TIME TO AUTOMATE?
The robots are not coming – they’re here.
While the idea of large automated equipment pumping out products may seem a world away to a small craft bakery, it is well worth considering how automation could improve your bakery’s efficiency and consistency of product.
If nothing else, the exercise can help you come to terms with your workload, scale, output and potential for growth. Even if you’re not ready to invest in a piece or line of automated equipment, it’s important to ask the question: What can automation do for operation, safety, productivity, consistency and creativity?
We know automation is a labour saver. As it took hold more widely, we often heard that it can free up your team to focus on other important work that requires the human touch.

A common reaction has been concern over job losses. But these days the acute labour shortage has overtaken that concern. It’s become clear that the robots are not so much taking away jobs as filling gaps where no workers are available.
But is your reaction to new technologies rooted in fear of change? If so, it might be time to open your mind to the many innovations out there.
Many innovative bakers are also equipment nerds. Artistry and science can go hand in hand. Large, automated systems have been at work for many years in large commercial bakery operations. Why shouldn’t the artisan bakery have access to the same labour-saving and efficiency potential?
A comment by “Same_Actuator8111” on a Reddit thread about bakery automation moved me when thinking of the neighbourhood family bakery: “The ultimate goal of automation shouldn’t be to turn the world into a vending machine, but to enable individuals to make their dreams a reality. Robotics is uniquely situated to scale variety and complexity rather than just quantity.”

The changes we are talking about here are forms of innovation. Innovation is exciting and necessary for the world to progress (though people define progress differently). Looking at baking technologies as the wonders they are, like kids in a candy store, might open us up to their possibilities.
The Baking Association of Canada believes innovation in all its forms – ingredient, product, R&D, digital technology, automation – is crucial. One of its current areas of focus is innovation and technology adoption and a three-pronged approach is planned: “Facilitate the adoption of innovative technologies within the baking industry; launch training programs to keep members updated on technological advancements; and foster research and development collaborations for innovation in product development and process in Canada and globally.”
Join us at Bakery Showcase May 5 and 6 in Toronto where you will have a valuable opportunity to look at bakery equipment and automated systems of all sizes for different bakery footprints up close, experience it in action and ask questions.
In the Bakers’ Classroom, a panel of experts will address the topic of automation and innovation in the bakery. We will consider how small and medium-sized bakeries can determine if, when and how to automate or update their equipment? We’ll tackle questions like: When does the burden of not having staff and operating efficiently become so great that automation makes sense? If I do invest, what will be the return on my investment? What resources are available to help fund my upgrades?

BAC Ontario to host European Pastry Demo by Jeroen Van Helvoirt set for March in Toronto

Sucro Can and HOPA Ports to build sugar refinery in Hamilton, Ont.

Sucro Can Sourcing LLC, a growing integrated sugar refiner, has announced plans to build a one-million-metric-tonnecapacity sugar refinery at the Port of Hamilton, Ont., on lands owned by Hamilton-Oshawa Port Authority.
The new refinery, located at the Port of Hamilton’s Pier 15, will be the largest in Canada, with an expected future annual refining capacity of one million metric tonnes, representing an estimated investment of $135 million Cdn, the company said in a news release.
“The sugar markets in both Canada and the United States are experiencing steady, long-term, sustainable growth, and Sucro is investing to supply these growing market demands,” said Jonathan Taylor, founder and CEO of Sucro. “We have a customer base that is loyal and growing, benefiting from the new competition we are bringing to the market.”
“Despite steady demand from an expanding food processing sector, overall refining capacity in both Canada and the United States has been stagnant for years,” Taylor said. “Especially in Ontario, where the demand for sugar is growing at one of the fastest rates in North America.”
Sucro Can’s focus on improving its customers’ supply chains is a key reason for choosing the Port of Hamilton as the location for its new refinery.
The new plant is expected to open in 2025.

