fter two years exploring the beauty of the outdoors on a journey around Australia with her family, the wonder of the wide-open sky still holds a magical appeal for Tracy

7, and Ziggy, 5, the Morris family is The Blonde Nomads, having gone off the beaten track in their search for a slower and more nature-filled life. “The magic of seeing the night sky and the stars is awesome,” she said. “People just don’t realise how amazing it is.” But Tracy is the first to remind people seeking those outdoor experiences that they have to be prepared, with the right equipment, knowledge and know-how to create a fun and fulfilling camping trip. The time leading up to the trip is critical, with plans to be prepared and lists to be ticked off. Once the essentials are in place – somewhere to sleep, something to eat, something to do – camping experts advise reviewing plans and double-checking for road closures and weather patterns. Tracy said being prepared with all the essentials

makes the experience more enjoyable for everyone. “Especially with kids, you don’t want to take any chances or get stuck on the side of the road,” she said. “Everyone has such a better time when you’ve got it all planned out.” HOW TO EAT LIKE A KING WHEN YOU’RE CAMPING Expert barbecuer Ralph Barnett said making an effort to prepare meals ahead of and while camping can transform the entire experience. The co-founder of The Shank Brothers – a collective dedicated to slow-cooking, barbecues and partial to a cold beer – said the more meals were planned ahead of the trip, the better they would be on the day. “I portion out and vacuum seal all meats and freezer

“Everyone has such a better time when you’ve got it all planned out.” them before the trip for maximum shelf life,” he said. “Have an easy to heat-and-eat option for the first night because you’re usually exhausted from setting up and just want to sit and relax with a cold beer in hand.” Refill the barbecue gas bottle, remember the charcoal and key ingredients, and don’t be afraid to try new things. Joining with another crew or family can also add fun and boost competition for the best meal, he said. “It’s amazing how good food can taste when cooked outdoors, especially over live fire and how happy kids are to eat whatever you throw at them,” he said. “You really can lift your game without too much effort these days and more campers are looking beyond the badly burnt snag at more interesting cuts

of meat and meal ideas.” In terms of equipment, Ralph said most campers he saw had a Weber Baby Q set up for all-day cooking, and a head torch or hanging lights were a must for cooking after dark. CHOOSING THE PERFECT CAMPSITE Hipcamp’s James Woodford knows what to look for in the perfect campsite. As the Australian general manager for the online resource to discover and book unique outdoor stays from tent camping to cabins and glamping, he said when choosing their location people needed to reflect on their own camping ability. “The number one thing that people need to keep in mind is just making sure they choose somewhere that is in line with their experience,” he said. He reinforced the need to have a plan, and work backwards to detail and list out all the equipment necessary. It could be a pop-up tent or a camper trailer, a beach tent, cooking equipment such as a gas stove, and torches, frisbees and books for entertainment. “Really experienced campers, they know you need to make a really big list and tick off everything on that list,” he said. “Even the most experienced campers, they forget the matches or the tent pegs. Make sure you make a list.” He said once people were set up with their equipment, camping was an easy, relaxing way to reconnect with family and friends. “A really important part of camping is coming together,” he said. “Instead of staying up watching TV or watching Netflix you’re all telling stories. “Simplicity is the new luxury. In our crazy world, it’s just really nice to get away from the technology and the worries.”

A SUCCESSFUL FAMILY CAMPING TRIP, EVEN WITH LITTLIES Blonde Nomad Tracy Morris said the ability to spend quality, tech-free time in nature was important to her family. “We believe getting back to basics is so good. We’re built to be outside and earthing and enjoying fresh air,” she said. “Having natural experiences like interacting with animals or nature and even just watching a sunset, you can just see the excitement in the kids. And they love it as much as we do.” She encouraged everyone to get their kids involved, either in a trial run at home or camping in the backyard, before planning out the trip and hitting the road. In terms of equipment the Blondies use recovery boards to tackle off-roading and an Oz tent that sets up quickly. Once set up, they settle down in kids camping chairs, with junior fishing rods and a discovery bucket, decked out in sun-safe shirts and a snorkel. They use a big-wheeled camp cart to carry it all. “We love to just strip it back and head out into nature and just spend time as a family with no other distractions,” she said. e’ve always known we’re lucky to live in Australia. There are vast beaches with no one else on them, rainforests where unique birdsong drowns out any human chatter, glistening rivers where dolphins play, and a deep red outback where the spirit of Australia is palpable. Take one of these incredible road trips and marvel at all Australia has to offer. GRAND PACIFIC DRIVE Where: New South Wales Recommended trip time: less than a week At 140 kilometres long, the Grand Pacific Drive is an easy yet epic road trip that begins just south of Sydney in the Royal National Park and clutches the coastline down to the Shoalhaven region. This winding road unfurls onto Wollongong’s Sea Cliff Bridge, which seems to levitate between aquamarine water and rugged cliffs. Pull in to Kiama to see migrating whales (late May to July and September to November) and a dramatic blowhole, then drive just ten minutes further to the popular surf spot of Werri Beach. Next, head to Jervis Bay and stroll along the aptly named White Sands Walk to the almost unbelievable bone-white shores of Hyams Beach. Continue down the coast to discover a Shoalhaven secret, Bawley Point near the Murramarang Aboriginal Area, which is home to a giant shell midden and a 2.2-kilometre (1.3-mile) loop walk with interpretive signs. Visit the kangaroos just down the road at Pebbly Beach, and if you have time, consider extending your trip to Canberra to experience all that the nation’s capital has to offer, including an exciting and diverse dining scene. LEGENDARY PACIFIC COAST Where: New South Wales and Queensland Recommended trip time: one to two weeks The 900-kilometre route between Sydney and Brisbane features the wineries of the Hunter Valley, the sparkling beaches of Port Stephens, the

