South Burnett food ambassador Jason Ford shares his favourite Christmas leftover recipes, pasta carbonara, and plum pudding panna cotta. Picture: Jason Ford

Christmas leftovers transformed with garlic rice and chopped ham. My favourite recipe for leftover ham is pasta carbonara: • 500g spaghetti pasta • 100g baked ham, diced • 2 egg yolks • 2 tbsp cream • 2 garlic cloves, minced • ½ cup parmesan cheese, grated

4. Meanwhile, combine the egg yolks, cream and garlic in a medium bowl and beat until well blended. 5. When the pasta is cooked, drain and immediately return to the pot. 6. Stir in the egg mixture and toss thoroughly until combined. 7. Add the ham and cheese and toss to coat. 8. Season if required, and garnish with slices of spring onions. Serves 4.

1. Cook the ham in a fry pan until crisp. 2. Remove from pan and drain on paper towels. Set the ham aside. 3. Cook the pasta as directed on package.

Another common Christmas delicacy, often sitting in the fridge for the weeks fol-

lowing the festive season, is plum pudding. Now I personally don’t mind microwaving it as needed. I’ve also been guilty of eating it cold, straight from the fridge. However, there are some very creative options, such as adding it crumbled to an ice-cream mixture. Or, you can have a go at my simple Christmas leftover dessert, a twist on the much loved Italian panna cotta. Plum Pudding Panna Cotta • 2 tbsp water • 3 tsp powdered gelatine • ½ cup leftover plum pudding, crumbled

• 1 cup cream • ½ cup dark brown sugar • 2 cups buttermilk • 1 tsp vanilla essence • ½ cup dark brown sugar • ½ cup cream • ¼ cup butter, cubed • 1 tsp vanilla essence 1. Combine cold water and gelatine – mix to a smooth paste. 2. Crumble leftover plum pudding into small pieces. 3. In a saucepan add cream and sugar. Warm over a medium heat until sugar has dissolved. Do not boil. 4. Remove saucepan from heat and add the gelatine

mixture. Cool the cream mixture to room temperature. 5. Add the crumbled plum pudding to cream mixture. 6. Add the buttermilk and vanilla essence. 7. Divide the mixture equally among ramekins or dariole moulds and refrigerate overnight to set. 8. To make dark toffee sauce, place the sugar, cream, butter and vanilla in a saucepan and bring to the boil. Remove from stove and whisk until smooth and emulsified. Allow to cool to room temperature before serving. Serves 6. Chef Jason Ford

THE days following Christmas are very predictable — exchanging or returning gifts, coping with a hangover, postChristmas bargain hunting, more parties and lots of leftovers in the fridge. And, of all the leftovers, baked ham would be the most common. Most people don’t want to waste big chunks of meat – but how do you use leftover ham without getting bored? A little imagination! Don’t make sandwiches, because that’s boring. A cheesy ham omelet for breakfast would be better. Or a filo pastry parcel filled

Write to Santa to win big “DEAR Santa, All I want for Christmas this year is…” December has begun, heralding the first delivery of letters to Santa from children all over the world, carrying their Christmas wishes to the North Pole. The good news is, the South Burnett Times office is a dropoff point for Santa letters this year. Children can come in and put their letter in the Christmas mailbox at the newspaper office on Haly St in Kingaroy. These letters will then be posted to the North Pole for Santa to read, and the South Burnett Times team will ensure Santa’s reply letters arrive back in Kingaroy safely. All Santa letter entries will go into the draw to win one of five gift cards. There are four $50 gift cards from Kingaroy Toyworld and a $50 voucher from Elray

Lachlan Zenovich, 3, writes his Santa letter asking for a boogie board for Christmas.

Jewellers up for grabs. Twenty South Burnett businesses have supported this special Christmas mail service to ensure children from the South Burnett can get their letters to Santa on time. The competition will close

on Thursday, December 19, at 9am, before the winners are drawn at 9.30am. Competition terms and conditions are available at our privacy policy at www.south burnetttimes.com.au/comp etitionterms.

Light up the street

Helping others this Christmas

THERE is a group of locals keeping alive the magic of Christmas each year. They are the people who dress their homes in festive light displays for the joy of others. With just 22 days left until Christmas, South Burnett residents are being urged to band together to put up their best light show display. As an incentive for neighbours to work together, South Burnett Regional Council will present the inaugural CEO’s “Santa Claus Lane” award for the street which best embodies Christmas and co-operation. The winning street will receive a Santa Claus Lane street sign to display, which would be a permanent fixture Council chief executive Mark Pitt said the light displays provided Christmas cheer. “This is a great way for resi-

The council said the lights needed to be on display for judging of Santa Claus Lane from 7pm to 10pm, Monday, December 2 to Monday, December 9.

All your favourite holiday season carols were performed by the talented choirs, lead by Sue Dowideit-Reiger. Keeping it affordable

How to deal with the heat this Christmas

WHEN it comes to the Christmas season, while it can be cheery and fun, it can also be quite financially stressful. Here are some tips to survive the Christmas season by not blowing your budget on those things you can control.

UNLIKE colder areas during the Christmas season, instead of snow and brisk temperatures, Australians rely on carols, lights and family plans to get into the Christmas spirit. But when the summer heat gets too intense, it’s easy to disassociate from the festivities. Fortunately, there are many ways for you and your friends or family to battle the heat this Christmas. According to Better Health, you should be carrying a bottle of water with you even if you aren’t feeling thirsty. As well as drinking water, you can be using water games and activities to boost your family time both in the lead-up to Christmas and on Christmas Day. This can include taking a dip in the pool, or playing games with water guns. Water-based games are a popular way to keep your Christmas guests cooler, but make sure to put on sunscreen. Another way to help stay

rials can be a much more family inclusive activity than a shopping trip that your children may dread, and it can also be much more cost effective too. You can get inspiration for your decorations online, with Pinterest being an especially helpful site. 3. Shopping locally

There’s no point wasting money on new wrapping paper when you have a cupboard filled with different wrapping that will do the job. This is the same with Christmas decorations acquired in previous years. You can also make only food that doesn’t require you to buy all of the ingredients new too – make use of what you have stored in the cupboard, but make sure it hasn’t already reached its expiry date. 2. Avoiding travel expenses or shipping costs can save you quite a lot of money especially on a budget. This will also help you inject money into your community, allowing the local economy to grow. While these ideas can help cut some dollars, for some it may not be enough. According to The Smith Family, many families may feel an expectation to provide gifts to their friends and family members when they can barely make ends meet. If you are needing some fur-

cool is by sticking to eating cooler foods. Refreshing drinks, refrigerated fruits and salads, and desserts – there is a lot of food you can use to both fill you up and cool your body. Making sure your holiday menu steers clear from typical winter warmer foods and instead has a good range of cold meals will make all the difference when tolerating the summer heat. Plus, during fire bans you may not be allowed to operate your barbecue in the first place. Always plan ahead and check the current restrictions to avoid any fire hazards.
