The Dune House, with its panoramic views of the outback and soaring canopy is the hub of Longitude 131°. The welcome open spaces within include a restaurant and bar with ever-changing views of Uluru as a backdrop for dining as well as lounging areas in contemporary campaign style, ideal for relaxing with an icy drink and exchanging stories of the day’s adventures in the outback. Local Aboriginal artworks create a vibrant space, ideal for planning the next adventure.

Set among the dunes at a secret location, Table 131° is a hallmark event at Longitude 131°. The southern skies over Uluru-Kata Tjuta are a glittering kaleidoscope of stars, with cool, clear nights and an absence of manufactured lights from cities or nearby dwellings creating a stargazer’s paradise. Table 131° is renowned around the world as an iconic outdoor dining experience, with a menu prepared on a remote dune top and served under a blanket of stars. The feeling of being in a natural theatre is heightened by the chefs who work by torchlight to present four sumptuous courses.

Perched high on the outback landscape, the Dune Top is an intimate space comprising a help-yourself bar, outdoor lounges and plunge spa with views to both World Heritage-listed natural icons Uluru and Kata Tjuta. Private dining pods offer a window to the flush of dusk in time for an intimate dinner under the stars. Pods are suites for small groups of up to 12 guests seated on separate dining pods.

Hermitage Courtyard
Leading from the Hermitage Room is the open-air courtyard, with a pergola and stone walls providing cool space for enjoying a long lunch or post-meeting drinks. The courtyard looks west to the vineyards, perfect to see the sun set golden after a successful event.

The bar and brasserie-style Contour is a dedicated space for private groups and special get togethers for 15 or more guests. It’s a great spot for an exclusive-use lunch or fun team building dinner. There’s seating for up to 60 or room for a mood-raising cocktail gathering of 80.

Cool and cavernous, the Wine Cellar is lined with some of the world’s most sought-after vintage plus a superb selection of premium New Zealand wines. A central feasting table, renaissance art and gilded chandelier sets the scene for candlelit dining for up to ten guests.

Styled with country antiques and artworks personally sourced by Virginia Fisher, The Loft is located upstairs and is ideal for a formal meeting or private dinner. Dining is accommodated on two tables of eight.

Named in honour of Don Ryder, resident bagpiper from 1993-2018, the elegant Piper Room is furnished with plush lounges and antiques, opening to an adjoining private balcony overlooking the Waikato River.

A versatile space for outdoor meetings or dining, the Orchard is set amongst heirloom fruit trees. Warmed by braziers, the setting accommodates up to 12 guests for intimate sit-down dining on two tables of six or up to 40 guests for cocktail-style drinks and canapés.
