Last year, sodium reduction was being touted as THE issue to watch in 2010. Headlines asked, “Is sodium the new trans fat?” That comparison has been criticized, fairly, using the apples-to-oranges argument, as sodium, even though it contributes to high blood pressure (and therefore heart disease and stroke), is an essential nutrient in our diets.
There’s no doubt that sodium reduction has gone mainstream. For some time now, Campbell’s Soup has been making it the focus of a major advertising campaign, and other well-known brands are following suit. On the industry side of the equation, the Canadian government has formed a Sodium Working Group to consult with the food manufacturing sector on voluntary sodium-reduction targets modelled on what Britain’s Food Standards Agency (FSA) has done for U.K. food makers.
The result of this process, which began in October 2007, is a proposal by Health Canada to reduce Canadians’ daily sodium intake to 2,300 milligrams by the year 2016. Thus, the agency is also proposing sodium reduction targets for food manufacturers.
Health Canada and the Baking Association of Canada have been holding a series of consultations with the baking industry to gather feedback about technical issues and other barriers to achieving the sodium reduction targets. On March 2, one of these meetings took place in Mississauga, Ont., and featured a presentation by Health Canada’s Nora Lee and Guelph Food Technology Centre’s John Michaelides, a food science expert who writes Bakers Journal’s Technical Talk column.
I attended this meeting, as well, and while I wouldn’t categorize the proceedings as anything less than cordial, some strong language was used, and passions were inflamed.
}“When I see a government agent on the podium, coming to business with legislation, I have some major concerns,” John Rosetti of Italian Home Bakery said, addressing Lee. “Since you’re here on a consultative basis, my recommendation is that government gets out of our way when it comes to legislating levels of sodium intake. Let the individual choose . . .

The education should be on the individual: increase physical activity; stop smoking. But get out of our way.”
To be fair, Lee was facing a tough crowd. Bakers feel like they are being picked on, and some viewed this meeting as a chance to vent their frustrations. The onus is on the government to explain why it wants bakers to reformulate a product that has stood the test of time since the very infancy of civilization and, based on Lee’s performance, Ottawa is doing a lousy sales job. Maybe that’s being too blunt, but to feign impartiality on this issue would be a disservice to not only the baking industry but other food manufacturing sectors that are threatened by the government’s view that individual responsibility is a thing of the past.
Sure, many processed, ready-to-eat entrees are grossly over-salted, and soups tend to be major sodium offenders. Makers of these products are due for their own consultations if they haven’t already endured them. After all, as Lee put it, “We’re not targeting just your industry; we’re equal-opportunity targeting. Just so you’re aware.” That line drew some laughter, much of it uncomfortable.
But in baking, salt plays a role far more important than mere taste. It’s a functional ingredient that suppresses bitterness, strengthens and tightens gluten, and enhances shelf life. If consumers, for the sake of convenience, are choosing processed foods that weren’t available 50 years ago instead of home-cooked meals featuring bread, then that is where the crux of the problem lies.
Dennis Rosetti, John’s partner, may have put it best: “The baking industry is one of the best self-regulated industries in all of the food sectors. When we look at an issue like trans fats, bakeries were some of the first to take them out of their products. It didn’t even come to the point where legislation was needed.”
Health Canada’s reply? “We’re not talking legislation at this point; we’re talking about voluntary reductions.”

Canadian firm develops yeast solution for acrylamide in processed foods
VANCOUVER – Functional Technologies Corp. has developed, tested and filed patent applications for yeast technology that reduces the formation of acrylamide, a carcinogen formed when starchy foods are baked, fried or toasted. Recognized as a serious food safety issue since 2002, acrylamide has been found in many foods, including bread, cookies, crackers, baby food, breakfast cereal, french fries and potato chips.
Given the scale of the related opportunities, the company will be partnering with companies in the yeast and food processing/manufacturing industries to accelerate its proprietary yeast strain product development and commercialization. Preliminary discussions have already been initiated with some prospective partners. However, given the potential of the large volumes of yeast required for numerous applications, the company
believes there is sufficient scope to work with multiple partners.
The World Health Organization (WHO) categorizes acrylamide as a Group 2A carcinogen, along with substances such as lead, creosotes, PCBs, diesel exhaust and urethane.
“Acrylamide is a high-priority concern among consumers, the food industry and health regulators around the world,” said Garth Greenham, president and COO of Functional Technologies. “Preliminary lab testing is positive and we’re very excited to utilize yeast, with its long history of use and familiarity in the food industry, to help resolve this important health concern.”
panera leads way in posting calorie counts
Panera Bread customers in the United States can now tally calories with just a glance at the menu board.
In March, Panera became the first nationwide chain to voluntarily post calorie information at all of its company-owned restaurants. The move is notable in an industry that had historically opposed requirements that chain operations post calorie counts.
But the landscape is changing as local laws mandating nutritional disclosure become more common and the U.S. Congress considers a nationwide mandate. This is only one in a wave of changes consumers can expect to see on chain restaurant menus in coming years.
Calorie counts were to be posted by March 24 at all 585 company-owned stores, Panera expects its franchisees to eventually follow suit, which would cover all 1,380 stores.

