TESTING OUR RESILIENCE

As I write this, the U.S. has imposed a 25-per-cent tariff on many Canadian goods shipped into the U.S. and a 10-per-cent tariff on energy. The situation is alarming, and fluid, to say the least, but it will have significant, wide-ranging implications, especially for Canadian bakeries and manufacturers and suppliers that export to the U.S.

The Baking Association of Canada expects these tariffs to drive up costs for essential products, impacting bakeries, suppliers and all Canadians who rely on affordable, high-quality ingredients.

Let’s consider some potential effects of a trade war and strategies to offset them. To maintain profit margins, bakeries may feel pressure to increase the prices of their baked goods, which could potentially reduce customer demand from Canadians already dealing with inflationary pressures.

Small to mid-sized bakeries, which often have less negotiating power with suppliers, may feel the pressure more acutely. One possible response to this challenge is to do more local sourcing, for example, find alternative suppliers within Canada and reduce reliance on U.S. imports. Given our longstanding, deeply interconnected trade relationship, that’s a tall order.

While not always possible to buy Canadian, it makes sense to explore alternative, locally available ingredients and consider diversifying our supply chain and markets for our products.

For bakeries, manufacturers and suppliers that export to the U.S., tariffs will directly affect the competitiveness of their goods in the U.S. market. While we don’t know exactly how our federal and provincial governments will respond to U.S.-imposed tariffs – early indications are they will retaliate with their own tariffs on U.S. goods – competing bakeries and suppliers in the U.S. stand to gain a pricing advantage over Canadian producers.

Making your bakery more resilient may mean exploring the idea of exporting to other regions of Asia and Europe where the market for baked goods is growing.

}BAC is calling for the elimination of internal trade barriers, expansion of trade partnerships, stronger support for food manufacturing and baking, and the addressing of regulatory hurdles.

Even if you’re not directly affected by tariffs, they can lead to uncertainty of availability and broader supply-chain disruptions, including delays and increased costs for shipping goods across borders. Potential impacts include slower customs processing times and higher transportation costs that could raise the cost of ingredients and packaging materials. Possible strategies include diversifying your suppliers and building up your inventory reserves of key ingredients, especially for items that are difficult to source locally.

The BAC is urging the Canadian government to mitigate the impacts of these tariffs, noting as part of a statement, “This increase poses significant economic challenges for businesses and consumers in both nations. These tariffs will drive up costs for essential products, impacting bakeries, suppliers, and everyday Canadians who rely on affordable, high-quality ingredients.”

Specifically, BAC is calling for the elimination of internal trade barriers, the expansion of trade partnerships, stronger support for the food manufacturing and baking industries, and the addressing of regulatory hurdles that drive up operational costs.

Quebec program introduces 8 new artisan bakers to the industry

Quebec is welcoming eight new artisan bakers who will bring their technical skills and creativity to local bakeries across the province.

The Institut de tourisme et d’hôtellerie du Québec (ITHQ) announced that the bakers completed a 994-hour training program developed in collaboration with Première Moisson. Out of 43 applications and after a selection process, 14 candidates were chosen to undergo the intense training, including 10 men and four women. newcomers to Quebec and individuals for whom traditional educational paths were not a good fit.

The initiative addresses the shortage of skilled labour in the sector, promoting local expertise and providing opportunities for young or seasoned professionals to get hands-on experience.

The training program ran from March to October 2024, giving the new bakers training to prepare them for prime positions at Première Moisson or other prominent Quebec bakeries.

“We are very proud of our first cohort of bakers trained entirely in Quebec,” said Éric Coté, VP and general manager of Première Moisson, in the release. “This training also significantly reduces our reliance on international recruitment, which had been our primary hiring channel until now.”

Ron Norris new Director of Membership Development for BAC

Ron Norris is the BAC’s new Director of Membership Development. For 42 years Norris supported the North American baking industry through ingredient innovation at Rose & LaFlamme Co., BakeMark Canada and Skjodt-Barrett Foods Inc., and industry associations such as the Bakery Production Club of Ontario, IDDBA, IBIE, CIFST, IFT and ASB. He is also town councillor for Ward 3 in Halton Hills, Ont.

