WELCOME WELCOME As a child of the late-’80ss and ’90s, I loved all the festive catalogues and food and gift guides. I’d read through them, folding down pages as I went, to bookmark the most delicious dishes, coolest presents and top ideas for the ultimate Christmas. I lived for it! Sadly, my parents never Hana Keirnan got me a Mr Frosty snowm man slush maker, but Asda Editor they did get a sense of my y mince pie obsession! This bum mper issue captures all that excitement. Packed with juicy soaked fruit, cittrus zest and warm spice, this cake is a traditional treat. Make ahead to allow the flavours to mature, then decorate nearer the big day, if you want

● 350g seedless raisins ● 300g sultanas ● 250g currants ● 100g glacé cherries, quartered ● Finely grated zest 1 orange ● Finely grated zest 1 unwaxed lemon ● 100ml brandy (or cold tea) for soaking, plus extra brandy for ‘feeding’ the cake later (optional) ● 250g plain flour ● 2tsp mixed spice ● 225g unsalted butter, softened ● 225g soft brown sugar ● 4 large eggs ● 100g blanched almonds, finely chopped 1 Put the raisins, sultanas, currants and cherries in a bowl with the zest and 100ml brandy (or cold tea). Cover with clingfilm and leave to soak for 1-2 days, stirring occasionally. 2 Preheat the oven to 150C/130C Fan/Gas 2. Line a 22cm deep round or 20cm deep square cake tin with 3 layers of baking paper. 3 Sift the flour and mixed spice together into a bowl. 4 Beat the butter and soft brown sugar together in another large bowl until creamy. Beat in the eggs, 1 at a time, adding 1 heaped tbsp of the flour with each of the last 2 eggs. 5 Stir in the rest of the flour with 8 | ASDAGOODLIVING.CO.UK

Dampen your fingertips and pat over the top of the cake, being careful not to make it wet – this helps to prevent the top becoming too hard as it cooks. 7 Bake for 1 hr. Cut 2 pieces of baking paper to the same size as the top of the cake and cut a hole the size of a 10p coin in the centre of each. Lay on top of the cake. Reduce the oven to 140C/ 120C Fan/Gas 1 and bake the cake for another 2-3 hrs or until a skewer inserted in the middle comes out clean. Start testing after 2 hrs, as ovens can vary. 8 Cool in the tin for 30 mins, then remove from the tin, discard the paper and put on a rack to cool completely. Wrap in fresh baking paper and store in an airtight container. 9 If you want to ‘feed’ the cake with brandy, start a week after it has been stored. Unwrap the cake, pierce the top in several places with a skewer and drizzle over 1tbsp brandy. Then wrap and store. Every week, unwrap the cake, drizzle over some more brandy, then rewrap and store. FOR THE CAKES ● 225g unsalted butter, softened ● 225g light soft brown sugar ● 4 large eggs ● 250g plain flour ● 300g sultanas ● 200g currants ● 200g seedless raisins ● 200g glacé cherries, halved ● 40g Brazil nuts, chopped ● 40g hazelnuts, chopped ● 40g macadamia nuts, chopped ● 40g whole blanched almonds, chopped ● 6tbsp Baileys The Original Irish Cream to ‘feed’ the cake (optional) TO DECORATE ● 40g hazelnuts, roughly chopped ● 100g icing sugar ● 2tbsp Baileys The Original Irish Cream (or cold espresso coffee) ● 40g macadamia nuts, roughly chopped 1 Preheat the oven to 150C/ 130C Fan/Gas 2. Line two 21cm x 11cm loaf tins with 3 layers of baking paper. 2 Beat the butter and soft brown sugar together until light and fluffy. Beat in the eggs, 1 at a time, adding 1 rounded tablespoon of the flour with each of the last 2 eggs. 3 Fold in the rest of the flour, then the sultanas, currants, raisins, glacé cherries and chopped nuts. 4 Divide the mixture between the 2 cake tins and level the mixture. Dampen your fingertips and pat all over the top – this

