This peperonata can be cooked in batches, great for freezing – or you can store it in the fridge for up to 3 days

1 Heat 3tbsp olive oil in a lidded pan and add 2 onions, sliced, and 2 cloves garlic, crushed. Reduce the heat to medium, cover and soften for 10 mins, stirring occasionally. 2 Stir in 9 Farm Stores Mixed Peppers, finely sliced. Cover and cook for 10 mins. Remove the lid, increase the heat, and cook for 5 mins, stirring frequently, until the peppers are sticky. 3 Add 2 x 400g cans chopped tomatoes, stir and simmer for 30 mins until well reduced. Season and serve.