Baxter’s Bakery to create 54 new jobs with manufacturing investment and supportive funding from

Ontario

Baxter’s Bakery is investing $3,491,269 to create 54 new jobs in Cobourg, Ont., with $466,569 in supportive funding from the Ontario government through its Regional Development Program’s Eastern Ontario Development Fund.

Baxter’s Bakery is a family-owned local baking facility that specializes in wholesale bakery items for grocery stores across Canada and the U.S. With this investment, the business will purchase and install new manufacturing and packaging equipment, which will be installed at their wholesale baked good manufacturing facility in Cobourg, according to a news release from the Ontario government The new equipment is expected to drastically increase production capacity, support research and development as well as further use of automation.

“Our government is proud to support local manufacturers like Baxter’s Bakery as they expand their operations, and we thank them for their contributions to Ontario’s dynamic and growing manufacturing ecosystem,” said Vic Fedeli, minister of economic development, job creation and trade, in the release.

“With this new investment, we are enhancing staff well-being with new ergonomic equipment and streamlined workflows to reduce strain and inefficiencies,” said David Baxter, president, Baxter’s Bakery (Cobourg) Inc. “These improvements promote healthier, more balanced work while boosting productivity, reflecting our commitment to a thriving team.”

Ontario’s Regional Development Program is in place to help manufacturers across the province grow while supporting distinct regional priorities.

Modernization of Part B of the Food and Drug Regulations

The Baking Association of Canada’s Food Policy and Sustainability Committee has been busy. Here is the first of several updates on legislation relevant to the baking industry.

On Dec. 18, 2024, the final Regulations Amending Certain Regulations Concerning Food Additives and Compositional Standards, Microbiological Criteria and Methods of Analysis for Food were published in the Canada Gazette, Part II.

These regulations include consequential amendments to the Cannabis Regulations, Denatured and Specially Denatured Alcohol Regulations, Pest Control Products Fees and Charges Regulations, Pest Control Products Regulations, Safe Food for Canadians Regulations and the Feeds Regulations, 2024.

University of Alberta uses yeast to produce unfamiliar healthy fatty acids: University of Alberta researchers have found a way to produce higher amounts of punicic acid, a healthy fatty acid found mainly in pomegranates, by using fermentation.

By engineering a new strain of baker’s yeast with CRISPR-based gene shuffling, it may be used to produce other valuable

unusual fatty acids, such as those from castor oil.

New study ties gut microbes to sugar cravings and blood sugar control: Researchers from Jiangnan University in China conducted a study suggesting that gut microbes, particularly the bacterium Bacteroides vulgatus, may play a role in sugar cravings and blood sugar regulation. Nature.com reports.

Cerelia Bakery was fined $85,000 in September 2024 for failing to ensure that a conveyor was guarded to prevent access to the pinch point at its plant on Mid-Way Boulevard in Mississauga, Ont.

The company, which is headquartered in Vancouver under Cerelia Bakery North America General Partner Ltd., manufactures cookies and prepared dough products for retail and industrial companies.

New studies focused on sugar and yeast Cerelia Bakery fined for guarding violation resulting in workplace injury

On Oct. 6, 2022, a worker was critically injured after accessing an unguarded pinch point on a conveyor. Provincial Offences Court found that Cerelia Bakery failed, as an employer, to ensure that the conveyor was guarded to prevent access to the pinch point, as required by section 25 of Ontario Regulation 851/90, contrary to section 25(1)(c) of the Occupational Health and Safety Act.

Following a guilty plea in the Provincial Offences Court in Newmarket, the bakery was fined $85,000.

The court also imposed a 25-per-cent victim fine surcharge as required by the Provincial Offences Act. The surcharge is credited to a special provincial government fund to assist victims of crime.

On Oct. 6, 2022, a worker, employed by a temporary help agency, was working on the cookie producing line at one of three oven conveyors in operation at the facility.

