WEDSTIVALS THE NEW WOODSTOCK Festival-style weddings offer a boutique experience for bohemian couples, complete with grown-up games and glamping on-site. Fiona Ralph reports

W

eddings are no longer a one-day affair, or even a simple pre- and postevent tagged on to a big day. Trendsetting brides are opting for mini-festivals, aka wedstivals, wedfests or wedstocks. What are we talking about? Personalised, rollicking-good-time weddings that emulate music festivals, or grown-up school camps for those who want to escape the cookie-cutter wedding cycle and remember a weekend of festivities with friends, rather than the whirlwind of one night. The concept is simple: find a paddock, island or camp ground, import tents, food trucks and generators and enlist the help of friends and contacts to pull it all together — the more musicians, chefs and event planners you know, the better. Su-an McMahon, owner of Te Puke’s Old Forest School, a venue in the Tauranga region, which hosts festival weddings, says they are becoming a big part of their market. “It’s what we firmly believed in when setting our new venue up,” she explains. “We figured the traditional wedding venue was extremely well catered for and wanted to break the mould. I think it’s developing as a strong trend because more couples are paying for their own weddings. Families and friends are so spread over the world, and it becomes far more than just a simple, traditional wedding.” Kate Moss and Katy Perry were early fans of the festival-style wedding, as was Matthew McConaughey, whose wedding to Camila Alvez included guests glamping in his multimilliondollar backyard over three days. Cara Delevingne reportedly wants a “wild festivalstyle” wedding if she marries girlfriend Michelle Rodriguez, while top UK bridal

designer Kate Halfpenny held a weekendlong festival in the Derbyshire countryside, with bridesmaids including supermodel Erin O’Connor and actress Emilia Fox. A recent Auckland film and food-industry wedding took over the Port Waikato School Camp, with guests from New York, LA, London, Sydney, Melbourne and NZ whiling the weekend away with yoga classes, surfing and fishing expeditions, bush walks and games of corn hole (an American lawn game) fitted around the wedding celebrations. Jonny Rudduck (the owner of Il Buco pizza) played celebrant, and food flowed over the intimate weekend. A local fish and chip truck provided Friday night’s fresh fish, and chef Sylvia Dwen of Ponsonby Bistro cooked

  

Saturday’s wedding feast of local smoked kahawai and braised coastal lamb. Sausages were barbecued after the reception by a campfire, and, after dancing the night away, Viva’s own Nici Wickes prepared bacon butties, fresh croissants with lemon curd and sago gulab malaka for Sunday brunch, alongside a Bloody Mary bar. Two event gurus who have embraced the wedstival trend are Claire Donaldson, who runs event styling company One Lovely Day, and Wildernest’s Anita Rogers, whose pop-up boutique accommodation business provides all the essentials — including 100 per cent cotton duvet covers, carpeted tent floors, and flat-pack showers and toilets — to help pull off such an event. The two women often work together, creating dream weddings in places such as Great Barrier Island, Motuihe and Matakana. “We’ve got locations all throughout New Zealand,” Rogers says. “We’re trying to allow people to get married where they’d love to get married, when normally they are told ‘No, that’s impossible’. It allows the bride and groom to actually relax at their wedding and not have to have just one lunch afterwards and then dash off again. Usually, we go to places where there’s not a lot of reception or there’s a lot of nature around and people actually can relax.” Donaldson’s One Little Wagon, a mobile bar in a renovated caravan, complete with bar staff and stemless glasses, has been the perfect companion to these events. “Waggie, as we call her, has already travelled all over the North Island, been barged to islands and tractored to private beaches. She is booked for a huge range of weddings for the 2014/15 season, heading to barns, paddocks, picnic weddings and helicopter hangars,” Donaldson says, confirming that this trend is only going to keep growing.



