Convenience stores like 7-Eleven are increasingly aiming to “surprise and delight” customers, going beyond the basics shoppers expect. As 7-Eleven’s Senior Product Director Julie TrappClark said, “We want the shopper to think, ‘I wasn’t expecting to find this in a convenience store.”

From 7-Eleven to regional chains like QuikTrip, operators of c-stores are looking overseas for inspiration, adding sitdown seating, expanding their coffee menus to rival Starbucks, and experimenting with madeto-order meals. York, PAbased Rutter’s, plans a new format with expanded seating as it adds 50 locations in the next five years.
