Lemon & mint sorbet This zesty citrus sorbet is delicious served in a cone or with fresh fruit – plus, it’s totally fat free SERVES 8 READY IN 6HRS PRICE PER SERVING 33p Finely grated zest of 2 unwaxed lemons 225g caster sugar 31g pack Asda Mint (leaves only, discard stems) 300ml lemon juice 1 Heat the lemon zest, caster sugar and mint gently in a pan with 300ml water, stirring until the sugar dissolves. Simmer for 2-3mins, then leave to cool. 2 Discard the mint. Add the juice to the mixture, then strain through a sieve. 34

3 Pour into a plastic or metal container and freeze for 1hr. Whisk well with a fork, then freeze for another 30mins. 4 Keep freezing and then whisking the mixture every 30mins until almost frozen. 5 Whizz in a food processor to break up the ice crystals for a smoother texture. Freeze for at least another 30mins before serving.