HOW TO START A SMALL BAKERY SHOP IN 8 EASY STEPS
When opening a bakery shop, proceed with both eyes open and be financially and mentally prepared

Are you considering opening a small bakery shop and wondering where to start? Have you maxed out storage and space in your home baking business? If you are ready to take the leap to become a bakery operator, it’s important to proceed with both eyes open and be financially and mentally prepared. Here are eight easy steps:
1. CREATE A BUSINESS PLAN AND CONDUCT MARKET RESEARCH
Make sure that you have a thorough business plan. This will allow you to look at your business from different angles. A comprehensive business plan is essential for structuring your business. Your accountant should help you create one. To start running your bakery, you may need to secure funding. So, this is a document that lenders will require before they process a commercial loan application. The business plan should explain in detail who you are, where your bakery shop will be located and how you will be successful. Your bakery operation business plan needs to include the following elements: an executive summary, company overview and bakery chop description, market analysis, business offerings, location analysis, investment plan, financial projections, vendors/ suppliers, management team, and marketing plan.

Remember that when opening a bakery shop, you must respect the same safety and health regulations as you would when setting up a restaurant.
2. FIND THE BEST SPACE
Before launching your bakery operation, you must conduct market research to check whether there is enough demand to open your bakery shop successfully. Doing market research on trends and local markets will provide additional insights. It will also help you develop the best selling strategy for bakery products.
“Location, location and location” are the three most well-known words in commercial real estate. I suggest you hire a retail real estate representative to work with you to find your ideal and best location. Try to find a spot that is easily accessible and has maximum visibility, facing a busy street and a street that gets heavy foot traffic or offers plenty of parking spaces and a loading zone. Avoid being too close to other bakery shops. Finally, check the area’s demographics since areas with higher incomes, younger populations and a dining-out culture often
attract more bakery shop customers. An ideal location would be near schools, universities, shops, apartment buildings, and office buildings since people in these areas often order sandwiches for lunch or as an after-school snack.
3. THINK OF THE KIND OF SERVICE OPTIONS YOU WILL PROVIDE
Determine what style of service you want to offer. Will your bakery operation be a ghost bakery operation, also known as a virtual, dark or cloud kitchen, which operates for delivery and takeout? The orders are received online or by phone, while the kitchen mainly makes products for delivery apps.
Will it be counter service, self-serve, sit down, takeout, delivery, etc.? Will you be crafting gourmet or artisan bakery products?
Will you sell pie by the slice? Will you offer pre-made bread dough with recipes on how to bake them?

4. CHOOSE A BRAND AND NAME
Whether you sell low-budget bakery or gourmet products, you should create your own memorable brand. When naming your bakery shop, the name should be unique and easy to pronounce. Once everything is evaluated and selected, you must implement the brand consistently across various platforms, including your website, social media platforms, marketing materials, store signage, uniforms, delivery vehicles, and more.
5. DESIGN YOUR BAKERY SHOP
After defining your brand, take some time to design an attractive interior for your bakery shop properly. The interior design of your operation needs to match your brand identity and the colour palette you have chosen for your logo design. Choose appropriate furniture and equipment, decorations, lighting, packaging, and eye-catching signage. These 4 Ps are the critical ingredients for the success of your bakery shop: product, price, place, and promotion.
6. CREATE AN ENTICING MENU
First, make a list of every single item you are planning to sell and another list of all the ingredients you need to order. Your menu should offer various bakery items and other food items like coffee and tea, bread, pastries, salads and sandwiches. Will you make gourmet cakes, vegan pies or vegetarian sandwiches? Now, it’s time to name and describe your menu items. Make sure you know how much it costs to make everything on the menu and how much gross profit you will generate per transaction. Make sure to account for all of your expenses, from overhead and inventory costs to employee benefits and compensation, to repairs and maintenance. Next, you will have to establish proper and exact recipes and procedures.
7. RECRUIT AND HIRE EMPLOYEES
Your management team and employees will be the face of your pizzeria, so make sure they will represent you in the best way possible. Look for positive candidates with warm personalities. Make sure to look for competent, reliable and experienced cooks, cashiers, delivery drivers and customer service representatives who can help you deliver quality products and services to your customers. Train your
employees using the appropriate tools and training manual to offer the highest quality of service in your bakery shop.
8. MARKET YOUR BAKERY SHOP

