Employment outcomes for Angliss hotel students

ngliss International Hotel School students are going from strength to strength with more than half of the students who completed their hotel placement gaining part-time or full-time employment by December in the year of their course. Ninety-seven per cent of AIHS students completed a work placement in 2016 which is a key feature of the Diploma of Hospitality, giving students valuable hands-on experience. These placements took place in second semester across a range of hotels throughout Melbourne including the Hyatt hotels, the Westin, Hilton, Crown Promenade and The Como Melbourne. “We are thrilled with these outcomes as we want to see our students out working in industry which is the goal of the specialised training and the placement opportunities,” AIHS co-ordinator Ms Melissa Jennings said. Students have access to personalised careers support to help them gain skills in managing their careers and in gaining employment. The program offers a Diploma of Hospitality which is delivered over 12 months and focuses on developing students’ skills in hotel management. The course features an exclusive Masterclass series in the provision of luxury services delivered by industry experts, which included whisky expertise, floristry and luxury sales skills. In 2016 students travelled to Singapore to undertake a tour of its world-leading hotels, with a similar opportunity for an international study tour in 2017. Once picked, the fruit is returned to either of the company’s two accredited packing facilities. The Goodwood packing operation boasts a 4500 square metre facility, featuring the latest computerised grading equipment including a new “Com36

pac” 6 lane sorter, one of only 6 in Australia, in-line sticker application and a sealed loading dock, which provides access to the 360 square metre cold room. Another 216 square metres of cold room space is used for pre-cooling and bin storage. The Goodwood shed does pre-pack avocados for the retail market. As Simpson Farms’ primary fresh pack shed, the Goodwood facility is Australia’s leading avocado packing facility. It is mainly produced in Aichi Prefecture, central western Japan, and has the same nutritional value as Shoyu. It’s ideal as a dipping sauce for sushi and sashimi, teriyaki or as a seasoning for crackers or steamed dishes. Organic Tamari Spiral Foods’ Organic Tamari is truly a step back in history. It is naturally fermented from organic whole soybeans, water and sea salt. The resulting sauce has a stronger flavour and aroma than shoyu. Tamari is wheat free and traditionally used as a cooking and dipping sauce. It's rich in amino acids and high in protein. True Shoyu Shoyu is the standard in the Japanese soy sauce industry. About 85% of the total soy sauce consumed is Shoyu. Shoyu is an all-purpose seasoning. Spiral Foods True Shoyu is naturally fermented for three years and is made from whole soybeans, wheat, natural sea salt, and water. It is 46

Asia comes from the sesame seeds. Spiral toasted sesame oil is expeller pressed and extracted by a specialized method of filtration, without the use of chemicals. Therefore, unlike commercialized products, sesame oil maintains its abundance of the original unsaturated fatty acid "linoleic acid," vitamins, and minerals, making our sesame oil not only more flavourful but also richer, cleaner and nutritiously superior. Delicious high in B vitamins, protein, amino acids and enzymes, stimulating digestive fluids in the stomach. In Japan, Shoyu sells approximately 10 bottles to every 1 of Tamari (Wheat Free) in Japan. True Shoyu does not contain any colour or flavour enhancers. Organic Shoyu is naturally fermented from organic whole soybeans. Mirin Often called ‘the mother of taste’, in that it controls all other flavours when cooking. Spiral Foods Mirin is a natural rice seasoning with a rounded mild sweet taste and contains amino acids, vitamins and enzymes. Its delicate alcohol content tenderizes fish and meat, while imparting body and a rich sweetness unavailable from sugar. It adds flavour and shine to steamed fish, noodle soups, steamed vegetables, meat and teriyaki chicken. Organic Brown Rice Vinegar Rice vinegar is made using the same process as making sake. Sake is made in the first fermentation process and vinegar is made in the second fermentation process called "acetic acid fermentation" by Acetobacter. In the first fermentation, steamed rice, Koji and water are combined. Over time the glucose in the grain disintegrates, forming saccharified Moromi. A live enzyme called "shubo" is added which changes the sugar into alcohol. This process takes one month. In the second fermentation, sake is mixed with seed vinegar (rice vinegar with pure Acetobacter) and heated to grow Acetobacter's membrane. Rice vinegar takes two weeks to complete its fermentation. Sesame Oil Our Sesame oil is dark in colour and rich in sesame flavour, that quintessential taste of