CrFa blasts minimum wage rise
TORONTO – With Ontario’s eight per cent hike in minimum wage taking effect March 31, foodservice operators will start paying an extra $255 million in wage costs annually, the Canadian Restaurant and Foodservices Association said.
This minimum wage increase comes on the heels of Ontario’s budget announcement, in which the government froze its own payroll costs.
Ontario restaurants have existed on the second lowest pre-tax profit margin and paid the second highest minimum wage in the country. As of March 31, Ontario passes Nunavut to pay out the highest minimum wage in Canada.

agostoni chocolate company expands service to North america
The Agostoni family, second-generation owner/operators of ICAM S.p.A., is expanding its award-winning private label chocolate manufacturing program with a new North American sales office operating under the brand Agostoni Chocolate.
Located in Los Angeles, the company’s sales team will work directly with North American retailers and consumer brand companies to develop premium chocolate products based on a proven private label service model that offers a wide range of
stock and custom options.
According to Carla Baroni, head of export for the company, the decision to open a direct sales office in the U.S. was based on “our strong impression that North American consumers have become very sensitive to chocolate product quality.” He adds that chocolate “is an emotional product category. Consumers are passionate about chocolate and that excitement can create loyalty that strengthens the entire private label line.”

Grain and milling giant Archer Daniels Midland Co. was ranked the most admired company in the food production industry for the second year in a row by fortune magazine. Each year, fortune< publishes a list of the World’s Most Admired Companies, which ranks companies in a variety of industries.

Optimism rises in packaging industry
FALLS CHURCH, Va. – The results of the 2010 Foodservice Packaging Industry Surveys say optimism in the foodservice packaging industry is up this year compared to 2009. The surveys, administered by the Foodservice Packaging Institute (FPI), gauge the state of the industry among top manufacturers and their suppliers in North America and Europe as well as operators and distributors.
One of the surveys found that 82 per cent of foodservice packaging manufac-
turers in North America expected their sales volumes to be better this year than last. This is up from a mere 42 per cent in 2009. The surveys also found that 55 per cent of North American manufacturers expect their profits to be better than last year, which is on par with 2009 expectations.

KANSAS CITY, Mo. – After 33 years of service, Multivac’s Norm Winkel is retiring from his position as director of key accounts, effective May 15. Matt Malott will assume his title and responsibilities.
Winkel’s tenure with the Multivac brand began in the parts department when Multivac products were sold through Koch Equipment. He quickly moved up, becoming director of sales and marketing, then general manager of the food division.
Malott, a 22-year veteran of the packaging industry, joined Multivac in 1988, initially working in the package design group, and has served in a number of critical roles providing innovative packaging solutions to producers of perishable packaged goods nationwide.

Summer means backyard entertaining, and one of the more popular items that seems to be appearing in every cooking magazine is the grilled pizza. Market your pizza dough for grilling, and hand out unique and interesting grilled pizza recipes with your dough. If you have the space for it, set up an entire barbecue grilling section in your bakery, including an actual barbecue, and merchandise relevant items to go with your pizza dough, such as tomato sauce and different types of cheese. You can also promote other baked goods that are ideal for grilling, such as pita bread and naan bread, as well as classics such as hamburger and hot dog buns.

Draw customers in on a hot summer day by serving freshly made ice teas and lemonade to accompany a slice of fruit tart or a cool mousse. Also consider selling ice cream in a homemade waffle cone. Cross-merchandise your pies and other desserts with pints of ice cream or fresh cream.

