Recipe of the Month-Chicken & Creamy leeks

CHICKEN WITH CREAMY LEEKS

Serves 4 - half a syn per serving and ready in 30 minutes

4 skinless & boneless chicken breasts 2 leeks, thinly sliced 1 tbsp fresh thyme leaves, plus sprigs to garnish 300g fat-free natural fromage frais 2 level tbsp freshly grated parmesan cheese

Preheat oven to 200C/fan180C/gas 6 Spray a non-stick roasting tin with low-calorie cooking spray, add the chicken breasts and season lightly. Cook in the oven for 20-25 minutes or until cooked through, turning halfway.

Meanwhile spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat.

Add the leeks, thyme and 150ml boiling water and cook for 10-12 minutes or until the leeks have softened and most of the liquid has gone, stirring occasionally. Reduce the heat to as low as possible, stir in the fromage frais and most of the Parmesan and cook for 1-2 minutes or until just heated through, stirring often. Season to taste.

Spoon the creamy leeks into shallow bowls and top with the chicken breasts. Sprinkle with the remaining Parmesan and garnish with thyme sprigs to serve.