BAKERY BOOM IN EDMONTON
By popular demand bakeries and pastry shops continue to open in Edmonton. As the capital of Alberta, the city of Edmonton is home to more than one million people. What Edmonton has, beyond a collective sweet tooth and an appreciation of fine bread, is a sense of community. The population proudly supports local businesses.
DUCHESS BAKERY
Garner Beggs is the founder and coowner of Duchess Bakery, a classical French bakery that opened in 2009. “People came out to support us in droves,” he remembers. “Today customers enjoy our mainstay staple items like croissants, chocolatines, madeleines and macarons.”
“Our top-selling macaron is the pistachio salted caramel,” says Patricia Pillar, kitchen manager at Duchess Bakery. When it comes to madeleines there are three top favourites: “Raspberry madeleines with Chambord glaze, chocolate olive oil madeleines and our honey madeleines with Calamansi glaze.”
}While macarons and madeleine flavours rotate continually customers are not open to flavour changes when it comes to scones. “We don’t change our scones anymore – ever. We tried but customers let us know they only wanted their favourites.” About the square-cut scones, Beggs says, “The three most popular are the cheddar pepper scones, raspberry white chocolate scones and the blueberry lemon glaze scones.”

Streusel cakes in apple or cherry are pudding-style cakes that are moist, infused with the selected fruit and topped generously with streusel. Cookies appeal to the North American palate and include classics like chocolate chip, ginger cookies and oatmeal raisin.

like a San Francisco sourdough. Instead, it has a mild taste. We make it in different flavours including cranberry walnut, olive with white cheddar, as well as jalapeno and cheddar.”
A variety of fresh-from-the-oven bagels, including cinnamon raisin and multigrain, draw customers in for breakfast on the run.

AN ARGENTINIAN SPECIALTY
Gennaro Rotondaro of Vaughan, Ont., has put Canada on the map by winning the gold medal twice at the Alfajor World Championships for his alfajores de maicena, a traditional Argentinian cookie sandwich filled with dulce de leche.
Rotondaro is launching an online bakery – Gennaro’s Artisanal Alfajores – featuring this specialty he learned from his mother and a beloved aunt in Argentina.
“I started making alfajores de maicena as a means of preserving and perfecting a cherished family recipe, which I learned from my mother Maria, who learned it from my great aunt Carmella who passed away in 2017, which was when my journey began,” Rotondaro said. “I was fascinated by the history and the diversity of alfajores, which date back to the 16th century and have many regional variations across Latin America and Spain.”
In 2022 he won the gold medal at the Alfajor World Championships in the traditional category, beating more than 300 participants from 15 countries, including many professional bakers and pastry chefs from Argentina.
Rotondaro was invited to defend his title in the 2023 Alfajor World Championships held in Buenos Aires.
“I made my Alfajores de Maicena with the same recipe and technique that I used in 2022, but with some minor tweaks and improvements to our packaging,” Rotondaro I was amazed and honoured to win the gold medal again, becoming the first person, and a Canadian to boot, to win two consecutive gold medal championships in the traditional category. I was even invited to be on the national TV channel Telefe.”
The process of crafting the perfect alfajor is a labour of love, a symphony of tradition and innovation, Rotondaro says. “Our artisanal family recipe, passed down through generations, is the cornerstone of

