New York's Best Espresso?

AM not a fanatic about espresso. To begin with, I drink more tea than coffee, and at the end of a meal I almost always order a plain American-style coffee. Still, about once a week the urge for an espresso made the Italian way hits hard. Like a vague tingling in the sinuses that develops into a 90megaton sneeze, this little hankering cannot be ignored. It's a want that becomes a need. And there's the problem. It is almost impossible to get a decent cup of espresso in New York.

How can this be? The city has more Italian restaurants than parking spaces. All of them serve espresso. Delis serve espresso. Groceries serve espresso. About the only place you cannot get espresso is a Chinese restaurant, and I'm not even sure about that. I am sure, though, that the chances of getting an espresso worth drinking hover perilously close to zero.

Here's what I want. A few sips of coffee, full bodied verging on syrupy and so rich it needs no sugar, topped with a thick layer of khaki-colored cream. Here's what I get. Way too many ounces of thin bitter liquid with ragged scumlike traces of foam.

After years of complaining, I decided to get to the root of the problem. Why can't New Yorkers, who demand the best, get even passable espresso?

To arrive at an answer, I talked to Italian coffee makers. I talked to cafe owners who care deeply about espresso. I talked to New Yorkers who shed tears of frustration every night, people for whom the espresso deficit ranks up there with high-priced real estate and violent crime as the most undesirable aspects of living in this city.

After my listening tour, followed by a tasting tour, I think that I now understand the problem — and why there will probably be peace in the Middle East before we work our way out of the current crisis.

First, the thing itself. Espresso is a way of making coffee. Water heated to a precise temperature is forced at a precise pressure for a precise period of time through beans reduced to a precise grind.

The liquid that emerges should be very dark, thick and rich, with a tan layer of emulsified oils and proteins on top that the Italians call crema……….

In Italy, making espresso is a profession and an art. In New York, it's a lousy job. And part of what makes it a lousy job is that New York does not really have an espresso culture. Some deliberately grind their beans coarsely so that the water moves through it more quickly. Customers do not then have to wait an interminable half-minute……..

No one complains, because the local taste has adapted to harsh, watery coffee, as often as not served in a little paper cup that looks as if it came from a doctor's office…..

1 Lazy operators fail to warm the espresso cup. They don't clean the machine daily. And even if they do clean the machine, they don't get the settings right. And even if they do get the settings right, the place doesn't sell enough espresso to keep the machine humming along at highway speed, where it's happiest………

For the calcium problem in New York, Illy has developed a cartridge, like a water filter or purifier, which contains resin, calcium and a sodium charge. Water passing through the cartridge picks up calcium, but sodium bombardment prevents it from adhering to the espresso machine's walls.

If this sounds a little obsessive, that's the hallmark of espresso lovers. For years, in my fruitless search for a decent cup, I have chased down leads supplied by a friend, Frank de Falco, who is fluent in Italian and demanding about espresso. Like a birder, he calls in sightings from time to time. ….

Mr. de Falco's latest enthusiasm is Via Quadronno, on 73rd Street, near Madison Avenue.

Real Italian atmosphere, he promised. It's just like leaning up against the bar in a Roman cafe. But make sure you go in the morning, when the young Italian guy is making the coffee. I did. It's good espresso, a Trieste blend called Antica Tostatura Triestina.

It was so-so. The espresso at Fauchon, formerly Sant Ambroeus, Madison Avenue and 77th Street, I found wretched, a textbook case of far too much liquid, with a burnt bitter flavor. The oncepromising Terramare Cafe, a Euro hot spot on East 65th Street, failed to deliver, and at a high price, too.

Other failures: the brand-new Crestanello Gran Caffè Italiano, across from the main branch of the New York Public Library; Cafe Bari in SoHo; and, leading the hall of shame, Caffè Dante, near New York University, where the brew tastes exactly like liquid cardboard.

Honorable mention must go to Dean & DeLuca in SoHo, which served a good, solid cup, and Café Gitane on Mott Street, where the Lavazza espresso has a pronounced winy character. Starbucks 2 seemed about average to me, perhaps a little better, but marred by the burnt over-roasted quality that seems to be the company style. Restaurants did not figure into my quick survey, for practical reasons. No one wants to order a meal to get to an espresso…..

na straordinaria atmosfera multietnica si respira dappertutto a New York.

E, se ci si trova qui per un breve periodo che sia di vacanza o di lavoro, se ne può portare un ricordo tangibile anche in valigia.

Senza essere trattati da turisti, con tutte le conseguenze che questo può avere sul portafogli.

Ma andiamo con ordine: dopo aver studiato con cura la pianta di New York si può procedere anche da soli, certi di non perdersi, perché qui tutto è organizzato per posizioni numerate, le strade sono state disegnate per consentire a tutti di trovare quello che stanno cercando. In ogni caso, anche di fronte a quest’esempio di praticità e concretezza, è sempre meglio affidarsi a una guida sicura, a qualcuno che conosce bene la Grande Mela, qualcuno che l’ha scelta come sua residenza.

E chi meglio della nuova generazione di italiani che hanno scelto di vivere a New York può aiutarci a scoprire i ristoranti più trendy, i locali alla moda, quegli stili di vita e di consumi destinati a

riverberarsi in tutto il mondo? Stili destinati ad approdare con forte impatto in Italia, ma soprattutto a Milano? Come se le due metropoli, in un certo senso, fossero legate da un filo invisibile.

Il cosiddetto italian style, qui a New York, che per molti nostri connazionali è sempre stato e continua a essere una seconda patria, piace, va forte, riscuote consensi. Con un’attenzione un po’ spostata rispetto alla tradizione, che non è più affrancata alla Sicilia o alla Toscana (come fino a qualche anno fa), ma alle regioni del Nordest, che da qualche anno sono diventate la locomotiva economica d’Italia.

A New York i caffè espresso più raffinati, per esempio, vengono prodotti con macchine della San Marco di Gradisca di Isonzo (Gorizia) o Zanetti Segafredo, il miglior caffè è quello dell’Antica Tostatura Triestina di Alessandro Hausbrandt, nei ristoranti più prestigiosi vengono serviti i vini friulani della casa Fantinel imbottigliati nelle cantine di Pradamano (Udine), uno dei

Ha conquistato New York con panini e caffè di qualità

un friulano di Aviano (Pordenone), estroverso e vulcanico, dai modi cordiali il nuovo re di New York della gastronomia made in Italy. Trasferitosi negli Stati Uniti da oltre vent’anni Paolo Della Puppa (nella foto) ha fatto del suo locale, a cavallo fra la 73sima e Madison Avenue, un vero e proprio cult della migliore tradizione “paninara” d’Italia.

Insomma, niente a che spartire con la pur nobile tradizione dei sandwiches anglosassoni. Il suo locale si chiama Via Quadronno, è un caffè in stile rustico ed è dichiaratamente ispirato, seppur riveduto e corretto e decisamente migliorato nella formula, al noto locale di Milano che, per primo, cominciò a proporre panini in davvero innovativi.

