Happy New Year, my beautiful Attentionistas. Another year has flown by, and a new one has begun. It has had a rough start, but we are keeping a positive outlook and gearing up for more wonderful things ahead. With winter at its peak across the grid, snow is on the ground and the colors of nature are more muted making for a perfect backdrop for the vibrant colors of wildlife and décor we love. With this in mind, we are focusing on the beautiful fashion and destinations which highlight the beauty that comes with the cold.

We are excited to have Apollo Peridot on our cover for this issue, featuring an interview with him about his store, Peridot by Apollo. His realistic home décor and furniture are truly a site to behold and his use of PBR lighting adds another level of natural comfort to any space. His story and outlook are sure to bring a smile to your face and a warm feeling in your heart.

We would also like to welcome the talented Daniel Salvetore to the team, bringing us his unique perspective on fashion and style, along with his amazing photography. We are honored to have him on board as we move forward.

A special thank you to all our contributors. I know this time of year has been a challenge with the holidays and so much going on, but you have stepped up and made this the best issue yet! NOOBLING

Kere writes about the world: Discoveries and mistakes By:

My new year’s eve in the bushes

I had been djing 80’s night parties for a few months now and enjoying it, so my friend asked me if I’d be interested in djing a four-region gig on new year’s eve. The organizer’s dj had fallen through, and they were in a pickle. “Sure,” I said. What could go wrong?

Well, what I hadn’t anticipated was a fault in the telephone cabling in my house. Usually, I could plod on in sl without too much bother, but a gig at new year’s eve that spanned four regions? Turns out that a faulty connection doesn’t play well with those kinds of stats.

The music would cut out and leave the crowd in silence when the songs had finished, and I was still relogging after a crash… or I was listening on my own not realising the stream had dropped until someone asked if the party was still on.

I found a spot, in the snow on the edge of the woods,

where I stood like a creeper watching blobs dance on the horizon. Did they like the music? No idea but it was still playing. Did they have requests? Maybe, and probably complaints but I was too far away to hear them.

It was a bizarre situation standing in the woods, seeing nothing but some prim trees and snow having a party with myself while the actual gig I was feeding into were dancing on the hill at the intersection of four regions.

“Happy new year!” I cheered, keeping the energy up like some mysterious figure that nobody could find. The invisible dj… ignore that man behind the curtain.

10… 9… 8… 7… … … 7… (Come on come on you can do it…) 7… 6… 5… … 4… 3… 2… 1…

Bingo! Happy 2009! Auld lang syne and all that… now get me out of here.

Of course it was already new year’s day for me.

up like some MYSTERIOUS could find.

The sun was out, it was a beautiful summer’s day, and I could log from sl and go about my day. Had I been burning the midnight oil to stand in the shrubbery outside the party that, not only had I been invited to, but was supposedly responsible for, it would have been a sad way to see in the new year.

People danced, cheered, kissed, and watched an astounding explosion of particles in a grand fireworks display I almost got to see. We changed internet providers soon after. It turns out, the fault wasn’t in our cabling, but in the previous company’s system. Our net was fixed after that, but I never did dj another party. It had somewhat lost its magic.

2024 Lost its magic too, let’s face it – the world seems increasingly on the brink of god-knows-what. 2025 Is destined, by all accounts, to be when all hell breaks loose, so buckle down, be safe, be kind, and come find me hiding in the bushes.

Happy new year –give it hell!

Technological advancements have been a cornerstone of Second Life™ since the onset, and those of us who have been around for quite a while have seen many changes in our virtual world. One of the biggest and most recent changes over the past year has been the introduction of physically based rendering (PBR). In simple terms, PBR is the attempt to make light in Second Life™ reflect and interact with objects similar to real life. This allows the user to have a truly immersive experience in a virtual setting and create an incredibly realistic environment.

Why do I bring all of this up as an introduction to our designer feature? Well, if you want to see PBR in action, you need to look no further than Peridot by Apollo. Created to deliver residents the ultimate in luxurious furniture and unique design, Peridot by Apollo embraces these technological advancements and highlights what PBR is truly capable of achieving. If you have not had a chance to stop by, Peridot is nestled adjacent to the Apple Fall main store. Walking around Peridot is truly an unforgettable, stunning marvel. Customers can see furniture designed in ways they never thought possible. A great example of this is the Peridot Radiance collection. Who would have thought a mirrored bed and furniture pieces would be able to include true reflections in Second Life™? It’s the perfect blend of gorgeous design providing captivating capabilities through PBR.