If you have the space for it, set up a few patio tables outside your storefront so customers can enjoy a cup of coffee and a pastry in the morning, or a cold beverage and a slice of cake in the afternoon. By making your storefront patio cozy and inviting, you will attract interest from people walking by who may not have noticed you in the past.
5. Get loCAl
Add vibrant colours and life to your merchandising displays by working with local farmers to sell fresh produce in your bakery. Imagine pairing your freshly baked sandwich breads with red, juicy tomatoes and green, leafy lettuces, or pairing angel food cakes and meringues with fresh berries. You can also work with local cheese artisans or butchers to sell nitrate-free hot dogs and ready-made burgers. Create your own delicious pairings with your products, and give out free samples for customers to try.
6. CreAte WHole PICnIC BAskets
Many families love to spend a day at the park, beach or poolside. Create different picnic baskets that would suit the needs of your customers and include menus that are kid-friendly, vegetarian or low in fat. Offer different price ranges. Keep in mind that picnic food should require minimal refrigeration, be easy to eat without utensils, and be properly packaged. Some ideas include a variety of sandwiches, pizza breads or different croissants baked with ham, cheese or spinach, freshly baked cookies, bars and squares, a tomato and bread salad, and flatbreads and crackers with dips. For creative retail ideas, you can sell environmentally friendly picnic baskets, coolers, blankets, tableware and cutlery.
7. Hold sIdeWAlk BAke sAles
On the weekends, set up a few tables outside your store and hold a sidewalk sale for your baked goods. Entice new customers by offering passersby free samples of your products, or give away coupons to bring customers back. The Olympics were like a huge, festive cake. Many small, well-perfected steps and carefully selected ingredients created an incredible showpiece. On a massive scale, the Olympics were a celebration of detail, of small stories adding up to one Big Deal.
For some local bakery businesses, the Olympics were amazingly good, for others, insignificant, and for some, a disappointment.
Tiny Golden Crust Specialties in Squamish – between Whistler and Vancouver – was one of the bakeries that changed everything for the duration of the Games. Bakers from Norwegian Din Baker chain chose Golden Crust as the facility at which to bake the traditional thrice-daily bread for Norway’s 100 athletes and 200 support staff present at the Games. They also brought more than 3,500 kilograms of ingredients from Norway. Norwegian teams have brought their own bakers to the Olympics and World Championships since 1988.
}Each day at Golden Crust, four Norwegian bakers baked about 120 loaves of four different kinds of rich, dark bread that combined hearty ingredients such as rye, oats, barley and buckwheat. They also baked celebration cakes for medal winners and sweet buns.
While the Olympics did not benefit our business as we expected, it was a lot of fun and excitement for everybody. I am sure Vancouver will benefit tremendously for years to come.
Golden Crust’s owners, husband and wife Wade and Patricia Yendall, say they loved every aspect of the experience.
“Our company is a true mom-and-pop operation, but professional, as I have over 20 years’ experience as a pastry chef and Wade was a banquet manager with Fairmont Hotels,” Patricia says. “I think this appealed to the Norwegian company, as did our kitchen and product. It really was a good partnership, they were respectful of our business, and I think we will be seeing them again.”
The Yendalls prepared by pre-baking as much as possible.
“Before their arrival, we did a huge amount of prep and froze unbaked product, such as our fruit and meat pies, cookie dough, and everything that could be prepared ahead of time,” Patricia says. “In the mornings, I would come in before them and bake items for the store shelves. They also added their bread and sweet buns to our shelves for us to sell at no cost to us. They also paid a daily amount for the use of the kitchen.”
Articles in the local newspaper and the Vancouver Sun drove a substantial amount of new customers into the store. Overall, Golden Crust’s business more than doubled during the Games.
“It was a good atmosphere and we got along great,” Patricia says. “They enjoyed eating our product and we watched and
learned how to make their bread and sweet buns. They were a big hit with the customers and would come out to speak with many of them, which the customers loved. Their whole-grain breads were very popular and we continue to make them daily as they left us their recipes and lots of ingredients. They also left us a brand-new bread slicer they purchased.”
At Pane e Formaggio, Vancouver-based wholesale bakery with one retail store, owner David Nonni says that the Olympics were a “totally positive experience” for the company.
“Getting to and from work was not a problem and our deliveries could not have been any smoother,” he says. “Our retail business increased over February last year, and in fact, I was surprised to see by how much. Our wholesale business was also up over February last year. It was a pleasant surprise.”

“Our sales more than doubled for two customers in the downtown and Granville Island area, but decreased by about 60 per cent overall for customers in the Vancouver area,” he says.
Sedky and his team ended up with “freezers full of short-lived products” that they had stocked up on in anticipation of increased demand. But Sedky still feels
positive about the effect of the Games.
“While the Olympics did not benefit our business as we expected, it was a lot of fun and excitement for everybody,” he says. “I am sure Vancouver will benefit tremendously for years to come.”
Trumps’ Olympic results. “Our sales were up 47 per cent over the same period last year. We did better than we expected,” she says.
Trumps serviced its regular clients and several Olympics-specific clients in both Vancouver and Whistler. It also provided desserts for the two Live City sites in Vancouver. One of the reasons Trumps’ sales increased even more than Angel anticipated was that several clients, including Sodexo Canada, increased their orders and added items as the Games progressed. These added items included a large number of specialty cakes for athletes, staff and officials for various celebrations and also for the closing ceremonies in both cities.

Bakery mastery
PARIS – One of the first things you need to know about Europain 2010 is the one thing no one was supposed to know . . . until now.
We all knew it was going to be the scene of a brand-new competition, the Bakery Masters, made up of the six best bakers, judged individually, in the 2006-07 Louis Lesaffre Cup and the 12 best, again judged individually, from the 2008 Bakery World Cup. And we knew there would be no Canadians among the field of competitors for the prestigious contest.
But what we didn’t know was that a Canadian would be selected as chairman of the jury that would decide the overall winner in each category: bread, Viennese pastry and artistic showpiece.
That person was Mario Fortin. The former Team Canada coach played a key role on the ultra-secret jury, which was also overseen by an honorary president – Peter Becker, head of the International Bakery Union – and French baker Christian Vabret, holder of the prestigious “Meilleur Ouvrier de France” title, who created the Bakery World Cup in 1992.
“The Bakery Masters is a brand-new competition that brings together the greatest bakers who took part in the Louis Lesaffre Cup and the Bakery World Cup,” Vabret said. “The aim is to reveal, out of the 6,000 bakers encountered all over the world during the past few years, the ‘nuggets’ who could represent their profession on the international stage. By giving bakers the opportunity to make their mark as individuals and to move forward as professionals, the Bakery Masters participants will be keen to promote our profession and to raise its status.”

