Hospitality Workplace Safety

The hospitality industry records high numbers of workplace injuries. These pages explain some of the risks hospitality workers are exposed to and how to stay safe. Many workers in hospitality are considered vulnerable workers, they may speak limited English or work part-time, late nights and weekends.

TOP CASES OF INJURY

Manual handling injuries, such as sprains and strains, are one of the top harms in the NSW hospitality industry. This video series demonstrates safe work procedures for room attendants who are at high risk of manual handling injuries. Other harms include: • lacerations and amputations from machinery and equipment • electric shocks, eg when vacuuming wet carpets or cleaning ovens • hearing damage due to a noisy workplace • violence and aggression from people under the influence of drugs and alcohol • mental illness related to stress and fatigue • burns from hazardous chemicals or boiling liquids • slips trips and falls, when working on kitchens and bars.

COMMON HAZARDS

Each workplace is different. You need to know what the hazards are in your business to assess the risks they pose. • noise • machinery and equipment • manual handling • electricity • chemicals • bullying • fatigue • violence Examples of injuries Serious injuries have occurred in the hospitality industry. Identify the hazards in your workplace, get safe systems of work in place, and avoid incidents like these. Chemical burns A worker was burnt in the face and permanently blinded in one eye while cleaning beer lines with chemicals. The chemical was not properly diluted and personal protective equipment was not worn.

Arm crushed A kitchen assistant in a large club had her arm crushed while preparing desserts in a large mixing machine with no guard or automatic off-switch. Noticing a hair in the mixture, she leaned forward to remove it, slipped and had her arm crushed by the mixer’s revolving dough hook. Electrocution A 19 year-old part-time restaurant employee was electrocuted when he touched a live electrical cable while cleaning a clamshell grill. The company was fined $120,000 and, according to the judgement, simple remedial steps would have prevented the accident. Headaches and hearing loss Mary had headaches, felt irritable and experienced ringing in her ears after local bands played during her shifts as a parttime bar attendant in a local hotel.

BURNS IN RESTAURANTS AND KITCHENS SAFETY ALERT Work health and safety laws require PCBUs to eliminate risks from the use of hazardous chemicals or, where this is not possible, to control those risks as far as reasonably practicable. Where possible, use non-flammable waterbased chemicals for cleaning.

• Always follow instructions for safe

use and handling found in safety data sheets that should be obtained from the chemical supplier. Information should

also be available on the chemical container’s label. • Provide information, instruction, training and supervision to workers on the safe use of hazardous chemicals in the workplace. • Store and use flammable chemicals away from ignition sources such as heat and flames. • When using flammable chemicals, make sure you have an appropriate fire extinguisher and fire blanket at the

ready and make sure staff know how to use them. • Always store chemicals in their original container and, if the chemical is poured into another container (such as a spray bottle), make sure that the container is compatible with the chemical and that it is also clearly labelled. • Do not use food containers to hold hazardous chemicals.

CELLAR SAFETY - EXPOSURE TO GASES Carbon dioxide and nitrogen are asphyxiants; they displace air which reduces the level of oxygen in the atmosphere. They can cause suffocation at relatively low concentrations. Unsafe levels of carbon dioxide and nitrogen can cause headaches, muscle aches, dizziness, shortness of breath, unconsciousness and death.

• Locate gas cylinders in open air or

naturally ventilated areas or install ventilation systems. • Fit cellars with a gas monitoring alarm system mounted no more than 600mm off the cellar floor. www.hospitalitydirectory.com.au

• Install the correct gas monitoring

system for the type of gases used. • Ensure gas monitoring equipment has visual and audible alarms installed outside the cellar to warn people prior to entry. • Ensure gas monitoring equipment is regularly inspected and tested according to AS5034 and AS2005. • Train workers in cellar safety procedures and equipment, including how to respond if an alarm is raised (if alarm is raised, restrict entry to cellar or cool-room to appropriately trained and protected emergency personnel). • Only allow trained workers to access the cellar or cool room.

• Carry out weekly leak tests using a detergent/bubble solution.

• Check cylinder safety devices

regularly for damage or obstructions and contact your supplier if you see any. • With every cylinder change, fit new O-rings or sealing washers and leak-test the cylinder connections. • Keep gas stocks to a minimum – only store what is needed. • Ensure gas cylinders are stored upright and are secured with a chain or similar. • Ensure cellars, cool rooms and access steps are well lit. ROOM ATTENDANTS HEALTH AND SAFETY Over 50 percent of injuries in the accommodation industry involve room attendants (housekeeping staff). This video series demonstrates safe work procedures and provides instructions to prevent injuries to room attendants. These videos show the correct way to make beds, clean bathrooms, wring cloths, dust high surfaces, empty trash cans, and vacuum.