hippie-chic town of Byron Bay, and the glitz of the Gold Coast. It’s no wonder this remarkable stretch is named the Legendary Pacific Coast. There are endless memories to be made along this section of the New South Wales and Queensland coastline. Dive into the Newcastle or Merewether ocean baths, pop into biodynamic Krinklewood winery in the Hunter Valley, and sea kayak with the dolphins that call Port Stephens home. You can also visit the furry residents at Port Macquarie’s Koala Hospital, enjoy lunch at The Farm in Byron Bay and see a different side of the Gold Coast on its Hinterland Great Walk. AUSTRALIA’S RED CENTRE WAY Where: Northern Territory Recommended trip time: one week The central Australian outback is a place of transformation. Ancient ochre landscapes, dynamic cultures and bright, starry skies create an energy unique to Australia’s red heart – difficult to put into words, but impossible not to feel. Driving the Red Centre Way, a loop beginning and ending in the outback town of Alice Springs, means meeting Australian icons at every turn. Uluru, Kata Tjuta and Watarrka National Park (home to Kings Canyon) are the heavy hitters, but don’t overlook the dramatic gorges and cool swimming holes of Tjoritja (the West MacDonnell Ranges). THE GREAT BARRIER REEF Where: Queensland Recommended trip time: less than a week Not all great drives are long drives, even in a place as big as Australia. At only 140 kilometres long, the Great Barrier Reef Drive – from the tropical city of Cairns to the wilds of Cape Tribulation – offers more than its fair share of wonders. Where else can you see two World Heritage sites (the Great Barrier Reef and the Daintree Rainforest) at the same time? Or spot the vibrant colours of both cassowary birds and coral? You can also chill beneath palms in Port Douglas, search for tree kangaroos, and snorkel over the kaleidoscope of colours and creatures on the reef.

For a more profound understanding of the incredible ecosystems of Australia’s tropical north, wander through the world’s oldest tropical rainforest with an Aboriginal guide. THE GIBB RIVER ROAD Where: Western Australia Recommended trip time: one to two weeks The centre of the Kimberley is as vast and majestic as its famous coastline. The Gibb River Road, which stretches from Derby (near Broome) to almost as far as Kununurra, is a legendary outback route for good reason. Offering secluded gorges, rocky ridges and that indescribable open-road feeling, it’s a drive that will change you with each of its 660 kilometres. Though much of this road is corrugated and requires a 4WD vehicle, the bumps will be forgotten as you spot your first bulbous boab tree or glimpse the rugged Cockburn Range. Take the time to stop and soak in a glassy waterhole, immerse yourself in Aboriginal culture at the Mowanjum Aboriginal Art and Cultural Centre and float in Lake Argyle’s famous infinity pool while overlooking undulating islands. Whether you camp under a clear, starry sky or check-in at luxury accommodation on a cattle station, the Kimberley will get under your skin in the most transformative of ways. THE EXPLORERS WAY Where: South Australia and the Northern Territory Recommended trip time: more than two weeks Wilpena Pound, a natural amphitheatre that looks like a giant meteorite crater, is just one of many dramatic locations in the 600-million-yearold Flinders Ranges. This dramatic natural wonder is found a five-hour drive from Adelaide, along the Explorers Way. Meandering all the way from Adelaide to Darwin, the Explorers Way passes through a remarkable landscape of ancient gorges, weathered peaks and red rock canyons. Along the way, you’ll come across the underground city of Coober Pedy as well as one of the outback’s most famous pubs, the Prairie Hotel, where you can order an Aussie feast of grilled kangaroo, camel and emu. After crossing the border

