When Mansfield students head back to school in a few weeks, it will be the last first day of school for MISD Superintendent Dr. Jim Vaszauskas. The man who has served the district since 2009, the last six as superintendent, will retire in February after 37 years in education. While he worked to navigate the district’s explosive growth, Dr. V also earned the respect of trustees, administrators, teachers and parents for his caring nature and dedication to all 35,000-plus students in MISD. He focused not only on high academic standards but on preparing students for life after MISD. Additionally he has been a great partner for the city, providing support as we manage our growing popula-

tion and meet the needs of our residents. He understands the importance of collaboration to give the Mansfield community the excellent quality of life we have come to be known for. We are grateful for the commitment Dr. V has shown over the last 10 years, and we congratulate him on his retirement. Mansfield ISD and the Mansfield community are better for having had him as the district’s leader. Thank you Dr. V!

An infestation of the destructive Emerald Ash borer beetle has been confirmed in Tarrant County. To stop the spread, the State has quarantined ALL brush and firewood from leaving Tarrant County. Residents of Grand Prairie who live in Tarrant County may no longer put brush and limbs on the curb for regular garbage service; nor may they take brush to the Grand Prairie landfill. Because it is difficult to discern Ash tree limbs and brush from other species, the quarantine applies to ALL brush, limbs and firewood in Tarrant County. Here’s what you can do, though: 1. Leave brush on curb to be collected by the City Brush Crew during your regularly scheduled once-per month service. For residents south of I-20

The American Dream City is full of many talented visionaries, dreamers, and original thinkers. It’s one of the things that makes this such a great place to live. Recently, I read about a professor at The University of Texas at Arlington who’s developed a new app for preserving North Texas’ unique independent music scene. David Arditi, a UTA assistant professor of sociology, has spent four years building an online audio archive and streaming platform he calls MusicDetour: The DFW Local Music Archive. It’s a digital depository for music created and performed in the Dallas-Fort Worth area. “We’re losing a wealth of cultural creation by not archiving the music of local musicians,” he said. “MusicDetour preserves those works so their potential influence can live on to spur new culture.” Our hats off to Professor Arditi as well as to Kirk Franklin.

it’s impactful. But for one eight-year-old girl from a remote village in Honduras, glasses were nothing short of life changing. “Her smile lit up the room,” said Kennilyn Castricone. “She saw colors and faces she’d never seen before.” For Kennilyn and her team of missionaries, that smile was contagious. Yet it was just one of the miracles they witnessed when they traveled over 2,300 miles from Kleiman Evangelista Eye Centers in DFW to create an ophthalmic surgery program in an area where access to eyecare is minimal to non-existent. The group spent six days treating dozens of patients in Honduras, performing cataract surgery on elderly patients, strabismus surgery to correct crossed eyes and misaligned vision in children, and gold plate surgery to lift eyelids, so patients could see again. And they fitted many more pairs of glasses. Team member Dr. Moulaye Haidara performed a procedure to remove a squamous cell carcinoma from the eyelid of one patient. “The patient presented with multiple complications,” Dr. Haidara said. “But we

were able to remove the large carcinoma before it could grow and metastasized to the rest of her body.” During their time in Honduras, Dr. Haidara and the rest of the team succeeded in setting up an ophthalmic surgery program—from the ground up. “Other surgeons coming after us should feel completely comfortable performing surgery here safely,” he said. “That was our goal.” The Kleiman Evangelista Eye team partnered with One World Surgery, a nonprofit which joins with communities and healthcare providers to deliver surgical services to areas of the world where medical care is unavailable or unreliable. “Half of the world’s population lacks access to quality surgical care,” said Julie Jung. “One World Surgery transforms lives worldwide by providing access to high-quality surgical care through mission trips like ours.” “Our goal was to help as many patients as possible to see better,” Dr. Haidara said. “We were able to perform advanced techniques that are commonplace in America but unavailable there. The kindness and gratitude from the patients and the dedication of the local staff were overwhelming.” Joining Julie, Kennilyn, and Dr. Haidara were other Kleiman Evangelista team members including Monica Orlofski, Dr. Nadia Virani, Delaney Almon, Karli Gill, and Sarah Cannon. Kennilyn who’s worked for Kleiman Evangelista for 14 years says the KE doctors and team touch and improve lives every day. But this mission trip has motivated her to look for even more ways to make a difference. “I’m looking forward to the next opportunity to help someone,” she said, “here or far away.”

