Eat, drink, be merry!
Nothing says Christmas quite like the perfect turkey and a warming mug of mulled wine. Our simple recipes will help take the stress out of cooking.
1 Remove all the giblets and rinse the turkey under cold water.
2 Immerse the turkey in water using a large bucket/pot/sink, and add all the ingredients for the brine, then leave to steep overnight.
On Christmas Day
1 Remove the turkey from the brine, rinse and pat dry with some kitchen roll.
2 Preheat your oven to 200°C.
3 Place the turkey into a large roasting tin.
4 Cut the oranges and shallots and put them into the cavity.
5 In a small pan, melt the butter, then add the maple syrup and orange liqueur.
6 Pour the melted butter mix over the turkey and put the whole thing into the oven.
7 Roast the turkey for 3 hours, basting it every 30 minutes.
8 Once done, take the turkey out of the oven and cover it with tin foil for 20 minutes before serving.
With flavours like cinnamon, orange and nutmeg, mulled wine is as festive as it gets. A slow cooker will keep it warmer for longer too!
1 Pour the wine, orange juice and liqueur into the slow cooker.
2 Cut the orange in half and stick 10-15 cloves into the skin of each half.
3 Add the sugar to the pot along with the cinnamon, star anise and orange halves. Grate some nutmeg into the mix and give it a stir. Turn the slow cooker up high and leave to heat through for 1 hour. After an hour, turn back to low and leave for a further hour.
4 Serve it hot!

How to get a salon-style blow dry
1. Apply heat protector and blow dry hair 80% of the way.
2. Part your hair into a top and bottom section, then grab yourself a round brush and begin brushing one side from root to tip. Use a downward and inward motion around your face.
3. Once you’ve got the hang of it, follow the direction of the brush with the blowdryer above it.

Ready, get set, bake!
We caught up with the super-talented David Atherton, winner of The Great British Bake Off 2019. Here he shares with us his take on a classic festive favourite, as well as his tips for stress-free cooking this Christmas.
When it comes to baking, my biggest piece of advice is to always use room temperature ingredients, especially eggs and butter. It makes a world of difference in the texture of your bakes, ensuring they come out light and fluffy.
When making pastry (like mince pies, for example), remember not to overwork your pastry otherwise it becomes tough. And, to avoid shrinkage, it’s always best to chill your pastry cases in the fridge for at least 30 minutes before adding the fillings and baking.
Pies to the occasion
Viennese mince pies
Delicious, easy to make and can be prepared ahead of time, my mince pies are perfect for the busy festive season.
Mincemeat
150ml strong black tea
80g brown sugar
Zest and juice of half a lemon
1 tsp mixed spice
1 apple
200g dried fruit (I use equal weights of currants, prunes and raisins)
2 tsp brandy (or rum)
Pastry
250g plain flour
50g icing sugar
Pinch of salt
150g unsalted butter
20ml cold water
Viennese topping
200g butter (room temperature)
1/2 tsp almond extract
40g icing sugar
180g plain flour
20g cornflour
Tip: Skip steps 4-6 if you buy your pastry
1 Mix the tea, sugar, lemon zest, lemon juice, and spices and bring to a simmer.
2 Peel the apple; grate one half and cube the other before adding to the mix along with the dried fruit.
3 Simmer until thickened, then remove from the heat and cool. Stir in the brandy.
4 For the pastry, combine flour, icing sugar, salt, and butter in a food processor. Pulse into fine crumbs (or rub with your fingers).
5 Add the water and pulse until combined with the dough.
6 Transfer the dough to a floured surface; knead for 30 seconds. Cover and refrigerate for 30 minutes, then roll out to 0.5 cm thick.
7 Cut the pastry into discs, and transfer to a cupcake tray; chill for 20 minutes. Preheat the oven to 180°C (fan-assisted).
8 For the topping, cream the butter, almond extract, and icing sugar until pale and fluffy. Add the flour and cornflour, then transfer to a piping bag.
9 Fill each pastry shell 3/4 full with the mincemeat.
10 Pipe a swirl of the topping onto each pie. Bake for 25 minutes and cool before serving.

While it may seem strange to clean your oven before cooking one of the biggest meals of the year, having a thorough clean can remove odours and built-up grease stains to help make your food taste even better. The same goes for your fridge. Clearing out any old food that may be hiding at the back of the shelf and cleaning down the shelves and door will leave a fresh fridge ready for action.
2. Make a list (check it twice…)
Whether your Christmas is a small, quiet affair or a big blow-out, lists will definitely help. Divide into shopping lists and present lists to help you avoid last-minute dashes to the shop for crackers or scrambling to find a Secret Santa gift!
3. Have a clear-out
Are your pans still up to the job? Are those herbs in the spice rack that gather dust still OK to use? Do you have enough plates? These are small things at any other time of the year, but they turn into big things when Christmas comes a-calling, so check them now to keep it off your list.
4. Get into the groove
Nothing motivates quite like music. So whether you’re cleaning, wrapping, baking, or all 3, load your favourite festive playlist, turn up the volume and get cracking.
5. Don’t stress – we’ve got this
