it. To build up the mutual trust, I came everyday, sometimes just to chat, sometimes I asked for the skeleton again.

Inheriting the business from their father, Ross and Rob run the shop now. I am still waiting for the barter when they become more free. They refurbished the office recently and threw away many things, so now it has become quite difficult to find something to exchange.

All of them, including the boss, are from Pakistan. They display the Nigeria, Jamaica, and Ghana flag, but no flag for Pakistan. Shakil told me the flags are for attracting customers, ‘because I got those customers so he hung those flags’. Then I told him I will be his customer, and asked him to also put up a Hong Kong flag.

It’s not easy to ask John questions, but it becomes interesting to ask about him through his colleagues. I have asked Bradley about John (in front of John). He said he is a good man to work with. Later, I find out John’s daughter married him and Bradley is his son-in-law. So maybe that’s why.

Micky, the owner of the Mick Eel, passed away during the pandemic. I met Chris, John’s son-in-law in the shop. We discussed the barter object and he showed me the market pen, but I am not satisfied, so we are still in the bartering phase.

A.A. LYONS 24 February 2021 John & Paul & Adam & Paddy & Andre & Sean I bartered the tie with Adam in this shop. After a few weeks, I found they had another new tie with the shop logo, and said they couldn’t give me this. Andrea is working in the shop, he helps with the delivery. He was wearing an earpod to listen to energetic music to keep him working. He has some friends from the fish cutting factory, he’ll often visit after work.

John inherited his father’s business, and his son George also worked with him in the fish market. I asked John to barter the porter badge of his father, however he said his father passed away, he very much treasures it so he can’t give me this.

Big Greg is an influencer in the fishmarket. Everyday, he will put a short video of promoting the shops inside the market on Instagram, and it attracts many likes and followers. I bartered with him to do an advertisement for my project as an exchange. He always generously shared food with others and showed the photo when he used to be 300lbs in the cafe.

Matthew came from Hong Kong in the 1970s, he has been here more than 30 years. He came here because of the unpredictable political relationship between Hong Kong and China. Who would have thought this issue would last till now. He was here to help his friends for a few days.

Andy and Evan are brothers. The fridge in the shop has many magnet decorations on it. They said every time they travel they will get a magnet. Also some of the magnets are given by their customers.

Rafe, who wears a mask in the drawing, is the sales manager. He has worked in the fish market for 35 years. He started to work in the old Billingsgate Market as a stand boy when he was 18 years old, he said the old market is twice the size, so not all the shops could continue when it relocated.

There are three generations in the shop, Samuel (grandfather), Alan (son), and Samuel (grandson), mainly selling prawns and crab. I met Samuel’s young daughter – Gem – one day. She is also interested in drawing and sewing dolls. Her mom, Samuel’s wife, Susi, discussed the barter options. Finally I collected the driver’s licence issued by the City of London Corporation.

I met Conrad at the beginning as I always come late and saw him working alone in the shop. He is a fishmonger and also an illustrator. He opened an IG account @Billingsgate_calligraphy to document his calligraphy writing everyday. It was a bad day to meet Ian, as it was the day his colleague John passed away. For a week, every person held a minute’s silence to remember him. I can feel his sadness on that day.

Ali is always very supportive and I learn alot from here. Starting from the first day I was in the cafe in 2019, he asked me if I needed any help. Now, he generously supports the Barter Outlet exhibition venue. He always said he is not good at speaking English, but I saw him bantering with the fishmongers, making jokes with each other.

Tulin started the shop 22 years ago. He has three shops in the market, the only thing he has said to me was to try to make him thinner in the drawing, and showing me his belly in his clothes.

POP is a new shop in the market which opened two years ago. Agostinho came from Portugal, so inside they put the flag. Apart from fish, they sell many things imported from Portugal including the popular food- Portuguese tart or ‘nata’. Miran said his boss was off at 5am so that’s why it is difficult to meet him.

He worked for 12 years and started his job at 21 years old. He is a salesman and worked in Holmes before. Seahwk is a big company from America. They just arrived in Billingsgate market two years ago, but already have a large office next to the market. The owner, Keith, started the company 7 years ago.

Here is the first location I visited in 2019. I was finding a place to sketch and spotted this interesting drawer. John opened the drawer and took out an eel to release my curiosity. After that he showed me a picture of an artist who just finished an oil painting last week.

WEB DESIGNER: MAX KOHLER Max is a writer and software developer working in Mainz, Germany. He holds an MA in Visual Communication from the Royal College of Art. PHOTOGRAPHER: JIMMI HO Barter Outlet is an extension of the community-led project ‘Barter Archive’ constructed by artist Pat Wingshan Wong using her observational drawings in exchange for the memorable objects of the fishmongers. It celebrates the community bonding and collective memory of the Billingstate Fish Market while raising awareness of the social impact of rapid city development, as a response to the relocation plan of the market to Dagenham in the next five years. BARTER OUTLET GUV’NOR: PAT WINGSHAN WONG ‘I am not a fish lover, but this marginalised community – the fish market reminds me of my marginalised identity as a Hong Konger. Sometimes I feel quite tired of taking the 40 minute tube-ride at 5am to visit the market, but their laughs and stories move me to continue the project. Now, I will miss the days I don’t get to visit. Everyone will call my name when they pass by, it is the biggest achievement ever in the project.’ Wong is a community-based visual artist, the artist and project director of Barter Archive and Barter Outlet. She holds an MA in Visual Communication from the Royal College of Art. BARTER OUTLET MANAGER: WAN YI SANDRA LAM ‘The loud banter and cheerful laughter among the fishmongers are some of my unforgettable memories of visiting the Billingsgate Fish Market with Pat during an early morning in 2020. I was impressed by Pat’s persistence of going to the market almost every day and how her works incorporate the fishmongers’ voices and capture the market’s rich history and memorable moments. I am happy to be part of this big family!’ Lam is an independent curator who works with contemporary artists to develop socially engaged practice that addresses questions of identity and belonging. She holds an MFA in Curating from Goldsmiths, University of London. GRAPHIC DESIGN & ART DIRECTION: EUROPA ‘This must be the plaice’ Europa is a graphic design studio interested in the appearance of all forms of culture. Europa has a particular interest in architecture, urbanism and the role that graphic design can play in a place’s identity. Europa was founded in 2007 by Mia Frostner and Robert Sollis, after graduating from the Royal College of Art. Gareth Lindsay joined the studio in 2013.

‘I enjoy the community in the fish market, and the whole project provides an opportunity to have intimate encounters with fishmongers. The corporate becomes a catalyst for conversation and building up memories.’ Jimmi is a documentary photographer. He holds an MA in Photography from the Royal College of Art. CREATIVE TECHNOLOGIST: KACHI CHAN ‘Every time when I look at the 3D scan of the barter objects, I can taste every human story from the texture, dirt and incompleteness. I am always surprised by the objects we collected, it implies infinite trust from the community.’ Kachi is a media artist, now pursuing MA Interactive Architecture from the Bartlett, University College London. CONTENT EDITOR: VIVIEN CHAN ‘I love the sense of camaraderie that shines through in the interviews in the Barter Archive. Pat and the Billingsgate community share such a great friendship and humour, while honouring the legacies and memories of the market.’ Vivien is a freelance design historian, writer and editor researching space, food and consumption culture. She holds an MA in History of Design from the Royal College of Art.