R

ECOGNIZED MOST BROADLY ON A NATIONAL

level for taking the stage as a legitimate third party candidate in the 1992 U.S. presidential election and garnering nearly 20 percent of the popular vote, H. Ross Perot—who passed away at his home in Dallas last month at the age of 89—will be remembered by Texans fondly for his entrepreneurial spirit, unique sayings, and his affable “no nonsense” personality. He got his start in the world of big business as a top salesman for IBM, who, when frustrated by his supervisors not paying heed to his ideas, decided to found his own company in Dallas called Electronic Data Systems. EDS would go on to secure big contracts from the U.S. government, specifically digitizing records for the Medicare system. When the company went public in 1968, Perot became essentially an overnight billionaire through a 1000 percent increase in stock value, and in 1979 made headlines (and provided the impetus for a book and film) by financing a private commando operation to rescue two EDS employees being held in an Iranian prison. Perot later sold the company to General Motors for $2.4 billion. Said U.S. Chamber of Commerce CEO Thomas J. Donhue, “Over nearly five decades, hundreds of thousands of Americans have supported themselves and their families by going to work at a company founded by Ross Perot.” Perot made the transition from big businessman to brash politician with his activism in the 1980s regarding missing American soldiers who he claimed were left behind, missing, or imprisoned in Vietnam after U.S. involvement in the conflict there, and eased himself into the 1992 election with a series of pricey 30-minute television programs that featured him explaining complex concepts with visual aids and the

ROSS PEROT 1930 - 2019 go-to “It’s just that simple.” He also famously noted that sending jobs south to Mexico would cause “a giant sucking sound.” “I love the fact that people will listen to a guy with a bad accent and a poor presentation manner talking about flip charts for 30 minutes, because they want the details,” Perot commented during a 1992 debate. “And I have said again and again and again, let’s get off mud wrestling, let’s get off personalities, and let’s talk about jobs, healthcare, crime, the things that concern the American people.” “Although we were opponents in 1992 and 1996,” said President Bill Clinton, “I respected Ross for his support for our veterans, the business he built, and the passion he brought to his politics. He was a feisty and effective debater as Al Gore and I can both confirm. We can all be grateful for his enduring patriotism, active citizenship, and devotion to our veterans.”

In later years, Perot received a variety of honorary degrees and awards, and became especially notable for his support of veterans, POWs, and the United States military. Thanks to a $50 million gift from his children, he and his wife Margot are also the namesakes of Dallas’ own Perot Museum of Nature and Science. Perot summed up what it meant for him to be a Texan to The Dallas Morning News in a 2016 interview, w ith a character istic Perot quip. “ Texas born. Texas bred. W hen I die, I’ll be Texas dead. Ha!”

METHODIST MANSFIELD MEDICAL CENTER WELCOMES NEW PRESIDENT

MEET JUAN M. FRESQUEZ JR. BY MEREDITH KNIGHT

Juan Fresquez Jr., MBA, always knew that he wanted to work in healthcare. Born with a congenital heart condition, he became familiar with doctors and hospitals at a young age and, even then, saw himself in the role of serving others as a medical professional. Originally, he thought that meant a career in medicine. But he quickly realized that he wanted to work in a hospital leadership role. Now after 30 years in acute care management, he knows it was the right decision for him. “Our lives are so short,” Fresquez said. “I want to know that I’ve used my time on earth giving back to others.” This altruistic spirit has led Fresquez to serve in his church and volunteer with multiple organizations, including local chambers of commerce, the American Heart Association, Education Foundations, and many others. It also guided him throughout his career, which began at Parkland Hospital and eventually led to Carondelet St. Joseph’s Hospital in Tucson, Arizona, where he most recently served as chief operating officer. Now, Fresquez and his wife, Carla, couldn’t be happier to be back in Texas, where he is president of Methodist Mansfield Medical Center. “I’m thrilled to be part of such an outstanding team of physicians, staff, and volunteers,” he said. “The one thing I’ve always enjoyed about my job is patient contact, going room to room and speaking with the patients, ensuring that the care they’re receiving is of the highest quality and service.” Fresquez said. “Patients heal best

