Christmas leftovers transformed with garlic rice and chopped ham. My favourite recipe for leftover ham is pasta carbonara: • 500g spaghetti pasta • 100g baked ham, diced • 2 egg yolks • 2 tbsp cream • 2 garlic cloves, minced • ½ cup parmesan cheese, grated
4. Meanwhile, combine the egg yolks, cream and garlic in a medium bowl and beat until well blended. 5. When the pasta is cooked, drain and immediately return to the pot. 6. Stir in the egg mixture and toss thoroughly until combined. 7. Add the ham and cheese and toss to coat. 8. Season if required, and garnish with slices of spring onions. Serves 4.
1. Cook the ham in a fry pan until crisp. 2. Remove from pan and drain on paper towels. Set the ham aside. 3. Cook the pasta as directed on package.
Another common Christmas delicacy, often sitting in the fridge for the weeks fol-
lowing the festive season, is plum pudding. Now I personally don’t mind microwaving it as needed. I’ve also been guilty of eating it cold, straight from the fridge. However, there are some very creative options, such as adding it crumbled to an ice-cream mixture. Or, you can have a go at my simple Christmas leftover dessert, a twist on the much loved Italian panna cotta. Plum Pudding Panna Cotta • 2 tbsp water • 3 tsp powdered gelatine • ½ cup leftover plum pudding, crumbled
• 1 cup cream • ½ cup dark brown sugar • 2 cups buttermilk • 1 tsp vanilla essence • ½ cup dark brown sugar • ½ cup cream • ¼ cup butter, cubed • 1 tsp vanilla essence 1. Combine cold water and gelatine – mix to a smooth paste. 2. Crumble leftover plum pudding into small pieces. 3. In a saucepan add cream and sugar. Warm over a medium heat until sugar has dissolved. Do not boil. 4. Remove saucepan from heat and add the gelatine

THERE is a group of locals keeping alive the magic of Christmas each year. They are the people who dress their homes in festive light displays for the joy of others. With just 22 days left until Christmas, South Burnett residents are being urged to band together to put up their best light show display. As an incentive for neighbours to work together, South Burnett Regional Council will present the inaugural CEO’s “Santa Claus Lane” award for the street which best embodies Christmas and co-operation. The winning street will receive a Santa Claus Lane street sign to display, which would be a permanent fixture Council chief executive Mark Pitt said the light displays provided Christmas cheer. “This is a great way for resi-

How to deal with the heat this Christmas
WHEN it comes to the Christmas season, while it can be cheery and fun, it can also be quite financially stressful. Here are some tips to survive the Christmas season by not blowing your budget on those things you can control.

But when the summer heat gets too intense, it’s easy to disassociate from the festivities. Fortunately, there are many ways for you and your friends or family to battle the heat this Christmas. According to Better Health, you should be carrying a bottle of water with you even if you aren’t feeling thirsty. As well as drinking water, you can be using water games and activities to boost your family time both in the lead-up to Christmas and on Christmas Day. This can include taking a dip in the pool, or playing games with water guns. Water-based games are a popular way to keep your Christmas guests cooler, but make sure to put on sunscreen.