helps stop it becoming too hard when cooking. Bake for 1 hr. 5 Cut 2 pieces of baking paper the size of the top of the tins and make a hole the size of a 10p coin in the centre of each – this will help stop the top browning too much. Lay the pieces of paper on top of the cakes. 6 Reduce the oven temperature to 140C/120C Fan/Gas 1 and cook for 1 hr 30 mins or until a skewer inserted in the centre comes out clean. Start testing after 1 hr, as ovens can vary. 7 Remove the cakes from the tins (keeping the paper on) and cool on a wire rack. When cold, discard the paper and wrap the cakes individually in fresh baking paper then foil. Store in an airtight container. 8 If you want to ‘feed’ the cakes, you’ll need to start 5 days before decorating. Prick the cakes all over with a skewer and drizzle 1tbsp of the Baileys over each cake. Wrap and store as before. Repeat every day for another 2 days. 9 When you’re ready to decorate the cake, preheat the oven to 180C/160C Fan/Gas 4. Put the hazelnuts on a baking tray. Bake for 5 mins until lightly toasted. 10 Mix the icing sugar with the Baileys (or espresso, if using). Drizzle in a zigzag pattern over the top of the cake. Decorate with the toasted hazelnuts and macadamias, then set aside for the icing to set. Energy

FOR THE CAKE ● 200g Asda Dried Cherries ● 400g raisins ● 2 x 70g packs Whitworths Cherries & Berries ● 150g glacé cherries, halved ● 100ml cherry brandy (or cold tea) for soaking, plus 6tbsp cherry brandy (optional) for ‘feeding’ the cake later ● 200g plain flour ● 50g cocoa ● 75g ground almonds ● 225g unsalted butter, softened ● 225g dark soft brown sugar ● 4 large eggs ● 1tbsp seedless raspberry jam ● 150g Dr. Oetker Extra Dark Chocolate Chunks TO DECORATE ● 115g seedless raspberry jam ● 100g Lindt Excellence Dark Chocolate ● 125g unsalted butter, softened ● ½tsp vanilla extract ● 250g icing sugar ● 8 fresh cherries 1 Put the dried cherries, raisins, cherries & berries mix and glacé cherries in a bowl. Add the brandy (or tea) and stir once. Cover and set aside for 24 hours to soak. 2 Preheat the oven to 150C/130C Fan/Gas 2. Line a 20cm square tin with 3 layers of baking paper. 3 Sift the flour and cocoa together and stir in the almonds. 4 In a separate bowl, beat the butter and brown sugar together until light and fluffy. Beat in the eggs, one at a time, adding a

rounded tablespoon of the flour with each of the last 2 eggs. Stir in the raspberry jam and the chocolate chunks. 5 Fold in the rest of the flour mixture, followed by the soaked fruit and any soaking liquid. 6 Put into the cake tin and level the top. Dampen your fingertips and pat all over the top – this helps prevent it becoming too hard as it cooks. Bake for 1 hr. 7 Cut 2 squares of baking paper measuring 20cm and cut a hole the size of a 10p coin in each. Lay them on top of the cake – this will prevent it browning too much. Reduce the oven to 140C/120C Fan/Gas 1 and bake the cake for another 2-3 hrs or until a skewer inserted into the centre comes out clean.

8 Remove the cake from the tin (keeping the paper on) and cool on a wire rack. When cold, remove the paper, wrap the cake in fresh baking paper and then foil. Store in an airtight container. 9 If you want to ‘feed’ the cake with cherry brandy, start a week after it has been stored. Unwrap the cake, pierce the top in several places with a skewer and drizzle over 2tbsp of the feeding cherry brandy. Rewrap and store as before. Our recipes and tips will ensure less stress on the big day Food editor Gregor McMaster says: ‘Even the best cooks can feel a bit anxious about prepping the big Christmas Day meal – after all, you want it to be perfect! But remember that once the turkey has been roasted, you’ll need to rest it for 1 hr to 90 mins to make sure the meat is 16 | ASDA.COM/GROCERIES

