Our close-knit family of food lovers, craftspeople, cheese experts and cheese obsessives now produce 11 handcrafted Cheddars and Red Leicesters, sealed in richly colored wax. Crunchy crackers. Little jars of chutney. Velvety cheese bakes for heating at home.

Rock Star is Snowdonia Cheese Co’s debut vintage cave-aged Cheddar, matured in Welsh slate caverns.
Inside a former slate mine, surrounded by the mountains of Snowdonia, these natural caverns provide the ideal conditions to mature our cheese. Crafted using a bespoke recipe, only the finest cheese is selected to be transferred deep into the caves, where it completes its 18-month maturation.
The time spent underground gives this extraordinary Cheddar a deep flavor and a smooth, dense texture. Rock Star has a savory aroma with delicately complex notes, while its texture is incredibly smooth and irresistibly creamy with the occasional crystal crunch. On the palate, its complex flavors are as deep as the historical caverns it is aged in, and it finishes with sweet, caramel notes and a long, savory tang. Sealed in slate-blue wax, it’s the undisputed star of any cheeseboard.
Ruby Mist celebrates the classic pairing of cheese and port, in collaboration with the renowned, family-run Graham’s port
Decadent. Silky-smooth. Elegantly dressed in deep burgundy wax. This luscious mature Cheddar is infused with Graham’s Late Bottled Vintage Port, made from grapes harvested in the heart of the Douro Valley and aged for five years in seasoned wooden casks at Graham’s 1890 Lodge in Vila Nova de Gaia, Portugal. It’s then finished with a dash of French brandy.
Unfolding slowly, the rich fruitiness of the Graham’s LBV enhances Snowdonia’s savory Cheddar with subtle demerara back notes, while the brandy lends a gentle, lingering warmth. Creamy and indulgent, Ruby Mist is best served after sunset with a Fig & Cranberry Cracker and some Pear, Date & Cognac Chutney – or savored alongside a square of dark chocolate and a glass of your favorite port.



Our cheeses are famous for their jewel-coloured wax casings – not only do they look good, but they keep the cheese tasting delicious, retain allimportant moisture and help preserve it too.
Follow our simple tips to keep your cheese at its best.
z Our cheeses need to be kept refrigerated between 2 and 5°C.
z We recommend removing the cheese from the fridge for 30 minutes, bringing the cheese to room temperature. This softens the wax slightly – and cheese also tastes better when it’s not fridge-cold.
z Remove the sticky labels, front and back before cutting and enjoying.
z As a guideline, we recommend consuming your cheese within 7-10 days of opening.
z Once opened, ensure the cheese is tightly wrapped in waxed paper and stored in the fridge.

z Take a sharp knife and (carefully) slice around the top edge of the wax.
z Lift off the “lid” to reveal the awardwinning cheese inside.
z Turn over the truckle then cut into the wax across the base and up the sides.
z Peel away the rest of the wax –gently does it!

The mountains, valleys and winding rivers of North Wales have long shaped the way we make our cheese – and now they’ll inspire the way you serve it.
At Snowdonia Cheese Co, our experts have created tried-and-tested cuts for our waxed truckles, each echoing this beautiful landscape: lofty peaks, craggy ridges, weathered rocks, gentle curves. Master them, and you have the makings of the Ultimate Cheeseboard.
Transform those shapes into a showstopping scene that’s a feast for the eyes as well as the palate – a tempting platter brimming with all your Snowdonia favourites, made for sharing and savoring.
Cut the truckle across the circumference to form two thinner circles. Take each circle and cut into four quarters, then halve each quarter again. Arrange standing upright on the board.

Cut 1cm thick slices across the truckle. These can be positioned around the edge of a board and fanned out.
Remove the wax from the truckle, and use the fork end of a cheese knife to create rustic chunks by pressing the knife into the cheese and turning clockwise.
Remove the wax and cut the cheese into 1cm-thick slices across the truckle. Cut each slice lengthways into three equal pieces.