PLANNING YOUR OWN WEDSTIVAL? CONSIDER THESE TIPS: • Pick your spot well — access to a river or a beach will provide ample cooling and playing opportunities. • Plan activities and events to keep guests entertained; grown-up games such as croquet, petanque and giant pick-up-sticks work well. • Create occasions around food — plan a long lunch on the beach, hire food and coffee trucks to pop up, or cook over an open fire or hangi. • Give each guest a task — cooking, cleaning or entertaining — to include them in proceedings, and make the mammoth task more manageable. • Have a bad-weather plan in the form of a nearby hall or multiple marquees . . . or plan to party on in your raincoats.

Talented friends and industry contacts helped Myken Stewart, brand manager for New Zealand Fashion Week, pull off her 170-person, four-day wedding to Jamie Mclaughlan late last year. The couple roadtripped around Northland in search of a venue before discovering the Whatuwhiwhi Top 10 Holiday Park, which they booked out for friends to stay in tents, campervans, and units on-site — the parents staying off-site in a resort. The perfect location for a mini music festival, the relaxed schedule included yoga classes, paddleboarding, barbecues and all-night dance parties (along with a final night’s visit from Kaitaia Noise Control). “The whole idea for me was to get my friends away somewhere where they could all be together and there was nowhere else to go,” Stewart says, adding that “Being an event organiser really helped me with the big picture. Everyone got involved to help set it up and take it down and do stuff during the days as well. All my friends helped make it come together.” It helps when your sister is a makeup artist, your best man a hairdresser, bridesmaids include a DJ and a chef, and fashion designer Adrian Hailwood is a friend — he designed the dresses, but declined to help Stewart cut hers shorter at 1am — her sister had to help with that task. New Zealand Fashion Week backstage manager Keporah Torrance was enlisted to co-ordinate the group effort, which included a highly technical roster of chefs working on three giant salads, 20 barmen staffing two bars and 14 DJ’s rostered on the two

DJ setups. Then there was babysitting (of the couple’s baby Storme and other guests’ children) decorations, teaching of yoga classes and of course, cleaning up. Noting that some complained initially about the BYO-style event, Stewart found working together on the event ended up bringing people closer. The catering was pulled together by Mint Kitchen, caterers to New Zealand Fashion Week, who incorporated a seafood haul supplied by friends and family (paua from Kaikoura, crayfish from Akaroa and West Coast whitebait) in the four-day feast. Another friend, a barista from Waiheke, arrived with an Atomic Coffee caravan in tow, a godsend during the almost non-stop party. A Whitestone cheese tier cake was another handy solution to the ongoing hunger, with cheese boards lasting all weekend. “It was all about planning for the longevity of the event, and not getting there and going, ‘well we’re in the middle of nowhere and we’ve run out of bread’,” Stewart says. Considering the giant, military effort, would she recommend a festival to future brides? “It was all 100 per cent worth it,” Stewart says. She points out, though, that any more days or guests would have been too much. “It was a great experience, a great party, just amazing. It was pretty relaxed, two days before the wedding, Jamie and I went out on our boat and told everybody, ‘look after our child, we’re going out for an hour to write our vows’. And I don’t know if everyone says it when they have been to a wedding, but so many people said ‘this is the best wedding I’ve ever been to’.”

FACE FACTS FOR THE BRIDE Follow these expert tips, says Janetta Mackay, to ensure you look and feel your best on the big day

What about the more adventurous bride? JUN: The styles can be quite technical, you definitely need someone who specialises in hairups. The more adventurous styles will use padding and hair extensions. JAYNE: More adventurous brides are using the hair as the feature rather than the veil, or using plenty of decorative ornaments and hair accessories. To what extent should bridal parties match their looks? JAYNE: The bride should of course be the star. She can have something different and as long as the bridesmaids have a similar style or are running the same theme, it will look great. If they are all varying in hair length try matching the styling at the front of the hair so at least they will look the same there. What is the ideal pre-wedding consultation process? JAYNE: It’s best to see your stylist four to six weeks before your wedding to put a plan in place, diagnose and manage your hair’s condition and confirm your cut and colour. Then see the stylist one to two weeks out for a practice run. What should a bride have handy on the day? JAYNE: The Sebastian purse-sized hairspray ($12) is perfect for pre-photo touch-ups and extra bobby pins are must for any hair-up style. Your stylist should provide you with these. Anything else? Jayne: It’s really important to communicate as much as possible with your stylist. Confirm your dress before your hair so you have a guide on what your style needs to work in with.