British Free Range Corn Fed Bronze Turkey (typically 6.25kg)* ● 100g butter or 100g flavoured butter (right), softened ● 3 large carrots, halved ● 2 celery sticks, halved ● 10 bay leaves, plus extra to garnish ● 25g bunch sage leaves, plus extra to garnish ● 15g bunch thyme ● 15g bunch rosemary sprigs ● 5 red onions, cut into wedges ● 2 bulbs garlic, halved or separated into cloves ● 100ml orange juice ● 50ml maple syrup 1 Calculate the cooking time for the turkey. 2 Gently lift the skin around the turkey’s neck so you can get your hands underneath – take care not to tear it. Rub ½ the butter between the skin and meat, then rub the rest all over the skin. Put in the fridge to rest for 30 mins to 1 hr. Take out of the fridge at least 30 mins before roasting to bring back to room temp. 3 Preheat the oven to 190C/170C Fan/Gas 5. 4 Arrange the carrots and celery in the centre of a large roasting tin and put the turkey on top. over the orange juice, then cover the bird loosely with foil. 5 Roast for the calculated cooking time, minus 30 mins. Remove the foil, baste, and brush over the maple syrup. 6 Turn up the oven to 200C/180C Fan/Gas 6. Roast uncovered for the remaining 30 mins to crisp up the skin. 7 Test if the turkey is cooked by piercing the thickest part of the thigh with a skewer. If the juices run clear, it’s cooked. If they are pink, return to the oven for 15 mins, then check again. Repeat until cooked. Or test with a meat thermometer: stick the probe into the thickest part of the thigh – it should maintain a temp of 75C for 2 mins. 8 Once cooked, tilt the turkey to let any juices run out into the tin and reserve to make the gravy (p18). Discard the celery and carrots. 9 Move the turkey to a platter. Cover with 2 fresh layers of foil and a tea towel, then rest in a warm place for 1 hr to 90 mins. 10 Garnish with the onion wedges, garlic and extra bay and sage leaves, then carve to serve (see tips, p18). ‘The ultimate bird deserves a delicious gravy, made using a scratch-cooked savoury stock’

SERVES 8 READY IN 1 HR 10 MINS ● Giblets from the turkey

(or 1 chicken stock cube if you have no giblets) ● 1 carrot, halved ● 1 onion, halved ● 1 bay leaf ● 3 sprigs parsley ● 3 sprigs thyme ● Juices from the roasting tin ● 3tbsp plain flour ● 2tbsp redcurrant jelly 1 The day before, make a stock from the turkey

giblets. Discard the liver and put the rest in a pan with the carrot, onion and herbs. Add 650ml boiling water and partially cover the pan. Simmer for 2 hrs, skimming the top occasionally. Strain, skim, cool and refrigerate. 2 If your turkey has no giblets, make the stock using a chicken stock cube made up to 650ml with boiling water. 3 On the day, discard the

fat from the turkey roasting tin. Put the juices in a pan, along with any browned bits scraped from the bottom of the tin. 4 Stir in the flour to make a smooth paste. Cook on low for 30 secs, stirring with a whisk. 5 Add the stock and redcurrant jelly. Bring to the boil, whisking. Simmer for 3 mins, then serve in a jug or gravy boat. HOW TO CARVE Gregor says: ‘You’ve roasted the turkey, now it’s time to get carving. With a sharp knife, plus the right technique, there’ll be plenty of succulent meat to go around. Delicious!’

● To prevent turkey juices running over your work tops, place a wooden spoon in the cavity of the roasted and rested bird while it’s still in the roasting tray and carefully lift it at an angle to drain the cavity. ● Start off by removing the legs and thighs.

Cut through the skin that connects them to the breast, then slice off the meat. To make it easier to remove the breasts, take out the wishbone – set it aside safely so you can pull it and make a wish!