Di medie dimensioni, accogliente e confortevole, Via Quadronno di New York è un locale a tutto tondo studiato apposta e con un menù apposito per le prime colazioni, per i panini dove trionfano ricette storiche come “Cosacco” (bresaola e camembert), “Non ti scordar di me” (speck, brie, pepe verde, patè, foie gras), o “La madunina” (mozzarella e San Daniele). Ma ci sono anche una ghiotta lista di

Gelati & Sorbetti ma soprattutto Dolci & Frutta, dove il pezzo in assoluto più originale, più richiesto e apprezzato è il Tiramesù alla Rustega. Di che cosa si tratta? L’originalità sta nel fatto che gli ingredienti del Tiramisù vengono serviti separatamente e spetta al cliente immergere i savoiardi nel caffè e nel mascarpone, alternandoli a suo piacimento.

Insomma, una vera e propria ghiottoneria che ha permesso, al locale di Paolo della Puppa, di entrare a pieno diritto negli itinerari gastronomici più raffinati della Grande Mela.

Qui si sono visti, e spesso, l’attore e regista Woody Allen, la regina Noor di Giordania e, al completo, la famiglia di Mike Bongiorno.

Naturalmente Via Quadronno propone anche un menù più tradizionale composto da antipasti, primi e secondi piatti, un’offerta di vini serviti al bicchiere e selezionati fra 6 rossi e 6 bianchi scelti fra le migliori etichette d’Italia. Altra specialità vincente del locale di Paolo Della Puppa (che ha un socio cinese, K. C. Lan), è sicuramente il Caffè Miscela Antica Tostatura Triestina, un espresso blend proposto da Alessandro Hausbrandt. Una delizia talmente incredibile che è stata consacrata persino da William Grimes, noto giornalista enogastronomico del New York Times specializzato nel classificare con stelle di pregio i ristoranti della metropoli. Grimes ha condotto una ricerca sul miglior caffè espresso che viene servito a New York, ne ha degustati a centinaia, ha incontrato tutti gli esperti del settore e, dopo questa paziente ricerca, ha concluso che il miglior espresso servito a New York è quello proposto in Via Quadronno da Alessandro Hausbrandt, ultimo rampollo (o meglio quarta generazione) di una delle più antiche torrefazioni d’Italia, fondata a Trieste addirittura nel 1886.

qualità dei piatti ma anche per la consistenza del conto. Il menù è creativo e l’ambiente suggestivo, la gente che lo frequenta è quella dei giri giusti e una puntata, indubbiamente, la merita.

Così come, fra i ritrovi più trendy dove prendono corpo stili di vita e divertimento all’avanguardia bisogna segnalare Panagea, (178 2nd Avenue, tel +212 9950900) “il posto dove bisogna esserci”, come suggerisce lo slogan promozionale del locale.

Un locale dove è possibile anche spendere 500 dollari a sera, ma l’esperienza da vivere è tale che una simile cifra non sembra neppure eccessiva.

Infine c’è un altro aspetto di New York che merita di essere raccontato, ed è quello dello shopping per tutti i gusti e tutte le tasche. Qualche consiglio pratico? Una delle zone migliori per esplorare vetrine è l’area intorno alla 30th Broadway, dove

si concentrano esercizi commerciali gestiti da negozianti di tutto il mondo. Bisognerebbe trascorrervi giornate intere anche solo per osservare culture e linguaggi di comunicazione (e di vendita) di diversi popoli. Ma se avete poco tempo a disposizione e non siete sovraccarichi di bagagli, ecco come affrontare una giornata di acquisti a New York.

Innanzitutto bisogna sapere che il periodo ottobre/novembre è tradizionalmente dedicato ai saldi, e si fa quasi fatica a credere ai propri occhi scoprendo stupendi capi di abbigliamento griffati, in vendita a prezzi decisamente inferiori rispetto a quelli che si trovano in Italia. Occasione che, se volete rinnovare il guardaroba con capi di prestigio, vale la pena

Tornando alla 30th Broadway, una tappa d’obbligo sono i negozi cinesi dove si trovano, in vetrina, gradevoli e divertenti oggetti di bigiotteria, ottime idee per piccoli regali non impegnativi ma di sicuro effetto. Un esempio? Eleganti e colorati boxer di seta, in divertenti versioni che stanno diventando un must per un numero sempre maggiore di uomini. L’opera di penetrazione di questi due marchi made in Italy si è realizzata graazie all’abile regia di Antonio Corsano, vice presidente marketing di Birra Peroni Usa che, oltre a suggellare strategie vincenti con molti dei locali più trendy, sta sviluppando il progetto di introdurre Peroni anche nei lunge bar partecipando a eventi di rilievo nel mondo della musica e del cinema. Comunque, è sempre più ricco l’elenco dei locali di New York che inneggiano il vessillo Peroni, e spazia con un’offerta trasversale in restaurant trendy casual quali Max e Max Soha ma anche L’L Frank e Bread, trattorie-vinerie come Gradisca e Lupa, pizzeria che si chiamano Bella Blu e Mezzaluna dove la pizza, servita con Peroni, acquista un sapore che conquista.

Der Standard

Triest - Das Caffè degli Specchi scheint fast der einzige Ort in Triest zu sein, an dem Kaffee in Ruhe genossen wird. Hier verweilen vorwiegend Touristen, die der Blick aufs Meer mindestens so anlockt wie die Qualität des Tasseninhalts. Den wenigsten ist wohl bewusst, dass hier einige der größten Schriftsteller und Dichter des 20. Jahrhunderts - Franz Kafka, James Joyce, Rainer Maria Rilke - Stammgäste waren.

Einheimische trinken ihren "nero", den kleinen Schwarzen, üblicherweise eilig zwischendurch an der Bar. Ums Eck vom Canal Grande, am Corso Italia, stößt der aufmerksame Triest-Besucher auf das 1915 errichtete Antico Caffè Torinese, das - wie die meisten Traditionsbetriebe - Spezialitäten mittlerweile auch via Internet vermarktet.

Geschäftsleute kehren hier gerne ein, um rasch einen Espresso zu trinken und die Zeitung zu überfliegen. Im Stehen, denn die beiden Tischchen bieten kaum Platz für Lektüre. Toilette gibt es keine. Der Kellner meint augenzwinkernd, dass das Torinese viel zu antik für ein Klosett sei.

"In tazza grande" Wer hier einen "Cappuccino in tazza grande" bestellt, ist seltsamen Blicken ausgesetzt. Fällt man durch diese Order als Tourist auf? Vermutlich nur, weil hier der Raum für einen längeren Aufenthalt fehlt. Kurzum: In Triest passt man sich am besten improvisierend an, auch sprachlich.

Für längere Gespräche treffen sich Triestiner lieber im traditionellen Cafè San Marco in der Via Battisti. Schriftsteller Claudio Magris ist hier Stammkunde. In der dunklen "Arche Noah", wie Magris den Ort beschreibt, wird nicht nur geplaudert, sondern auch Tango getanzt.

Zurück zum Kaffee. Selbst Ortsansässige sind sich oft unsicher, von welcher Rösterei die edlen Bohnen bezogen wurden, die ihrem Tasseninhalt den exklusiven Geschmack verleihen. Das Logo auf der Tasse ist selten ein eindeutiger Hinweis.

Alte Namen, neue Besitzer Zwei Beispiele: CremCaffè wurde vor neun Jahren von Julius Meinl übernommen. Die Rösterei der Marke Hausbrandt befindet sich seit über zwei Jahrzehnten nicht mehr in Triest. Aus der Familie Hausbrandt ist ein einziger im Kaffeegeschäft aktiv - Alessandro Hausbrandt. Die einst triestinische Marke wurde bereits 1988 von Martino Zanetti erworben.