To rest after prolonged standing, the worker sat on a guardrail parallel to the conveyor. The worker rested one foot on a step platform outside the guardrail and moved their other leg through a 16-inch space between the guardrail and the conveyor to rest their foot on the lower frame of the conveyor.

While in this position, the worker lost balance and was injured by a pinch point on the conveyor.

A Ministry of Labour, Immigration, Training and Skills Development inspection found that there was no adequate guarding to prevent access to the pinch point from above.

Software works with WhatsApp chatbot to update online menus continually

Among the start-up businesses exhibiting at SIGEP was a company called Menumal that has created software to update your online menu continually, seamlessly and simultaneously through WhatsApp using AI technology.

The Italy-based entrepreneurs are working with a handful of pizzerias and bakeries including a couple in Canada to design customer-friendly online menus customized to showcase their specialities. The company can create menus in any language and modify them – including translating them to another language or adding dietary or allergy information – whenever they wish to. If you should run out of a particular ingredient, Menumal can temporarily hide all menu items that use the ingredient, then later restore the items when the ingredient is available.

The updates can be sent to social media channels.

Operators and their staff can update their menu quickly using the dashboard or by texting instructions to a chatbot using WhatsApp. There is assistance available 24-7. menumal.com

Dough rounder adjusts to shape of bread or pizza dough balls

EXCELLENCE IN L.A. DESSERTS

Hollywood has elevated Los Angeles to a trend setting city. However, if you imagine L.A. desserts as a landscape of sugar-free, gluten-free, uber-health-conscious mini bites, three of the city’s top pastry chefs set the record straight.

DELLA GOSSETT, SPAGO

Della Gossett is the pastry chef at Spago in Beverly Hills. This flagship restaurant is owned by Chef Wolfgang Puck, arguably the most famous chef in North America. Prior to this, Gossett worked for nearly a decade at Charlie Trotter’s in Chicago, once on every foodie’s bucket list. In other words, her desserts are continually in the spotlight.

“Working for Spago wasn’t a hard decision to make,’ remembers Gossett, who has now run the pastry department for more than 10 years. “Windy cold Chicago versus warm and sunny L.A. I thought about all the fresh produce I would be able to work with that I would never get back home.”

Every week Gossett still delights in visiting the Santa Monica Farmers Market to hand pick fresh produce for her desserts. All the vendors know her by name and offer her samples to taste. The pastry chef consults each farmer, some of whom travel hours to set up booths, about what they will have in the upcoming weeks. On this day she selects strawberries, plums and apples. Then, she spies a bright yellow Buddha’s hand. “I’ll incorporate this into a dessert on the tasting menu,” she decides.

Chef Lee’s Fall Spice Blend is cinnamon, allspice, ginger and clove. For the Linzer cookies we make our own raspberry preserves.’’

With all the delicious recipes Gossett has crafted and collected over her career, pastry chefs and bakers everywhere are wondering why she has not written a cookbook like her Spago pastry chef predecessor Sherry Yard.

MARGARITA MANZKE, REPUBLIQUE

Next up is Republique. Pulling up to the restaurant in Miracle Mile, you will immediately notice the long morning lineup outside the door. The star attraction is the extensive bakery showcase. Once inside, the high-ceilinged, incredibly atmospheric space holds a storied past. It was initially built for actor Charlie Chaplin in 1929.

“Republique really is like two different restaurants,” explains Margarita Manzke, pastry chef and co-owner of the restaurant with her husband Walter, the chef on the savoury side. “In the daytime, we have customers that just come for a light lunch, or to buy a couple of pastries to enjoy. In the evening it’s a more formal full-service restaurant.”

As for the showstopping products in the showcase, Manzke says, “We have our mainstays that we have had since we opened, but we keep the menu evolving. The top sellers are the crème brûlée and the bombolini. And we always sell out of our croissants and pain au chocolate.’’

When asked what the secret to the perfect croissant dough is, she replies, “Flour and butter. We use French flour and Normandy butter, already prepared for lamination. We’ve tried other variations, but we can’t find anything that can compare.’’

