Wexford Mac & Cheese

INGREDIENTS: 1 lb Macaroni pasta ¼ cup butter ¼ cup flour 1 tsp kosher salt Fresh cracked pepper 3 cups shredded Wexford cheddar, plus more for serving 4 cups whole milk Cook pasta according to package directions in salted water. In medium saucepan melt butter over medium heat. Whisk in flour to create a roux. Cook for 3-4 minutes while whisking until mixture thickens. Slowly add milk to the pan while continuing to whisk. Cook and stir until slightly thickens, about 5 minutes. Turn heat off and slowly whisk in cheese until smooth. Add salt and pepper and adjust seasoning to taste. Add sauce to drained pasta and season again if necessary.