Alessandro Hausbrandt hat 1995 eine neue, international orientierte und sechs Mitarbeiter zählende Rösterei in seiner Heimatstadt aufgebaut - die Antica Tostatura Triestina. Rund 400 Kilo ArabicaBohnen werden mittels Energie aus dem holzbefeuerten Ofen in einem riesigen Kessel pro Stunde geröstet. Der Vorgang ist bis zu viermal zeitaufwändiger als der vollautomatisierte Prozess, weil nach altbewährtem Rezept jede Sorte einzeln behandelt wird.

Die in 27 Ländern nachgefragte Marke Antica Tostatura Triestina wird derzeit auf dem österreichischen Markt eingeführt. "Bester Caffè" heißt die Kooperation, die zu allererst in Innsbruck anläuft.

Triestiner Botaniker, die auf Kaffee spezialisiert sind, reisen grundsätzlich viel. Da die Kaffeebauern aufgrund ihres geringen Verdienstes wenig motiviert sind, die Qualität zu überwachen, werden standardisierte Verfahren für die Selektion in den Produktionsländern implementiert. Patentinhaber der Maschinen ist der Illy-Konzern. Die in den Anbaugebieten vorsortierten Bohnen müssen somit in Triest nur noch zum Teil kontrolliert werden.

Der Standard

Veraltete Infrastruktur Firmenchef Andrea Illy (Bruder Riccardo ist Vizepräsident und war als Bürgermeister von Triest und späterer Regionalpräsident von Friaul-Julisch Venetien auch politisch aktiv) erzählt, dass vor dem Rösten einige Arbeitsschritte anfallen, die fast nur von lokalen Firmen bewerkstelligt werden.

Neben Logistikfirmen - eine der größten ist Pacorini Silocaf - befinden sich drei Labore und auch die Lagerhallen in der Hafenstadt.

Rund ein Viertel des in Italien konsumierten Kaffees wird von den insgesamt elf Triestiner "torrefazioni" geröstet. Das sieht auf den ersten Blick nach einem großen wirtschaftlichen Ertrag aus. "Wien am Meer", wie die Stadt genannt wird, kämpft jedoch mit infrastrukturellen Problemen.

Das Straßen- und Bahnnetz ist veraltet, der Industriehafen Servola wurde lange nicht mehr modernisiert. Der Konkurrenzhafen im slowenischen Koper holt auf.

Andrea Illy erwähnt fertige Konzepte zur Erneuerung des Hafens, etwa die Zusammenführung der beiden Porti in Monfalcone und Servola. Aber die Stadtregierung lege sich aufgrund des Widerstands der Gewerkschaft gegen jede Veränderung der Arbeitsbedingungen auch hierbei quer.

Europäische Marke Um die lokalen Kaffeeröstereien zur Zusammenarbeit zu bewegen, wurde 2008 der Trieste Coffee Cluster gegründet. Mittlerweile sind 18 Privatfirmen beigetreten. Der Verband möchte unter anderem eine europäische Kaffeemarke schaffen. Der Präsident des Clusters, Furio Suggi Liverani, ist der Meinung, dass das traditionelle Wissen vieler Röstereien nicht ausreiche, um die lokale Ökonomie anzukurbeln. Andrea Illy, der den Cluster gutheißt, betont: "Wenn man das Wachstum in der gesamten Stadt verdoppeln möchte, muss man neue Röstereien nach Triest holen. Die Alternative ist eine verstärkte Innovation in die weiterverarbeitende Kaffeeindustrie." Er denke dabei vor allem an Löskaffee und entkoffeinierten Kaffee. Im Trend liege vor allem der "Espresso der dritten Generation", die portionierten Kapseln für den Privatverbrauch. Die sich ändernden Konsumgewohnheiten werden vom Unternehmen Illy stetig erforscht.

Der Ausbildungskoordinator der Kaffee-Universität, Moreno Faino, erläutert, dass vor allem in Griechenland und in Großbritannien löslicher Kaffee sehr beliebt sei. Immerhin werde, weltweit betrachtet, rund die Hälfte des Kaffees in Instantform getrunken. Auch der entkoffeinierte Kaffee sei trotz der alten Technologie eine Nische, die für größere Röstereien interessant sein könnte.

Durch Nischenprodukte könnten neue Absatzmärkte geschaffen werden. Heutzutage produzieren laut Liverani die kleinen Torrefazioni vorwiegend für den nationalen und den osteuropäischen Markt. illycaffè ist hingegen mittlerweile in 140 Ländern präsent. "Der Konzern erobert derzeit den arabischen Raum, der sich immer stärker für die italienische Kaffeekultur interessiert. China ist aufgrund der Teekultur noch ein hartes Pflaster", sagt Faino.

(Kaffee-)Adel verpflichtet

Alessandro Hausbrandt exportiert seinen Kaffee in 26 Länder der Welt, obwohl sein Miniunternehmen nur sieben Mitarbeiter zählt. Damit zeigt er, dass es auch kleine Unternehmen auf fremde Märkte schaffen können. Am 19. April referiert Hausbrandt in Brixen.

SWZ: Herr Hausbrandt, erzählen Sie uns zunächst doch von Ihrem Unternehmen „Antica Tostatura Triestina“, das Sie 1995 gegründet haben und mit dem Sie international tätig sind. Wie viele Mitarbeiter hat es und wie hoch ist der Jahresumsatz?

Alessandro Hausbrandt: Wir sind ein sehr kleines Unternehmen. Wir beschäftigen sieben Mitarbeiter – Handelsagenten und -vertreter nicht eingerechnet – und erzielen derzeit einen Jahresumsatz von 1,7 Millionen Euro.

Und trotz dieser geringen Größe exportieren Sie in 26 Länder?

Derzeit exportieren wir in 26 Länder, sind aber im Begriff, weitere Märkte zu erschließen. Abgesehen von Euro-

dings birgt die Konzentration auf den italienischen Heimmarkt genauso ein unternehmerisches Risiko – es ist riskant, allein im eigenen Garten spielen zu wollen. Wer wachsen will, kommt meines Erachtens nicht daran vorbei, sich nach neuen Märkten umzusehen.

Dies gilt vor allem für Unternehmen, welche in Nischen tätig sind. Das Ausland ist für das „Made in Italy“ teilweise sehr empfänglich, womit ich nicht sagen will, dass das Exportgeschäft einfach ist.

Was war 1995 der Auslöser dafür, dass Sie dieses unternehmerische Abenteuer gewagt haben? Das Risiko auf dem gesättigten Kaffeemarkt war und ist erheblich.

Das Ausland ist für das „Made in Italy“ sehr empfänglich, womit ich nicht sagen will, dass das Exportgeschäft einfach ist. pa sind wir in den USA und in Kanada genauso wie in Japan und China präsent. 80 Prozent unseres Umsatzes erzielen wir im Ausland.

Im Grunde sind Sie der lebende Beweis, dass durchaus auch Kleinstunternehmen erfolgreich Exportmärkte erschließen können.

Wie gehen Sie vor, um neue Märkte mit deren spezifischen Verbraucherbedürfnissen zu erschließen?

Beginnen Sie mit Marktforschungen? Bauen Sie auf renommierte Verteiler?

