SLOVENES MAY BE SLAVS, BUT VISITORS TO SLOVENIA’S SHORT BUT SWEET 47KMLONG COAST WILL LIKELY BE STRUCK BY HOW ITALIAN THE CULTURE SEEMS. The very name Portorož, for instance, is a Slovenicised corruption of the Italian for Port of Roses.

S

can the menu in one of the waterfront restaurants on the Obala promenade, home of the Kempinski Palace Hotel, that runs along the waterfront, and you’ll encounter dishes that sound like their Italian counterparts with the final vowel excised: prosciutto is pršut, risotto rižota. Vino, at least, is vino, whatever the language, and many Slovenian wines are excellent. Look out in particular for those made by Edi Simčič and Ščurek. Not that any of this should be surprising give that the Italian city of Trieste lies less than 40km away by road, and Venice is

Kobarid for example, which was also known as Caporetto, site of the terrible World War I battle that Ernest Hemingway describes in his novel “A Farewell to Arms”. Between 1915 and 1991, when Slovenia gained independence, the cosmopolitan little town underwent eight changes of sovereignty as it was passed between Italy, Austro-Hungary and Yugoslavia, including periods of occupation by both Germany and the Allies. Hemingway remembered it as “a little white town with a campanile in a valley … a nice little place … the mountain hauling up beyond”. Its main attraction now is its restaurants, notably Hiša Franko.

Portorož, Slovenia’s principal resort, is best known for its beaches and of course the historically distinguished Palace Hotel, which opened in 1910 and Kempinski has operated since 2008. Besides the attractions of the coast – don’t miss the infinitely picturesque port of Piran a couple of kilometres northwest at the tip of the peninsula, birthplace of the Italian composer Giuseppe Tartini – there is more to explore inland.

D O N ’ T M I S S T H E I N F I N I T E LY PICTURESQUE PORT OF PIRAN. Take the breathtakingly beautiful valley of the Soča, a fast-flowing river the colour of oxidised copper that runs through a landscape of snow-capped mountains, deep gorges, meadows blue with cornflowers and fragrant pine woodland. Or the Triglav National Park, where there’s a fine hike to the so-called Devil’s Bridge, which spans the furious waters of the cauldronlike Tolminska Gorge, and on to a Stygian cave named after Dante, who found inspiration for his Inferno here. But perhaps the most memorable sight in western Slovenia is the Franja Partisan Hospital near Cerkno, not an immediately alluring prospect perhaps, but unmissable if you’re within driving distance.

(Allow 2:25 hours from Portorož.) This military hospital was built in 1943, deep in the heart of a sublime ravine, and functioned for 18 months, during that time it treated 522 soldiers, not only Yugoslavs, but Russians, Poles, French, Americans, even Italians and one Austrian. So remote and so secret was its location that the wounded would be blindfolded before being carried here up the rocky stream. (It’s a 15-minute walk up into the gorge, but there is a path now.) Yet housed in its 13 camouflaged wooden huts was a workshop that made prostheses, an x-ray machine and an operating theatre, powered by a hydroelectric generator. It’s a disquieting, profoundly moving place, a site of hellish suffering, courage and aweinspiring triumph over adversity. Yet its setting, like the landscape throughout this enchanting nation, is just heavenly.

Auf den Speisekarten der vielen Restaurants an der Obala-Promenade, wo sich auch das Kempinski Palace Hotel befindet, stehen Gerichte, deren Namen wie italienische Spezialitäten klingen, bei denen der letzte Vokal weggelassen wurde: Prosciutto heißt pršut, Risotto ist rižota. Vino bleibt in beiden Sprachen vino, und auch die slowenischen Weine schmecken ausgezeichnet, besonders die von Edi Simčič und Ščurek. Eigentlich wenig überraschend, wenn man bedenkt, dass Triest nur 40 Kilometer entfernt ist und Venedig direkt auf der anderen Seite der Adria liegt. Viele Städte des Landes haben sowohl slowenische als auch italienische Namen.

loweniens Geschichte mag von den Slawen geprägt sein, aber wenn man die nur 47 Kilometer lange, sehr reizvolle Küste des Landes bereist, fühlt man sich eher nach Italien versetzt. Der italienische Einfluss ist beispielsweise im Namen des Küstenortes Portorož präsent, der die slowenische Adaptierung des italienischen Wortes für „Rosenhafen“ ist.


