About Baillie Lodges

Baillie Lodges is a growing portfolio of luxury lodges renowned for setting benchmarks in premium experiential travel. Set in exclusive locations of unique natural or cultural significance, the boutique properties appeal to the discerning global traveller seeking a remarkable experience.

The Australia-based collection was founded in 2003 by James and Hayley Baillie and includes Capella Lodge on Lord Howe Island, flagship property Southern Ocean Lodge on Kangaroo Island, Longitude 131° at Uluru-Kata Tjuta, Silky Oaks Lodge at Queensland’s Daintree Rainforest and The Louise in the Barossa Valley. Baillie Lodges’ Australian properties are honoured as members of Luxury Lodges of Australia.

In 2019, an affiliate of KSL Capital Partners acquired Baillie Lodges with the aim to further expand the unique collection of luxury lodges. The addition of Clayoquot Wilderness Lodge on Canada’s Vancouver Island and New Zealand’s Huka Lodge marked the collection’s foray into international waters. Most recently, Baillie Lodges acquired a majority share in the Tierra Hotels trio of luxury lodges each in remarkable natural locations in Chilé, South America.

Our location

The Louise is set in the heart of the Barossa Valley, on Seppeltsfield Road with easy proximity to many of the highlights of the Barossa. The Barossa is a picturesque patchwork made up of gently undulating hills with rolling vineyards, farms, pastoral land and forests. Golden sunlight falls across the landscape, creating a relaxed atmosphere that pairs perfectly with long alfresco lunches enjoyed with wine.

Our climate

Situated between the state’s coastal temperature zones, the Barossa Valley is regarded as a warm climate region. Hot, dry summers see daytime temperatures range from 26-29°C while the autumnal months endure a milder climate, with pleasant sunny days and cool evenings. Winter months bring chilly days ranging from 12-16°C, perfect for sitting by the fire and enjoying a glass of the regions wine.

Travel for good

The Baillie Lodges environmental commitment is best expressed by each lodge’s interaction with its local natural and cultural surroundings. A dynamic environmental management plan is at the heart of lodge operations and ultimately enhances each guest’s experience of the destination. Working with us

Our place

Nestled among the Barossa Valley’s gently rolling hills, The Louise offers guests a stylish escape complete with 15 private villa-style suites, world-class dining at Appellation and more relaxed drinks and dining at Contour. The guest experience is carefully tailored and a personal concierge is on-hand to deliver access to a backstage pass to the best of the Barossa.

Our team

To be a team member at The Louise means becoming part of an established and welcoming food and wine community. The opportunity to meet farmers, winemakers, and other hospitality professionals brings a deeper understanding of the industry that we love. Through established regional connections, learning opportunities abound at The Louise, and staff regularly find themselves with behind-the-curtain access to producers that they’ve previously admired from afar. The most common roles are chefs, food and beverage attendants and guest services. Whilst position descriptions are provided to individuals, it is a team effort that makes the lodge operate effectively – this spirit of cooperation also allows our team members the opportunity to develop new skills in areas they have not previously worked in and across different departments.

Our culture

Attention to detail is evident throughout the Baillie Lodges guest experience, from operational processes through to architectural and interior design and the broader product offering, and is core to the overarching culture and values. Detailed process systems ensure Baillie Lodges delivers comprehensive, on-the-job training for the team. Working at a Baillie Lodges property offers a chance to work as part of a collegiate team, where departments work together to deliver an exceptional and personal guest experience and learning across departments is encouraged.

Our guests

The lodge’s target market is predominantly discerning guests seeking an exclusive, premium experience of South Australia. The breakdown changes according to more macro economic and tourism trends, but around 70% of our guests are domestic, with Adelaide, Melbourne and Sydney being the main markets. Approximately 30% of our guests are from overseas, with North America and Europe comprising the largest international markets. Guests stay on average one or two nights and the lodge welcomes children ten years and over. There is a distinct peak season during the warmer months of October to May. The festive period from mid-December to mid-January is particularly busy.

Staff discounts

Employees have the opportunity to dine in the lodge restaurant and bar receiving a 50% food and beverage discount. Purchases from the lodge boutique attract a 50% discount.

Accommodation discounts

After six months of service, employees become eligible for the Baillie Lodges team member rate of $150 (AUD) per person per night (or the equivalent in local currency), for themselves and one travelling companion sharing the same suite.