In der Regel suche ich den direkten Kontakt zu qualifizierten Verteilern vor Ort, welche mit ihrer Marktpositionierung zu unseren hochwertigen Produkten und zu unserer Firmenphilosophie passen. Die Zusammenarbeit mit lokalen Verteilern erleichtert den Eintritt in neue Märkte, auch weil dadurch sprachliche Barrieren überwunden werden. Marktforschungen führen wir ebenfalls durch, jeweils lokal, aber sie dienen nicht als einzige Bewertungsgrundlage. Eine Marktforschung kann aufschlussreiche Informationen über die Akzeptanz für ein Produkt in einem bestimmten Markt liefern, ist aber sicher nicht ein Barometer mit hundertprozentiger Treffsicherheit.

Welches ist Ihr Rat für kleine Unternehmen, welche mit einem Sprung in fremde Märkte liebäugeln, welche sich aber nicht trauen.

Es handelt sich um eine sehr heikle Frage. Zweifelsohne ist die Erschließung neuer Märkte anfangs sehr investitionsintensiv, ohne dass eine Erfolgsgarantie vorhanden wäre. Aller-

bunden, und weil meine Familie seit dem fernen 1890 im Kaffeesektor tätig war, schwebte mir eigentlich immer vor, in die Welt des Kaffeeröstens zurückzukehren, obwohl mein Vater die Familienmarke Hausbrandt 1988 an die Familie Zanetti abgetreten hat.

Also gründete ich 1995 „Antica Tostatura Triestina“. Dazu ist zu sagen, dass ich in den Jahren zwischen der Hausbrandt-Markenabtretung und der Gründung von „Antica Tostatura Triestina“ immer im Kaffeegeschäft blieb, und zwar im Kaffeehandel. Mit der spekulativen Welt des Kaffeehandels konnte ich mich nie wirklich anfreunden.

Alessandro Hausbrandt ist der Spross einer traditionsreichen Kaffee-Dynastie.

Beim diesjährigen Südtiroler Wirtschaftsforum referiert er darüber, wie kleine Unternehmen der Herausforderung namens Globalisierung gerecht werden können.

Also entstand die Idee, als Kaffeeröster im hochwertigen Segment an die Familientradition anzuknüpfen, und die Idee, der Marktsättigung dadurch auszuweichen, dass Sie sich auf die Nische der Qualitätsgastronomie konzentrieren.

Der italienische Markt ist gesättigt, ja.

Im Übrigen sind die Entwicklungsstadien immer dieselben, unabhängig vom Produkt: Zuerst entsteht ein Massenmarkt, und später ergeben sich auf dem reifen Markt Chancen für hochwertige Produkte, weil gewisse Verbraucherschichten nach dem Besonderen streben. Wir zielen konsequent auf diese Klientel ab und vermeiden es,

verschiedene Qualitätslinien zu produzieren.

Warum konzentrieren Sie sich ausschließlich auf die Gastronomie?

Ist im Einzelhandel kein Platz für hochwertigen Kaffee?

Unser Kerngeschäft sind Restaurants, Bars und Hotels. Als Einzelhandelsketten bei uns anklopften, haben wir freundlich abgelehnt, erstens weil diese Vertriebsschiene nicht zu unserem Markenkonzept passt und zweitens weil sie auch unternehmerisch für uns nicht interessant war.

Kommen wir zu Ihrem Namen. Hilft es Ihnen als Kaffeeunternehmer, den berühmten Namen Hausbrandt zu tragen, oder ist der Name vielleicht sogar eine Last, weil immer das Risiko besteht, mit der Marke

Hausbrandt verwechselt zu werden, mit der Ihre Familie seit 1988 ja nichts mehr zu tun hat?

Natürlich strahlt der Name Hausbrandt Glaubwürdigkeit aus, weil er seit 120 Jahren die Geschichte des Kaffees mitprägt. Der Name wird automatisch mit Qualität in Verbindung gebracht, was im ersten Moment Aufmerksamkeit bringt … … aber auch Erwartungen schürt.

Aber auch Erwartungen schürt. Der internationale Erfolg wäre uns wohl verwehrt geblieben, wenn wir mit unserem Produkt nicht die Erwartungen erfüllen und zuweilen übertreffen würden. Wenn die New York Times unseren Kaffee 2002 zum besten Espresso von Manhattan auserkor und wenn eine US-Fernsehpersönlichkeit wie Martha Stewart unseren Kaffee als Muss bezeichnet, dann bestärkt uns dies in unserer Arbeit.

Wie bewerten Sie den Wirtschaftsstandort Italien?

Italien durchlebt eine grauenvolle Zeit. Wenn ich sehe, welche hohe Wertschätzung italienische Unternehmen im Ausland nach wie vor genießen, bin ich mit Stolz Italiener. Wenn ich aber die desolaten Rahmenbedingungen betrachte, die die Politik in diesem Land zu schaffen imstande war, schäme ich mich, Italiener zu sein. Die Rahmenbedingungen für die unternehmerische Tätigkeit sind katastrophal. Die Unterstützung vonseiten der Institutionen ist gleich null, und während sich die Politik anderswo als Stütze für die heimischen Unternehmen hervortut, ist dies in Italien nicht der Fall.

Umso schwerer ist es für italienische Unternehmen, im internationalen Wettbewerb zu bestehen.

Wir italienischen Unternehmen werden durch die Rahmenbedingungen gezwungen, immer noch ein bisschen erfinderischer zu sein als unsere ausländischen Mitbewerber. In Italien ist alles dreimal so kompliziert wie anderswo in Europa, auf uns lasten die höchsten Arbeits- und Energiekosten Europas. Unsere europäischen Mitbewerber spielen gewissermaßen nach anderen, einfacheren Regeln. Die Mitbewerber aus den Schwellenländern spielen sogar ohne Regeln. Das macht es ungemein schwer, auf dem internationalen Markt zu bestehen. Für uns Unternehmer in Italien gibt es nur eines: Ärmel hochkrempeln und uns selber helfen, denn wir werden vergebens darauf warten, dass uns die Politik hilft.

ssaporando l'espresso dell'Antica Tostatura Triestina si riconosce il gusto delle cose fatte bene. Dentro alla tazzina non c'è solo un cremoso liquido scuro ma una storia iniziata oltre cento anni fa.

Una storia di famiglia, che nasce da un'intelligente intraprendenza e da un certo spirito d'avventura. A raccontarcela è Alessandro Hausbrandt, fondatore e anima di quest'azienda moderna ma tradizionale, uomo di caffè da quattro generazioni. «A partire dal secolo scorso spiega - dando vita alle prime associazioni di torrefattori e commercianti di settore, la mia famiglia ha promosso l'affermazione di questa bevanda a Trieste, città divenuta presto famosa, prima a livello europeo e poi internazionale, come capitale dell'espresso Italiano.

Il mio bisnonno, Hermann Ernest Hausbrandt, sin da giovane, nei suoi viaggi, si appassionò alla produzione dell'intera filiera e da molti viene considerato come il «padre del caffè espresso».

Mio nonno, suo figlio, sperimentò addirittura alcuni prototipi per migliorare il sistema estrattivo dell’espresso inventato da Luigi Bezzera, la cosiddetta «macchinetta del caffè». Mentre ci parla, il produttore triestino non perde d'occhio i processi in corso nel suo stabilimento, che si trova nella zona industriale della città, proprio accanto all'altro noto produttore locale, Illy, col quale la famiglia Hausbrandt ha intrattenuto rapporti di amicizia e di collaborazione professionale. Ogni tanto Alessandro interviene dando suggerimenti ai suoi responsabili,

mi spiega con precisione che tonalità di colore devono avere i chicchi, mi fa notare le sigle sui sacchi di caffè. Ogni piccolo dettaglio racchiude un mondo che lui sa interpretare. Ha alle spalle quasi trent'anni di esperienza nel settore e non c'è dubbio sul fatto che la passione di famiglia per questa pianta «esotica» abbia contagiato anche lui.