I GENUINELY

LOVE creating...

Shopping for furniture is often a simple task that can at times seem like a to-do item on our list as we decorate our spaces. Peridot by Apollo offers something more: excitement in buying furniture by making it feel like something entirely new. It’s not just viewing a catalogue of wares - it’s a true experience beholding something we have never seen. Take a look at the Pearl collection, which dazzles us with a fulllength mirror where we can see our own avatar and background reflected. It is a true representation of the glamor and sophistication that Apollo strives to create.

Creativity is at the heart of the inception of Peridot, and Apollo’s love of designing spaces spurred his desire to start a store. He truly loves taking an idea and making it a virtual reality. His goal is to create furniture with an elevated, high-end feel, and he achieves this not only through his designs but his ability to truly master the PBR capabilities Second Life™ has to offer. The boundaries extend beyond furniture, as he demonstrates with one of his most cherished creations: the Augustine Estate. Its stately elegance makes a person feel like they own something truly special and unique, in many ways because it is something unlike anything we have ever seen.

Peridot by Apollo stuns us with the reflections, but it is so much more. It is craftsmanship and beautiful, luxurious design. There is a stated elegance that is often punctuated by the color pink. A common theme in his creations, Apollo attributes the versatility and understated elegance of the color to playing such a big role in Peridot. It also adds sparkle and

a touch of femininity to his designs. In meeting Apollo, you will quickly see that he does not fit into a specific mold, and his personal style and vibrance are evident in his interactions. Vibrance was a key aspect of his

that canvas the Peridot store.

In many ways, Apollo is just getting started. Hesitent to call out his own accomplishments and insane ability to deliver gorgeous products, he

I’ve ALWAYS had a love for DESIGN and CREATING BEAUTIFUL spaces...

decision to call his store

Peridot, modeled after the gemstone of the same name as well as its beauty and elegance - the perfect homage to the creations

was quick to share that we can expect much more to come from Peridot by Apollo in the future. He is on a continuous quest to deliver fresh, elevated

items to the residents of Second Life™, and we look forward to seeing how he infuses his incredible designs with new capabilities to make stopping at Peridot by Apollo a necessity in design shopping.

Divos Titanium: Apollo, thank you so much for spending time with me for Attention SL Magazine. We are excited to have an opportunity to know more about you and your store, Peridot By Apollo. You have made such a splash in our virtual world with your

incredible decor. As far as introductions go, what would be the first thing you want Second Life™ residents to know about you?

Apollo: T hank you so much for having me! It’s such an honor to be featured. The first thing I’d want Second Life™ residents to know about me is that I genuinely love creating. Peridot By Apollo is my way of sharing that passion for design and decor with others. Every piece I make is a little bit of my heart and vision, and

I hope it helps people express their own unique style.

D: Do you play any other games or virtual worlds outside of Second Life™? What are some of your favorites? How has gaming or online communities impacted your real life?

A: Great question! I do play other games like Destiny 2, Overwatch 2, The Sims, and Dead By Daylight – I’m especially drawn to games with building aspects, teamwork, and online co-op. Gaming and online communities have had a mixed impact on my life. On the one hand, they’ve been an incredible source of creativity, connection, and inspiration. On the other hand, there can be some challenges, like drama or negativity, but thankfully the positives far outweigh the negatives.

D: Walking around Peridot by Apollo, it is apparent you have created an amazing collection of elevated, glamorous items for your store. What made you start creating in Second Life™?

A: I’ve always had a

love for design and creating beautiful spaces, and Second Life™ felt like the perfect platform to bring those ideas to life. What really inspired me to start was the freedom to create anything I could imagine and share it with others who appreciate the same aesthetic.

D: Meshing and creating is such a foreign concept for me since I am so technically challenged. What is your process for coming up with new items? Is there a process that you go through, or is it a spontaneous idea that pops up in your head?

PBR materials have ALLOWED for a level of DETAIL and REALISM that WASN’T possible before...

