Our 24-month Parmigiano Reggiano, PDO is produced and aged in cooperative dairies within the designated provinces. It features a rich, complex flavor, nutty aroma and a crumbly, slightly grainy texture. It is still hand-made without any additives, just as it was nine centuries ago. IL Villaggio Piave, Extra Aged, PDO is a hard, Alpine-style cheese produced on the verdant edge of the Piave River in shadow of the Dolomites. Aged for 12 months, the cheese develops an intense, sweet, nutty flavor featuring profound tropical fruit notes, balanced salinity, and a full aroma reminiscent of mountain herbs and flowers. The milk from cooperative farms is still brought to a single collective dairy that produces IL Villaggio Piave, PDO. Piave is wonderful on a cheeseboard or for snacking. It can be grated over dishes like pastas, gnocchi, risotto, polenta and grits or shaved over salads.

IL Villaggio Ricotta Salata is produced by a co-op in Sardinia, Italy. Made from the whey byproduct of sheep’s milk used for other cheeses, Ricotta Salata is pressed, salted and aged for at least 90 days. Similar to feta, it is milky white in color, with a salty, nutty taste. The cheese is best used as a finishing touch grated or shredded, cubed or crumbled over a salad. It also works well in contrast to something sweet, such as fruit for dessert.