Dopo la vendita del marchio familiare e la cessione dell'azienda, nel 1995 ha rifondato l'Antica Tostatura Triestina e il suo stabilimento è oggi l'unico ad aver mantenuto il processo di torrefazione del caffè tramite forno a legna pur raggiungendo volumi produttivi industriali. L'espresso dell'Antica Tostatura Triestina è venduto in 26 Paesi nel mondo, viene servito in rinomate caffetterie e pasticcerie, in alberghi e ristoranti esclusivi. Lo hanno scelto, tra gli altri, Mario Batali e David Bouley, Terrence Brennan e Todd English. Moltissimi sono gli acquirenti negli Stati Uniti, dove il prodotto è stato recensito entusiasticamente dal più severo critico del New York Times e dall'enogastronoma Martha Stewart, famosa conduttrice dell'omonimo show televisivo. «Abbiamo distribuito 22 milioni e 400 mila tazzine di caffè da Londra a Hong Kong, da Tokyo a Montreal, da Dubai a Marrakech, tutte in luoghi dove la clientela è piuttosto esigente», racconta l'imprenditore. Il segreto del successo? A cominciare dalla rigorosa selezione delle partite di caffè. «Per garantire un espresso con caratteristiche davvero eccezionali in termini di corpo, crema e aroma è indispensabile creare una miscela con le migliori varietà disponibili sui mercati internazionali. I nostri chicchi verdi vengono selezionati usando 5 distinti test visivi e organolettici e provengono soprattutto dalle aree subequatoriali di Africa, Asia, Centro e Sud America».

Nonostante gli impianti siano tutti computerizzati - dalla pesatura alla miscelatura, le partite sono perfettamente tracciabili e viaggiano attraverso un sofisticato sistema di trasporto pneumatico - sono costantemente previsti presenza e intervento umano, per verificare che le fasi di lavorazione siano eseguite secondo i severi dettami aziendali. Soprattutto nella peculiare fase di torrefazione che distingue questo stabili-

mento. I chicchi selezionati vengono qui tostati attraverso un processo molto più accurato rispetto agli standard industriali utilizzati da altre aziende che realizzano simili volumi.

«Per secoli il caffè è stato tostato con la combustione del legname - spiega Alessandro - altre fonti di calore come il gas naturale e l’elettricità hanno preso il sopravvento nell’industria lo scorso secolo perché consentono di ridurre i costi del materiale di combustione e i tempi del processo di tostatura. Una trasformazione più lenta del grano, però, con un aumento graduale della temperatura, permette di tostarlo in maniera omogenea, conservando all’interno dei chicchi molti dei composti naturali e preservando il più possibile le sostanze aromatiche. Siamo quindi fieri di mantenere la combustione a legna, come ormai in Italia fanno solo le piccole torrefazioni artigianali, anche se richiede almeno il triplo del

alessandro Hausbrandt tempo rispetto ai metodi di cottura utilizzati dai produttori industriali. Abbiamo degli impianti dal cuore antico - il nostro forno è stato costruito nel 1836 - ma di moderna capacità produttiva.

Se portati a saturazione, possono produrre fino a 5 tonnellate al giorno senza scendere a compromessi qualitativi. Ci tengo a sottolineare, inoltre, che non tostiamo mai assieme differenti lotti: a seconda del tipo e del paese d’origine del caffè in lavorazione, ogni singola varietà viene torrefatta individualmente fino al suo specifico punto di cottura, affinché possano essere esaltate le precise caratteristiche naturali. Segue un raffreddamento ad aria, veloce e senza aggiunta di acqua, in modo da mantenere intensi il profumo e la fragranza dei chicchi.

Solo in un secondo momento avviene la miscelazione. Di conseguenza, pur essendo ogni singola miscela composta da 7 o 8 tipi caffè diversi, i risultati sono più precisi, costanti nel tempo, e si traducono in prodotti di grande raffinatezza e personalità». Tra i più apprezzati, c'è l'espresso «Nessun Dorma», ispirato alla celebre aria dell'ultimo atto della Turandot di Giacomo Puccini, una

delle più conosciute al mondo, e così chiamato perché «l'intento era sposare in tazzina alcune delle più raffinate note aromatiche intonando una vera e propria sinfonia del gusto».

«L'espresso è il concentrato di un'essenza - spiega Hausbrandt - frutto di una grande complessità di variabili. Considerando provenienze, sistemi di raccolta, lavorazione, scale di difetto e forme del chicco, esistono 6 milioni e mezzo di possibili combinazioni diverse di caffè prima ancora di arrivare alla tostatura e alla miscelazione. Tali combinazioni si traducono poi in altrettanto varie risultanti finali, dalla corposità al grado di acidità.

Bere un caffè espresso è quindi un atto di edonismo, non si assume tanto per ingurgitare un liquido. Sebbene il nome «espresso» suggerisca il concetto di «velocità», va riferito alla preparazione, non associato alla degustazione del prodotto che dovrebbe essere lenta e meditativa, come tutte le degustazioni. La pausa caffè è un momento rigenerativo, di abbandono ai pensieri, che contribuisce a velocizzarli pensiero semmai in un secondo momento.

sono sistematicamente tesi nel far sì che il consumatore finale percepisca la qualità del prodotto.

Obiettivo fondamentale della mia azienda non è tanto vendere caffè in grani ottimizzando un profitto quanto la soddisfazione di chi beve il mio espresso. È per questa ragione che, mentre alcuni produttori forniscono soltanto un prodotto, noi siamo anche dei consulenti ed effettuiamo un accurato controllo qualità. Non vogliamo dei semplici clienti ma dei partner con i quali lavorare condividendo valori e impegno in termini di coerenza, assistenza al cliente e attenzione costante ai piccoli dettagli.

Il nostro caffè è confezionato con materiali specifici che lo preservano dalle insidie di aria, luce e umidità. I sacchetti, muniti di valvole a senso unico che permettono la fuoriuscita dell’anidride carbonica prodotta a seguito della torrefazione ma non l’entrata dell’ossigeno, garantiscono una durata del prodotto per 2 anni, anche se noi indichiamo una scadenza a 12 mesi dalla pro-

duzione perché vogliamo che il caffè sia consumato senza perdere qualità. Per lo stesso motivo controlliamo che le giacenze nella nostra filiera distributiva non superino i 3 mesi».

L'azienda non è solo attenta a una buona conservazione ma anche all'ambiente: i barattoli in plastica metallizzata sono riciclabili, il legno di faggio usato per la combustione è a basso impatto ambientale perché ricresce in fretta e produce poco fumo, i sacchetti che avvolgono il caffè venduto in capsule sono interamente bio degradabili. L'Antica Tostatura Triestina, inoltre, produce una sua linea biologica prodotta con doppia certificazione Usda-Nop e Bio-Ce. «Il caffè non è un prodotto sostenibile dal punto di vista del km zero perché qui in Europa le piantagioni sono inesistenti - spiega Alessandro siamo però al 100% biologici con riferimento all'origine della materia prima, al produttore, all'importatore e al prodotto finale. Ne siamo molto fieri, anche se questo tipo di produzione

comporta costi più alti per la materia prima, maggiore dispendio di tempo per la sua selezione nonché iscrizioni ufficiali, registrazioni contabili molto precise e severi controlli periodici sui certificati. Così come avviene per la certificazione Kosher, richiestaci dai nostri consumatori appartenenti alla comunità ebraica e rilasciata per tutti i nostri prodotti».