when they work in partnership with caregivers and can be an integral part of their care, like they are at Methodist Mansfield.” Fresquez praises the Methodist Mansfield culture, where physicians and staff empower patients with the knowledge that they need to make informed decisions. “I’m pleased to serve at a hospital where patient satisfaction is so high [in the 90th percentile],” Fresquez said. “Patients come to the hospital scared and hurting. Their family is often just as scared. A big part of that patient’s healing will come not just from the physical care we give them but from the spiritual as well.” Fresquez explained, “Our outstanding pastoral care team works hard to incorporate spiritual care, so the focus is on more than just medical. We strongly believe that we need to heal the spirit and heart as well.” Staff satisfaction is another factor that drew Fresquez to Methodist Mansfield. “It’s something I hear from patients all the time,” he said. “Our physicians, nurses, and staff look forward to coming to work and the patients can tell. It’s a very upbeat climate. Doctors and nurses are more engaged with the patients here than at any hospital I’ve experienced.”


When not on the job, Fresquez said he’s an avid reader: “I like to read as much as I can on as many topics as I can.” He enjoys playing golf and volunteering with his church and has served on the board of the American Heart Association in Tucson and Houston. “I’ve been married to my best friend, Carla, for 30 years. We met in college and have three grown kids.” The future of Methodist Mansfield is bright. The hospital is undertaking a $9 million neonatal intensive care unit expansion and is breaking ground on a new comprehensive breast center to be located inside Professional Office Building I on the Methodist Mansfield campus. Multiple physicians have plans to build a $10.6 million ambulatory surgery center on the fourth floor of the new Physician Office Building II also on the Methodist Mansfield campus. And we are also looking forward to opening a new Methodist Health System hospital in Midlothian in 2020. “Over my three decades in healthcare, I’ve seen a lot of changes,” Fresquez said. “No one knows how the future of medicine will look, but Methodist Mansfield is committed and dedicated to this community and will stay at the forefront in helping to move healthcare forward in the right direction.”

y husband and I had very different school experiences. He attended large public schools, while I spent 12 years in the same small parochial school. I knew every one of my schoolmates and still know many of them today. Because I had eleven siblings, when I went to recess, there was usually a brother or sister—or three—on the playground with me. And because our mom was PTA president more years than not, she was typically somewhere nearby too. I graduated in a class of 40. David graduated with 400 of his closest friends.

I realize now that mine was an unusual school experience. But it was all I knew and certainly what I imagined for my own four children. But God—and my husband— had other ideas. After many discussions and much prayer, we decided our kids would attend the local public schools. It was a real “Lord, I believe. Help my unbelief” experience for me.

I reached out to teachers and other school workers, asking them, “How can we pray for you?” Teachers asked us to pray that they’d have energy to keep lessons engaging and to find balance between their school and home life. They asked us to pray for them to “love the hard-to-love child,” “see in each child the unique value God has placed there,” and for “a peaceful atmosphere in the classroom and a calm spirit in themselves.”

I knew in my intellect that Christian families in the public school have untold opportunities to share their faith and I’m all for that. I knew God loves my kids even more than I do and that He’s fully capable of protecting them. But as I watched my first tiny, helpless baby head off to kindergarten, I felt pretty helpless myself. That’s when I heard about a group of ladies who meet each Tuesday to pray for our students, teachers, administrators, and school workers. The group is small, but these ladies were mighty prayer warriors who welcomed me with open arms. Over the years, as my second, third, and fourth child started school, we prayed a hedge of protection around each. We prayed that they’d find favor with their teachers and schoolmates (the way the Lord granted favor to Esther in the Book of Esther). We prayed for the students to have respect for their teachers and administrators. (“Everyone must submit himself to the governing authorities, for there is no authority except that which God has established.” Romans 13:1) We prayed for their physical protection. (“Though I walk in the midst of trouble, you preserve my life; you stretch out your hand against the wrath of my enemies, and your right hand delivers me.” Psalm 138:7) And we prayed for their

We prayed that our Christian students and teachers would shine the light of Christ. (“You are the light of the world. A city set on a hill cannot be hidden.” Matthew 5:14) And we prayed they’d have a spirit of excellence in all they do. (“Whatever you do, work heartily, as for the Lord and not for men.” Colossians 3:23).

