AstheseasonofLentrollsaround,Ialwaysfindmyselfreflectingon whatIwillbeofferingupandwhatitwillmeantomakethat sacrifice.Oftenthesereflectionsoverlapwithworkandwhatever taskisathand.Forexample,thisyear,weoptedtomakeaspecial Lenteneditionofthediocesancookbook“GatherattheTable” focusinginonLentfriendlyrecipes(namely,meatlessmeals)but combineitwithafeweventsandinitiativesofferedthroughoutthe Diocese,muchlikeourtypicalLiturgicalLivingGuidebooks.

Naturally,whenyourworkisinherentlyCatholic,prayerisa natural element and the traditional Grace before meals prayer poppedinmyhead.Howfittingforacookbook!Onelinein particularstoodout:“thesethygifts.”

What is Lent?

Lentisasolemnfortydayseasonofprayer,fastingandalmsgiving thatbeginsonAshWednesday.Itisaperiodofpreparationforthe Lord’sResurrectiononEaster,wherethefaithfularecalledto practiceself-discipline,abstain,fast,andpray,seekingatrueinner conversionoftheheart.Thesepracticeshelptoprepareourhearts andmindsforthePaschalMystery,Christ’sworkofRedemption accomplishedbyHisPassion,Death,Resurrection,andglorious Ascension.BydyingHedestroyedourdeath,risingHerestoredour life.

Ingredients:

¼cup(4tablespoons)whitesugar

¼cup(4tablespoons)roomtemperaturewater

Inasaucepan,addwater,butterandsalt.Bringtoarollingboil. Reduceheatandaddflourallatonce.Stirvigorouslywitha woodenspoonuntilmixtureleavesthesidesofthepaninaball. Cool3-4min.Placemixtureinamixingbowlandaddeggsoneat atime,beatingwellaftereachaddition.

Transferbattertoapastrybagandpipeintosmallmoundsona cookiesheet.Besuretoleavespacebetweenthemastheyexpand duringbaking.Bakefor20-25min.Slicethesideofeachpuffand letstandintheturnedoffovenfor5min.Removefromovenand Coolcompletely.

Fillwithchilledcustard(recipebelow).Sprinklewithpowdered sugar.

Custard Filling:

Combinesugar,flour,cornstarch,andsaltinasaucepan.Gradually stirinmilk.Cookandstirovermediumheatuntilmixturethickens andcomestoaboil.Cook3minlonger,stirringregularlysoit doesn’tstick.Combineeggyolkswithasmallamountofhotmilk mixturetotempertheeggs,thenaddeggyolkstopan.Continue cookinguntilmixtureboilsandthickens.Stirinvanilla.Remove fromheatandcoolcompletelyintherefrigerator.

Dressing:

Directions

1.Puthalfoftheplumsaucewiththegarlicinablender,blendtill smooth.

2.Pourintoabowl,addtheremainingplumsauce,sesameoil,light soysauce,limejuiceandsugar.Mixwell.Setaside.

3.Mixallthecarrots,cucumbers,tomatoes,lettuce,greenbeans togetherinabigbowl.

4.Addthecookedshrimptothesalad.

Inalargesaucepan,coverpotatoesandgarlicwithwater.Bringto aboilonhighheat.Reduceheattolow;simmer20minutesor untilpotatoesareverytender.Drain;returntosaucepanwithsour cream.Mashtodesiredconsistency.Stirinoptional1/4cup cheddarcheese,ifused.

Preheatovento375degrees.

Partiallycookcarrotsinbroth.Brownmeatinoilinlargeskillet. Stirinflour;cook1minute.Addcarrots,broth,andketchup.. Spoonmeatmixtureinto8-inchsquarebakingdish,addpeas. Coverwithmashedpotatoes.

1cupbreadcrumbs(pre-madeplainisfine,ormakefreshwith day-oldcrustybread)

Directions

1.

Bringalargepotofsaltedwatertoaboil.Saltwater generouslywithkosherorseasalt(thewatershouldbesaltylike thesea)

2.

Addpastatoalargepotofsaltedwaterandcooktoaldente. Donotovercook!Thepastawillfinishinthesauce.

3.

Warm2Tablespoonsofoliveoilinalargeskilletovermedium heat.Oncewarmed,addbreadcrumbsandstirtocoat.Once thebreadcrumbshavebeencoatedinoilandlightlybrowned, removethemtoaseparatedishtohold.Wipetheskilletclean.

4.

Warm3Tablespoonsofoliveoilinthelargeskilletover mediumheat.Oncewarmed,addgarlic.Cookovermedium heat,stirringfrequentlyandtakingcarenottoburnthegarlic.

Addanchoviestothegarlicoil.Stirandsmashtheanchovies intothegarlicpiecestomakeagarlickyanchovypasteinthe oil. Note: You must use anchovies! The sauce does not taste "fishy" instead the anchovy imparts a delicious unctuous flavor to the dish.

Addredpepperflakeandstir.Addpestoandstir.*By this time, the pasta should be done. Reserve 1 cup of pasta water and drain the pasta*

Addaldentepastatotheskilletwiththesauce.Turntheheat tolow.Tossthepastainthesauce.