“I had to keep it so secret,” Fortin told Bakers Journal. “I couldn’t even tell my family. But it was a gift and a great honour to be invited to be chairman of the jury.”
To ensure impartiality, jury members were chosen from countries not represented in the competition. They did not know each other prior to the event and had no personal or professional connection with the competitors. And, of course, the composition of the jury remained
Fortin said he viewed his selection as a validation of the work he and many others in the industry have been doing to enhance the image and reputation of Canadian baking on the world stage –and a call-to-action for aspiring artisan bakers in Canada.
“Canada doesn’t believe in artisans,” he said. “We don’t get any respect. But in
France, artisan baker is one of the best jobs you can have. In Canada, it is nothing because of the dominance of companies like Weston and Canada Bread. The Bakery Masters organizers saw what we did with Team Canada in the last two Bakery World Cups. They see how we go up against Team USA and its $500,000 budget, [whereas] we have maybe $15,000 but we are still capable of great things. We have the talent here, and I would like to see more people getting involved.”
Those are strong words, to be sure, but Fortin is a competitor, after all, and wants nothing more than to see Canada’s artisan bakers atop the podium at the next Bakery World Cup in 2012. A PlACe For BusIness
The Bakery Masters got top billing at Europain 2010, but at its core the event is about business, and the companies there pulled out all the stops to inform and entertain visitors. From culinary students crafting sugar sculptures right before your eyes to demonstrations of amazingly high-tech commercial bakery machinery, Europain had it all under one roof.
And if by chance you wanted to see bakery, pastry, chocolate or ice cream innovations outside of the 80,000 square metres of exhibition space at Europain, companies such as Barry Callebaut were taking customers on excursions as far afield as Belgium to get a taste of Europe’s finest artisanal breads and sweets.
Mark Pennington, Callebaut’s gourmet regional sales manager for western Canada, and his colleague Jean-Jacques Bajot arrived – along with a group of about 20 Callebaut Canada customers – in Europe March 1, well before the start of Europain on the 6th.
“We brought a group of customers from Vancouver to Europain. It was a diverse group of small and large clients,” Pennington told Bakers Journal when we caught up with him at the show. “We took them on a tremendous pre-Europain tour – to Belgium for two nights where we toured the Callebaut factory, the world’s largest. We also visited most of the major chocolatiers – big and small – in Belgium.”
The ambitious itinerary also took the group to many legendary Parisian chocolate and pastry shops, including Lenôtre, which Pennington views as the “Mount Everest” of the industry, and

whose famed culinary and pastry school Callebaut supplies.
“I’ve never seen anything like it. Even the deli,” he says. “If you could replicate that shop anywhere in the world, you couldn’t do any better. Everyone says it’s simply perfection.”
Pennington’s not ashamed to admit, “The level of pastry and chocolate excellence in Europe is superior to anything we have in Canada.”
But, he adds, that’s why it’s so import ant for global companies like Callebaut to expose their customers in other markets to what’s happening in Europe, even if it means picking up a very large tab for travel and accommodations.
“Oh, it’s essential,” he says. “Callebaut Belgium understands that Vancouver’s a long, long way from Europain. It’s a lot of money, a lot of expense to attend it. We were happy to help the folks coming from Vancouver this year. The next Europain, we’ll do the same thing for customers in Eastern Canada.”

Surprisingly, Callebaut wanted to bring more Canadian customers to Europain, says Pennington, but struggled to receive commitments due to concerns over the economy and participants being away from their business affairs for what amounted to nearly two weeks.
“I’m slightly disappointed that there aren’t more people from North America here,” Pennington told us at the show. “There are very few from the United States. It used to be that the whole world would flock to Europain because it’s so

cutting edge. There’s stuff here that’s like, whoa, it’s so new and exciting and you can’t see it anywhere else.
“But a lot of companies, there’s been a recession, right, and they’re relying on salespeople like me to tell them what’s going on and bring back info on the really new and innovative stuff, which is what I’m doing.”
It might be a down year for Europain from a North American perspective, but other markets are opening up and expanding all the time, says Pennington.
“Our European guys are very excited. They’ve had tremendous local interest, of course, plus from places like Russia, Cyprus, Poland, Czech Republic, Egypt . . . there are major entrepreneurs coming to Europain looking to do business. It’s been a great show in general for us.”
The next Europain is in 2012 and Pennington wasn’t sure if he’d be attending, as it’ll be Callebaut’s customers in eastern Canada that will be getting the royal European treatment. But that just makes him appreciate the event even more.
“It’s been the trip of a lifetime for me,” he says. “We only get to do this every few years, you know. The next time we do this for western Canada it’ll be four years, at least. It’s like an Olympics.” / BJ