Neben der wunderschönen Küste ist besonders der malerische Hafenort Piran, Geburtsort des italienischen Komponisten Giuseppe Tartini an der Nordwestspitze der Halbinsel einen Besuch wert. Aber auch im Binnenland gibt es viel zu entdecken. Von atemberaubender Schönheit ist das Tal des Soča, ein schnell fließender Fluss, der die Farbe von oxidiertem Kupfer hat und sich durch eine Landschaft mit schneebedeckten Berggipfeln, tiefen Schluchten, Wiesen mit dunkelblauen Kornblumen und duftenden Kiefernwäldern seinen Weg bahnt. Empfehlenswert ist auch eine Wanderung im Nationalpark Triglav zur sogenannten Teufelsbrücke, die über das Wildwasser der Tolminer Klamm führt, oder zu der Höhle, die nach dem italienischen Dichter Dante benannt ist, der dort angeblich zu seinem „Inferno“ inspiriert wurde. Eine beeindruckende, wenn vielleicht auch auf den ersten Blick nicht besonders verlockende Sehenswürdigkeit des westlichen Sloweniens ist das Partisanenlazarett Franja in der Nähe von Cerkno. Das 1943 erbaute Militärhospital liegt etwa

Portorož, der bedeutendste Urlaubsort Sloweniens, ist berühmt für seine Strände und natürlich für das historisch bedeutende Palace Hotel, das 1910 eröffnet wurde und seit 2008 zu Kempinski gehört.

zweieinhalb Stunden von Portorož entfernt, tief in einer grandiosen Schlucht. In den 18 Monaten seines Betriebs wurden hier 522 jugoslawische, russische, polnische, französische, amerikanische und sogar italienische und österreichische Soldaten versorgt. Der Standort war so geheim, dass den Verwundeten auf dem Transport auf dem felsigen Fluss die Augen verbunden wurden (der heute angelegte Pfad durch die Schlucht bringt Besucher in etwa 15 Minuten ans Ziel). Unter den dreizehn getarnten Holzbaracken war eine Werkstatt für Prothesen, außerdem gab es ein Röntgengerät und ein Theater, die durch ein Wasserkraftwerk betrieben wurden. Dieser Ort des Leids wirkt beunruhigend und verstörend auf den Besucher und ist doch ein Beispiel dafür, wie Mut über alle Widrigkeiten triumphieren kann. Die Lage des Lazaretts ist jedoch, wie die ganze Natur dieses sympathischen Landes, einfach nur unbeschreiblich schön.

Haute Couture made of paper? It’s not only possible, São Paulo-based designer, Jum Nakao even makes it seem logical. With his ″A Costura do Invisivel” (Sewing the Invisible) collection, the Japanese-born artist takes us back to the enchanting fashion forms of the late 19th century. But while the style might be a blast from the past, the laser and embossing technology used to create it was state-of-the-art. Aided by a team of 150 assistants, it took Nakao around 700 hours to create the voluminous dresses, majestic gowns and elaborate corsages.

Based in São Paulo, Jum Nakao is a fashion designer and the creative director of the Instituto Brasil de Arte y Moda (Brasilian Institute of Art and Fashion).

Sogar hervorragend, zeigt Designer Jum Nakao aus São Paulo: Er entwarf mit seiner Kollektion „A Costura do Invisível“ („Das Unsichtbare nähen“) zauberhafte Designs, die an die Mode des späten 19. Jahrhunderts erinnern. Aus weißen Blättern wurden etwa durch Prägedruck reliefartige Muster, durch LaserschnittTechnik filigrane Spitze. Nach rund 700 Stunden Handarbeit durch 150 Helfer entstanden voluminöse Kleider, majestätische Umhänge und aufwendige Corsagen.

Jum Nakao is one of Brazil’s most significant fashion designers. Based in São Paulo, he is the creative director of the Brazilian Institute of Art and Fashion. Beyond the elaborate production process (see above) and the resulting fashion, the show itself was a sensation: to the astonishment of the crowd attending the São Paulo Fashion Week, the models ripped the paper garments from their bodies after their catwalks. Almost half a year of work was literally torn to shreds in a matter of seconds.