captivate into the Northern Territory, you’ll soon see the majestic Uluru and Kata Tjuta appear ahead as the earth turns red beneath your tyres. Encompassing Australia from bottom to top (or vice-versa), this is a road trip and a half. THE NULLARBOR PLAIN Where: South Australia Recommended trip time: one to two weeks If experiencing Australia’s wide-open spaces is on your wishlist, set your sights on the Nullarbor Plain, located along the Great Australian Bight. In Latin, Nullarbor means treeless (nullus, meaning no, and arbor meaning tree), but these vast plains are far from barren. There are some incredible experiences to be found as you drive along the open road. On South Australia’s Eyre Peninsula, you can stand on the edge of Australia at the Head of Bight to watch southern right whales nurse their calves (between May and October). The Nullarbor is also home to the longest golf course in the world (1365 kilometres long, with a hole at each participating town or roadhouse). Add in caves, old gold mining towns, the remains of a space station that crashed to earth, and characterrich roadhouses, and the Nullarbor becomes a bucket list Aussie road trip. THE SOUTH WEST EDGE Where: Western Australia Recommended trip time: one to two weeks This road trip from Perth to Esperance has it all: blindingly white beaches, ocean so clear you can see down to your toes, forests harbouring some of the tallest trees in the world, and wildflowers found nowhere else. Best of all, you may have many of these remarkable sites all to yourself. Allocate at least 10 days to do the South West Edge road trip and lose yourself in the natural high that comes from exploring somewhere bathed in beauty. Be sure to meet Lucky Bay’s beachcombing kangaroos, bounce on a walkway suspended in the treetops at the Valley of the Giants, and join an expedition to watch killer whales (between late

And of course, this trip isn’t complete without a stop in the renowned Margaret River wine region. TASMANIA’S EAST COAST Where: Tasmania Recommended trip time: less than a week From snow-capped mountains to sapphire-blue bays, Tasmania is overflowing with natural beauty. Take in Tassie’s coastal wonders as you follow one of the island’s grandest road trips – the Great Eastern Drive. Head north from Hobart to the Bay of Fires, where the beaches are white, the air is clean and the scenery is magnificent. Wander around the sandstone ruins of the World Heritage-listed Port Arthur convict settlement one day, then on another find yourself walking among wombats and exploring extraordinary kaleidoscope cliffs on Maria Island. Settle in at award-winning luxury hotel Saffire Freycinet, then pull on waders to eat fresh-from-theocean oysters. Climb a ridge and marvel over the perfect curve of Wineglass Bay, and throughout the whole trip, treat yourself to Tasmania’s bountiful food, wine and spirits. THE GREAT OCEAN ROAD Where: Victoria Recommended trip time: less than a week The Great Ocean Road is one of Australia’s most thrilling drives, studded with dramatic views of craggy coastline – so take it slow and enjoy the unforgettable views. You’ll marvel at the famous 12 Apostles’ towering limestone rock formations – stunning at any time of day, but especially as the setting sun turns the cliff face a fiery red. Scale historic lighthouses, spot koalas on the drive towards Cape Otway Lightstation, and visit cafés and pubs overlooking the Southern Ocean (Wye Beach Hotel is a local favourite). There’s more to discover too, with rainforest, shipwrecks, migrating whales (between May and September), national parks, wild surf and windswept beaches on the agenda.

here’s no denying 2020 has been one to forget, but a new year brings new hope and new adventures...especially with travellers itching to hit the road once more. So, to toast brighter times ahead, Style magazine sidled up to the bar and spoke with Emily Fitzgibbons about how special the award-winning Glen Hotel is to locals and visitors alike. THE HISTORY The Fitzgibbons family are in their 60th year of owning and operating The Glen Hotel and, quintessentially, it all began with a love story. “My grandfather, Brian Fitzgibbons Snr, married Elaine Woulfe,” Emily recalls. “Brian had a history in pubs and hospitality and was able to convince Elaine that they should purchase and

move themselves (and their nine children) to live and work at The Glen Hotel in Eight Mile Plains.” And they did just that. “All the children worked and lived at the pub,” she explains. “Going to school by day, and coming home to help pour beers, make chicken sandwiches and serve customers in the drive-through bottleshop.” With hospitality literally in their bones, today, a lot of the children stick close to their roots and still work within Queensland’s hospitality scene. The eldest of the nine children, Brian Fitzgibbons (Jnr) now owns and operates The Glen Hotel with his wife Cathy and his daughters, and very similarly ‘up the mountain’, Brian’s younger brother John Fitzgibbons runs Fitzy’s Toowoomba with his wife and children. Together, the two brothers continue a family legacy

that spans 60 years, and along with their other siblings, they also own and operate the Osbourne Hotel in Brisbane’s Fortitude Valley. HIGHEST HONOUR The Glen Hotel was named and awarded Queensland’s Hotel of the Year at the QHA (Queensland Hotel Awards) in 2019 - and that title still remains today. An iconic venue on Brisbane’s Southside, The Glen has multiple dining and bar areas, gaming, a TAB, bottleshop, a donut and coffee shop, award-winning event spaces and 4.5-star accommodation suites. “Prior to COVID, our clientele across the hotel was a very good mix of locals, corporate travellers, and families - spanning to Toowoomba and the Gold Coast and Sunshine Coast,” Emily said.