Former Team Canada coach Mario Fortin recounts his experience as president of the jury at Europain’s competition for individual artisan bakers
First, let me share some of my experiences in international competitive baking that led to my role at Europain 2010.
I was part of Team Canada for the first Louis Lesaffre Cup in 2004, a qualification round for the 2005 Bakery World Cup. We finished second behind Denmark, so we did not qualify for the Bakery World Cup. I was invited to do a demonstration of bread from North America during the first day at Europain 2005.
}In 2007, I used my experience from 2004 to be Team Canada’s coach for the Louis Lesaffre Cup in Mexico, and again we finished second. This Louis Lesaffre Cup was to qualify for the 2008 World Baking Cup in Paris. Only the winner gets to advance.
Christian Vabret. He asked me if I would accept the role of jury president for the first edition of the Bakery Masters. I never hesitated in saying “yes,” and thanked him for this recognition.
I had to keep this secret until the competition because nobody was supposed to know who would be judging the competition before the first day. Even as president of the jury, I didn’t know who the seven jury members would be.
The slogan of the Bakery Masters was “Raising the Status of Bakers.” In keeping with this theme, the jury had to operate with the highest degree of integrity, as it was the ultimate decision-making body for the contest.

The scores awarded by the jury were collected each day and recorded in a computer system. The jury could make any modifications they deemed necessary up to the evening prior to the announcement of the results.
The organizers of Europain recognized the work I did with Team Canada and invited me to be a member of jury for the 2008 Bakery World Cup. It was a great experience with a fantastic worldwide exchange.
The Europain show had been every three years, but when the organizers decided to bring it back to every two years, they didn’t have enough time to stage a Louis Lesaffre Cup on each continent. They created the inaugural edition of the Bakery Masters by choosing the 12 best bakers from the last World Cup, the six best from the 2007 Louis Lesaffre Cup and six “wild cards.” So, 24 candidates from 17 countries would perform individually in their own speciality, meaning there were eight contenders for each category: bread, Viennese pastry and artistic piece.
Last October, I was at the IBA show in Dusseldorf, Germany, where I met the founder of the Bakery World Cup,
The jury chairman does not award scores. He or she is responsible for ensuring that the rules and spirit of the competition are upheld by the jury members and competitors. At any time the chairman may choose to disqualify a competitor or jury member who fails to observe the rules. If the chairman is unable to attend, any person of his choice may represent him or her.
The president, on the other hand, has to answer the technical questions from the candidates. He gives the signal for the starting time of the working day.
In my role as president, I also had to keep the candidates confident so they would do their best. I reminded them to work as cleanly and professionally as possible in front of the audiences watching them. I kept track of time, noting those who finished late. I was also in charge of checking product weight, length and the amount made.

The jury members were not allowed to enter the baking areas during the trials. The only persons authorized to do so were the jury chairman, the two coordinators, the equipment and raw materials supervisors and any other person appointed by the chairman.
On the day before the competition, the competitors presented their equipment and ingredients to the chairman. As president, I had to be on site from the beginning of the day at 4 a.m. until the end at 8 p.m.
After the four days of competition, I gave a speech – in three languages – in which I announced the winners of each category. They were:

If you are selling baked goods in Ontario, you are likely looking to better understand the effects HST will have on your business. Ontario has announced that it will be harmonizing its retail sales tax (RST) with the GST effective July 1, 2010. The new harmonized sales tax (HST) will be 13 per cent and apply to taxable supplies made in Ontario after July 1, 2010.
The HST is based on the existing GST rules. In fact, the HST has been in existence in Nova Scotia, New Brunswick and Newfoundland since 1996. Supplies that are currently subject to GST will be subject to the HST after July 1, and supplies that are not subject to GST will not be subject to HST.
Basic groceries (most foods and beverages marketed for human consumption) are GST zero-rated (GST rate is reduced to zero per cent). Food and beverages that are not considered basic groceries (for example candies, confectionery and snack foods) are taxable at five per cent. When the HST comes into effect, the zero-rated items will continue to be zero-rated and the GST taxable items will be subject to HST.
}Businesses will be required to pay HST on purchases of taxable goods and services just like they currently pay GST. Businesses that are not providing exempt supplies will be able to recover the HST that they pay as an input tax credit (subject to the restrictions noted below). HST collected and HST paid will be reported on the registrant’s GST/HST return.
(i.e., eight per cent) on energy, telecommunications, road vehicles weighing less than 3,000 kg, and meals and entertainment expenses. Energy purchased by farms or used to produce goods for sale is not subject to the restriction and detailed records will be required to support the amount of energy used in these qualifying activities. The restrictions on input tax credits are scheduled to last for five years and then be subject to a three-year phase out.

