Leftover chicken & barley broth
Soup tips ● Thicken it
♦ Dice
a large carrot, slice a trimmed leek and cook in 1tbsp oil with a chopped large onion for 6-7 minutes. ♦ Add 750ml chicken stock, (homemade or made with a stock cube). Simmer and add 150g pearl barley. Cover and simmer for 35 minutes. ♦ Add 300g leftover cooked chicken, torn into bite-sized pieces, along with 100g shredded savoy cabbage. ♦ Simmer for 5 minutes until the chicken is piping hot. Serves 4

Bolognese tips ● Make mince
Leftover roast beef can be minced with a hand mincer or food processor. Freeze, then use another time to make a meat sauce. ● Freeze tomatoes
Fresh tomatoes can be used instead of canned ones in a Bolognese sauce. Simply remove their stalks and freeze the tomatoes whole in freezer bags. Don’t defrost before cooking, as they’ll go mushy!
To help thicken your soup, simply whisk in some leftover mashed potato and heat through. Alternatively, remove half the vegetables and blend with a little stock until smooth, then return to the pan. ● Crispy croutons
To make some homemade croutons for your soup, toss chunks of bread in olive oil and bake until crisp and golden. This is a great way to use up stale pieces of bread and they add a delicious crunch to any soup flavour.
Leftover Bolognese Quesadilla ♦ Lay
4 flour tortillas on a board and top with 350g leftover Bolognese sauce. ♦ Sprinkle over 100g grated Cheddar cheese and top each one with another tortilla. ♦ Cook on a griddle or in a frying pan for 3 minutes on each side until heated through. ♦ Sprinkle with chopped fresh coriander and serve with salad.