SARAHLEE RUSSELL FROM BOBBI BROWN ON HOW TO GET YOUR MAKEUP JUST RIGHT. What looks are brides favouring right now? Smokey eyes have become less of a bridal trend. Instead brides are going classic and defining the eyes with a medium tone shadow and strong lid liner with a diffused shadow edge, which really plays up a fuller lash look. Keeping the eye more sophisticated has given brides more lip options and I’ve seen a lot more depth in colour than the usual pretty soft nude pinks. What about the more adventurous bride? Pops of colour this summer have been from the classic Red Carpet to Calypso corals and hot pinks, but the trend has been matte. These more statement lips have really stood out in a sea of soft pinks and white. Should bridal parties match their looks? The bride is centre-stage but your makeup should complement, not compete with, the dress so keep it well-defined and pretty. A cohesive look for the bridesmaids is always better in your photos; nothing stranger than one maid in the line-up with evening smokey eyes at a day wedding. What is the ideal pre-wedding consultation process? A month before your big day is good for a trial with your artist; bring any pictures you have seen of looks you like, and remember to pick models with the same face and eye shape as yourself so you get the best result. If you are spray tanning it’s a good idea to have the trial for that on the same day as then the artist will know exactly how golden you will look on the day. Take photos at the trial so you have a good visual reference and can make any changes easily. What should a bride have handy on the day? Pressed powder for shine, Crystal lip gloss for photos, cotton buds for retouching, lipstick for the perfect pout — and tissues! Anything else to add? Make sure you are comfortable in your makeup. The foundation should look like skin and everything applied should enhance your natural features — it’s about you looking beautiful, not the makeup.

HADY WENHAM, MANAGING DIRECTOR OF FORME SPA, RECOMMENDS PLANNING AHEAD WHEN IT COMES TO SPA TREATMENTS. What do your recommend to brides wanting to look their best for the big day? For those planning six months out, we do a consultation to discuss what they would like to change about their appearance and put a plan in place. This could involve IPL to address pigmentation issues, regular microdermabrasion, facials or peels to address specific skin concerns, IPL hair removal, massage for relaxation, back treatments for someone with a spotty back, Ionithermie for body tone/cellulite issues, concluding with the final preparation stages of a spray/lotion tan application, manicure/ pedicure, any last-minute grooming and facial treatment before the big day. For those with a more constrained budget or timeline, we would just move to the final stages with tanning, manicure/pedicure, exfoliation treatment and a couple of weeks before, a nice hydrating facial to give a plump dewy skin on the big day. What can brides do at home to optimise their appearance in the weeks leading up to the wedding? Hydration — drinking lots of water to keep their skin looking radiant helps, making sure they wear sunblock to avoid any peeling patches or uneven tanning, applying moisturiser from head to toe, including the heels, manicure oil on the nails to keep the cuticles in shape, hand cream during the day and before bed, and we love the