A: Honestly, it’s a mix of both! Sometimes inspiration strikes out of nowhere – like seeing a piece of furniture in real life – and I can’t wait to bring it to life. Other times, it’s a more structured process. I think about what’s missing in Peridot by Apollo’s collection, what people might want in their spaces, and how I can elevate those ideas with a touch of glamour and functionality. Once I have a concept, I dive into sketching or mood-boarding, and from there, it’s all about turning that vision into a 3D reality. It’s a balance of creativity and technical work, but seeing the final product makes it all worth it!

D: How would you describe the Peridot by Apollo aesthetic? Everything looks very posh and glamorous and definitely

stands out beautifully from other stores. Is there a specific cohesive look that you are trying to achieve or is it based on each individual item?

A: The Peridot By Apollo aesthetic is definitely rooted in glamour, sophistication, and a touch of timeless elegance. I want every piece to feel elevated, like it could belong in a highend home. While each item is designed to stand on its own, I also aim to create a cohesive look that ties the collection together – whether it’s through the use of luxurious materials, clean lines, or thoughtful details. My goal is to help people create spaces that feel polished and unique, while still being versatile enough to mix and match with their own personal style.

D: How have Second Life™ enhancements and updates impacted your creations? Are there any updates you would like to see?

A: The enhancements and updates in Second Life™ have been a game-changer for creators. Features like mesh and, more recently, PBR materials have allowed for a level of detail and realism that wasn’t possible before. They’ve opened up so many creative possibilities and really helped me bring the Peridot aesthetic to life in a way that feels modern and fresh. For future updates, I’d love to see continued improvements in performance. Maybe even increase the amount of how many mirrors can be rendered at one time, as well as custom shaped reflection probes. It’s exciting to see how Second Life™ keeps evolving, and I can’t wait to see what’s next!”

D: Do you have a creation in your catalog that you have brought to life

that is your favorite? Is there one that has proven to be the most popular?

A: That’s such a tough question because every piece I create has a special place in my heart! If I had to choose a favorite, though, it might be the Augustine Estate, because it perfectly captures the balance of glamour, function, and versatility that I aim for.

D: I get this question quite often, as I have quite an affinity for interior design and love those stores that feed this passion. What made you decide to go into creating decor instead of other items, such as clothes?

A: It all comes down to my love for interior design. I’ve always been drawn to creating beautiful, cohesive spaces and finding ways to bring personality into every corner of a home. Decor felt like the perfect fit for me because it allows me to channel that passion and create pieces that help others express their own style. While fashion is amazing, I find so much joy in the endless possibilities that come with designing for interiors – everything from layouts to textures to those little details that make a space feel special. That said, clothing might not be completely off the table – it’s something I might dip my toes into at some point in the future!

D: While there is so much fulfillment and enjoyment that comes from having a store (as well as making a living), what is the toughest part about creating items in Second Life™?

A: One of the toughest parts is balancing creativity with the technical side of things. Making sure items are optimized, function well, and meet

customer expectations can be a lot of pressure, especially when you’re constantly striving to improve. Another challenge is time management – there’s always so much to do, from meshing and texturing to marketing and customer support, and it can sometimes feel overwhelming. But at the end of the day, seeing people enjoy what I create makes it all worth it!

D: One question I always like to know is the reasoning behind the store name. What made you decide on Peridot?

PINK is definitely one of my FAVORITE COLORS, and it’s such a BIG part of the store’s IDENTITY...

A: Peridot By Apollo stood out to me as the perfect name because it represents elegance, beauty, and a touch of uniqueness – all qualities I want to reflect in my creations. Peridot is also a gemstone that’s known for its vibrant, uplifting energy, and I loved the idea of channeling that into my store. It’s a name that feels timeless yet fresh, much like the aesthetic I strive for in my designs.

D: On a more personal note, what do you do for fun in Second Life™ when you are not creating items for Peridot? Any favorite pastimes?

A: When I’m not busy creating for Peridot By Apollo, I enjoy taking time to explore and discover beautifully designed sims, attend events, and indulge in shopping. Decorating spaces

is another favorite pastime; it’s a great way to relax and try out new ideas.

D: While many of us have enjoyed your amazing creations, we don’t have an opportunity to interact with you inworld. What’s one interesting fact or something we don’t know about you that you can share?