● Next, cut off the breasts, one at a time. Run

CHRISTMAS DAY Sloe gin-marinated beetroot Wellington with carrot crisps

This stunning veg Wellington has an irresistible filling of whole beetroot encased in a herby root veg mash SERVES 8 READY IN 1 HR 15 MINS, PLUS MARINATING AND COOLING PRICE PER SERVING £1.19 ● 200ml Gordon’s Sloe Gin (or cranberry juice) ● 1tbsp red wine vinegar ● 2 bay leaves ● ½tsp black peppercorns ● 1 sprig rosemary, plus 1tbsp chopped rosemary leaves for the veg filling ● 2 x 300g packs Asda British Cooked Beetroot ● 1tbsp unsalted butter ● 500g pack Asda frozen Carrot & Swede Mash ● 1tbsp chopped flat-leaf parsley, plus extra to serve ● 375g pack Asda Ready Rolled Puff Pastry ● 1 medium egg, beaten ● 1tbsp Dijon mustard ● 1tsp fennel seeds ● 2 medium carrots, peeled ● 1tbsp rapeseed oil ● 1tbsp maple syrup 1 For the beetroot, put the sloe gin (or cranberry juice, if using), red wine vinegar, bay leaves, peppercorns and sprig of rosemary with 100ml water in a small pan. Bring to a simmer. 2 Take off the heat and add the beetroot. Cover, set aside and leave to marinate for at least 2 hrs, turning regularly if not covered by the liquid. 3 For the Wellington, melt the butter in a large nonstick frying pan. Add the frozen carrot and swede mash and the chopped rosemary; season with black pepper. Cook over a low heat, stirring, for 8-10 mins until thawed and quite dry. Stir in the chopped parsley and leave to cool.

4 Preheat the oven to 200C/ 180C Fan/Gas 6. Line a large baking tray with baking paper. 5 Unroll the pastry with the longer edge facing towards you, and brush with beaten egg, leaving a 2cm border all around the edge. Spread the mustard over the egg and top with the mash, leaving the border uncovered. 6 Remove the beetroot from its liquid and pat dry with kitchen paper. Arrange in a horizontal row in the centre of the mash filling. Using the paper from the pastry, lift one of the long sides over to cover the beetroot. Fold the other side over and use a fork to seal the pastry. Fold the short ends over, tucking the corners in. 7 Use the paper to help flip the Wellington onto the tray, seam-side down. Score across the pastry lightly, then glaze with the egg. Sprinkle with ½tsp fennel seeds and a grind of black pepper. Bake for 30-35 mins until golden. 8 Meanwhile, for the carrot crisps, spiralize the carrots or shave using a veg peeler. Toss with the oil, maple syrup and the other ½tsp fennel seeds. Season with pepper and spread out on a tray lined with baking paper. Bake for 15-20 mins until starting to crisp. Leave on the tray to cool and crisp up. 9 Leave the cooked Wellington to cool for 10 mins, then top with the carrot curls and extra parsley to serve. Energy

a thin disc from the roundest part of the outside of each squash half, parallel to the cut side, so it sits flat. Score the flesh of the squash, taking care not to cut through the skin. 2 Put the squash in a roasting tin lined with greaseproof paper. Rub 1tsp of the oil over the squash. Roast for 40-45 mins. 3 Meanwhile, for the risotto, bring 500ml water to a simmer and add the stock pot. Stir until dissolved, then take off the heat and add the saffron. Once all the stock has been added and the risotto is thick, take off the heat. Remove the rosemary. 7 Use a spoon to scoop out most of the flesh from the rounded end of each squash half, leaving a 1cm border. 8 Stir the squash flesh into he risotto with the spinach and feta. Spoon into the squash shells and scatter over the pine nuts. Return to the oven for 15 mins until bubbling and browned. 9 Sprinkle with black pepper and garnish with extra rosemary before serving. Remove from the heat; stir through the crème fraîche and the thyme leaves. Season with black pepper. Keep warm on a low heat, stirring occasionally. 11 Bring a large pan of water to the boil. Add the potatoes and simmer for 15-20 mins until tender. Drain and leave to steam dry for 30 secs, then return to the pan and mash until smooth. 12 Add the infused milk to the mash, beating it in with a wooden spoon until smooth and fluffy. Fold the rest of the bacon and mushroom mixture through the mash; season with black pepper. 13 Transfer the beef, shallots, garlic and herbs to a platter and garnish with the extra bay leaves, if using. 1 Grease a 20cm round springform tin with a little butter. 2 Melt the dark chocolate in a heatproof bowl over a pan of simmering water. Allow to cool but not set. 3 In a large bowl, whip the cream into soft peaks. 4 In a separate bowl, mix the mascarpone, icing sugar, Cointreau and vanilla extract. 5 Mix together the cream, mascarpone mixture and melted chocolate. 6 Dip the bottom of each