Babor ampoules — a mighty vitamin concoction in an individual glass ampoule to ensure maximum efficacy for radiant skin. Any do’s and don’ts in the days right before the wedding? When you have your last facial depends a bit on your skin and how it normally is after a facial — we normally suggest a day or two before the wedding. Waxing is also best three days before your wedding if you are having tan applied and we recommend tanning a day or two before the wedding. Nails are usually best done the day before, unless it is a Shellac manicure which lasts longer and is more hard-wearing. If you are on a budget, prioritise what are the most important things for you but try to squeeze in at least one facial as no amount of makeup can give you the radiance of dewy skin that a facial can. DEBBIE WALSH FROM THE NAIL LOUNGE SHARES HER ADVICE. What nail looks and trends are popular at the moment for brides? Classic French polish will always work with any style of wedding dress, with nails kept mid- to short-length. To tone down the white, layer the French pink over the white. Try Dior “Perle” or Chanel “Frisson” over the top of the French polish or they are stunning on their own for a demure sheer colour. The Trianon spring collection by Dior has a beautiful bouquet of colours: try the dreamy, creamy peach “Bouquet” or the soft powdery pastel blue “Porcelane”, or for a flash of contrasting fuschia try “Bloom”, or the hot, true orange of “Riviera”. What about the trend for nail design? Nail design is about your unique style, so if this is your thing why not incorporate it into you special day? Ideas include tiny white pearls to shape your cuticle, a gold or pearl polish with beautiful Swarovski beads. Tips and toes — to match or not to match? Not necessarily. You can marry up a French or nude manicure with a Classic Hollywood look. Try Chanel “Taboo” or OPI “Malaga Wine” on toes, or pick a colour from your bridesmaids’ bouquet. What can brides do themselves? Replenish moisture with cuticle oil daily: best before bed, to let it work its magic through the night. When should a bride get her nails be painted? Have your mani/pedi done the day before, then you can relax without stressing for time. A TOAST! Jo Burzynska’s wedding wine tips

Choosing drinks for the special day may seem daunting, but a few pointers will send you into married life being toasted with an appropriate wine.

BANQUET IMBIBING In many venues you’re locked into what the establishment provides. But if wine is to play an important part in your celebrations, make sure you try what’s on offer and, if it’s not up to scratch, be prepared to negotiate. It’s still possible to persuade your host to expand their selection or arrange to bring your own wines. If choosing the wine is entirely up to you, just set your budget and have fun with your selections. You could even throw a wedding wine selection party and get friends round to try bottles you’re considering. When you’re deciding, think about the food being served at the reception, and pick wines to suit. With the variety of dishes that are often part of the wedding banquet, it’s worth considering styles that are versatile, as well as those that are likely to go down well with most of your guests. These could include a more lightly oaked chardonnay, drier pinot gris or more food-friendly style of sauvignon blanc in the whites, and merlot and pinot noir in the reds. A 50/50 split between reds and whites is the norm.

However, it’s the bride’s and groom’s special day, so if you’d prefer something more eclectic, then let fly with your own choices. There could be wines with romantic resonance that you’d like to include, such as something you shared on an early date or enjoyed at a vineyard you visited together when courting.

THE PERFECT TOAST Bubbly is a must at most celebrations. Champagne is the classic choice here, but it doesn’t come cheap. For a more affordable alternative, there are fine local options. Look at serving a methode traditionelle, as this will have been made using the same high quality techniques as its famous French counterparts, and select from one of the country’s respected sparkling producers to toast in style.

NUPTIAL NUMBER CRUNCHING One bottle will yield five smallish glasses of wine. One glass will be required for the wine you propose to toast with, as well as half a bottle per person with the meal. This guestimate to work out how much wine you’ll need is at the more conservative end of the spectrum and you’ll be the best judge of your guests’ potential thirsts.

To err on the side of caution it’s worth stashing some spares, so you don’t risk running dry. Many wine stores offer sale or return, which means not wasting money on having wine left over. There are also smarter deals to be had by buying in bulk. Ask your local wine store about case discounts or have a look at what can be bought by the case online.

FOUR CHEFS AND A WEDDING The coolest food to serve? That prepared by one of the city’s finest chefs recommends Nici Wickes

What’s the best and worst wedding food you’ve experienced as a guest? My own wedding where my friends cooked for me at Cocos was the best wedding food I’ve had. And the worst have sort of been the rest, ha ha, not terrible — just not memorable or that enjoyable. Weddings have a sort of conveyer belt system with regards to catering for large groups.

Perhaps this is the reason why an increasing number of people are turning to their favourite chefs and restaurants, who they know and trust, to provide the nourishment for their special day. We talked to four restaurant chefs about their approach to weddings.