A custodian of 35 years asked “for strength to leave my own aches and pains at home and give my best to my school.” A bus driver asked us to pray that she’d have concentration as she drives under different traffic conditions. And an administrator asked us to pray “that every adult on your child’s school campus— from the principal to the man who cuts the grass—has the best interest of the students at heart. Pray that we’re able to see every child as having the potential to become an outstanding, contributing member of his community and treat them accordingly.” As word got out about our group, we were even invited to conduct prayer walks through the schools on the weekends. It’s been 24 years since our first baby headed off to school. This month our youngest will begin his senior year. It’s been quite a ride. We’ve met amazing kids, parents, teachers, and administrators and I hope their lives are better because the Knights were there. Through it all, God has blessed. He’s allowed us to bring dozens of kids to church—some for the first time. And He’s humbled us by allowing us to be a small part of the work He’s doing in and through our schools. I wouldn’t change a thing.

Learn the Lingo It’s true that many restaurants—from fast food to fine dining spots—are making an effort to offer healthier fare. But beware! Even with these options available, there are a number of other pitfalls that may lay waste to your healthy intentions. You can easily sidestep these most of these with a little advance planning and by keeping a couple of tips in mind during your next culinary adventure.

DECIDE. Make a commitment to fully enjoy any dining out experience. Decide right now that you can have as much fun and be just as satisfied as anyone else while also staying true to your decision to eat healthily. PLAY DETECTIVE. Most restaurants share their menus online. Take advantage of this and check out the menu in advance. You can then place your order on the spot and won’t feel so tempted by any of the less-than-healthy dishes they offer. You don’t have to mention your sleuthing activities to anyone else, just take a moment to look over the menu before you get there then order the dish you have already chosen.

SNACK BEFORE THE FACT. If you’re worried about the unlimited fresh bread or biscuits many restaurants serve to guests before the meal, have a healthy snack before heading out. Slice up some carrots and bell peppers or have a banana to stave off any temptation to overindulge in the buttery bread traps. You’ll still feel hungry enough to savor your dinner while staying true to your healthy eating plan.

WATER FOR THE WIN. Healthy eating doesn’t usually include alcoholic beverages. Water safely retains the title of healthiest drink ever. But if you do want to have a drink that includes alcohol, wait until the food comes before ordering it and stick to one. Ask the server to bring you a tall glass of water and to keep it full. This way you can enjoy an adult beverage with your companions without falling off a figurative nutritional cliff (or easily running up the bill).

COFFEE WRAPS IT UP. If anyone at your table orders dessert, have a hot cappuccino without the sugar. It’ll keep you in the loop while the others finish up and even give you a little boost for some after dinner dancing or other fun. Just because you’re committed to living healthily doesn’t mean you can’t enjoy going out to eat. A little planning and detective work will usually allow you to stay on track—even when dining at your favorite restaurant.

A great way to maintain healthy eating habits while dining out is to learn key words and phrases that clue you in on the healthiness of a given dish. For example, words like smothered, crispy, dipped, and creamy probably indicate the dish in question isn’t likely to meet the criteria for healthy eating. On the other hand, words like grilled, steamed, seared, broiled, roasted, and baked in a menu description may indicate healthier choices. Ask your server to find out for sure. Some people feel shy about asking questions regarding a possible menu choice, but it’s the only way to really know. And most people working in the food service industry have heard more questions than you can imagine about the various menu items offered. As long as you’re polite (and you obviously will be), you shouldn’t encounter any pushback. If you still feel odd about asking in person, call the restaurant before you go. Here’s a little secret—by talking to someone committed to providing great service and an exemplary dining experience, you may learn that they have no problem creating off-themenu dishes for their guests. You’ll then have the confidence and knowledge to order beautifully prepared, delicious dishes that align perfectly with your healthy eating habits. Decide to level up your commitment to great nutrition the next time you dine out in search of a culinary adventure.

he aesthetic medical industry is evolving rapidly as our understanding of the aging process deepens and technology advances. New procedures, new products, new devices, and new beauty venues appear all the time. With the growing array of options, how does a curious consumer decide what professional is right for them?

They are the pioneers of aesthetic medicine that perform groundbreaking work that evolves the entire industry, as well as routine work.