Yuzu Ponzu Spiral Foods Yuzu Ponzu is a tasty tangy seasoning that combines shoyu, rice vinegar and mirin (rice cooking wine) with the citrus juices of the sudachi and yuzu fruits. Ponzu is often used for salad dressings, tempura broth or as a dipping sauce for fish or steamed vegetables and has a low calorie count. The fruits are cultivated with neither agricultural chemicals nor chemical fertilizers. Juiced by hand, they contain activated vitamin C and citric acid. The broth is made from the highest quality Kombu and shiitake mushroom. Add a few drops of our Ponzu into drinks or dishes to quickly recover from the weariness of the summer heat. Plum Vinegar Japanese Umeboshi Plum Vinegar is not really vinegar but a pleasantly tart and salty juice extracted from making pickled Umeboshi plums. As its not fermented, so suitable for yeast intolerance and contains many of the healing qualities and nutrients associated with the pickled plum. Popular as a healthy drink on hot days, plum vinegar is also suitable for French and Italian cooking as well as salad dressings and marinades. As a substitute for Brown Rice Vinegar, it can also be used for sushi rice and in pickling radish, cucumber, and other vegetables. All these traditional ingredients form the corner stone of most Japanese sauces and marinades in differing proportions. Spiral believes good safe wholesome food is a basic human right. Returning to Darling Harbour and the ICC Sydney is a Winner for AGE 2017

T

he Australasian Gaming Expo’s return to where it started 28 years ago at Darling Harbour, has been an outstanding success. “The return of this event to Darling Harbour and the halls of the new exhibition centre created the most successful event in the history of the AGE” said Ross Ferrar, CEO of the Gaming Technologies Association, which hosted the Expo. “This year there were 246 exhibitors, with 60 more than what we had last year” and thanks to the generous and well designed loading docks at the new venue, “exhibitors reported that the bump-in for this massive event went smoothly and that the facilities were superior to anything else they’d experienced” Ross continued. This year saw a massive increase in visitors with the final count of 8,099 representing a 19% increase over 2016. Once they were at the show, visitors were able to optimise their time at the event because for the first time the Expo featured digital show bags, which allowed visitors to transfer information about exhibitors to their mobile device. “In my view, Digital Show Bags are a great success. There’s been a total of 11,967 badge “taps” at exhibitors’ stands during the first 2 days and 3,956 ‘daily digest’ emails sent to those who tapped” said Ross Ferrar. The Australasian Gaming Expo has exhibitors from broad spectrum of hospitality suppliers. Caterers were well represented at this year’s show with Riva Ice Cream serving over 4,000 tubs of ice cream and CEO Jeff Ganter saying that “the volume of visitors seemed to be 30% up on last year and we had a particularly good showing from the hotel groups”, while around the corner at the Commercial Kitchen Company, Robert Van den Bergh commented that he too had given away about 4,000 slices of Pizza and “we achieved distribution agreements in Tasmania and New Zealand, directly as a result of the show as well as selling 6 pizza systems”. Being a fully self-contained convention centre, the ICC allowed all associated events and functions to be held on-site and one such function was the Industry 48

Leader’s Dinner and for the attendees, “this event was extraordinary – from the dazzling décor, to the impeccable service, to the outstanding food” continued Ross Ferrar. Guests were very pleasantly surprised on arrival and their evening got better with every moment. Given the high profile of the guests, it was important that they would find the event memorable, as well as of high quality. The success of the event was assured as the staff of the ICC had “bought in” to that mission, which was obvious as guests were indeed be discussing ICC Sydney’s excellence while attending the AGE on the Thursday morning. Visitors were able to broaden their knowledge about hospitality and gaming with 1400 seats available across 7 complimentary seminars covering the latest developments in Venues, Technology, Research and Cash Management. These seminars were held in the new purpose built seminar rooms bristling with technology, with every session being well attended. One such event was the Women in Gaming luncheon. This event was hosted

by Nadine Grinblat, the Chief Executive of the Australasian Gaming Council who commented “A superlative, down to earth interview between local media identities Stephanie Brantz and Emma Freedman - as well as amazing hospitality from ICC Sydney - set the tone for elegantly relaxed but purposeful networking.” “The event was about connecting like minds and people across sectors to discuss how the gaming industry can be even more progressive - not just as individual businesses but as a collaborative community that values diversity and gender equality in both staff and leadership” Nadine added. Proving itself to be a world class event, the Australasian Gaming Expo attracted visitors from 26 countries with strong showings from the USA, UK, and more than 50 senior executives from Asia. Many overseas visitors were in awe of the standard of the new venue and the high standard of professionalism of the event’s management. Compare that with what your existing van is returning. These improvements add up to a significant saving over the average ownership period of 5 years. Less fuel used means less CO2 is emitted from the tailpipe as well, making the petrolpowered Kangoo even friendlier to drive in the city. The Renault Kangoo has made a lot of friends in the hospitality industry over the past four or five years, just as it has across a wide variety of industries from pet care

to plumbing, solar panel installation to security services companies. “The Kangoo has the highest share of its market of all the Renault vehicles we sell in Australia,” says Lyndon Healey, Senior Model Line Manager for Renault LCV. “The old petrol auto was our best-selling Kangoo model and now with an extra two speeds in the new automated gearbox, we expect demand to continue to climb. It’s a really fun vehicle to drive as well. “The new Kangoo petrol auto will be among the most affordable vans of this type on the market,” Lyndon says. “The 2017 petrol-powered Renault Kangoo vans are quieter, safer and easier to drive.