profiterole in the chocolate cream. Arrange ½ in a layer in the tin and fill in the gaps with the remaining chocolate cream. Top with the remaining profiteroles, to form a dome. 7 Chill the cake in the fridge for at least 4 hrs. 8 Warm the chocolate sauce sachets from the profiterole packs in a heatproof bowl over simmering water. 1 Grease a 24cm loaf tin with a little of the butter and line with clingfilm, leaving some hanging over the sides. 2 In a large bowl, beat together the yogurt, vanilla and soft cheese until smooth. Fold in the icing sugar. Cover and freeze for 8 hrs, stirring every 2 hrs or so. When the mixture gets slushy, transfer to the prepared tin, leaving at least 1cm unfilled at the top. 3 Heat the butter in a small pan on a low setting to melt. 4 Blitz the biscuits in a food

processor until they form sandy crumbs, then mix into the melted butter. 5 Take the tin out of the freezer and top the frozen mixture with the crumbs, pressing and smoothing to form an even layer. Return to the freezer for 30 mins. 6 To assemble, take the loaf tin out of the freezer, turn it upside down over a serving plate, then carefully lift off the tin and remove the clingfilm. Top with the fruit. 7 Put the Biscoff spread in a microwaveable bowl. Zap for 30 secs to melt; drizzle over. 8 Slice the dessert to serve. Energy

‘Is the age of a wine an indication of the quality?’

Not necessarily. It may be true for big, oak-aged reds, but most wines are good to go when first released and many whites and rosés are best drunk ‘young’.

Swirling & sniffing:

Is it really necessary?

You can just pick up a glass and take a sip, but that means missing out on half the fun, because our sense of smell is far more powerful than our taste. If you sip without swirling and sniffing, you won’t get a nose full of lovely aromas. But if you smell first, you’ll get the most out of the flavours. Next time you’re drinking a glass of wine, take one sip while holding your nose and the next without. Then you’ll see what I mean.

‘These are the guidelines I follow when thinking about which wines to serve with food,’ says Helen. ● ‘Think of the main ingredient

in the dish and pick a wine that will match rather than fight with the flavour. Beef stew will drown a lemony pinot grigio, but put it with malbec and everyone’s happy. Similarly, sip that malbec with a delicate piece of fish and you’ll taste nothing but the wine. Try it with sauvignon

blanc instead, and it’ll be a triumph. Pinot noir is a great option for Christmas dinner.’

● ‘When the cheeseboard hits

the table don’t automatically reach for the red. Creamy white cheeses will often work best with dry white wines, especially Chardonnay. A strong, hard cheese, such as a mature Cheddar, calls for something a little bigger on flavour, such as Rioja, while blue cheese needs a wine that’s fairly sweet, like Sauternes.’

What’s the difference?

Champagne comes from France’s Champagne region, and is made from three grapes: pinot noir, chardonnay and pinot meunier. It gets its bubbles from a second fermentation in the bottle. Prosecco is made from a grape called glera, grown across Italy’s Veneto and Friuli-Venezia Giulia regions. Its bubbles come from a second fermentation in a tank, not the bottle, which results in a softer, frothier fizz.

Not only are screwcaps convenient, they ensure the wine isn’t affected by cork taint, which can make it taste odd.

‘The wines outlined below are among the most popular in the UK. It’s always good to know a bit about what’s in your glass so here’s the lowdown...’

Chardonnay

The chardonnay grape sucks up its surroundings. If grown in a warm region, expect tropical fruit flavours, while from a cooler area, it’s more apple-y. Extra Special Chardonnay, £7.50 (75cl) from Australia’s Barossa Valley, has rich citrus with subtle vanilla.

When it comes to white wine, whatever your style preference there’s a grape variety that’s certain to suit your taste buds…

Sauvignon blanc

This grape’s flavours range from sharp citrus to softer passion fruit, but whether from Sancerre in France or Marlborough in New Zealand, it’s always deliciously aromatic. Extra Special Pouilly Fumé, £12.50 (75cl) is an excellent sauvignon blanc wine.

Viognier

Fancy something different? For heady stone fruit flavours with plenty of oomph, try the Viognier grape. France and Australia produce quality bottles, and if fresh, fruity Cono Sur Viognier, £7.25 (75cl) is anything to go by, Chile is one to watch, too.