As a board-certified plastic surgeon who works closely with a dermatologist, I am biased towards prioritizing safety and expertise. It is important to remember that aesthetic services are medical in nature and should be performed by experienced practitioners in a structured environment. The best procedure will be planned by someone who understands the anatomy, correctly diagnoses the problem, creates a plan that addresses the problem while understanding the potential limitations of the plan, and performs the procedure or re-directs you to someone who can perform the procedure while putting your well-being first.

What about the medical spa, often called a medspa or medi-spa? These are places where non-surgical aesthetic procedures are performed, and they can be located within a dermatology office, a plastic surgery office, or any other physician’s office. Even in a medspa, you should have an aesthetic consultation. Once a plan is created, a well-trained nurse or aesthetician can perform procedures that they are trained to perform. It is important for you to feel comfortable in the medical spa environment, but remember that these are still medical procedures and they should be performed in a safe and professional fashion.

In general, I think physicians are best equipped to diagnose and create a plan. The reason is that all physicians study anatomy in medical school. ENOUGH 1,864 ISLANDS THAT OFFER ALL THE SHORELINE SATISFACTION YOU COULD EVER ASK FOR BY ANNET T E BRO O KS

A

s a kid, I loved Thousand Island salad dressing, but had no clue where the name originated. Then recently, while perusing a United States map in search of a new travel destination, I spied the Thousand Islands. During this condiment “aha!” moment, I learned the dressing was named in honor of the region where it was created, located along the CanadaUnited States border at the Saint Lawrence River.

As the story goes, a local fishing guide’s wife prepared the dressing for a shore dinner in the early 20th century and shared it with actress May Irwin, who shared it with others, and so on. A second version of the origin story states that self-made millionaire George Boldt, owner of New York City’s famed Waldorf Astoria—the very hotel that created the Waldorf Salad in 1896—instructed his chef to create a salad dressing with whatever ingredients were on hand. Whatever its origins, the rest is salad dressing history… or legend, as it were. A Gilded Age playground for the wealthy and laden with history, the Thousand Islands (sometimes printed as 1000 Islands) remain to this day a fun-filled destination for families and everyone who’s up for a laid back, outdoorsy vacation. Luckily I didn’t have to twist my husband’s arm to get him to agree on a spur of the moment getaway to this 1,864 island archipelago. Our first afternoon in Alexandria Bay, New York was spent driving around getting the lay of the land and visiting Thousand Islands Winery. The winery’s welcoming big red barn, which rests on a 40-acre farmstead, is set against the backdrop of the Thousand Islands International Bridge that connects the state with Ontario, Canada. “Thousand Islands is one of New York State’s fastest growing wine regions,” the rep explained as we sampled wine in the tasting room. Later, she shared something that didn’t pertain to wine, but was interesting just the same. “If you come here in the spring, you can smell the sweet aroma of maple sugar shacks.” A longtime pure maple syrup junkie, I whipped out my phone and quickly made note of this. Our evening was a throwback in time fitting of the area. While watching a newly released movie with radio-provided FM stereo sound and brilliant digital color at the Bay Drive-In Theatre, vivid scenes from my own childhood came rushing back. We saw families spending time together and kids gleefully running back and forth to the concession stand, knowing that someday this experience will be woven into their personal tapestry of lifetime memories.