Un ultimo fondamentale sforzo è dedicato alla filiera distributiva perché l'azienda prevede una fase educativa per i distributori, con eventuale formazione presso i punti vendita. «Abbiamo una manualistica dettagliata, completa di schede di estrazione. Consideriamo la preparazione una vera e propria fase finale di cottura del prodotto e chiediamo ai nostri clienti di eseguirla con cura e precisione, rispettando 8 punti fondamentali». E dopo tanta dedizione, a quanto pare, i risultati si gustano! «Posso dire con soddisfazione che abbiamo avuto svariate conferme sulla percezione di qualità dei nostri prodotti da

parte del consumatore finale - conclude Alessandro Hausbrandt - Il caso che più mi ha riempito di orgoglio è stato ricevere i complimenti di Richard Branson, proprietario della Virgin Records.

Dopo aver assaggiato il nostro espresso in uno dei resort di sua proprietà, ha voluto informarsi sul produttore, mi ha contattato e ha deciso che saremmo diventati fornitori ufficiali in tutte le sue strutture, inclusa la sua abitazione nelle Isole Vergini britanniche».

t’s been 45 minutes, and I still have a strong hour to go. The pile of maple and ash doesn’t seem to have gotten any smaller. In fact,

it just seems to have expanded outward. It always surprises me how long it takes to move and stack a cord of wood a paltry 30 feet. I forgot my work gloves back at the shop, which has helped slow the process down further, but there have been only a couple of splinters, the rain has held off, and most of the sticks look relatively straight and knotfree. I’m also a little flush, with a few endorphins starting to kick in. I’m feeling pretty good. As Thoreau wrote in Walden, the beauty of firewood is that it warms you twice. continued on page 38

While there have been significant advancements in roasting technology over the years—thankfully, our roasteries don’t resemble “labor in the lower range of Dante’s Inferno amidst smoke, stress and burned beans,” as Mark Pendergrast describes the earliest wood oven-based commercial operations in his book Uncommon Grounds—it’s still just the controlled application of heat to a bunch of seeds. And the drum roasters being used by many roasters today do not look or operate very differently from those used in production 150 years ago. Indeed, many of us prefer old machinery. The difference is not so much in the addition of flavor, but in a resultant texture and completeness. As Karnes says, “When someone spends 25 bucks on a rib-eye, they’re not going to put it in a frying pan over an electric element.” It may be difficult to break down into discrete characteristics, but roasters using wood

know the overall effect is noteworthy.

Some roasters—especially those following in the Italian espresso tradition— note that they draw out their profiles and roast times in order to create what they believe to be a less angular and fuller bodied espresso. DiRuocco says the difference in roast times between his company’s coffees meant for brewing and designed for espresso can be up to 10 minutes, with the longer roast times “smoothing” out acidity while increasing sweetness and enhancing body.

DiRuocco attributes this in part to a longer drying phase, as the natural moisture content of wood necessarily slows down the initial stages of the roast. Hausbrandt also notes that the fuel source itself seems naturally to lead to longer roast times, though those used by Antica are not markedly longer than those you might find utilized with gas-fired drum roasters, and that their coffees are dropped before the onset of second crack in order to preserve inherent bean characteristics. My own experience tells me that wood does take a little longer than those times used by my gas- and propane-fueled peers, and that while I can knock a minute or so off if I work at it, the wood just “wants” to go through my profile points a little more lazily.

Whether this “roundness” and muted acidity is due to the wood itself or simply the product of drawn-out profiles is probably debatable. But Mancuso notes that the coffees dropped from his 63-year-old Balestra have more body and viscosity than those that come from Caffe D’arte’s small army of gas-fired roasters. And while these differences can in part be attributed to D’Arte’s using roast profiles customized for wood, he has experimented enough to know that the primary difference is the roaster, and heat source, itself. with identical profiles in wood- and gasfired roasters has resulted in non-identical coffees.

On the other hand, as a contemporary roaster who’d identify himself as Third Wave were the term not dated and a little obnoxious, I enjoy and am able to produce bright coffees that have plenty of snap. While I, too, like to think that the coffees my roaster produces have a “round” quality, the high-grown Centrals and East Africans that I put through the paces do not want for acidity and liveliness.

Smoke? Nope I’ve found that it’s best to use gentle curves that work with the wood, instead of trying to fight it. The biggest challenge across the board seems to be batch consistency. Mancuso notes that it’s “not easy to control all the variables—flame, wood, barometric pressure, whether it’s the first or ninth batch” (and the resultant change in heat transfer), and that it takes a specific skill set to do so. Curry states flatly that wood roasters are “dealing with an inconsistent heat source” while at the same time “trying to achieve a consistent product,” making for a significant challenge, but one that he seems to relish. The folks at Antica also mentioned similar issues, but noted that modern Agtron equipment, along with the fact that the company has an institutional roasting memory of generations— Hausbrandt’s great grandfather started roasting in Trieste at the end of the 20th century—assists in achieving as consistent a result as possible from their 120-kilo custom-designed Petroncini.

And Karnes says that his roaster produces consistent roasts after its oven has been brought up to temperature over the course of two hours.

The fact that experience carries such weight in wood roasting also poses certain challenges. Curry is still the only roaster in his operation, which means that he “hasn’t had a real vacation in years.” Mr. Espresso and D’arte, however, employ multiple roasters with decades of experience in the industry, all of whom are comfortable with roasting with wood. (At D’arte, a new guy on the block entering his ninth year was just now being allowed to work with their wood roaster, Mancuso said with a laugh.)

Sourcing wood can also be tricky.

Mancuso calls finding the right wood his “gray hair maker”—not too wet, not too dry, not too many knots. But other roasters seem to have relationships with wood suppliers as a cabinet maker or luthier might. Curry has been sourcing his oak from the same supplier for a decade, and DiRuocco treats his own wood supply in an even more specialized way, using only blue oak from a particular kind of sloped terrain that results in a moisture content a little lower than your typical green might have. I started by using wood that I cut and split myself, but have ended up buying local kiln-dried wood by species and by the cord, for consistency’s sake.

Despite the challenges, roasters using wood are enthusiastic about their chosen technique and wouldn’t have it any other way. If you’re going to work next to a wood fire for hours on end in Texas in August, Karnes jokes, you really have to love what you do.

And enjoy a challenge. “It helps to be as stubborn as I am,” Curry laughs, “but I’m happy I’ve chosen this path.” I always smile a little when I read Christopher Schooley’s Firestarters interviews. A fire in my roastery does not mean something has gone horribly wrong, but just as planned.

Saba e Ponterosso “arredano” a Tokyo il Caffè Triestino Il locale di Hidetoshi Ueda, frutto di un intreccio fra amicizie e affari partito dall’America e arrivato fino a piazza Unità Città di Tokyo. A pochi minuti dalla stazione della metropolitana di Mejiro (si pronuncia proprio come in triestino per dire “mi volto”) si incontrano le porte a vetri del Caffè Triestino. Tra il personale, tutto giapponese, nessuno parla italiano. Hidetoshi Ueda, però, si esprime in un inglese impeccabile. E racconta la storia.

