Dear Reader

“Happy Halloween… Happy Thanksgiving… Merry Christmas… and a Happy New Year, to you. Happy Holiday, all the way...to 2023.” But let me add, “I have not forgotten, all the days in between.”

Every day is precious. Every day, is a day to: go to bed… happy…… with a good conscience. Every night, as your head comes to rest on the pillow, you can remember, all your positive vegan, happy, happy acts, that you shared that day

Daily acts of compassion… can, truly, make the difference. Because, truly, there is no difference, between: complete compassion & daily acts of veganism Become intelligence and creativity by showing mercy, to animals Then, you will discover honest ways to help Meanwhile, if you are searching for some ideas, how about: have a friendly conversation, with a person who is troubled; do additional help with household chores; volunteer at an animal sanctuary; introduce vegan treats\dishes to someone; start a food collection for an animal shelter\rescue; etc.

During these upcoming holidays, remember to help others remember to celebrate compassionately, with delicious vegan foods. Ask your parents, teachers, neighbors, and friends to: “leave animals off all plates ” Be willing to ask people, to choose vegan this is loving, to animals

Did you know… Animals - Quokka

1. Like their kangaroo relatives, quokkas move around by hopping and bounding, or moving forward using their hands.

2. Quokkas live, mostly, on the ground; but, unlike their bigger 'roo cousins, quokkas can, also, climb trees.

3. Quokkas swallow food whole; afterward, they regurgitate, then chew completely. Sound disgusting? It’s Nature’s way, for them to absorb the nutrients of their food.

4. Unlike their boxing kangaroo relatives, quokkas are not territorial and are very happy to share space, food and shelter.

5. Quokka mothers will have no more than two babies each year.

6. Baby quokkas live in their mother's pouch, for their first six months of life.

7. Baby quokkas are called “joeys.”

8. Quokkas are nocturnal and spend most of the day sleeping and resting; so, their daytime activity is minimal.

9. An average adult quokka weighs 5.5 to 11 pounds and stands 16 to 21 inches tall.

10. Quokkas are herbivores and snack on a variety of leaves, stems, grasses and tree barks.

Let’s Eat!

Ingredients

Vegan Peanut Butter Cups

Prep Time: 15 min.

Total Time: 20 min.

Cook Time: 5 min. Makes 12 servings

•½ cup natural peanut butter (or any other kind of nut butter you like!)

•¼ cup powdered sugar

•½ teaspoon vanilla extract

•¼ teaspoon salt

•1¼ cups vegan chocolate chips

Instructions

•In a medium bowl mix together the peanut butter, powdered sugar, vanilla extract, and salt. It will form a sort of soft dough.

•Melt the chocolate in a double boiler or in the microwave in 20 second increments, being careful to not burn the chocolate.

•To assemble the vegan peanut butter cups, use a chocolate mold or cupcake liners. Add just enough chocolate to the mold or cupcake liners to just cover the bottom.

•Take a piece of the peanut butter dough and form a disc that is just smaller than the mold so that there is room for chocolate to go around the edges. Pop the peanut butter discs into each mold.

•Now finish by pouring more chocolate overtop so that the chocolate goes around the sides of peanut butter dough and covers the top. Repeat until you run out of chocolate and peanut butter dough.

•Put in the fridge to cool and set for about 30 minutes. Once the chocolate has solidified again, you can pop them out of the molds, or just trim the paper liners if you want to leave them protected. Store in an air tight container in your cupboard.