commerce—runs deep. As the boat made its way from Gananoque, Ontario down the mighty Saint Lawrence to the castle, we marveled at the tales of shipwrecks, river pirates, and prohibition bootleggers, along with other cool facts about this international waterway that connects the Great Lakes to the Atlantic Ocean. We also learned that land has to stay above water 365 days a year and support a living tree to be counted as an island, and that each island is either completely in the United States or Canada. Perched on Heart Island, grandiose Boldt Castle looks curiously out of place in this nature lover’s paradise. Hotel magnate George Boldt began building the monolithic summer home as a tribute to his wife in 1900, but it was not to be. When Mrs. Boldt passed away before its completion, Boldt, inconsolable, stopped construction. In 1977 the Thousand Islands Bridge Authority acquired the property and has spent millions of dollars in tour proceeds on repairs and restorations. Today the castle hosts tours and fairytale weddings. After spending a little time on the river, we spiffed up and dined at the Saint Lawrence Spirits Château. Located in a meticulously renovated fieldstone manor home, the farm to table restaurant offers fine wines, handcrafted cocktails (there’s a distillery tasting room on site), and majestic river view dining. The fork-tender bourbon and brown butter wagyu received rave reviews from my native Texan and steak enthusiast husband. My entrée, wild caught pan crispy Lake Ontario walleye, was perfection on a plate. Speaking of fish, what would a trip to the Thousand Islands be without going fishing? We were back on the Saint Lawrence the next day aboard a private charter. Thanks to Captain Matt Heath of Seaway Charters and the unique knowledge he had of this river he grew up on, we had loads of fun catching an angler’s bounty of northern pike and small mouth bass. And we savored every bite of the shoreline lunch he prepared, which included the catch of the day and—you guessed it— salad tossed with Thousand Island dressing. It was up, up, and away on our final morning in the area. Soaring through the clear, crisp air in a hot air balloon we caught a bird’s eye view of lighthouses, all kinds of river traffic, shoreline beaches, and beautiful summer homes and hotels that make the Thousand Islands a place to visit again and again. After a sweet farewell to the region that evening, we flew home with a bottle of locally made dressing—and later enjoyed it over salad as we reminisced about our adventures on the Saint Lawrence River and its endless shorelines.

Not only did Mr. Naquin accept his apology, but he took the time to extol the good qualities he’d seen in Jonah that led him to select him for leadership and assured him that in this case the absence could simply “fall off his record.”

My advice to parents as their child begins a new year with a new teacher is the same. Remember that your child’s teachers are real people just like you— likely people with families and full lives outside of school. Treat them accordingly. Make a human connection early and follow these A-B-Cs for establishing a beneficial relationship with teachers that’ll help you work together as a team for the benefit of your child.

ASK FOR TEAMWORK

Communicate to your child’s teacher that you’re interested in working with them to make the most of the time your child has in their classroom. Should you disagree with something they’re doing, communicate it respectfully to them and offer them the opportunity to explain their reasoning.

BE ENCOURAGING

Teaching is a demanding job that doesn’t pay like it should. Never underestimate the power of encouraging words from you to bolster an overworked, underappreciated teacher. If you’re happy with the job they’re doing, take time to tell them so. Our futures literally depend on the work they’re doing with your children.

CREATE A CULTURE OF RESPECT

Your child’s opinion of their teacher can affect their success in the classroom. Never disparage your child’s teacher within earshot of your child. If you have complaints, communicate them to the teacher—and their superiors, if necessary—but never in front of your child. It sends a signal that disrespect for people who are only trying to help is acceptable, and can lead to problems in the classroom and down the road.

If your child is facing special challenges in life, let the teacher know about it. If they’re acting up or shutting down in class, the teacher needs to understand why so they can offer appropriate support.

PRIORITIZE PARENT/TEACHER CONFERENCES Even if your child is doing well in school, attend any planned meetings between you and the teacher. There are usually things going on at school your child won’t relay to you but you’ll be best served to know about. This is the time to ask questions or voice concerns (not during the school day, when the teacher is trying to teach).

FIND OUT THEIR COMMUNICATE PREFERENCES Some teachers are great at texting. Others prefer an email or phone call. Honoring each teacher’s preferred communication method not only demonstrates respect, but increases your chances for a prompt response—and a closer connection.

For example, if you’ve always been interested in photography, take classes and photo-shoot field trips, hone your skills, and start building a portfolio. Have professional photographers critique your work. Do this while you’re at your current job unless you are in the financial position to support yourself without a steady income for a while. Or perhaps you envision yourself teaching. Find teachers to talk with as well as researching everything you can online. Also, dare to think outside the box. Instead of teaching in a school system, for instance, consider becoming a corporate trainer.

INDUSTRY CHANGES. Are you in a field you don’t particularly want to leave but see it being cannibalized by advances in technology or global outsourcing? What if you know you need or want to find something new but have no idea what you want to do? An experienced , profes sional career counselor can help you find the inner you and map out a path to a new career. Once again, there’s no substitute for up front planning so you don’t end up in desperation mode when making a change. The idea is to find something you will love doing for the long term as opposed to just a job where you’re going through the motions.

