Tiramisu is a timeless dessert in its traditional form but have you ever thought about making it with avocado? The texture is delightfully creamy and combines with the classic coffee kick perfectly. INGREDIENTS Ingredients for the avocado cream:

Ingredients for the biscuit layer:

1 avocado

120g digestive biscuits

Juice and zest of 1⁄2 lemon

50ml espresso, cold

1 tsp. vanilla extract

15g cacao nibs

35g powdered sugar

Cacoa powder, for decoration

25g coconut oil, melted 150g coconut yoghurt

EQUIPMENT NEEDED Food processor or blender

Small sieve

METHOD 1 Combine all ingredients for the avocado cream together in a food processor until thoroughly mixed and it resembles a cream-like texture. Let it set in the fridge for ±30 minutes.

3 Assemble the tiramisu in 4 small bowls or glasses by alternating layers of biscuit and cream. Finish by sprinkling the top with cacao powder, using a small sieve.

2 To make the biscuit layer, crush the biscuits into 1cm pieces. Mix them well in a bowl with the espresso and cacao nibs.
