Simple to make and so tasty... Just leave them on the barbecue, or grill, until the meat or fsh has cooked through and the vegetables soften

Halloumi, mushroom & red pepper v
Marinate pieces of red pepper and whole button mushrooms in lemon juice, olive oil and fnely chopped red chilli. Thread on skewers with large cubes of halloumi.

Lamb kofta
Using your hands, mix minced lamb with crushed garlic, breadcrumbs, shredded mint and allspice. Shape into small oval meatballs and thread on skewers.

Lemon pork & potato
Marinate pieces of pork fllet and halved, parboiled baby potatoes in olive oil, rosemary, lemon juice and zest. Layer on skewers.