“Being right near the Pacific Motorway, The Glen Hotel has always been a favourite spot halfway for friends and families to meet.” THE COVID-19 CRISIS Virtually unstoppable, the effects of the Coronavirus began to take hold, plunging the country into mass shutdowns and widespread uncertainty. “It’s no secret the whole nation’s hospitality and tourism industries took a huge hit when COVID began,” Emily explains. “Obviously, we lost massive trade when we were forced shut, but also now with a lot of businesses implementing ‘work-from-home protocols’ more permanently, we have lost a lot of our corporate traveller clientele in terms of our accommodation offering. “We do feel very lucky and appreciative of our local customers who have really nurtured us and supported us during this time. “We even have had a few ‘staycations’ from locals within the area which has been lovely to see.” A GREAT SPOT TO RELAX For leisure travellers, The Glen Hotel has everything

on offer. The package includes home pick up and drop off, luxury vehicle, morning tea at The Weeping Mulberry in Warwick, lunch with wine at Ballandean Estate, wine tasting at four wineries Kominos, Ballandean Estate, Symphony Hill and Summit Estate, special

experiences at the wineries that are not always available to the public, cold water on board and refreshing face cloths in summer. “Our aim is to make our guests feel important and that the experiences are just for them,” Fiona said. “We can take a minimum of two guests to a maximum of six. he appeal of wearing pre-loved clothing has had a resurgence in popularity in recent years. Bargain hunters love finding high-end garments, at a fraction of the retail price. But they can also be a great option for people wanting to declutter their wardrobe, while getting some of the money they originally spent, back. This is where consignment shops come in handy. Consignment shops are where a business sells goods on behalf of an owner, for a commission, as compensation for selling the item. The owner keeps ownership of the item until it is sold. Common products sold through consignment stores include clothing, shoes, athletic equipment and gear, baby furniture and accessories, antiques and collectibles, furniture, toys and musical instruments. Consignment stores determine their own pricing arrangement, but the typical split between the business and the individual seller ranges from 50/50 to 40/60 or 60/40, depending on the success and reach of the store. They are usually locally owned businesses with an intimate, small business feel. Selling your goods by consignment involves dropping off your items for a set period, perhaps a 30-, 60- or 90-day cycle, but every store is different. If your item doesn’t sell within that period, depending on the agreement, the item may be discounted for a further period, returned to you or donated away. Consignment stores are an often overlooked option for picking up high-end fashions at an affordable price. since 2018 had a Nurse Practitioner – Olivia O’Dempsey, within the hospital’s medical ward where she is also the Clinical Manager. Since gaining her advanced practitioner status Olivia has been able to provide advanced specialised care to many of our acute and chronic medical patients, working independently and as part of a multi-disciplinary team with the Physician group. The hospital has been very fortunate in having the support of our doctors to provide this level of skill and knowledge and are looking to expand this role to other areas over the next few years as part of our experienced senior staff development. Family business marks a special

milestone

ichael, a pharmacist, and Ros, a registered nurse, moved from Brisbane to Highfields with their three young children on December 12, 2005, and their new pharmacy opened on December 16. “We set up everything from scratch. So, we set up gondolas, unpacked hundreds of boxes and then opened with just two other staff members,” Ros says. “Interestingly enough we were the first franchisee of Discount Drugstores, with the owners having three stores at the time. “Now there are over 150 stores across the eastern seaboard.” And just like the franchise, Ros

says the business grew very quickly thanks to community support and the dedication the couple have for providing personalised service. “We had both worked in big institutions (hospitals) and we’d barely get a thank you. It is very important to us that we staff our store with more staff than necessary. We have 17 staff always, with about 12-14 in store every day because customer service is paramount. “Our staff know that every customer is to leave our store feeling good, be it even just us taking a few extra moments to talk to the elderly customer who may only see us in their day. “Michael and I also pride ourselves on treating our staff with respect with

the hope that this flows on to the community.” Nadine Wildman is one long-term staff member who Ros thinks is integral to the business. In 2019, Nadine won the national award for best pharmacy assistant. “She has been with us for 14 years standing by us through all the days and days,” Ros says. And there have been some days. “This year has been very interesting with COVID-19 and the longer opening hours we provided during shutdown. “There was a lot of reassuring our customers with shortages on so many products. “We did over 1000 free deliveries in a six-week period over COVID-19

shutdown. All our staff helped.” As for the next fifteen years, Ros says that there are always new ideas and technologies becoming available in the pharmacy business. “But mostly we just hope to keep serving our customers — who have become friends — to make their lives easier. Fifteen years ago, we just provided dispensing services. eet the St Vincent’s Hospital executive team: the committed professionals whose mission is to manage the daily operations of the organisation to the highest

standards. Dr Rob Gray has been our Chief Medical Officer since February 2019 but has been an anaesthetist at the hospital for 14 years, including eight years involved with our Medical Advisory Committee (MAC). Before his specialist anaesthetics training Rob worked in rural general practice and has a strong affinity with regional areas. Rob says his role ensures there are appropriate efficient and safe systems in place that focus on the best outcomes for patients and their families. “This is backed by exceptionally good governance, something I think we do very well,” he said. “People of the Darling Downs are very lucky to be serviced by such quality practitioners, both doctors and nurses, across so many specialties here at St Vincent’s.” Dr Mark Copland relishes the diversity of being our Mission Executive. “I love the way I get to see all of the working parts of the hospital and can see that every role is vital,” Mark said. “I have worked in social justice and advocacy for more than 20 years and have a strong affinity with the Sisters of Charity story and the quiet way we can support the broader community. “I especially enjoy Thursdays when I get to share my border collie Jasper with patients and staff in his therapy dog role.” Our Director of Clinical Services Mr Malcolm Casey was appointed in 2016, after spending a decade in nursing management.