Notes from the Executive Director
CONFETTI SQUARE-GATE AND THE SWEET LIFE IN CANADA
During the holidays my partner and pastry chef, Angelique, wanted to make confetti squares. In my position as the executive director of the BAC (and also a supportive husband!), I went on a simple mission to purchase rainbow mini marshmallows from the local grocery store. That mission turned into a quest: I was thwarted at the three stores in our town, and even Nanaimo, our “big city,” disappointed us. Two hours and seven stores later, our fun marshmallow search left us empty-handed. There wasn’t a rainbow marshmallow to be seen on any of the shelves, just empty cartons and a sense of having missed out. Ironically, in one store there were more bags of sugar than marshmallows, just to spite us!
I valiantly declared that I would crowdsource the multicoloured ingredient, and jumped on Facebook, seeking a solution to our dilemma. One hundred and forty-one negative replies later, a neighbour came through and we were delivered a handsome bag of the coveted rainbow marshmallows!
In less than an hour the confetti squares were ready, just in time for the season. I heard that they tasted fantastic!
‘CANADIAN’ DESSERTS
That search got me thinking about “traditional” or “classic” Canadian desserts. There have been discussions and arguments over the years of what truly makes a dessert “Canadian,” with people dissecting ingredients and provenance in order to make their point. No dispute about Nanaimo bars, a dessert that I have staunchly defended against international misrepresentation, but what about butter tarts? Recently, someone suggested they were originally called border tarts and came from Scotland. My Scottish friends, you have your shortbread, scones and Dundee cake. Butter tarts are ours!
Blueberry grunt? Who knew this famous Atlantic Canada dish is named after the noise that blueberries make when they are cooking? (I have never heard blueberries grunting before. Maybe, instead, it is the polite description of the satisfied sound of the eater digesting the dumpling topping!) OK, beaver tails – no dispute here, although I think it is uncanny how much the broad, fried treat looks like a real beaver’s tail.
From Quebec we have pouding chômeur and sugar pie made with maple syrup. From sea to sea, we must include Saskatoon berry pie, terroir undisputed. I searched for a traditional Alberta dessert but have

been thwarted in nailing down a definitive result. However, it is documented that Albertans embrace sweet Vatrushka and cinnamon rolls more than anywhere else in the country.
Manitoba, of course, champions shmoo as well as flapper pie. Both of them are delicious additions to the traditional Canadian cornucopia.
Where did all these desserts really come from? Bella Bucchiotti from @xoxoBella, a food writer and recipe developer, said she found the confetti square recipe on one of her grandmother’s recipe cards from the 1960s. I am sure that we all have come across those resources. My mum used to go through all the Family Circle, Chatelaine and Canadian Living magazines, cut out the dessert recipes and present them to her baker son!

I am sure that I have missed many on this short list and I expect feedback and suggestions from our readers. My main point is that I am so proud of our Canadian bakers and pastry chefs, who are forever developing and updating the flavours that bring nostalgia and delight to our far-flung hearts. Our sweet Canadian innovations are always worth celebrating and promoting!
THOUGHTS ABOUT WHEAT
A few issues ago, following a trip where our “pantry breads” were served in in various food outlets and did not impress this writer, we challenged our industrial bakers to critically taste their own product and work on improving the flavour of our grocery bread staple. I hope the gauntlet has been picked up.
Talking of flour quality, sustainable agriculture practices should also go hand in hand with our development of standard bread products. In a recent article in Bloomberg News, regenerative wheat was discussed as King Arthur Flour has launched a regenerative flour blend on the market., which you can read here: https://www.bloomberg.com/ news/articles/2024-01-05/ king-arthur-flour-turns-tofarm-in-montana-for-climatefriendly-wheat
The resulting flour “won’t save the climate,” said Stephen Jones, head of Washington State University’s Breadlab. But it does open a window of opportunity to reimagine how farming could thrive in a warming world.
I look forward to the day when we can have great tasting wheat, grown in a manner that does not deplete our resources or harm the planet and which also gives great yields and can be processed without hiccups in our industrial as well as smaller bakeries.
This, all while respecting the considerable commercial value that our Canadian farmers also contribute to the economy and the task of feeding the world with 33 million tons harvested (23 million for export).

