Cocktails

Fruity and fzzy or fresh and smooth – what’s your favourite? Our versions of classic cocktails are perfect for long, hot evenings

Mint Madness Put a handful of crushed ice in a tumbler. Add 1 part white rum, 1 part lime juice and top up with sparkling water. Garnish with fresh mint leaves.

Peachy Fizz Purée fresh or canned peaches with a hand blender. Spoon into a flute glass until it’s onethird full, then top up with Prosecco.

Coconut Crown Chop up some fresh pineapple and whizz with a hand blender. Mix 1 part white rum and 3 parts pineapple juice. Stir in grated fresh coconut or a splash of coconut milk. Garnish with fresh pineapple wedges.