She looks after the hospital’s business elements and many of our non-clinical areas. She thrives on seeing the positive impact on patients from the projects she’s worked on. “Just the other day I got to see the baby ventilator being used after I’d helped to put together the funding submission,” Adrienne said. “Another highlight was helping to set up the patient room service feature that’s been really well received.” Our Human Resources Manager Ms Kolleen Koenen-Weir is coming up to 16 years at St Vincent’s after working for the Endeavour Foundation. With a workforce of 750 people covered by five enterprise bargaining agreements, it’s a complex environment — but one Kolleen enjoys. “I have a strong commitment to working with our staff and their respective unions to make sure everyone is treated fairly and equitably,” Kolleen said. “I also add value by mentoring managers on how to get the best out of their teams.” Mrs Suzie Byrnes started at SVPHT 18 months ago

having previously worked in Regional Development for LifeFlight Rescue and Lifeline Darling Downs. She brought with her a fresh approach to marketing and engaging stakeholders. “My job is to attract new medical specialists, promote our services and lift the profile of the hospital in the community,” Suzie said. “Over the past 12 months I have managed our COVID-19 internal and external communications and sat as a member of the local and SVHA national pandemic response committees.” She will graduate with an MBA from USQ in the coming months and has recently been appointed as an Empire Theatres board member. Our leadership team is led by CEO Ms Kathryn McKeefry who trained as a Registered Nurse in New Zealand. Her “first love” was as an Intensive Care nurse, travelling to the USA, Greece, Europe and Britain to work. Kathryn then trained as a midwife, and later moved into management roles after completing an MBA, emigrating to Australia in 2009 and spending the past 4.5 years at St Vincent’s. “I have a focus on system and service realignment to ensure patient-centred care is achieved,” Kathryn said. “Our executive team is well integrated and each member brings a different skillset to the table. “I think our track record shows we are attentive listeners and are visible and approachable.”

HOW TO COOK THE PERFECT STEAK

T

here’s nothing quite like enjoying a perfectly cooked steak, and a cold drink, while catching up with mates over the summer months. But for some people nailing the perfect steak is an ongoing frustration. Angliss Meats have a few hints and tips to help you get it right, every time.

1. Visit Angliss Meats and purchase a nice juicy tender grain-fed 6* rib fillet steak minimum one inch thickness. 2. Remove steak from fridge and bring it to room temperature before cooking to ensure tenderness and even cooking. 3. Preheat grill to medium to high. 4. 2 cups fresh breadcrumbs 1/3 cup finely grated parmesan cheese 1 tablespoon finely grated lemon rind 2 tablespoons finely chopped fresh flat-leaf parsley leaves 1 teaspoon garlic powder 1/2 cup plain flour 1 egg 1 tablespoon milk 550g uncrumbed chicken breast schnitzel (or thinly sliced chicken breast) Vegetable oil, for shallow-frying

1. Combine breadcrumbs, parmesan, lemon rind, parsley and garlic powder on a plate. Season with salt and pepper. Place flour on a plate. Whisk egg and milk together in a shallow bowl. 2. Coat one piece of chicken in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumb mixture. Place on a plate. Repeat with remaining chicken, flour, egg mixture and breadcrumb mixture. 3. Heat oil in a frying pan over medium-high heat. Cook chicken, in batches, for four to five minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel to drain. Serve.

Mango and Sesame Coleslaw INGREDIENTS 4 mangoes 2 tbs sesame seeds 2 large carrots, peeled, grated 6 green onions, thinly sliced 1/4 small green cabbage, finely shredded 1/2 cup olive oil 1/4 cup fresh orange juice 2 teaspoons caster sugar 1 teaspoon Dijon mustard 1 tablespoon tahini

POTATO SALAD 4-6 Serves

METHOD 1. Cook sesame seeds in a frying pan over high heat, stirring, for four minutes or until golden. Cool. 2. To make the dressing, combine all ingredients, and salt and pepper in a screw-top jar. Shake well. 3. Prepare mangoes by slicing off each cheek and cutting a lattice pattern in the flesh of each cheek, without cutting through the skin. Turn cheeks inside out, remove mango cubes and place in a bowl. 4. Add carrots, onions, cabbage, sesame seeds and dressing to mangoes. Toss gently. Serve.

METHOD 1. Dice the potatoes into bite sized pieces and set aside. 2. Chop the bacon, spring onion, dill and boiled eggs. Set aside. 3. Put the potatoes into a saucepan filled with water. 4. Boil potatoes until just soft, and allow them to cool slightly. 5. Meanwhile, cook the bacon until crispy. 6. Place potatoes in a bowl and toss through the mayonnaise. 7. Add in the cooked bacon, spring onion, dill and eggs. 8. Season with salt and pepper.