WELCOME INPUT FROM OTHERS. Talk openly with friends and family members who know you well. Run your ideas by them. Ask for honest opinions and stay open minded even if they tell you something you don’t want to hear. This really helped me solidify what I was and wasn’t cut out for. One of my ideas was going back to college to get a nursing degree. My husband helped me think through things in a rational way. At the time I wasn’t exactly thrilled, but looking back, his sage advice helped me avoid spending time and money on something that wouldn’t have panned out.

TAKE RISKS. Don’t forget to have fun and dream big as you explore ideas. And while planning is important, you also have to be willing to take a risk. Be prepared to stumble a couple of times along the way—most ever yone does. Just keep going without losing sight of the end goal, which is finding an enjoyable, fulfilling career you love.

MEATLOAF SLIDERS MAKES: 10-12 SLIDERS | TIME: 20 MINUTES

FOR THE MEATLOAF SLIDERS: 1½ pounds ground beef | 1 egg | 1 onion, chopped | 1 cup milk | 1 cup dried bread crumbs | salt and pepper to taste | 1 package slider buns/sweet Hawaiian rolls | sliced pickles or other toppings as desired FOR THE GLAZE: 2 Tbsp. brown sugar | 2 Tbsp. mustard | 5 Tbsp. ketchup PREHEAT oven to 350˚F. IN A LARGE BOWL, combine the beef, egg, onion, milk, and bread crumbs. Season INSTRUCTIONS: with salt and pepper and place in a lightly greased 5x9 loaf pan or form into loaf and place in baking dish. IN A SMALL BOWL, combine the brown sugar, mustard, and ketchup. Mix well and pour over meatloaf. Bake for 1 hour then let chill. CUT into slices and serve on toasted slider buns with ketchup, sliced pickles or onions, or other toppings as desired. HOT TIP! If you’d like to have the traditional meatloaf dinner, stop short of chilling the meatloaf and prepare some classic sides like mashed potatoes and a green vegetable. If you’ve got leftovers you can always repurpose them as sliders the next day.

COLD CORN SALAD MAKES: 4 CUPS | TIME: 20 MINS INGREDIENTS: 1½ cups corn (drained, if canned) | 1 cup fresh diced tomato | ½ cup finely chopped cucumber | ¼ cup finely chopped red onion | 2 Tbsp. chopped fresh basil | 2 Tbsp. olive oil, divided | 2 Tbsp. fresh lime juice | ¼ tsp. salt | ½ tsp. black pepper | ¼ tsp. garlic powder IN A LARGE BOWL, combine INSTRUCTIONS: corn, tomato, cucumber, red onion, and basil. Set aside. IN A SMALLER BOWL, whisk together olive oil, lime juice, salt, pepper, and garlic powder. Drizzle dressing over corn mixture and toss to coat. LET STAND for at least 10 minutes before serving to allow the flavors to mingle, or refrigerate covered until ready to serve. HOT TIP! For a warm corn dish, using the same basic ingredients, heat 2 Tbsp. of olive oil over medium high heat. Add onion and cook 3 to 5 minutes. Add corn and cook another 3 minutes. Add tomatoes and lime juice to the pan and cook 1 more minute. Remove from heat and add all seasonings, cucumber and basil. Serve warm.

APPLE PIE TWO WAYS MAKES: 8 SLICES | TIME: 65 MINS INGREDIENTS: 1 box refrigerated pie crusts | 6 cups peeled and thinly sliced apples (6 medium) | ¾ cup sugar | 2 Tbsp. flour | ¾ tsp. ground cinnamon | ¼ tsp. salt | ¼ tsp. ground nutmeg | 1 Tbsp. lemon juice | vanilla ice cream and milk ( for the shake version) HEAT oven to 425˚F. Place one pie INSTRUCTIONS: crust in ungreased 9-inch glass pie plate. Press firmly against side and bottom. IN A LARGE BOWL, gently mix remaining ingredients; spoon into crust lined pie plate. Top with second crust. Cut slits or shapes at several places in top crust. BAKE 40-45 minutes or until apples are tender and crust is golden brown. Cover edge of crust with foil after first 15 minutes of baking to prevent excessive browning. A NEW TWIST! Apple pie can be served hot immediately with a scoop of vanilla ice cream on top. But if you’re feeling adventurous, let it get to room temperature, then add 1 slice of pie, 1 cup of ice cream, and ¼ cup milk to the blender—and make yourself a delicious apple pie shake (it’s delicious, I swear)!
