This issue celebrates the best of old fashioned British dishes – starting with our irresistible chocolate sponge pudding cover star. Here’s how to make the large version on our cover, or turn to page 58 for individual pudding recipes. Beat together 115g softened butter, 115g caster sugar, 2 large eggs, 100g self-raising flour and 15g cocoa powder. Cook in a large pudding basin (see page 58 for instructions) for C 4½-5 minutes in the microwave or 1hr in the oven.