As a transitional rule, Ontario is restricting the ability of large business (those with revenues exceeding $10 million) to claim input tax credits on certain items. The restrictions are only on the provincial component of the HST

The changes announced have no impact on the sale of tangible goods, but do impact the supply of intangible assets and services. A detailed review of the proposed place of supply rules is beyond the scope of this article. Businesses should educate themselves on these rules
to ensure that they charge and collect the correct amount of tax.
With the introduction of the HST comes the repeal of Ontario’s retail sales tax (RST). After July 1, purchases will no longer be subject to RST. Businesses that are planning purchases of taxable goods may want to defer the purchase until after June 30 in order to avoid paying the RST. Any HST paid on the property would be recoverable, thus reducing its after-tax cost. If a purchase cannot be deferred, consider leasing instead of purchasing. Lease payments after July 1 will no longer be subject to RST; they will be subject to recoverable HST.
The bottom line is that businesses will be better off under the HST regime as compared to the RST regime. When a business is purchasing services that were not previously subject to RST, it will be paying additional tax at the time of purchase. However, the business will be able to claim it back as a credit. Businesses who make zerorated supplies will pay the tax and wait for a refund after filing their GST/ HST returns. / BJ

Owners Dominique and Cindy Duby, who sell specialty chocolates directly on the company website to consumers and also wholesale, say that the Olympics did not have an effect on the company. Many of their retail clients that were not located near the main event sites or special attractions reported lower than normal sales. In contrast, those close to these sites, and the Dubys’ hotel clients in Whistler and Vancouver, had a significant increase in business.
Thomas Haas Fine Chocolates supplied official Olympics clients but did not see increased sales at its two retail stores.
“We provided breakfast Viennoiseries to the International Olympic Committee (IOC) and Vancouver Organizing Committee (VANOC) for their daily morning meetings,” says Thomas Haas. “We also created some centrepieces for private events and catered an evening of chocolate for the VIPs and friends of the Shaw family at the Shaw Tower downtown.”
Haas also created three large chocolate inukshuk sculptures, one for each of his own stores and one for the Urban Fare store on Alberni Street in downtown Vancouver.
“It turned out that it was business as usual for us or rather a bit down due to the fact that everyone was so busy with the Games or left town,” Haas says. “But we did have a great time! I think it was the best thing what could happen to Vancouver. I was so proud to call myself ‘Canadian’ and I can only imagine how much of an impact it had worldwide.”/ BJ

Energy. Our bodies need it, and our businesses need it. But both need to use energy efficiently to function at their highest level.
Energy audits by a professional will enable a business to find areas where energy efficiency can be improved. Acting on an auditor’s recommendations will not only improve your environmental sustainability, but can also boost your bottom line.
“We will always recommend an energy audit to review all the opportunities to reduce energy and take advantage of various incentive programs,” notes James Mann, a consulting engineer and president of Mann Engineering Ltd. “The energy audit would review lighting technologies, HVAC, windows, controls, solar systems and heat recovery options.”
In 2006 Weston Foods performed an energy audit on its five bakeries to locate areas of energy consumption and to pinpoint areas to save energy costs. Lighting, compressed air system controls and demand management of peak power usage were areas identified as needing increased efficiency. It was estimated that, after an initial investment and cost recovery period, the bakeries could each save $250,000 per year.
}Oakrun Farm Bakery in Ancaster, Ont., went through an energy audit in 2001. It found nine areas for energy savings, including refrigeration and compressed air systems. The bakery has hired a “sustainability expert who is taking the bakery through a lifecycle analysis,” according to senior vicepresident Tony Tristani. This “cradle-tograve” assessment looks at raw material inputs, distribution, lighting, manufacturing, packaging, distribution and recycling materials.
The key emphasis is to have a process and a system to track everything, and to make this a part of everyday business. There should be a senior person in place who monitors the business’s energy footprint.

retroFIttInG For enerGY eFFICIenCY
Established bakeries can benefit from retrofitting. The National Research Council’s ecoENERGY Retrofit program, according to Melissa Sutherland, Chief of Retrofit and Assessment, will provide up to 25 per cent of a retrofit project’s cost up to $50,000 and up to $250,000 “per corporate entity.” These retrofit projects, Sutherland notes, help decrease water, waste and energy costs.

“The result is that you may actually get a cheque instead of paying for electricity each month,” he says. Changes to a business or building to increase energy efficiency can be

Blair McCarry, strategic sustainability advisor for the British Columbia architecture firm Busby Perkins + Will, notes that skylights, north-facing windows, and use of daylight will decrease energy costs. Solar energy can be used for electricity as well as for heating water. Geothermal heating and cooling in floors, McCarry notes, can be used to heat rooms in winter and cool
them in summer.
“White roofs” or “cool roofs” are a new trend in designing for sustainability. According to Chris Rickett, senior project manager for Project Green (part of Toronto and Region Conservation), flat roofs are covered in white paint or a white-coloured rubber membrane or stone, which reflects heat from a building. This reduces a building’s cooling costs and the heat island effect in cities. For buildings that house food-processing facilities, white roofs are an alternative to green roofs, which might not meet CFIA requirements.
Leadership in Energy and Environmental Design (LEED) certification for buildings is an industry standard that is increasingly sought for new building construction and retrofitting. LEED refers to sustainable design in five important areas: site development, water and energy efficiency, material selection and indoor environment quality. New and existing bakeries can be designed to meet LEED standards and thereby reduce their energy consumption and carbon footprint.