Does the pastry chef have a favourite dessert? “I went to Portugal a few years ago and I’ve become obsessed with the Portuguese custard tart. I focused on teaching myself how to make them. Each tart is tiny, but rich and so good.’’

What about plated desserts? “The most popular one is the strawberry tiramisu, featuring white chocolate sabayan, soaked sponge cake, fresh strawberries and

strawberry sorbet. It’s served in a transparent glass dish to really let the colours through.”

THESSA DIADEM, SIRENA/ THE GEORGIAN HOTEL

Thessa Diadem is the new pastry chef at The Georgian Hotel in Santa Monica. The hotel, which opened in 1933, is a splendid example of art deco elegance. “The desserts at Sirena are inspired by Italian flavours and seasonal ingredients,” says the pastry chef who spent three months in Florence, Italy, living the sweet life.

When planning a new plated dessert idea, she says, “I like to focus on just two or three flavours on a plate and then add texture. Personally, I love the combination of hazelnuts and dark chocolate.” This was the inspiration for the rich flourless chocolate torte, paired with a light egg-white-based sauce, hazelnut gelato and chopped hazelnut for bite.

The cookie platter, a must with tea, contains chocolate chip cookies and pignolis, a staple cookie in Southern Italian households, especially during the holidays.

“Thessa makes the best chocolate chip cookies in the world,’’ confides one staff member at Sirena restaurant. And these chocolate chip cookies are hard to fault. Each arrives, large and uniformly shaped,

thick, chewy, and moist. How has she perfected her chocolate chip cookies?

“It’s in the technique. By using a slow mix method, the result is a thicker cookie. Mixing the butter and sugar longer and faster incorporates lots of air and results in a flatter cookie. This isn’t bad, but I prefer to bake cookies on the fudgier side.”

The apple crustada is filled with apples seasoned with warm spices, along with frangipane, a nod to the pastry chef’s classical French pastry training. “It’s served with mascarpone cream, vanilla ice cream and warm salted caramel poured tableside,” Diadem says. “Making this dessert a la mode is the American influence. We love to eat our pies with ice cream and doused in sauce.”

For a classic Italian dessert try the tiramisu, made with homemade ladyfingers soaked in espresso amaretto syrup. The ladyfingers are delectably layered with vin santo mascarpone cream. For a finale, the dessert is dusted with cocoa powder and topped with crunchy cocoa nibs.

The Los Angeles crowd loves to indulge and when it’s time for something sweet they are spoiled for choice in this food-loving city. / BJ

Our independence ensures that we can advocate effectively for the industry’s collective interests without bias. Additionally, we work to advance the shared goals of bakers, farmers, millers, affiliates, and allied trades, advocating for the industry as a whole. CANADIAN BAKERY STATISTICS

The Canadian Bakery Sector produces nearly $16 billion in baked goods annually. Nearly $7 billion of that is exported, with $5.9 billion in goods going south of the border. Imports are holding steady at around $2.7 billion. This is the dollar value estimated by the end-user SKUs, but it does not include “food-service” baking, which is only recorded in tonnage. This sector also shows a steady year-to-year increase. We are expecting 3.8-per-cent growth through 2028. (Please note that the data on the Agriculture Canada website is three years out of date. The BAC has access to up-to-date figures.)

CONTINUING COLLABORATION

Working with the American Baking Association on cross-border regulatory issues, including addressing de-harmonized regulatory requirements on food standards, sesame allergy labelling and contributing a Canadian voice to ABA-sponsored lobbying. Meeting monthly with regional, provincial and federal representatives across Canada to discuss our members’ local issues. Engaging with the B.C. government on a research project focused on challenges facing the baking sector in that province.

Other legislative policies on issues such as FOP labelling changes, marketing to children and micro-ingredients in food.

Our work also includes meeting with the Canadian Trade Commissioner’s officers globally to train them on the opportunities for exporting Canadian baking products; arranging regional networking and educational events across Canada, monitoring cocoa prices; monitoring the spread of AI and impact on our industry, helping to mitigate the effects and shorten the length of the sugar strike in Western Canada. We advise our sector on grant opportunities for startups, process improvements and expansion, as well as mentor our members individually on a variety of business challenges.