Revised plans lead to

new café

W

hen Santosh Paudel and Karishma Simkhada decided to open their own café, the couple considered a move down south. But COVID changed that, and like many business owners, their plans had to be revised. What a blessing in disguise. Opening in midNovember, The Revised Café in Wyalla Plaza, Newtown, is already a hit with locals. Offering De Bella coffee, this vibrant café offers a menu that elevates the standard Australian breakfast and lunch with flashes of Santosh and Karishma’s Nepalese heritage. The menu is varied with breakfast, lunch and dinner options. Breakfast ranges from a light fruit salad or porridge to pancakes and waffles to the traditional bacon and egg fry-up. The eggs Benedict is a highlight with the eggs cooked perfectly and a generous serving of bacon. Lunch and dinner provide even more options. There are several choices of wraps and burgers, all served with a generous helping of fries on the side. Lighter options include a traditional Caesar salad

Mains include a range of fish, chicken, pork and beef dishes. Many of them are reminiscent of the simple yet delicious home-cooked meals my nanna used to make, like the chicken breast with mushroom sauce and vegetables. They are also all very reasonably priced between $12-$26. The stand-out dish for me were the traditional Nepalese dumplings or Momo. Handmade by Santosh, they are full of flavour and absolutely delicious. The couple are looking to include more traditional fare through their blackboard specials; it’s a great idea, as they are the only place in town to offer authentic Nepalese cuisine.

The Revised Cafe is certainly worth a visit. The food is yummy, the servings satisfying and the service outstanding. Part 3

T

he festive period is already busy enough without adding in building a house and a double move. But that’s what Christmas 2020 brought us, and while it’s been a stressful journey to get to where we are, now it means we can spend the holiday period in our new family home. For those who haven’t seen the previous Building Series articles, my name is Meghan and my husband Matthew has been working hard for the past three months to bring our 315sq m four-bedroom, three-bathroom, three living home in Cabarlah to life. It’s been a hectic, fast-paced and allround great end to the year. December started out with a move from our rental into my mum-in-law’s house for a few weeks while the finishing touches were

being added to our home. It also meant numerous drives to the block to see the constant changes taking place, because it would look different almost every day. In the final three weeks, the painting was done, our carpet and flooring went down, the electrical and plumbing was finalised, the carpentry fix out was finished and the outdoor tiling was completed. As my husband is the builder, he would need to be on-site quite often to make sure everything was going according to plan. More than once he voiced concerns that because everything was going so smoothly, he kept expecting something to go wrong. But, in a Christmas miracle, we were in our home on December 23. I’m one of those people who can’t sleep unless the whole house in unpacked, put away and tided all at once so my husband and I spent the two days leading up to Christmas moving and unpacking like mad people, while my mum-in-law looked after our son. As exhausted as we were, waking up in our house on Christmas Day made it

worth it – kind of like a present from us to us. We’re in love with the house and it’s exactly as we envisioned it – it’s as if it jumped out of my mind and into reality. It has the colonial American-home feel on the outside with its high-pitched rooves and right-angled driveway but on the inside it has a more Scandinavian feel with its neutral colour scheme. In my previous article, I talked about the selection process when it came to choosing our finishes and fittings, and how we made sure to use local suppliers as well as visit showrooms in Toowoomba to make our decisions. I credit them to the speed in which we moved into our home, as all the suppliers and trades were eager to help us and give us suggestions when it came to colour and style. My favourite room in the entire house, and the one which has the most “wowfactor”, would be the room we call the library.

I’m unsure if it’s big enough to be called a library, but with its 4.2-metre bookcase and sliding ladder, that’s the name it’s getting. It’s a mix of a study and reading room with a 5.5-metre ceiling which meets at a high-point in the center, as well as two huge windows which face southwest. The shelves need approximately 1200 books to be entirely full, but with a few trinkets here and there I’m guessing I can get away with about 1000. I am an avid reader and writer, hence why I became a journalist, and over the years I have accumulated over 400 books. I would say 500 but I lend out so many to family and friends, and often don’t see them for a while… or ever

again, so before the move I roughly worked out I needed about 600 more books to finish my collection. I went to all the secondhand shops in town and picked up quite a few bargains on books that were in near new condition, but my additional, relatively small pile wasn’t looking too promising so I knew I had to think of another way to fill in my shelves. It wasn’t until I had to go to the post office at Wilsonton Shopping Centre that I saw the pop-up Lifeline BookFest. And wow, it was amazing - they had books for $1 each and they were the big fat crime novels I like to read.

I bought a few hundred books, which I know sounds like an absurd amount but trust me they’ll all get read. With them being so thick, they also filled out more room on my shelves – a win, win scenario. I’ll spend the next few months looking for more, as well as bits and pieces to fill my shelves, but for now the room still looks spectacular and it’s the one everyone comments on when they visit. I’d love to show you all the photos but curtains haven’t arrived and some of our new furniture is sitting in Brisbane warehouses, so I’ll be sure to next month. Until then, have a happy start to 2021.