Seine Papierkollektion war nicht nur wegen der anspruchsvollen Produktion (s. o.) eine Sensation: Zum Entsetzen der Zuschauer rissen sich die Models nach dem Walk auf der São Paulo Fashion Week die Kleider vom Leib. BERNARD ANTONY TURNS TURNED MILK INTO SOMETHING WONDERFUL. HIS PRODUCTS ARE IN DEMAND BY STAR CHEFS AND DISCERNING FANS AROUND THE WORLD. WE CAUGHT UP WITH HIM TO TALK ABOUT SAVOURY AROMAS, FLAVOURY TASTES AND THE RENAISSANCE OF CHEESE CULTURE.

T

here’s a good chance that many of those reading this have already been served at least one of his masterpieces in a top restaurant: in the connoisseur world, Bernard Antony is considered the “Cheese Pope”. Star chefs, royal families and upmarket delicatessens around the world order cheeses from him. When time is of the essence, some even send helicopters to pick up their orders directly from his company headquarter in France. Located between Basel and Montbéliard in the Sundgau city of Vieux Ferrette, the cellar complex established by Maître Bernard Antony in 1983 and now co-run by his son,

Jean-François, is currently home to over 100 types of cheese. Maître Antony, what makes a great cheese great? Three things are important: terroir, production and the aging process. Terroir is the technical term for the cheese’s origin and by that I mean more than the place it’s from. I’m talking about the breed of cow or sheep or goat the milk came from. About the field they grazed in, the herbs and plants they ate and even the season during which they were milked. As for the production, it is of the utmost importance to us that our products remain non-industrial in nature. We procure our cheese from small dairies and farms that we screen personally. All of them have agreed to meet our strict requirements including


a maximum of 250 animals that are grass fed in summer and hay fed in winter. The third important thing is the aging process. This takes place in our cellars and is a science in itself. What actually takes place in the cheese cellars? I cannot and will not divulge exactly what we do down there because it’s a company secret! What I can tell you is that we have around 100 types of cheese in the cellars that have undergone our various refinement processes. This can be treatments with stock and brine or with wine and spirits. The way the blocks are cared for and turned depends on the type of cheese. The end result is a very individual cheese. In fact, every block or wheel is unique. Every cheese tells its own story. Cheese can tell stories? What does this piece of Tomme d’Elgines have to say for itself? This Tomme d’Elgines has a fine aroma that hints of goats milk which of course affects its taste accordingly. The texture can be soft or firm and varies depending on the season and ripeness. I can also tell you that the small village in the Auvergne from which the cheese originated, is practically a ghost town now. The Maury family that made the cheese are the only people that live there. Admittedly, that’s something no-one can know just by taste, but you understand that an extraordinary product such as this really does have a story to tell. When everything functions optimally – and I maintain that is the case with every one of our cheeses – then cheese can be art. Isn’t it a shame to eat it if it’s art? Well, let’s say it is the result of artistic craftsmanship. You know, Karl Lagerfeld once said to me, “Tu fais la Haute Couture comme moi”, “You make Haute Couture like I do.” Pretty flattering, don’t you think? You mentioned Karl Lagerfeld and we know he’s but one of the many famous people you count amongst your clients. Does one have to apply to become a customer? Not at all. Anyone who comes here during our opening hours can buy cheese. It is

true that I have turned customers away, the KaDeWe department store in Berlin for example. That had nothing to do with snobbiness, rather the fact that I couldn’t guarantee the maturity and quality I insist upon. You supply the restaurants of Alain Ducasse, royal families and multiple star venues in Paris and Dubai. How did a farm boy make it to the top of the cheese world? I have to admit that my fate still amazes me too. These days, we deliver Tokyo with 100 kilos of cheese every week, I visit gourmet festivals all over the world and I create buffets for aristocrats. A world completely different to the one of my youth. My life began as the son of a farmer, whose first job was a gofer in a factory. Later I worked as a door-to-door salesman, selling bras, shoes, “La vache qui rit” cheese and cheap wine. In 1978, a chance meeting with François Schmittlin from the “Guilde des Fromages” led to an audience with the “King of Cheese”: Pierre Androuet. He convinced me to become a cheese affineur before training me personally in Paris. While the cheese selection at the end of a French dinner is seen by many as its culinary crowning, is the traditional cheese culture suffering in the age of calorie counting?