A: One interesting fact about me is that I love learning new skills, even if they aren’t directly related to creating. Whether it’s photography, scripting, or just experimenting with new tools, I’m always looking for ways to expand my knowledge and bring something fresh to my work.

D: Pink seems to be a dominant theme in a number of your creations. Is this your favorite color? What do you like about it or is there a feeling it evokes?

A: Pink is definitely one of my favorite colors, and it’s such a big part of the store’s identity. I love how versatile it is – it can be soft and romantic, bold and empowering, or playful and fun. For me, pink evokes a sense of glamour and warmth, while also feeling approachable and uplifting. It’s a color that makes a statement without being overbearing, and I think it adds a unique charm to my creations. Plus, who doesn’t love a little extra sparkle and femininity in their designs?

D: Are there any thoughts about collaborations in the future with other creators? Any creators that you admire that stand out for you?

A: Collaborations are definitely something I’d love to explore in the future! There’s so much talent in the

Second Life™ community and working with other creators could bring some amazing ideas to life. As for creators I admire, there are quite a few who stand out to me – people who consistently push boundaries and create innovative, inspiring work. While I don’t have any specific collaborations lined up just yet, it’s something I’m very open to and excited about exploring when the time feels right.

D: What advice would you give to others that are thinking about opening their own store?

every

PIECE

is created with the INTENTION of BRINGING a little

EXTRA beauty and INSPIRATION into their SPACES...

A: My biggest advice is to start with a clear vision and a lot of patience. Creating a store takes time, dedication, and a willingness to learn as you go. Focus on finding your unique style, something that sets you apart and feels true to you. Don’t be afraid to invest in learning new skills, whether it’s meshing, texturing, or marketing, because those will be the building blocks. Most importantly, stay consistent and don’t give up, even if progress feels slow at first. Building a store is a journey, and the rewards come with the connections you make and the joy your creations bring to others.

D: We always love to be in the know here at Attention SL Magazine. Anything we can expect in the near future from Peridot By Apollo that you can share?

A: Of course! I’m always working on new ideas to bring a fresh, elevated touch to Peridot. Without giving away too much, let’s just say there might be something exciting on the horizon— perhaps a Peri Yacht, combining luxury and style for the ultimate escape. Stay tuned because there’s definitely more glamour and creativity on the way!

D: On another note (pun intended), what is your favorite song on your playlist as we head into 2025?

A: It’s a hard choice because my playlist is constantly evolving, but as we head into 2025, I’d say ‘Pretty Hurts’ by Beyoncé is at the top.

D: Is there anything you want people to know about Peridot By Apollo that we have not had a chance to cover yet?

A: One thing I’d love people to know about Peridot By Apollo is that every piece is created with the intention of bringing a little extra beauty and inspiration into their spaces. It’s not just about making decor – it’s about crafting items that feel personal, versatile, and elevate the way people experience their homes. I’m always striving to push boundaries, experiment with new ideas, and ensure that everything I create brings joy and a touch of luxury to those who use it.

THANK you so much for your time, APOLLO! We look forward to MANY more AMAZING things from Peridot By Apollo!

Christmas in New York is experienced like a scene straight out of a Hollywood movie – a nearly cinematic atmosphere where the intense cold blends with the sparkle of endless lights, reflecting the luxury and sophistication that define Daniel Salvatore’s life in Second Life™. And it is within this virtual universe that Daniel takes this atmosphere to an even more personal and stylish level. He embodies the essence of a cosmopolitan man, confident in himself, who sees fashion as more than just clothing: it is an extension of his identity and a way to communicate with the world. During this season,

“He EMBODIES the essence of a COSMOPOLITAN man, confident in himself...”

Chrismas — in — New York

WRITTEN AND PHOTOGRAPHED

Daniel combines his impeccable style with touches inspired by the magic of Christmas, mixing textures, colors, and designs that reflect both the sophistication of the Big Apple and the spirit of the holidays.

With every outfit he chooses, Daniel recreates the opulence and beauty of an illuminated New York. For him, Christmas is not just a time for

celebration but an opportunity to project his style and personality, becoming a symbol of elegance and exclusivity in the virtual world.