There's not a lot Anthea Moodie in and outside of the sporting arena. Moodie has proven to be more than adept in a number of sports and is also quite the intellectual. Now her two passions have combined and Anthea is preparing for the opportunity of a lifetime.

A

nthea Moodie has made a name for herself as a talented sportswoman across the Downs and beyond. Whether it be athletics, rugby, touch or Aussie rules, she hasn’t been afraid to put her mind to trying new things. Now, her love of sport and academic prowess have combined to present her with the opportunity of a lifetime. Currently studying a Bachelor of Business/Bachelor of Communication and Journalism at Griffith University, Moodie has landed a prestigious role. She was awarded a New Colombo Plan scholarship for 2021, a program dedicated to increase knowledge of the Indo-Pacific in Australia, being granted the Indigenous Fellow in the process as the top-ranked Indigenous candidate. “I’ve been fortunate enough to be one of 125 people across Australia to be awarded the scholarship,” Moodie said. “It’s run by the Department of Foreign Affairs and Trade and allows us to travel to an Indo-Pacific country of our choice to study towards our degree.” Through this she will embark on an internship in Fiji, working with the NRL Pacific Outreach program to gather more information on how sport can provide opportunities for those in marginalised communities to engage, connect and excel. “Being quite a sports person, I decided to go to Fiji, because it is a nation where sport is considered a religion,” she said. “I went there to compete at the Oceania Games a few years ago and was able to witness the sportsmanship and passion that is there. “I’m planning to go there at the end of next year, but it just depends on when COVID allows us to. “I’ll be studying at the University of the South Pacific where I’ll complete some of my journalism subjects to go towards my degree. “I love my rugby league. The program uses rugby league as a tool to combat some of the issues with children attending school and social issues, which is why it appeals to me. “Indigenous Australia has similar problems, so I wanted to see what they do and how they use sport to combat some of those issues and bring those ideas back to Australia.” A proud Gunggari woman, Moodie said she was anticipating the chance to take in a new culture, and hopefully provide inspiration of her own. “It hasn’t sunk in how privileged I am. It’s not something I would have ever thought of,” she said. “I’m looking forward to going over there and immersing myself in the culture and get different perspectives on things. “As an Indigenous woman, I hope this inspires other students that opportunities like this are available.”

e may just be heading into the 2021 school year, but now is the time to be thinking about applying for 2022 high school scholarships. Concordia Lutheran College is inviting students who will enter Year 7 and Year 10 in 2022 (this year’s Year 6 and 9 students) to register for the upcoming Academic Scholarship testing taking place in February.

WHAT’S UP FOR GRABS IN A PROPERTY SETTLEMENT? By ELIZABETH ADAMS, ASSOCIATE

W

hat items are included and available for distribution between parties after the breakdown of a relationship seems like an easy question, however sometimes it can be rather complex. Lawyers refer to the items available for distribution between parties as the “property pool”. Assets owned by you and your partner, either jointly or individually such as houses, vehicles, and funds in bank accounts are easy to identify as forming part of the property pool. The family business can also be included in the property pool, if the business is owned by the parties or one of the parties. A party’s interest as a Trustee or Director in property, including houses, shares or cash owned by a trust or corporate entity can be included in the property pool. An inheritance received during the relationship will also form part of the property pool potentially available for distribution. Debts are also typically included in the property pool, unless for example a party has deliberately incurred the debts to minimise the

property pool. Financial resources, which are assets that a party has an interest in, but cannot access just yet, are also included in the property pool. For example, superannuation is a financial resource as generally it cannot be accessed until a party reaches preservation age. Superannuation can be split, where your former partner can receive a proportion of your superannuation interest, which then remains as superannuation accessible typically when your ex-partner reaches preservation age. Compensation payments and inheritances that have been quantified and due for distribution in the not too distant future are also financial resources that can be included in the property pool. Sometimes parties go on a spending spree after separation to deliberately minimise the property pool. Depending on the funds spent and the reason for the expenditure, the value of the spent funds can be added back into the property pool. It is important to obtain legal advice early to ensure the property pool can be properly identified, and if need be, protected.

ur neighbours held a 21st birthday party recently and, judging by some of the wonderful ABBA renditions emanating, it would seem a good night was had by all (I was very keen to join them). Come the next day, a succession of young folk came to collect their cars — some MUCH later in the day than others — and, as they drove off, I got thinking about where their journeys will take them in the years to come. Will they stay in town? Do they want to live and work here or travel the world and chase careers afar? I know I go on like a broken record about how great Toowoomba and Highfields (and surrounds) are, but we do have the very best in education, shopping and medical facilities here — not to mention our worldrenowned parks and gardens. I know I’ll be ‘staying put’ until my final days, but will our local youth be so lucky? Queensland (and Toowoomba, in particular) are white hot at the moment with a mass of southerners eager to escape the big cities and move here to experience the wonderful lifestyle we wake up to

every day. This influx of people inevitably puts a strain on available housing and units — to both rent and buy — and with incredible projects like the inland rail, the proposed entertainment precinct and the medical marijuana industry slated for the area, things are sure to get even more frenetic. As a real estate agency, we can only sell what’s available, and with stock flying out the door just as quickly as we list it, you couldn’t ask for better conditions… at the moment. Celebrating

First Nation People

Doolamai Designs brings First Nations artworks to Toowoomba and the Darling Downs. The painting Crocodile Dreaming brings the story of Bundjerra-Mennai to life. Here artist Domi Doolamai tells that story.