in huge amounts, but they do appreciate quality. Starter, main course, cheese, dessert – normal in France but the exception in Germany for example, because it takes too long and is rather hard on the digestion. Is the combination of cheese and salad an alternative? A catastrophe! The acidity of the salad dressing destroys the taste of the cheese. On top of that, the combination is, how should I put this, rather problematic for the digestive system. And what about spreads such as marmalades, chutneys or fig mustard with cheese? Terrible! These things can only be added to a bland, mass-produced cheese, in order to mask its taste as it passes over the tongue. Marmalades and the like are killers of good cheese because their taste is so intense that it destroys the aroma of the cheese it’s supposed to enhance. Is the same true of oil? A lot of people like to dip their cheese in olive oil. While everyone is free to do as they please, I find the practice unnecessary. We provide people with salty butter for the Breton jacket potatoes and

Good question. While it’s true that we’ve seen an increasing trend for guests to forgo the cheese at the end of a meal, I have a feeling that cheese culture is about to make a comeback – and not just in France. A lot of young people have discovered cheese and are buying it. Not

farmhouse bread during our cheese tastings. Purists leave the butter and eat the cheese with bread alone, preferring the untainted taste. A great cheese should be respected and enjoyed for its own sake.

er in einem Spitzenrestaurant einen Käseteller bestellt, bekommt in vielen Fällen eines seiner Meisterstücke serviert: Bernard Antony gilt in der Welt der Feinschmecker als „Käsepapst“. Sterneköche, Adelshäuser und Feinkosthändler von New York über Baiersbronn bis Tokio bestellen bei Antony exquisiten Käse aus Frankreich, manche lassen die Ware mit dem Hubschrauber abholen, wenn es schnell gehen muss. In seinem „Käs-Kaller“ im Sundgauer Städtchen Vieux-Ferrette zwischen Basel und Belfort reifen mehr als 100 Käsesorten, die vom 69 Jahre alten Maître fromager und seinem Sohn Jean-François Antony veredelt wurden. Ein Gespräch mit dem französischen Käse-Connaisseur über Genuss und Geschmacksfundamentalismus. Maître Antony, was macht einen sehr guten Käse aus? Drei Dinge sind wichtig: Terroir, Produktion, Reifeprozess. Terroir ist der Fachbegriff für die Herkunft des Käses, und damit ist nicht nur der Ort gemeint. Es kommt auf die Rasse der Kühe, der Schafe oder der Ziegen an, auf die Wiesen, auf denen sie grasen, auf die Pflanzen, die sie fressen, auf die Jahreszeit, in der sie gemolken werden. Bei der Herstellung lege ich vor allem Wert darauf, dass es kein Industrieprodukt ist. Wir beziehen den Käse nur von kleinen Molkereien und Bau-


ernhöfen, die wir persönlich kennen. Die Bauern müssen sich auf unsere vorgegebenen Produktionsrichtlinien einlassen, dürfen nicht mehr als 250 Tiere halten und im Sommer müssen sie mit Gras und im Winter mit Heu füttern. Und dazu kommt dann noch der Reifeprozess bei uns in den Käsekellern, das ist eine Wissenschaft für sich. Was passiert da genau im Käsekeller? Ganz genau kann und will ich Ihnen das nicht sagen, Betriebsgeheimnis. Aber wir haben rund 100 Käsesorten in den Kellern liegen, die wir veredeln. Dazu gehört die Behandlung mit Suden und Laken, mit Wein und Schnaps, je nach Sorte. Die Laibe werden nach bestimmten Systemen gepflegt und regelmäßig gewendet. Am Schluss kommt ein sehr individueller Käse heraus, jeder Laib ist ein Unikum. Jeder Käse erzählt seine Geschichte. Aha, Käse kann Geschichten erzählen? Was erzählt zum Beispiel dieses Stück Tomme d’Elgines? Dieser Tomme d’Elgines duftet fein und leicht nach Ziegenmilch, und so schmeckt er auch. Die Textur variiert je nach Saison und Reifegrad, sie kann weich oder fest sein. Ich kann Ihnen noch erzählen, dass

