Line a baking tray with baking

paper. Using a sharp knife, cut each chicken breast in half through the middle to make 2 thinner pieces. Put on the baking tray. 2 Spread the pesto thickly on the chicken fillets and sprinkle over the breadcrumbs, pressing down lightly. 3 Bake for 15 minutes or until the meat is cooked through, so the juices run clear. 4 Serve the chicken with the Mediterranean vegetables and new potatoes.