Many of the Ontario-based meetings and in-person advocacy efforts are led by Denise Lee, our Director of Food Policy and Sustainability. Based in Ottawa, Denise’s proximity to key policymakers and organizations allows her to represent BAC members effectively, ensuring their voices are heard and their interests are prioritized. This strategic advantage helps strengthen our advocacy efforts and provides tangible benefits to our members across the province.

Direct from Rimini, Italy, we bring you the sights, sounds and tastes of SIGEP | BY COLLEEN

BAKING TRENDS FROM ITALY

As the Bakers Journal team walked the aisles of SIGEP World in January, we were reminded of two things: one, it’s important to wear comfortable shoes, and two, innovation is alive and well in the bakery, pizza, coffee and ice-cream sectors.

Innovation is sparked by chance encounters, connections and observation. SIGEP served as a great hub for this business and creative activity. The show housed 1,300 exhibitors and reported a 14-per-cent increase in total attendance from last year – more than 20,000 in total – with visitors from 160 countries.

WORKING SMARTER, NOT HARDER

Equipment manufacturers and distributors emphasized quantity of production but also versatility of machinery. In other words, equipment that is customizable or

performs more than one task is of high interest to busy bakers. Based on a tip from a BAC board member, we found an interesting three-in-one dough mixer that also serves as a water doser and recipe scaler made by Esmach (a company that is distributed by EM Bakery Equipment in Canada), and an adaptable dough divider made by Artezen Dough Handling. Anton Pear displayed its highly accurate laboratory instruments and process measuring systems, including the Brabender line. Adami demonstrated its cutting machines, which use laser technology to cut cakes and other products evenly, consistently while saving labour.

NEW PIZZA STYLES

This year there was a stronger focus on pizza products, equipment and information than in years past. We found pinsa at many booths, including Molino Merano’s,

and Lesaffre’s, where Chef Angelo Gianvittorio made a light, crunchy oblong (pala) shaped crust lightly brushed with olive oil and baking centre manager Christophe Carlo told us about their flour developed especially for pinsa. Molino Bruno had several specialized flours available and engaging chefs making what we took to be Roman-style al taglia pizza – a style more and more common in Canada made in a rectangular pan, with at least two days’ fermentation in order to come out structured and crunchy, and sold “by the cut” or square slice. We were wrong! It was a style well known in Venice, Milan and other parts of northern Italy: trancio. Typically made in a round pan (though rectangular here because that was the pan available), this style is notable for its toppings that are spread to the edge of a very crispy crust. The company showcased a large line of flours, including 00

pizza flour, 0 American-style flour, pasta and focaccia flour, and a specialized Dolci flour meant for tarts and cakes.

TRENDS ON THE SHOW FLOOR

This being Italy, we were not surprised to see and sample multiple panettone. Many were topped with icing – including pistachio, strawberry – and while it may puzzle the purists, it seemed an interesting approach to making the product even more mainstream around the world.

To transport and gift those panettone, Eco Food Packaging had a variety of pretty, sustainable and customizable panettone and cake bags and other packaging to send your branding out the door and into the world.

The folks at Dolci Monteleone took time to tell us about their line of readymade sweet and savoury items, such as Sfogliatella Napoletana, Arogastine, cannoli and fried bread suitable for adding mini pizzas to your menu without interrupting your bakery workflow. The company, based in Sarno, Italy, prides itself on employing a dedicated local base of employees who make its products by

hand using almost no mechanization.

Altinmarka Cocoa and Chocolate, based in Turkey, is one of the largest producers of cocoa and industrial chocolate in the world. With 400 different recipes and many formats at hand, including chunks, sticks, splinters, drops and liquid, their market is wide. We were taken with the no-added-sugar recipe.

CATERING TO DIETARY NEEDS AND PREFERENCES

Overall, we found many companies appealing to customers looking for lowor no-added-sugar ingredients and products, notably plant-based, or vegan, options. Forno d’Asolo, with vegan options, displayed an appealing rectangular Maxi Crostata Albicocca – a large apricot tart – featuring a design that mimicked stained glass.