MANUAL TASKS For many businesses, manual tasks (commonly known as manual handling), is an important part of getting the job done. In many instances, manual tasks that workers are performing would actually be classified as hazardous (hazardous manual tasks). Hazardous manual tasks are the most common cause of workplace injuries and all businesses have a duty to manage them. Injuries can occur from a number of different tasks – such as sitting for too long, doing the same task again and again, overreaching and handling heavy items – and they can have long-term, costly impacts on your workers and your business. A manual task involves using your body to lift, lower, push, pull, carry or otherwise move, hold or restrain any person, animal or thing. Most jobs involve carrying out some type of manual tasks, but not all of them are hazardous.

A manual task becomes hazardous when one or more of the following risk factors are present: • repetitive or sustained force • high or sudden force • repetitive movement • sustained or awkward posture • vibration

Must do’s There are specific laws about managing hazardous manual tasks, as well as a code of practice. Some laws are general while others relate to designers, manufacturers, suppliers and importers of plant. You need to think about everything that could lead to musculoskeletal disorders, or sprains and strains.

CLEANING SOLVENTS AND THINNERS SAFETY ALERT This safety alert is about the adverse health effects of volatile solvents and thinners. All volatile solvents have the potential to cause a person to lose consciousness, and suffer a cardiac arrhythmia and possibly death when used in an enclosed or poorly ventilated area. Toluene xylene, hexane, methyl ethyl ketone, naphthalene, and other petroleumbased solvents have been implicated in deaths. Other chemicals present in proprietary thinners can greatly increase skin absorption causing or exacerbating toxic effects. Vapours from some solvents can create a hazardous atmosphere, which may lead to a fire or explosion if ignition sources are present. A person controlling a business or undertaking (PCBU) must:

• Manage the risk to health and safety associated when using, handling,

generating or storing a hazardous chemical at a workplace, as outlined in clause 351 of the Work Health and Safety Regulation 2017. • Ensure that information, training and instruction on the risks associated with the use of volatile solvents and thinners is provided to workers, as outlined in clause 39 of the WHS Regulation. • Ensure that a current safety data sheet (SDS) is readily accessible to any worker who uses a hazardous chemical, as outlined in clause 344 of the WHS Regulation. • Ensure that no-one at the workplace is exposed to airborne concentrations of hazardous chemicals that exceed the exposure standard, as outlined in clause 49 of the WHS Regulation. • Provide appropriate PPE, as per the requirements of clauses 44-47 of the WHS Regulation. • Ensure there are no ignition sources present, such as lighting or electrical equipment that is not designed for safe use in hazardous atmospheres, as outlined in clauses 51, 52 and 355 of

the WHS Regulation.

• Follow the requirements outlined in

clauses 62-77 of the WHS Regulation if the work is undertaken in a confined space.

Risk control measures

• Substitute the solvent-based cleaner with a water-based cleaner.

• Ensure there is enough ventilation to

keep the solvent vapours below the Australian Exposure Standard (ES). • Read the SDS to determine what PPE is necessary to prevent absorption, and what engineering controls are appropriate. • Train workers on how to use PPE. • For areas that are enclosed or partially enclosed, stand outside the area and use a long-handled mop to clean the confined area. • Ensure there are no ignition sources when using solvents in an enclosed or partially enclosed area, as there is potential for creating a hazardous atmosphere.

About 90 per cent of the produce we sell today is locally grown.” While SPC is best known for its tinned fruit range, in recent years the business has been moving to innovative value added products, such as its SPC ProVital snacking cups in easy-open cups – an award-winning design developed with input from Arthritis Australia. These have proven very popular in the health and aged care market. “We’re very much focused not only on quality and consistency but how the food is delivered – for example, the market has moved beyond wanting everything in 3kg bulk tins and we are evolving accordingly. While that traditional packaging works for some operators, for others it’s challenging to have to open a 3kg tins during a busy service period. “From a foodservice perspective we need to make sure that our packaging meets end-users’ needs for ease of use, resealability, ease of storage and so on. We have a bag-in-box solution already in the marketplace and we’re also trialling a number of different packaging solutions with foodservice operators because

they’re the ones who will make the final purchase decisions.” SPC has also expanded its product offering through acquisition of several complementary businesses over the last few years. One is Pom Life, which processes and markets pomegranates locally grown in the Goulburn Valley – “we have a fresh product, a frozen one and a juice that we sell across both retail and foodservice. Pomegranates are certainly on-trend and growing in popular across the market.” Another recent acquisition is Helping Humans, which produces a kombuchabased cold beverage offering functional health benefits and a range of juices that are being sold across various foodservice market segments including the route trade. And late last year SPC acquired a frozen meal company called Cuisine which provides food to consumers who aren’t in a position to cook nutritious meals for themselves. SPC is also well known for its ingredients range, including two-fruits and fruit salad in sliced and diced formats, which are popular as fillings for the bakery market, and of course its snack cups and fruit puree products. 10 Portions pasta 10 Portions seafood (prawns, mussels, salmon, clams, scallops, calamari) 10g Chilli sliced 50g Garlic sliced very thin 500ml Tomato, peeled & diced 500ml Wine white 50g Chopped parsley 50ml Lemon juice 50g Butter

1: Boil pasta until al dente.