More tHAn eleCtrICItY use “Operational behaviour is important,” notes Cher Brethour, director of sustainability services at Guelph Food Technology Centre (GFTC), adding that employee involvement can increase a company’s sustainability efforts by 16 per cent. GFTC offers assessment and consulting services designed to increase sustainable productivity for the food and beverage industries. Its customizable consulting and assessment services are designed to adapt more than a business’s processes and machinery; employees must also be wholeheartedly involved.
Increasing energy efficiency is about changing attitudes and behaviour.

The camaraderie is as thick in the air as the smell of baking bread: it’s easy to see the bakers enjoy each other and enjoy what they do. They work and chat and joke while a small radio on the shelf fills the gaps between the conversations.
Two bakers cut and scale dough along one side of the bakery, while a group of three others shape and mould the pieces. Another baker deftly opens the deck oven and peels out crusty loaves onto waiting cooling racks.
At first glance, there’s nothing out of the ordinary about the unfolding scene. The smells, the props, the noises –they’re typical of any bakery. But this isn’t just any bakery. It’s St. John’s Bakery. It’s a bakery with a cause. While its bakers care for and nurture the bread they produce, the reverse is also true: in its own way, the bread cares for, nurtures and works its magic on them.
St. John’s Bakery is a social enterprise, run by Toronto’s St John’s Mission and supported by the Toronto Enterprise Fund, a funding partnership between the United Way and three levels of government. The bakery’s mission is to make quality, preservativefree baked goods, along with, according to its mission statement, providing a “nourishing environment that responds to the needs of all those who contribute to the creation of these products.”
}everyone starts here as a volunteer. Most come from social services or from the mission in need of a meal and help.
The people who do that come from a variety of backgrounds, most of which generally don’t include baking. Some are placed by Toronto Employment and Social Services, sent to gain valuable working skills in an environment that will welcome them as many might not. Others come through the mission. Others are in transition, or simply looking for a place to contribute a bit of their time.
“Everyone starts here as a volunteer. Most come from social services or from the mission in need of a meal and help,” says St. John’s baker Jeff Connell. “We’ll
give them a shift or two at the bakery and get started on training in different aspects of baking. Through a natural attrition and natural selection process, some people emerge as bakers and little by little they find their niche here.”
The bakery found its niche with St. John’s Mission shortly after Father Roberto Ubertini opened the mission as a small drop-in centre on Blake Street in Toronto’s Riverdale neighbourhood more than 20 years ago. Located in the heart of a public housing project, it offered a place to connect and commune with neighbours.

dropping in often with freshly baked bread and sweets. When trouble forced him to close the doors of his bakery, he brought his mixer to the mission, continuing to feed the centre’s visitors that way. When Link died, members of the mission continued his work, baking from the basement of the mission’s new home on Broadview Avenue, just north of Queen Street.
Father Roberto says baking bread just seemed a natural fit with the mission’s vision and purpose.
“Breaking bread together is a symbol that speaks by itself,” he says. “The actual production of it is very healing: you can see the fruit of your work, the hands that have made it and shaped it, the smell and

taste. It’s very gratifying.”
Connell explains it a little further.
“We place a high value on work – it has many rewards above and beyond the paycheck,” he says. “Many people have trouble getting into the workplace and need a place to be productive.”
For many, that place has become St. John’s Bakery.
When the Toronto Enterprise Fund was set up a few years ago, Father Roberto and other members of the mission saw the opportunity to grow the bakery into its current incarnation. They acquired more equipment, a deck oven, and the location in the storefront directly beside the mission on Broadview.
St. John’s Bakery products have also evolved and grown over the years, making the switch to crusty, sourdough products after Father Roberto spent a year on sabbatical learning how to bake in a 300-year-old wood-fired oven. The product line includes a range of products, from sourdough baguettes and loaves of Red Fife to country rye boules and English muffins, along with sweets such as cookies, scones and tarts. Customers who buy those products range from those who stop by the retail location on their way home from work to restaurants to butcher shops to high-end food shops to independent grocery stores. The bakery puts out almost 1,000 pieces a day.

Just how is it, with such a revolving roster of staff, many of whom have never set foot in a bakery before, St. John’s manages to produce such a consistently gorgeous-to-look-at and delicious-to-eat product? Despite the rotating collection of bakers and helpers and volunteers, a core group of about five bakers have been with the bakery from the start. All of them started out as volunteers, all of them come from different backgrounds – and all of them have become devoted to
the bread they make.
“We bake a bread that is easy to be proud of,” says Connell, “and pride in your work is important.”
Then there’s the number of experienced volunteers who contribute their time to the bakery – people like Pierre Danielo, a baker from France who is a friend of friends of Father Roberto’s and who is helping out in the bakery for a few months.
“I came to share my experience,” he says simply.
Longtime volunteer Stanko Stankov doesn’t have prior baking experience, but he’s been helping out in the bakery for five years. He sums up one of the key reasons for St. John’s success: a simple understanding that the bread is in charge.

