Whether you’re a fan of russets, golds, reds, or fingerlings, the potato has immeasurable uses in practically every type of cuisine. Poutines, gratins, fried, baked, grilled, or made into dough (or vodka) we don’t know what the world would be like without these fantastic tubers.
And although they may have gotten an unhealthy reputation as chips or fries, the potato itself is low in calories and contains high levels of Vitamin C, protein, and folate.
RUSSET
MEDIUM TO LARGE, LIGHT BROWN SKIN. Best for baking, mashing, frying, or roasting
PETITE
MINI SIZED, RED, YELLOW, WHITE, AND PURPLE VARIETIES Easy to roast, bite size, perfect for soup and stews.
PURPLE
PURPLE TO BLUE COLORED SKIN AND FLESH. VERY STARCHY, VARYING SIZES WITH A NUTTY FLAVOR. Great in salads or mashed for a fun pop of color.

• If you cut open a potato and rub it on a rust spot, the acid in the potato will dissolve the rust.