Thus, the magic of Christmas in New York is not only lived in the crowded streets and decorated shop windows but also in the way Daniel transforms these inspirations into art, fashion, and creativity within Second Life™. In this universe, every

detail is a homage to the season’s sophistication and charm, always with his unmistakable personal touch.

Waking up in a glass-and-steel penthouse with a panoramic view of Manhattan blanketed in snow is an experience that encapsulates the true meaning of exclusivity. The cold air seeps through the fogged windows as black coffee, served in a fine porcelain

cup, accompanies the first hours of the day. It’s a ritual where silence merges with the city that never sleeps – a contrast that only December in New York can offer.

The day begins with a morning run along the Brooklyn Bridge, where the icy breeze feels like a frosty caress awakening all the senses.

The run becomes a spectacle of his

impressive physique: his bare, welldefined, and bronzed legs – an ode to his dedication and strength – even in the middle of Christmas. Wearing a fitted leather jacket that highlights his masculine torso and sports shorts that hug his figure precisely, his virility is provocatively hinted at, drawing glances as he faces the cold with a dominant attitude. The icy breeze is not an obstacle but a complement

that enhances his magnetism. Daniel doesn’t just endure the cold; he conquers it. Each firm step across the bridge is a declaration of his unwavering will and style.

Fashion in New York during Christmas is a reflection of the season’s magic: a blend of sophistication, warmth, and festive spirit. For evening strolls, a casual yet stylish look is essential.

A turtleneck sweater with modern Christmas motifs adds a classic touch, while loose seasonal trousers provide freedom of movement – the perfect ensemble for wandering streets covered in lights and snow.

“He knows that LUXURY doesn’t lie solely in material things but in the INTENTION behind every CHOICE...”

Fashion, always at the epicenter of Daniel’s life, takes on special significance at this time of year. Manhattan’s streets become his personal runway. A total black look is ideal. A casual black suit, impeccably tailored and topped with a black trench coat, becomes the symbol of the modern, elegant man. A slightly unbuttoned white shirt adds a relaxed touch, while black leather gloves provide warmth and refinement. This outfit defines his aesthetic: minimalism with a bold edge, elegance with a hint of rebellion—perfect for standing out in New York’s chilly streets or on an elegant rooftop with views of the skyline.

Living through winter and celebrating the holidays in New York is not just a festivity; it’s an immersion into an experience that combines elegance, urban dynamism, and the magic of the season. The lights decorating the avenues, the vibrant bustle of Fifth Avenue, and the charm of a snow covered Central Park become the perfect stage to rediscover what it means to live with style and purpose.

Daniel Salvatore Salvetti, a man who embodies the balance between classic and daring, understands that

every detail during this season holds meaning. From elegant coats and long, tailored trench coats to leather gloves that complete a flawless look, Daniel doesn’t just dress for the weather; he dresses to conquer every moment. He knows that luxury doesn’t lie solely in material things but in the intention behind every choice—from sipping coffee on a rooftop overlooking the skyline to enjoying an elegant dinner at an exclusive Manhattan restaurant.

During this season, Daniel redefines contemporary masculine style with pieces that combine functionality and sophistication. For Daniel, winter in New York is not just a season but a reminder that true wealth lies in the moments created, the places explored, and the way each day is lived. Whether admiring the Rockefeller Center Christmas tree or skating in Bryant Park, Daniel proves that style is an attitude that transcends weather, place, and time. It is, in essence, a celebration of life itself. The cold December nights are illuminated by the city’s brilliant lights, reflected in streets and iconic buildings that seem to compete for attention. In this dreamlike setting, a silver or gold tuxedo becomes much more than just an outfit—it’s a statement of elegance, power, and magnetism.

This tuxedo, with its metallic finish that captures and plays with the city lights, is a masterpiece that redefines the concept of men’s fashion. Its design, flawless in every seam, highlights the figure with a structure that blends tradition and modernity. Inspired by the glamour of Golden Age Hollywood, this attire pays homage to an era when dressing well was synonymous with

character and attitude, while adding a contemporary twist that makes it perfect for the bold 21st-century man.

