AC Oatmeal Banana Bites

Ingredients:

3-4 ripe bananas

2 cups oats

1 cup craisins

1/3 cup canola oil

1t vanilla extract

Directions:

In a large bowl, mash bananas. Stir in craisins, oil, oats, and vanilla. Mix well, and allow to sit for 15 minutes. Roll into balls, and place on an ungreased cookie sheet.

Bake at 350 degrees F for 15-20 minutes or until golden brown. Makes 20-24 bites

AC Basic Muffin Recipe

Ingredients:

2 ½ cups flour

½ cup sugar

1 T baking powder

½ t salt

Blend together dry ingredients, set aside.

1 egg

1 cup milk

½ cup butter (melted)

1 t vanilla

Mix together and add to dry ingredients. Stir only enough to blend ingredients.

Add 1 cup of almost anything!

We have used chocolate chips, craisins, diced apples, frozen blueberries/cherries/cranberries, and coconut to name a few. When using a tart fruit, toss in sugar before adding to batter.

Directions:

Scoop into greased or lined muffin pan and bake at 350 degrees F for 20 min or until done Makes 1 dozen

AC Quinoa Mango Salad

A “Try it Tuesday” Recipe

Ingredients:

2 cups prepared and cooled quinoa

1 ¼ cup mango chunks

½ cup red peppers, diced

¾ cup black beans, rinsed

2 ½ T apple cider vinegar

2 ½ T olive oil

2 ½ T lemon juice

Directions:

Whisk together vinegar, olive oil, and lemon juice. Add mangoes and black beans.

Stir in quinoa.

Cover and chill for 2 hours before serving. Makes about 10 servings.

AC Cool and Spicy Cucumber Salad

A “Try it Tuesday” recipe

Ingredients:

⅓ cup green onions, diced

2T lemon juice

3 cups cucumbers, diced

1T cilantro, finely chopped

1 cup roma tomatoes, diced

1t crushed red pepper

Directions:

Whisk together lemon juice, crushed red pepper, and cilantro. Stir in cucumbers and tomatoes. Makes about 10 servings.

AC Moroccan Carrot Salad

A “Try it Tuesdays” recipe

Ingredients:

4 cups carrots, shredded or matchstick

1 cup dried cranberries

1T orange juice

2T lemon juice

2t brown sugar

2T canola oil

Pinch of kosher salt

½ t cinnamon

2 t cilantro, chopped

Directions:

Whisk together juices, sugar, salt, cinnamon, and oil.

Mix all ingredients together. Makes about 10 servings.

AC Strawberry Soup

Ingredients:

2 pints strawberries (fresh or frozen)

2 cups plain yogurt (if you substitute vanilla yogurt, omit the sugar)

½ cup orange juice

½ cup sugar

½ cup water

1/8 teaspoon ground cardamom

Directions:

In a blender, combine all ingredients. Puree until well mixed. Chill and serve

AC Potato Corn Chowder

Ingredients:

1T oil

1 cup chopped onions

3 cups diced potatoes (we use locally grown Yukon gold or red potatoes)

2 cups low sodium vegetable broth

¾ cup heavy cream

1 ½ cups frozen sweet corn

Directions:

In a large pot, heat oil over medium heat. Add onions and cook until soft.

Add potatoes, broth, and 1 cup of water. Bring to a boil.

Lower heat, and simmer for 30 minutes.

Add cream and corn. Reheat for 10 minutes.

Yields 5 servings

AC Sloppy Joes

Ingredients:

2 lbs lean ground beef

1/3 cup chopped celery

1/3 cup chopped onions

Brown ground beef with celery and onions (drain any excess fat if necessary)

Mix together in a separate bowl:

3T brown sugar

2T apple cider vinegar

1t dry mustard

1T prepared mustard

¾ cup tomato puree

¾ cup ketchup

Directions:

Add sauce to ground beef and simmer.

AC Macaroni and Cheese

Ingredients:

2 lbs elbow noodles (cooked al dente) Place in casserole dish.

Cheese sauce:

1 ¾ cups whole milk

¼ cup butter

1 lb. American cheese

1 lb. cheddar cheese

Directions:

In a double boiler combine milk and butter. Bring to a boil.

Lower heat and add cheeses, stirring constantly. Pour cheese mixture into noodles and stir to combine.

Bake at 300’ for 45 minutes or until desired consistency is reached.

AC Blonde Brownies

Ingredients:

2 ¼ cups flour

1 t baking powder

½ t baking soda

1 t salt

2/3 cup butter or margarine, melted

1 ½ cups brown sugar

2 eggs

2 t vanilla

Directions:

Blend together dry ingredients and set aside. Mix melted butter and brown sugar. Add eggs and vanilla. Add flour mixture and mix well.

Spread evenly into a greased cake pan.

Sprinkle 1 2/3 cups chocolate chips on top.

Bake at 350 degrees F for 15-20 minutes.

Allow to cool completely before cutting.

AC Sunshine Bars

Ingredients:

3 cups of sugar

14 ounces oil

¾ quart canned sweet potatoes, drained (save the liquid)

4 eggs

¾ cup sweet potato liquid or water

¾ t vanilla

3 cups flour

1 ¾ t soda

½ t salt

¾ t cinnamon

¼ t nutmeg

Directions:

1/8 t cloves

1 ½ cups of sugar

7 oz oil

12 oz sweet potato

2 eggs

3 oz sweet potato

liquid

½ tsp vanilla extract

1 ½ cup flour

1 tbs baking soda

¼ tsp salt

½ tsp cinnamon

⅛ tsp nutmeg

1/16 tsp clove

Combine sugar, oil, and sweet potatoes. Add eggs, sweet potato liquid, and vanilla; blend. In a separate bowl, stir together dry ingredients and add to mix.

Stir only until blended. Pour into a greased cake pan. Makes approximately two 12*8 pans.

Bake at 350 degrees F for 25 minutes or until done. Cool and dust with powdered sugar or make a thick glaze with powdered sugar and water.

AC Snickerdoodle Bars

Ingredients:

1 cup butter, softened

2 cups brown sugar

2 eggs

½ t salt

2 t baking powder

2 t vanilla extract

2 2/3 cups flour

Topping ingredients:

1/8 cup granulated sugar

2 t cinnamon

Directions:

Cream butter and brown sugar. Add eggs and vanilla.

Stir together flour, salt, and baking powder. Add to creamed mixture.

Spread into a greased 9 by 13 inch pan.

350 degrees F for 20-25 minutes

Mix together sugar and cinnamon and sprinkle over cookie dough.

Bake until toothpick in the center comes out with fudgy crumbs.

Do not over bake.

Cool and cut.