Una vicenda di amicizia e affari, attraverso tre continenti.

«Mi sono laureato a San Diego, Il Caffè Triestino a Tokyo California. Specializzazione, informatica. Qui sono il proprietario. Cosa c’entra il caffè con il computer? Meno di niente. Io con Trieste? Adesso le dico tutto...». Ueda-san ha 53 anni; ne dimostra meno. Porta in testa un berretto piatto che non toglie mai. Su uno schermo appeso al muro ruotano le immagini di piazza Unità, di Ponterosso, dei palazzi, delle rive. Sulle scansie bottiglie di vino e barattoli di caffè. La macchina per espresso e cappuccino gorgoglia e soffia accanto a un manifesto che porta impresso un marchio: Antica Tostatura Triestina. In un angolo una immagine ritagliata da una foto di Umberto Saba che, con un fumetto e pipa in bocca, racconta. In ideogrammi.

Chissà che cosa.

«A San Diego ho incontrato un ragazzo italiano, Riccardo, lì per studiare inglese. Dormivamo nello stesso complesso. Lui poi è tornato in Italia, lavorando nell’ambiente finanziario. Io sono tornato a Tokyo, e mi sono inserito nel settore del commercio dei telefoni cellulari.

Ho però chiuso per occuparmi invece del Caffè Triestino quando Riccardo mi ha messo in contatto con un cliente che intendeva aprire una piccola catena di caffetterie. A oggi sono cinque e hanno tutte lo stesso nome: Caffè Triestino. Due qui a Tokyo, una a Kogurazaka, una a Yokohama, una a Osaka».

IL PICCOLO - quotidiano di Trieste

Il cliente era Alessandro Hausbrandt, proprietario della Antica Tostatura Triestina. Ricorda: «Ai partner giapponesi l’immagine di Trieste è piaciuta molto, così assieme abbiamo deciso di offrire un prodotto dalla forte impronta: non solo caffè, ma anche Trieste. Il signor Ueda per qualche tempo è stato anche il nostro distributore; poi quel tipo di attività, che richiedeva una struttura importante, è stata rilevata dalla Rt Corporation, e Ueda ha trovato il proprio ruolo come proprietario di uno dei locali. L’unico che non sia del grande gruppo. Noi continuiamo a offrire il nostro caffè e la nostra consulenza – immagine della città, cucina tipica - per tutto ciò che è Trieste. Sperando, prima o poi, che anche a Tokyo basti citarla perché si sappia dove è, senza dover aggiungere: a nord est di Venezia...»

Hidetoshi Ueda: «Io a Trieste sono venuto spesso. Per un certo periodo, quasi una volta l’anno. Ora manco da tre. Quando eravamo giovani mi ospitava Riccardo. Da quando siamo entrambi sposati, e spazio non ce n’è, ci si aggiusta con l’albergo. Le foto che si vedono qui, sui muri, in parte le ho prese io. La differenza tra un caffè preso a Tokyo e uno a Trieste? Beh, intanto c’è quella grande fra il nostro caffè e quello per così dire, di tostatura americana, che spopola in Giappone: quello è più amaro; il nostro più morbido. Rispetto a Trieste, le varianti principali sono il topping e il ghiaccio». Topping significa qualcosa che si mette sopra, in cima: «Trasforma il caffè in una sorta di irish coffee. Il ghiaccio è per l’estate: lo fa diventare una bevanda fresca che qui va moltissimo».

Cercando di espandere l’attività, e rimanendo il più possibile vicino a Trieste, il Caffè propone anche vini friulani e, nel tardo pomeriggio-sera, apre anche come ristorante (il cartello dice “osteria”, in italiano). Si può ordinare la jota. Stampata in katakana, sul menù.

«Adoro Trieste», afferma con trasporto il signor Ueda. «È una città dove non mi sono mai sentito rifiutato, anche se sono chiaramente un orientale. Non succede dovunque. Della frequentazione con la città, mi è rimasta la capacità di leggere il giornale. Non capisco un accidente, ma forse ho un buon orecchio per la musica, perché ci riesco in modo fluente, come se conoscessi davvero la lingua. Lo faccio, ogni tanto, per divertire gli amici».

Antica Tostatura Triestina è un marchio giovane, che nasce con un passato glorioso. Quanto incide il suo cognome nelle scelte aziendali?

Direi che il mio cognome e la storia della mia Famiglia sono stati alla base dei miei pensieri: da prima mi sono chiesto quali fossero i valori fondamentali della mia Famiglia, dei quali mi sento portatore, che avrei voluto infondere nella mia nuova realtà aziendale e poi nei suoi prodotti.

La risposta che mi sono data è stata: amore, passione, qualità senza compromessi, esclusività, etica professionale, tradizione, attenzione all’ambiente, bio compatibilità ovunque possibile e Internazionalità.

E per questo che, andando contro corrente, ho scelto un sistema di tostatura antico che impiega la tostatura del caffè a legna, per singola origine e tipologia e la miscelazione rigorosamente a freddo; anche se il tutto avviene poi in una totale immersione di strumenti moderni ed ad alto contenuto tecnologico.

Antica Tostatura Triestina è una sua idea?

Si, ho iniziato a pensarci nel 1993 e poi l’ho fondata nel 1995. Desideravo creare qualcosa di speciale, non una semplice industria asettica e priva di attrattive se non per il prezzo più competitivo, ma un prodotto che facesse riflettere.

Quali sono i vostri mercati di riferimento?

Italia, Europa, USA, Middle Est, Cina sono le macro aree maggiori su cui ci stiamo focalizzando; ad oggi siamo distribuiti e disponibili per i nostri estimatori in circa 30 paesi e città tra le quali: Trieste, Venezia, Verona, Brescia, Milano, Firenze, Cortina d’Ampezzo e poi, all’estero, Vienna, Londra, Belfast, Anversa, Atene, Marrakech, New York, Hong Kong, Dubai, Jeddah….

Molti prodotti italiani sono soggetti all’attacco di “cloni” provenienti da paesi esteri, è così anche per il caffè?

Con il Caffè Espresso l’Italia si e fatta fregare un altro primato ed una brillante idea tutta italiana, come la pizza o il telefono, con cui altre aziende estere hanno creato fortune immense.

In Italia esistono molte realtà di lunga tradizione, non sempre necessariamente legate alla qualità, che in termini di fatturato si sono fatte letteralmente surclassare da giganti nati in America appena trenta anni fa.

Io però sono convinto che la vera battaglia si possa ancora vincere, sul piano della qualità percepita e del “glamour” inconfondibile di prodotti realmente “Made in Italy” che devono essere però veramente di grande prestigio, magari non per tutti, ma davvero unici e straordinari.

Credo che questo sia ancora un patrimonio inestimabile del nostro meraviglioso paese.

I consumatori si sono evoluti e si stanno erudendo molto velocemente, un tempo consumavano qualsiasi cosa, oggi sono molto più attenti nella selezione dei prodotti che scelgono di consumare.

Il prosciutto cotto in crosta di pane con senape e Kren vola oltre Manica. E grazie a due giovani di Trieste raggiunge il centro di Londra per far scoprire anche agli inglesi la bontà dei prodotti tipici triestini e della nostra regione. Il sogno di aprire un locale dove proporre, oltre al cotto caldo, anche la jota, il caffè dell’Antica Tostatura Triestina ma pure il friulanissimo frico, il prosciutto crudo di San Daniele, le lasagne, il salame friulano, i panini che perdono spunto da quelli confezionati nei buffet triestini, è stata partorita due anni fa.