Exclusive dinners at restaurants like Per Se or Le Bernardin become the ideal setting to showcase this suit. As champagne glasses clink under the soft glow of candlelight, the tuxedo shines with an intensity that doesn’t go unnoticed, creating a dialogue between tradition and innovation. In these evenings, the outfit doesn’t just complement the luxurious atmosphere, it becomes a central element that elevates the experience to the level of a masterpiece.

“Fashion, ATTITUDE, and the environment are TOOLS every MAN can use to explore and EXPRESS his identity...”

Walking through New York’s streets in this look is more than just a stroll; it’s a runway where every corner, every reflection in a Fifth Avenue storefront amplifies its impact. It’s a moment of connection between the city’s festive vibe and the essence of the wearer. It’s a reminder that fashion isn’t just clothing but an art form that communicates identity, confidence, and sophistication.

New York, with its decorated trees, becomes the perfect backdrop for this spectacle of style. In this city that never sleeps, where shop windows exude glamour and the streets vibrate with energy, the metallic tuxedo isn’t just an option – it’s the uniform for those who know that life is best celebrated with a spark of extravagance and an attitude that shines brightly. More than a fashion choice, this outfit reflects the spirit of

the 21st-century man: bold, visionary, and always one step ahead.

In a world where the city lights never dim and urban dynamism redefines the rules, Christmas in New York becomes the perfect stage for the modern, cosmopolitan man to rediscover his essence. Daniel Salvatore embodies this invitation, proving that masculinity isn’t a rigid mold but a constantly evolving canvas where sophistication, confidence, and boldness intertwine to create something unique.

Fashion, attitude, and the environment are tools every man can use to explore and express his identity. From a dazzling tuxedo that captures the city’s energy to a casual look that reflects confidence and comfort, every choice is an opportunity to challenge limits, break stereotypes, and embrace individuality.

True masculinity in the modern world isn’t measured by conventions but by the ability to adapt, to be versatile, and to project confidence in any situation. It is in that balance between tradition and innovation, between strength and sensitivity, where the true power of the contemporary man resides.

DISCOVER who you are, REDIFINE your style, and let the world see how you SHINE.

Christmas in New York isn’t just a season; it’s a reminder that, on the stage of life, there’s always room to shine with authenticity and purpose.

Chef’s KISS

–Real Recipes from a Real Chef–

As winter settles in we become a bit less active, tend to eat thicker and more hearty foods, forgetting that we still need to eat healthily. Today we explore some recipes that will warm the heart and the soul while maintaining a nice mix of fruits and vegetables that our bodies need to survive. Try them out and let us know what you think on our social media pages!

Triple Berry Sauce is a wonderful go-to recipe for everything from breakfast to desserts. Made of fresh or frozen fruit, it’s ready in 10 minutes! There are so many ways to use this sauce! I love to serve it in the morning with yogurt, on buttermilk pancakes or waffles, as a dessert with cream cheese pound cake, vanilla ice cream, or on top of New York Cheesecake. Once you make it, you will find more ways to use it than you can imagine!

Triple Berry Sauce recipe

Ingredients

• 2 cups of fresh or frozen berries: strawberries, blackberries, blueberries, raspberries, or a mix of as many of them as you like.

• 2 tablespoons of water

• 2 tablespoons of butter

• 2 tablespoons of sugar

• 2 teaspoons of cornstarch

• 1 teaspoon of spiced rum (Captain Morgan)

• 1 teaspoon of vodka

Instructions

1. Add fruit to a medium saucepan or skillet over medium heat. Add all other ingredients and bring to a boil for about three minutes. Stir occasionally, reduce heat to low and allow to simmer for about two to three more minutes.

2. Remove from heat and serve warm or store in an airtight container until ready to serve. Then, warm slightly before serving.

Notes

Here is my Triple Berry Sauce recipe.

Grilled chicken paillard wiTh california GrapeS, aruGula, mixed veGeTaBleS, fruiT, and nuTS chef Salad

This Grilled Chicken Paillard with California Grapes and Arugula Salad is easy, healthy, and bursting with flavor. The chicken is pounded thin, marinated in plenty of garlic, herbs and citrus and grilled to perfection. Serve it with a refreshing, peppery and unexpectedly juicy California Grapes, Arugula, Mixed vegetables, berries, and fruit Salad drizzled with a tangy apple cider balsamic vinaigrette.