Temperature

As a general rule, you want to serve reds at room temperature (around 15C) and your whites and rosés nicely chilled (around 10C). Any warmer and your reds will taste like soup; too cold and you’ll struggle to find the flavours in the glass.

With an enormous range of red grapes to choose from it’s really just a question of picking whichever one you’re in the mood for!

Glasses

Professional wine tasters sup from a tulip-shaped glass, to best capture the aromas released when the wine is given a good swirl around the bowl of the glass. But I think that as long as your glasses are sparkling clean, you can pour with pride – your house, your rules!

Decanting

Cabernet sauvignon

This grape is the hero of France’s Bordeaux region. Expect plenty of bold, black-fruit flavours: think blackcurrants, cherries and blackberries. Its alcohol content is often 13.5% or above, so it’s a good one to drink with food! Taste it in Extra Special Cabernet Sauvignon, £6.50 (75cl). 64 | ASDA.COM/GROCERIES

Merlot

Frequently found in a blend with cabernet sauvignon, think of this as the jam to cabernet’s doughnut. It’s a great option if you don’t like your wines too robust, as it’s often juicier and softer. Try full-bodied Villa Vincini Il Gran Rosso, £8 (75cl), which pairs merlot and corvina grapes.

Pinot noir

Originally associated with Burgundy, France, pinot noir has become a global phenomenon. Light-to-medium bodied, the taste ranges from cranberry to clove, and its drinkability makes it a safe bet. Enjoy it in Extra Special New Zealand Pinot Noir, was £10, now £9*.

Most wines nowadays don’t ‘throw’ sediment (the technical term for bits left at the bottom of the bottle) so you don’t need to decant them. However, decanting a bottle before serving allows the flavours to really develop. You can also do this once the wine is in the glass by giving it a good swirl, but decanters look fancy, and it’s Christmas – the perfect time to give it a go!

Bring to a boil, then simmer for 5 mins. 5 Add the flour to the onions with the Worcestershire sauce and a splash of the stock. Stir to combine and fry gently for 3 mins. Gradually stir in the rest of the stock; bring to a simmer and cook for 5-7 mins until thickened. Reduce the heat, stir in the cream and season with black pepper. 6 Meanwhile, steam the broccoli florets for 5 mins until tender. 7 Blitz the beans to a smooth mash with a handheld blender. Favourite festive traditions? Christmas is all about sparkly lights, reindeer ornaments and the smell of hot food, which is, of course, the key to life! So food’s a big part of it for you? We only give stuff we can eat or use in the bath, so it’s basically shampoo or cheese – if you’re over 18 expect caramelised cashews or hand cream. Any favourite Christmas treats? Brandy butter – is there any better invention? With Christmas being so hectic, how do you like to relax? I got into bridge in my 20s. People think you have to be good at numbers, but you really don’t! You’re trying to find out what other people have in their hand – that’s why I love it. Do you exercise? I’m not really into exercise, although I need to be, because my upper arms are getting wobbly. I will go for a walk, albeit a very slow one – no Lycra needs to be involved. Spend time with friends I’ve had the same ones forever and I adore them more each day. I’ve always had the same friends. Take lots of naps See my answer on sleep. Nothing beats 40 winks.

Pass the fizz I don’t drink caffeine, but I do drink a lot of Diet 7Up. It can’t be good for me. Curl up and crochet I asked for a crochet set for my 21st birthday. Mentally, I’m about 76. Let someone else doing the cooking My husband [TV producer Kris Thykier] is far better than me in the kitchen. He cooks proper food. I just do cheese.

I was supposed to do something g arty – my degree was in fine art. But it wasn’t for me. I was brought up by parents [journalist Eve Pollard and stepfather Nicholas Lloyd], who worked in journalism – our house was fast-paced and noisy. Art was too slow, too mild. I wanted noise! You have a very distinctive look. How did that develop? I discovered orange in my early teens. My mother had a brick of orange called Ultra Glow, and I thought, ‘I’ll have a go with that!’ I was neon – I loved it. That and black eyeliner, and black clothes. On Strictly, they make me wear sparkly numbers, but left to my own devices, nothing beats black.