Bakery, known as The Cake Place, celebrated its golden anniversary in September, 2005. Located in Bethel Park, Pennsylvania, the bakery staged a week-long celebration that enjoyed great community support. “We doubled our normal customer count each day;” said John Walsh, Bethel Bakery President. “Bethel Bakery is beloved in our community.”
There was no doubt about where to turn for an anniversary cake. Nearly 80 percent of Bethel Bakery’s business comes from cakes, including cupcakes, dessert cakes and wedding cakes. But Bethel is widely known for its decorated cakes and signature French Buttercream icing.
Family is at the heart of Bethel Bakery. John, is the oldest of seven children and took over from his parents, Morris and Anna Walsh, in 1991. Both Morris and Anna still find time to visit the bakery. Anna loves serving customers, and Morris, aside from being a master baker, is a valuable jack-of-all-trades. And with a 7,000square-foot facility, there is always something to be repaired. John’s sister, Christine Makowski, oversees wedding cake sales, and John’s wife, Chris, contributes administratively. John admits having four kids has kept his life balanced. “Staying involved in my kids lives helps keep me from becoming totally consumed by my business.”

Gluten-free’s rapid improvement
Better products, prices and diagnoses are driving growth, but as more players enter the market, quality assurance is critical
The gluten-free (GF) food market was worth almost $1.6 billion last year, according to Packaged Facts. Sufferers of celiac disease (CD), who must avoid all gluten in their diet, are primary consumers of GF products, but other sectors of the population, such as those who are diagnosed with wheat or gluten intolerance or who have chosen a gluten-free diet, are strong drivers as well.
As a registered dietitian, 15 years ago, my experience with GF products went like this: expensive, lacking nutrition, bad tasting and only available at specialty stores. Now, glutenfree products have reached the next level in terms of taste experience, including flavour, texture and mouth feel. Plus, nutrition is playing a stronger role, with the use of more nutrient-dense ingredients such as pulse flours and ancient-grain blends.

Two home-grown companies have been dedicated to offering great-tasting, nutritious and affordable gluten-free products for many years throughout North America and internationally.
Elisabeth Riesen, co-founder and owner of Cambridge, Ont.-based El Peto, has been in business for 22 years. Riesen, who hails from Switzerland, says El Peto has been formulating with quinoa and pulse flours for years and has enjoyed a steady 20 per cent growth rate annually over the past decade. Dedicated to due diligence of its gluten-free formulations, it has an in-house lab testing all incoming ingredients (prior to use) with a critical limit threshold of five parts per million. Similarly, Jerry Bigam, owner and CEO of Edmonton-based of Kinnikinnick Foods (see “Gluten-Free’s Big Name,” Bakers Journal, November 2009), says that over the past six years his company has

Jim McCarthy, executive director of the Canadian Celiac Association (CCA), agrees that the gluten-free market has rapidly expanded and improved. Over the past five years, he has seen larger companies conduct reviews of their products, then reformulate and create new ones to serve the GF market. McCarthy identified Campbell’s Soup and Pizza Pizza as having launched highprofile gluten-free products in the past year.
Campbell Company of Canada nutrition strategy manager Andrea Dunn says the idea to formulate Campbell’s gluten-free products grew out of a passionate group of employees who had or knew someone with CD.
“In just a few years, we are proud to see this idea become a reality with 13 tasty, affordable, gluten-free soups and broths on grocery store shelves,” Dunn
experienced 20 per cent growth annually and its facilities have expanded from 13,000 square feet to 150,000 square feet, including a retail store. Kinnikinnick has always been dedicated to great-tasting and nutritious formulations using pulse fractions and flours, plus understanding what is involved in the “scale-up” process of taking intricate gluten-free recipes from the test kitchen to the manufacturing facility.

consumer with CD to those who suffer from non-celiac gluten sensitivity, wheat allergy, autism, attention-deficit hyperactivity disorder, multiple sclerosis and irritable bowel syndrome.
With a prevalence rate of CD at about one per cent worldwide, this would mean that almost three million Americans have the disease, but it is estimated that only five to 10 per cent are currently diagnosed. Based on those figures, the gluten-free market is only going to continue to expand. In recent years, Case has seen traditionally used mixtures of white rice, corn, potato starch and tapioca (which often led to an average product with minimal nutritional qualities) being replaced by pulses, quinoa and amaranth flours and fractions. As they increase their range of GF products, more companies are doing their due diligence in testing the quality of these items, but Case warns that some firms are jumping on the bandwagon without dedicating the time, knowledge and production facilities to guarantee gluten-free products. If you’re considering getting into the GF marketplace, Case suggests doing your research and keeping up to date with industry associations.
As the gluten-free market continues to grow, it’s great to see committed companies using quality ingredients, dedicating time and knowledge to the production process, and then offering more affordable options with better nutrition and taste experiences. / BJ