200ml Pura Tuscan Blend Prawn Infused Oil - 500 Green prawn shells - 500ml Pura Tuscan Blend oil Basil & Spinach Infused Oil - 1 cup basil leaves picked - 1 cup spinach baby picked - 1 cup Pura Tuscan Blend oil - Pinch of salt

3: To pan add chilli, garlic cook for 30 secs. Add wine and tomato, reduce for 1 min. Add seafood, toss through well. Add herbs butter and lemon. To serve garnish with Pura Tuscan Blend basil & spinach infused oil

1: Wash basil and spinach leaves. Blanch basil and spinach in boiling salted water for 1 minute. Refresh in iced water to stop cooking process.

1: Break up/crush prawns shells with a meat mallet. In a large saucepan cover prawn shells with oil. Bring to the boil, reduce heat and simmer for about 60 minutes. The oil will clarify and become clear when ready.

2: Drain well and squeeze out water. Place blanched basil, spinach, oil and salt into a blender or food processor and puree. Strain oil through muslin or a very fine sieve into a glass jar or bottle. Refrigerate until needed. FOR BEST RESULTS: Use within 7 days. Yields 250ml www.hospitalitydirectory.com.au

GORENG INGREDIENTS (makes 3) 385g Fortune Everyday Jasmine Rice 38mL Simply Sunflower Oil 150g Chicken Breast (thinly sliced) 45mL Kecap Manis 2each Garlic Cloves (finely chopped) 1each Red Chilli (finely chopped) 1 each Onion (diced) 30 mL Shrimp Paste 4 each Eggs (fried) 1 each Shallots (sliced) 2 each Tomatoes (wedged) 2 each Cucumbers (wedged) 2 each Limes (wedged) 5 g Fried Shallots METHOD 1: Pour Simply Sunflower Oil in a large heated pan or wok, then quickly add the onion and garlic to the dish. Move them around otherwise they will burn. 2: Then, add the pre-cooked Fortune Everyday Jasmine Rice and stir. Make sure you cook

the rice the night before because you want the rice to separate in the pan; if you use freshly cooked rice, it will clump during the frying process. Then, add the coriander, chilli, shrimp paste and two tablespoons of kecap manis and reduce down until the rice starts to caramelise. This is key for the flavour. Once it has combined, add the fresh shallots to the mixture. 3: Fry the sliced chicken on the heated pan, coat with the remaining kecap manis. The sugars in the sauce will caramelise the chicken. To serve garnish with Pura Tuscan Blend basil & spinach infused oil 4: To serve your nasi goreng, scoop the fried rice mixture into a bowl, add the caramelised chicken and fried egg on top. Garnish with tomato and cucumber wedges, fried shallots and lemon or lime.

INGREDIENTS (serves 10) 500g Pampas Filo Pastry 220g CSR Caster Sugar 1each Gold'n Canola Oil Spray 375g Walnuts 200g Blanched Almond 200g Pitachio 5g Cinnamon 250g Butter (Melted) 120g Honey 30g Water METHOD 1: In a food processor add the walnuts, almonds and pistachios and blend it until a crushed nuts paste has formed. Don’t crush the nuts too much because you want it to have some texture within the baklava.

2: Place some baking paper down on a tray approximately 25cm x 36cm and coat it with a layer of Gold’n Canola Oil Spray. Then, start adding layers of Pampas Filo Pastry. Place about six to 10 layers down – the idea of this is to build a base thick enough to hold the nuts. 3: Pour the crushed nuts on the base layer, you want a nice thick layer to ensure there is some texture throughout the dessert. Next start to add more layers of Pampas Filo Pastry so it is about 20 to 30 pieces high. Slice the dessert using a sharp knife; make sure you get through all of the layers and right down to the bottom to make it easier to get out of the tray.

4: Traditionally, when making baklava butter is brushed on th pastry throughout every layer, though for a quicker option, m the butter and pour it over the baklava. Place the dessert in a preheated oven at 160 degree celsius for about 45 minutes o until golden brown.

5: While the baklava is in the oven, place a pot on the stove and melt the CSR Caster Sugar, honey, water and cinnamon to make the rich syrup. Cook the mixture until it reaches approximately 125 degrees celsius.

6: Once the baklava is ready, pour the syrup over-the-top. Make sure you do this while it still hot as this will allow the sy to be absorbed and this will no make the pastry soggy. Coat th top with some pistachios.