Jeder, der will, kann zu unseren Öffnungszeiten herkommen und Käse kaufen. Aber ich habe schon mal Kunden abgelehnt, das stimmt, das Berliner Kaufhaus KaDeWe zum Beispiel. Das hat aber nichts mit Snobismus zu tun, sondern damit, dass ich in diesem Fall Reifegrad und Qualität nicht durchgehend garantieren könnte. Sie liefern an die Restaurants von Alain Ducasse, an Sternelokale in Paris und Dubai, an die Habsburger. Wie kam es, dass Sie sich vom Bauernjungen an die Käse-Weltspitze hochgearbeitet haben? Das erstaunt mich selbst immer wieder. Wir liefern heute 100 Kilo Käse pro Woche nach Tokio, ich besuche Gourmet-Festivals in der ganzen Welt, ich mache Buffets für Adelige, und wenn ich mich an meine Kind-

der kleine Ort in der Auvergne, aus dem der Käse kommt, fast ausgestorben ist, außer der Familie Maury, die den Käse macht, gibt es keine Einwohner mehr. Gut, das schmeckt man nicht. Aber Sie sehen, dass ein außergewöhnliches Produkt tatsächlich eine Geschichte erzählen kann. Wenn das optimal funktioniert, und ich behaupte, das ist bei jedem unserer Käse so, dann kann Käse Kunst sein. Käse ist Kunst? Na ja, Kunst ist vielleicht ein bisschen über-

heit erinnere, war das eine völlig andere Welt. Ich war ja anfangs nur ein Elsässer Bauernsohn, der sein Geld als Handlanger in einer Fabrik verdient hat. Später arbeitete ich als Händler, der von Haus zu Haus zog, ich verkaufte Büstenhalter, Schuhe, „La vache qui rit“ und billigen Wein. 1978 lernte ich zufällig François Schmittlin von der „Guilde des Fromagers“ kennen, der mir den „König der Käser“ vorstellte:

Pierre Androuet. Der überzeugte mich, Käse-Affineur zu werden, und bildete mich persönlich in Paris aus. In der klassischen französischen Küche ist die Käseauswahl am Schluss eines Menüs die kulinarische Krönung. Aber ist das noch zeitgemäß? Man hat den Eindruck, auch die Spitzengastronomie wird immer gesundheits- und kalorienbewusster. Leidet darunter nicht die traditionelle Käsekultur? Da ist was dran. Vielen Gästen ist der Käse nach dem Menü tatsächlich zu viel. Aber ich habe den Eindruck, dass die Käsekultur gerade wieder aufblüht, nicht nur in Frankreich. Viele junge Leute kaufen wieder Käse, zwar keine großen Mengen, aber dafür legen sie Wert auf Qualität. Vorspeise, Hauptspeise, Käse, Dessert – das ist in Frankreich normal, aber in Deutschland im Alltag eher unüblich, weil es zu lange dauert und zu schwer im Magen liegt. Ist die Kombination Käse und Salat eine Alternative? Eine Katastrophe! Das geht meiner Meinung nach gar nicht. Die Säure in der Salatsoße macht jeden Käsegeschmack kaputt. Noch dazu ist diese Kombination verdauungstechnisch, wie soll ich sagen, ziemlich problematisch.

Und was halten Sie von Marmeladen, Chutneys und Feigensenf zum Käse? Schrecklich! So etwas würde ich nur nehmen, wenn ich einen geschmacklosen Industriekäse habe, um ihn irgendwie runterzukriegen. Für jeden guten Käse sind solche Marmeladen und andere Soßen der Killer, weil ihr Geschmack viel zu stark ist und das Aroma des Käses tötet. Gilt das auch für Öle? Manche Leute tunken den Käse ja gerne in Olivenöl. Das kann man natürlich machen, ist meiner Meinung nach aber nicht nötig. Wir reichen bei Käseverkostungen salzige Butter zu bretonischen Pellkartoffeln und Bauernbrot, aber Puristen verzichten sogar auf die Butter und essen Brot und Käse lieber unverfälscht. Ein großer Käse sollte aber respektiert und um seiner selbst willen verkostet werden.

espite the fact German porcelain has earned itself a worldwide reputation for quality and craftsmanship in the centuries since then, it would seem China has had the last laugh after all. With the market flooded with inexpensive, mass produced dinnerware, many of Germany’s traditional manufacturers have closed up shop for good – a fate the Königliche Porzellan-Manufaktur (KMP) in Berlin looked certain to share. Despite the warnings of business consultants concerned he was letting sentiment cloud his better judgement, a private banker and entrepreneur named Jörg Woltmann stepped in and took over KPM in the beginning of 2006, not just saving it from bankruptcy, but saving one of Berlin’s last luxury brands in the process.