Leman Decorations offered tiny, intricate decorations such as colourful fruit slices, chess pieces and macarons to take your cakes to the next level.

COMPETITIVE EXCELLENCE

During the five-day event, SIGEP hosted

a rich program of talks, panel discussions, competitions, and four international events: the Gelato Europe Cup, Gelato Festival World Masters, the Bakery World Cup, and World Pizza Champion Games.

We spent time with BAC executive director Martin Barnett watching the Bakery World Cup. China triumphed in this competition, which saw seven teams, each consisting of two candidates and a coach, from China, Japan, Greece, Italy, Mexico, Peru and Spain compete. The competition showcased ciabatta and special breads, free breads, viennoiserie, baked cakes and savoury presentations.

Prestigious jurors Roberto Perotti, president of the Richemont Club International, Benny Swinnen, Carlo Bock, Juan Manuel Martinez, Craig Ponsford and Paa Marcel judged the innovative entries.

With so many options out there, your customers have many choices and places where they can get bakery products. You need to ask yourself what makes your bakery unique. How can you make your bakery store stand out from the crowd? If you want customers flocking to your doors instead of the competition’s, here are six easy ways for your bakery to stand out.

1. BOOST YOUR CURB APPEAL

}You must bring your customers in the door to experience what your bakery offers. To do this, you need an attractive curb appeal to draw potential customers and passersby into your bakery store. Your storefront will dictate how a customer will react. It’s that crucial first impression that counts. It should be welcoming and attractive to draw in potential new customers. Keep your front area, entryway inside and out and parking lot clean and clutter-free.

2. USE YOUR STOREFRONT DISPLAY EFFECTIVELY

Food merchandising is a simple and cost-effective way to enhance the look of your bakery, create a new shopping experience for potential customers and, most importantly, boost sales by visually allowing customers to see things they may not have noticed before. This can all be achieved before your customer even walks through the door!

Your storefront display is one of the greatest ways to advertise what’s inside your bakery. I don’t know anyone who wouldn’t stop in their tracks to look at a window filled with delectable pastries, fresh breads, colourful cakes, cupcakes and cookies decorated according to the season.

A website is an essential tool nowadays. It’s like your bakery’s virtual storefront and online presence. Potential customers will search your website for menu information, food options, opening times, address, disabled access, parking and customer reviews. What counts on a website is a pleasant user experience, including pages that load quickly, clear and easy-to-find information, and an intuitive navigation menu.

An easy-to-navigate website will increase customer satisfaction, engagement and conversions to sales. Remember to highlight your strong points, such as using organic products, partnering with local suppliers, using delivery platforms and organizing classes and events.

6. COLLABORATE

Collaborating with local businesses is a very effective strategy for boosting your bakery’s visibility. Consider joining your local chamber of commerce to increase your profile. This will give you access to the local community and enable you to organize events and parties for members. Collaborate with other businesses by establishing partnerships with pizzerias, coffee shops, restaurants or complementary businesses close to your bakery operation. Taste Tomorrow’s insights identified that consumers value the sensory appeal of sourdough with its distinctive flavour and texture. Also, these insights highlighted the elevated texture experience of the Culinary Fusion trend. People want unconventional flavour combinations, clashing textures and the blending of different cuisines from around the world. The insights suggest the onigiri croissant is a perfect example. Bakery craftsmanship, timeless formats and traditional baking techniques are most valued in French-, Chinese-, English-, German- and Portuguese-speaking markets. According to Puratos’ in-depth data analysis at Taste Tomorrow, the conversation surrounding bakery classics is expected to increase by 17 per cent to 31 per cent over 2025. Expanding on the classics, the Trend to Table report suggests Indulge Me continues to be a consumer preference. Today’s consumers feel good about enjoying the foods they love, and “great tasting foods” play a key part in their dietary lifestyles, whether connecting to nostalgia, celebrating or just prioritizing indulgent moments as part of their days.