I

n the Dreamtime, there was a man named Bundjerra – Mennai. He was not popular in his tribe; everyone avoided him - he was not bad, he just annoyed everyone with his stares and foolishness. One day, the whole tribe had to cross a river; flooding had occurred and they all had to move to higher ground. They carted everyone across the river in their canoes. Each time they crossed they would refuse Bunjerra- Mennai. Time and time again he

would ask, “why do you not want to take me?” Each time they would say, “Get away, you Bailpulumatwa (Foolish Man),”. In spite of his begging, he was refused time and time again. After all this, he finally managed to swim across the flooding river on his own, nearly drowning trying. He was very angry. He seethed aggression towards his tribe.

“I’ll turn myself into a Crocodile and exact my revenge against my tribe,” Bundjerra –Mennai said.

FUNDAMENTAL DRAWING INSIGHTS

B

eing able to draw is fundamental to being creative. It’s a language that we use innately when we are quite young and, depending on how much encouragement we receive, we either become proficient or we let it go. Many people looking to pick up art as an adult regret that this skill was lost and now find a blank canvas to be very daunting. A basic understanding of how to draw can open the door to being able to express ourselves artistically. The first step in any artwork is to communicate your idea, whether to yourself or to others. Most artists will begin with sketching up the idea, considering all the important decisions about the final work such as position, orientation, scale and perspective. Shading is often used as a tool to establish and plan light and form. Once the initial sketch is done, they then move on to developing the artwork in the medium of their choice. For many budding artists, it is the inability to sketch up their artwork in the beginning that stops them from making the picture in their minds’ eye into a reality. Like all forms of communicating, practice helps - a lot. The more you practice the better you become and the less stress you feel when faced with a blank sheet of paper. Personally, I love to help people on the journey to becoming an artist. I’ve been teaching fundamental drawing for a few years now and love to have my

t’s time to grab the pinot and head to Russell Street to enjoy the region’s newest sip and paint studio. The Sip Studio, which opened in late November, is the brainchild of Brooke Hughes, a former city resident who has found success in mixing business with art. The venue offers a fun alternative to a night out on the town, allowing patrons to hone their painting skills while sharing a glass of wine with friends. “It’s a great time to open: Toowoomba is growing, there are more people here, it’s more diverse and you have these cool new bars opening up,” Ms Hughes said. “I’m confident people will love the concept, from busy mums who want to catch up with friends, to uni students or work colleagues looking for a team building experience. “You don’t have to be an artist, you just come and have a drink with friends – we just want people to have a good time.” The two hour art sessions will be led by an instructor, who will help guests paint the preselected project. The venue is BYO and there is a dedicated area for a grazing platter, with guests encouraged to bring their own food. Ms Hughes, who also runs a popular studio by the same name in Wollongong, NSW, said there had been a lot of early interest art sessions. The Sip Studio Toowoomba is located at 15 Russell Street. Daisy Hill

Tell us a little about yourself I am an Aboriginal artist, wife, and mother of two located on the Gold Coast. I am a proud descendant of the Murawari people and I love to share my aboriginal culture and history with the world through my aboriginal dot paintings. I love exploring the connection to my people through my art. I find painting meditative and deeply spiritual, and I enjoy telling the stories and keeping the traditions of my people alive. I feel so grateful that people want to invest in me and my culture. Describe your style? My meticulously detailed artworks can take up to 40 hours to complete. The intricate dot patterns are inspired by the knowledge and stories passed down from my people dating back thousands of years. I often incorporate sanctified Aboriginal symbols in my art to convey special meanings. Each artwork includes a card that I use to wipe my dotting stick during painting and a hand painted seed pod from the Leopard tree - a special connection to Country. What inspires you? Stories from Aboriginal history and culture with their deep meaning and valuable knowledge about Mother Earth. Growing up on Yugambeh Country, the ocean is my number one inspiration. Nature is my ultimate muse:- landscape, sun, moon, trees… When did you start painting? At 34, I discovered my calling to create aboriginal dot paintings and since then have gone on to sell out all collections of my work. How has it evolved? Painting for the Kira & Kira clientele certainly influenced my direction down the path of a more ‘modern’ style. My art has a much more contemporary style now. I now use softer, more neutral colours with a slight feminine feel to the colour palette and design. Some highlights of your artistic life? Selling all four of my artworks within two hours on Opening Night of the Grammar Art Show; so humbling, being my first exhibition. Also, honoured that the likes of Jesinta Franklin have my artworks. What do you like about Toowoomba? Visiting Toowoomba at Grammar Art Show time and exploring the city and surrounds.