Seduti ad un tavolino fuori da un locale di Viale XX Settembre due ragazzi. Luca Antonini, 32 anni, una laurea in Economia e Commercio, conosciuto soprattutto dai giovani triestini per la sua attività di organizzatore di serate e per la gestione delle estati più riuscite alla Diga, al Castello di San Giusto o il Caffè Rossetti e Mauro Nadlisek, 37 anni, architetto, neo papà della piccola Bianca. Da poco più di una settimana, dopo mille peripezie, il sogno, si è avverato e il locale “Moo! Italian Freshness”, questo il nome, ha alzato le serrande e servito i primi clienti. Incuriositi da sapori e profumi tanto diversi. Il locale ricorda un po’ i panifici di un tempo e dietro al banco, in bella mostra, la morsa e il cotto. Per un londinese è come fare un tuffo nella nostra città, passando da uno dei buffet storici triestini ad uno dei caffè lettarari.

«Benigni ha detto che l’unica maniera per realizzare i propri sogni è svegliarsi - spiegano i due giovani imprenditori - e noi ci siamo svegliati a Londra«. Hanno deciso di rischiare, di cambiare vita, di mettere in discussione tutti i punti di riferimento e di fare un salto. «Ora ci alziamo alle 5 perché apriamo alle 6 di mattina. Alle 19 chiudiamo il locale ma poi fino a tarda notte lavoriamo sul resto: flussi

operativi, scelta del prodotto, presentazione, ottimizzazione del servizio, burocrazia che per fortuna nulla ha a che vedere con quella italiana«. La soddisfazione più grande per i due ragazzi è vedere che ad una settimana dall’apertura vantano già numerosi clienti fidelizzati e che hanno perso la testa per i panini di prosciutto cotto caldo appena tagliato con una spolveratina di Kren, per un piatto di jota che molti si prendono anche per asporto, o di un buon panino con il salame friulano tagliato a fette belle grosse.

Per non parlare del caffè, il nostro espresso non ha eguali.

Latteria Italiana. La tradizione del gelato made in Italy a Miami: atmosfera anni Cinquanta e sapori autentici Sono tre ragazzi milanesi a tentare la conquista del mercato americano con il format della Latteria, che propone l’autenticità del gelato italiano con la garanzia di materie prime selezionate in un ambiente familiare che strizza l’occhio alle latterie degli anni Cinquanta.

Il gelato italiano nel mondo. Tra pessime imitazioni e grandi riconoscimenti Quante volte a passeggio per una capitale straniera – a migliaia di chilometri di distanza dal nostro Paese – è capitato di imbattersi in una gelateria dal chiaro “retrogusto” italiano? Un nome (spesso infarcito di storpiature) che inneggia alla tradizione tricolore e ci fa sorridere, un’atmosfera che attinge agli stereotipi più comuni sul Belpaese e il gioco è fatto. Peccato che di autentico ci sia ben poco. In effetti, se di italian sounding si parla per tanti prodotti dell’orgoglio nazionale costantemente contraffatti sul mercato estero, anche il gelato italiano e il know how custodito dai nostri artigiani rappresenta un’eccellenza molto apprezzata nel mondo nel migliore dei casi, ma non esente da malriuscite imitazioni.

Poi ci sono i casi in cui sono proprio gli artigiani italiani a decidere di proporre il proprio prodotto su nuovi mercati, come è successo qualche mese fa a Parigi, dov’è arrivato Marco Radicioni a portare l’idea (quella di Otaleg) che ha saputo conquistare i romani negli ultimi anni.

Il gelato, tra grandi classici e gusti nuovi Anche se il business principale dell’attività resta il gelato artigianale, prodotto nel laboratorio locale con materie prime selezionate e frutta di stagione secondo le indicazioni del mastro gelataio siciliano Davide Ferrarotto; tra i gusti non mancano i grandi classici, ma anche esperimenti più audaci che sposano la qualità dei prodotti italiani con un certo eclettismo del gusto locale, dal Pecorino Romano e noci alle arachidi e melighe di Mondovì, da fragola e lime al pomodoro verde con olio extravergine, al pistacchio salato, alla nocciola di Alba.

Tutto questo in un’atmosfera dal gusto contemporaneo che attinge a suggestioni anni Cinquanta, maioliche siciliane e credenza in radica in testa.

E per chi volesse provare un autentico espresso italiano, i ragazzi hanno selezionato il caffè tostato a legna dell’Antica Tostatura Triestina.

Hof van Cleve is set in an old farmhouse in Flanders, not far from the Dutch border with Belgium; the nearest city is Ghent. After training in France at the likes of Le Pré Catalan and with Joel Robuchon, chef Peter Goossens got at job at Hof van Cleve in 1987, a restaurant that he later bought. In 1994 he gained a Michelin star, and a second in 1998. The restaurant was awarded a third Michelin star in 2005, which it has retained ever since.

Bread was made from scratch in the kitchen, a choice of spelt, ciabatta, baguette and Trappist brown bread, which was the best of the lot (19/20 overall). The next nibble was a wagyu style beef, the cow in this case a Belgian breed of cattle called Holstein implanted with wagyu embryos and raised in northern France (from Domaine du Tilleul). The meat was coated with Parmesan and sesame seeds, giving a contrasting texture to the tender beef (18/20). Squid was magnificent, exquisitely tender and served with soya mayonnaise, the shellfish marinated with Indian spices and sesame seeds (20/20). Mackerel came with runner beans, apple and shallots, the fish superb, as were the vegetables (19/20). Chicken liver was topped with langoustine tartare and shallot, an interesting and effective combination, the components of very high quality (19/20).

meat was very tender, the mushrooms superb and the couscous was a revelation, absolutely terrific, the seasoning of the dish pin-point accurate (20/20). The alternative of turbot was perfectly cooked, with dazzlingly good cockles from Normandy, stunning turnips (not a phrase I ever expected to write), and a perfect risotto using bomba rice (20/20).

Coffee was superb, an Italian blend called Antica Tostatura Triestina. To accompany it was a trolley of sweet delights including superb lemon cake, raspberry tart, apple cake and pistachio macarons. Service was excellent throughout the meal, the staff friendly and helpful. The bill came to €367 (£293) each, but that was with the longest tasting menu, champagne and plenty of good wine. If you ordered less food and shared a modest bottle of wine then a typical bill would be around £220 a head. This is barely half the price you would pay in a Paris three star, so in its context is not unreasonable. I really enjoyed Hof van Cleve once again; the dishes were appealing, the ingredients superb, the technique impeccable and the balance of the dishes terrific. This is proper three Michelin star cooking.

Duck foie gras was pan-fried, served with beetroot, hazelnuts, cherry sauce, apricot and a little Mimoulette cheese. The liver was of terrific quality, silky smooth and with deep flavour, and the contrast of the earthy beetroot with the nuts and cheese worked surprisingly well, the cherries providing balancing acidity (19/20). The pescetarian alternative at this stage was also impressive, scrambled egg with smoked eel and buttermilk, ceps, artichokes and chickpeas.

Best end of beef was from a cow from the Basque region, served with ceps, couscous and sweet Cevennes onion, enlivened with ras el hanout (a North African spice mix). The