Ingredients

For the Grilled Chicken Paillard:

• 2 boneless and skinless chicken breasts sliced in half lengthwise and pounded ⅛”-thin.

• 2 tablespoons extra virgin olive oil

• Juice of 1 lemon

• 3 cloves garlic finely chopped.

• 2 tablespoons finely chopped fresh parsley.

• 1 tablespoon finely chopped fresh rosemary.

• 1 teaspoon fresh oregano substitute ½ teaspoon dry

• 1 teaspoon kosher salt

• ½ teaspoon freshly cracked black pepper

Vinaigrette and the California Grapes, Arugula, mixed vegetables, fruit, and nuts chef Salad:

• ½ cup extra-virgin olive oil

• 1 cup of apple cider vinegar

• ⅛ cup of balsamic vinegar

• 1 tablespoon whole-grain mustard

• 2 tablespoons of honey

• 1 garlic clove finely grated.

• ¼ teaspoon kosher salt

• ¼ teaspoon freshly cracked black pepper

• 8 ounces arugula

• 8 ounces of mixed greens

• 8 ounces of fresh spinach

• ½ cup of shredded carrots

• 1 cup of halved cherry tomatoes

• ¼ cup mix of pecans, sliced almonds and walnuts chopped

• ¼ cup of raisins

• ¼ cup of dried cranberries or craisins

• ¼ cup of mandarin orange slices

• ½ cup of cut strawberries

• 2 ounces of crumbled feta cheese

• ½ a red onion small diced or julienne cut

• 1 shallot thinly sliced.

• 1 cup of red grapes sliced in half.

• 2 ounces thinly shaved Pecorino Romano cheese substitute Parmigiano Reggiano

Instructions

For the Grilled Chicken Paillard:

1. In a bowl, combine the chicken, olive oil, lemon juice, garlic, parsley, rosemary, oregano, salt, and pepper. Toss everything to coat, cover and refrigerate 1 to 6 hours.

2. Preheat the grill to medium-high heat. Transfer the chicken to the grill and cook until grill marks form, for around 4 minutes. Flip and cook the other side until grill marks form and the thickest part of the chicken breast registers 160F. Transfer the chicken to a tray, tent with foil and let the residual heat bring the chicken to 165F.

3. Serve the chicken alongside the Salad.

For the California Grapes and Arugula Salad:

1. In a mason jar, combine the olive oil, vinegar, mustard, honey, garlic, salt, and pepper. Seal with a lid and shake vigorously until emulsified. Taste the vinaigrette for seasoning and adjust with honey, salt, and pepper as desired.

2. In a large bowl, combine the rest of the ingredients. Drizzle half of the vinaigrette overtop and toss gently to coat.

3. Serve the salad with the grilled chicken and drizzle with some more of the vinaigrette to taste.

Who doesn’t deserve a treat? The invisible mini chocolate peanut butter cake is a rich and delicious recipe. It is perfect for dessert or for a savory snack to curb a sweet tooth.

Ingredients:

• 1 ½ cup of graham cracker crumbs

• ½ cup of butter, melted.

• 1 cup of creamy peanut butter

• ½ cup of powdered sugar

• 8 oz cream cheese, softened.

• 1 cup of heavy cream

• 1 cup of semi-sweet chocolate chips

• ½ cup heavy cream (for chocolate ganache)

• 1 teaspoon of vanilla extract

• A pinch of salt

• Chocolate chips to decorate.

Instructions:

1. In a medium bowl, combine graham cracker crumbs and melted butter. Press mix on the bottoms and sides of a muffin tin lined with cupcake toppers. Refrigerate for 30 minutes.

2. In a large mixing bowl, beat the cream cheese and peanut butter until smooth. Add powdered sugar and vanilla extract and mix until well combined.

3. In a separate bowl, beat the heavy cream until stiff peaks form. Gently double the whipped cream in the peanut butter mixture.

4. Spoon the stuffed peanut butter into the cold crust, flattening the tops with a spatula.

5. In a small saucepan, heat 1/2 cup of heavy cream until slow cooker. Remove from heat and add chocolate chips, stir until melted and smooth.

6. Pour the chocolate ganache over the peanut butter filling, spreading evenly.

7. Refrigerate cakes for at least 2 hours, or until set. Garnish with extra chocolate chips before serving.