Top two trends you’re seeing on wedding menus? Unfussy food. Sharing.

What’s the ideal brief for you as a chef if you’re asked to cater for a wedding? WEDDING PERSON: Hi Will, we love Cocos and the food you serve there. We would love you to cater our wedding. We want it to be Mediterranean, fun, rustic and delicious! WILL: Cool, when is it?

FRENCH KITCHEN & THE FRENCH CAFE What is the top priority when designing a menu for a wedding? It’s about the couple. I don’t really worry about what won’t work, we just make it work. What is the most challenging situation you’ve cooked in? Once I catered for 200 people out of a garage on trestle tables. The venue was a tennis court covered in a marquee, 200m from where we were cooking and, if I remember rightly, at one point it started raining. We made it work.

How in demand is James as a wedding venue? James is quite a new event venue but unique. The backdrop is stark and dramatic, with French chandeliers and lace curtains. We have beautiful carvings from Mexico for a spiritual touch, which some couples appreciate — I cover them in candles and they are very special. Its Stanley St location means we have no neighbours, so guests can make as much noise as they want, until late!

How do you bring that extra dimension to wedding food? I it’s really important for us that these types of functions go better than ever — we have so many people now who come and dine with us on their wedding anniversaries because they had such a good time and it’s because we treat their wedding like it was our own.

How does Mint Kitchen bring that extra dimension to wedding food? I like the plating to look lovely and not too rustic — it’s got to be beautiful when it arrives on the table. We like to use clients’ family or favourite recipes for their special day.

What’s the best/worst wedding food you’ve experienced as a guest? Worst was a room full of chefs and wait staff, the most incredible spot but the food was so bad that we all had to drink more to disguise the flavour! Trends you’re seeing on wedding menus? Smaller weddings seem to be more frequent, where the emphasis is more on quality than quantity, so our French Kitchen is a great venue for that.

How does designing a wedding menu differ from doing it for the restaurant? The family involvement is key and getting to know the client means that it’s personal and tailored as opposed to a list of offerings for diners in general. It’s very satisfying to see it all from the beginning to the day itself — more like a special project that we’re working on for a set period of time. Picture / Thinkstock

What they love to eat at home, recipe books that inspire them, what they choose when dining in a restaurant, their favourite foods, so that I can establish their palate needs. What do you do to make the wedding food so special? So often ingredients plus bulk cooking equals minimal flavour. It is so crucial to make sure flavours are at capacity when cooking en masse. What’s your ideal brief? The more details the better! Exactly what “kind” of food is requested, where the cooking will take place (if off-site), kitchen facilities, photos of fridges, benches and equipment, how many people, dietary requirements of guests, timings for of the day. The more details that are set out in the beginning means less chance of surprises on the day.

What is one of your top priorities when designing a menu for a wedding? First, it’s got to be about what the couple want — the food is what makes the day. Then for us it’s how we can make it a thousand times better than their expectations. The meal or food is what brings the family and friends together, it merges the crowd and is the difference between a great wedding and an amazing wedding! The food seals the deal. And, of course, we have to consider the budget. But the days are gone where you have to remortgage your house to have a wedding. You can have an amazing wedding on any budget.

Top two trends you’re seeing on wedding menus? Couples like to keep the sweet items small and focus more on the wedding cake as opposed to a rich dessert. Small plates, bowl food, shared platters and degustation tastes are more in vogue than the traditional three-course plated styles now. Last word? Our first same-sex wedding ceremony took place at James recently — with all the excitement of a cyclone happening outside in the mix. Matthew and Cameron exchanged vows under the chandeliers, witnessed by their parents, siblings and friends and we served Champagne in gold bottles, canapes, had Frankie Goes to Hollywood on the baby grand and more. It was so cute and no hormonal Bridezilla in sight! The celebrant lost her place in her notes for a long two minutes ... then they were pronounced husband and husband, which was a little queer. It was a hoot and there was an abundance of candles and tissues. I can honestly say — it was emotional event for a hardened wedding caterer.
