‘Briony loved making butterfly cakes’ Briony’s mum, Colleen McKean, 66, encouraged her passion for baking ‘When Briony was little, supermarkets didn’t sell novelty birthday cakes, so I’d make my own Care Bear and My Little Pony versions. However, the characters didn’t always look quite like they did on TV! My mum, Pat, gave me the recipe for butterfly cupcakes and they were a firm favourite with Briony. She would go to town decorating them with sprinkles and chocolate buttons, making them look so pretty.

Briony never let her little hand hold her back. She tried a prosthetic, but didn’t get on with it. Instead, she found her own way, telling me: “I can manage, Mummy. I’m fine.” The first time she made the butterfly cupcakes, it felt fabulous to see her succeed; I’ll never forget her beaming smile! was young, so most of my recipes were torn out of magazines or passed on from friends or family. I kept them in a file, which I found recently and gave to Briony. I feel so proud that I helped nurture her love of baking and I love seeing her making cakes with Nora.’

Baking Cakes ● 100g caster sugar ● 2 medium eggs ● 1 00g self-raising flour ● 1 tsp Asda 100’s & 1000’s ● 50g strawberry jam

1 Preheat the oven to 200C/180C Fan/Gas 6. Line 12 holes of a muffin tin with cupcake cases. 2 Beat together the Asda Best for Baking Cakes and sugar until pale and fluffy, then mix in the eggs. 3 Stir in the flour and divide the mixture between the cases. Bake for 12-15 mins until risen and golden, then leave to cool completely. 4 Cut out a circle from the top of each cupcake, then cut each circle in half. Put the 100’s and 1000’s on a plate. Brush the tops of the half-circles with a little of the jam, then dip into the sprinkles to coat. 5 Put 1tsp jam into the hollow on top of each cake, then arrange the half-circles at an angle to look like butterfly wings. Serve and enjoy. Energy