LOOKS TO THE FUTURE WITH A BRAND-NEW STRATEGIC PLAN!
Last November the board of directors huddled in Ottawa for a three-day retreat to review the last strategic plan for the BAC (2017). Facilitated by Brian Hayward

(greatchair.ca), board members were led through a governance refresh and an analysis of survey results from both members and non-members as well as the board and staff.
The new strategic plan was scheduled to be worked on in 2021, but pandemic challenges resulted in efforts being delayed until November 2022 and completed this past year.
Looking back at the 2017 plan, successes were realized in most areas. It is interesting to compare where we aspired to be in 2015/16 and where we succeeded despite the challenges of COVID. Below were the priorities that guided us back then:

With more than 30,000 visitors and growth of 27 per cent on 2022, this year marked a turning point in the Sirha Europain trade show’s history, said Luc Dubanchet, Sirha food director. GL Events. The four-day event brought together contemporary bakeries, bakery catering and snacking.
The French were well-placed on the podium at the Bakery World Cup and the European selection of the Pastry World Cup.
Featuring more than 110 bakers, chefs, producers and entrepreneurs invited to participate, the show provided a program of 70 masterclasses, roundtable discussions and interviews to report on the continuous changes and innovations in the industry.

human resources challenges, diversifying products to keep abreast of consumer demand and the eco-responsible challenges facing bread as a symbol of heritage and sustainable food were just some of the contemporary issues discussed.

BONJOUR BAKERY
Other glorious breads are available at Bonjour Bakery, a company specializing in sourdough or pain au levain. It’s made using wild yeast culture and local Alberta wheat. The whole wheat and rye are milled on location.
“Of all our sourdough breads, my absolute favourite is the Pain Paysanne,” says Yvan Chartrand, founder, and master baker. “The freshly in-house milled flour that we use to produce it is from a local organic heritage grain farm. It has a distinctive nutty flavour. This bread has very few ingredients: just flour, salt, water and nothing else. Yet the process for making it is quite long and precise.”
“The secret for this bread is that the temperature and time must be controlled through each step. This includes making the levain, the slow mixing production, the long first dough fermentation,
shaping and final proofing,” Chartrand says. “Roughly three days goes into the making process from start to finish.”
Bonjour Bakery will remain an Edmonton-based family business as Chartrand’s son Kenny stepped into the role as head baker a few years ago.

Every Canadian city needs a good doughnut shop. In 2017, Edmonton-based Red Seal baker Arlyn Sturwold opened Destination Doughnuts with his daughter Jill. The business sells its delicious baked goods as individual treats, for gifts, corporate events and even weddings.
“We make only yeast-raised doughnuts, no chemically aerated products here,” Sturwold says. “Every day sees a total of 30 different flavours/toppings on display. This is comprised of mostly rings. Second in number are the filled doughnuts, with seven varieties. Lastly the fritters with three varieties.”
Sturwold looks back on his early business venture days, “I opened the doughnut store with an initial list of 12
different toppings that I wanted to present. Almost immediately I went about trying to find new combinations of flavours, textures and colours,” Sturwold remembers. “Fortunately, one idea developed very early on. It was a ring doughnut, dipped in caramel sauce, sprinkled generously with Skor Bits, and finished with white chocolate line work. This one has proven to be a real crowd favourite. Even the name is enjoyed by customers. The toffee-topped-toffee became the ‘aha’ event.”
What is the key to crafting the perfect doughnut? “Pay close attention to dough temperature, mixing time and bulk fermentation time. Be consistent every day with these procedures. This gives great crumb texture, moistness and shelf life.”
Sturwold shares another secret. “If I had only one choice in life for a favourite doughnut, it would have to be a still-warm honey glazed. It just can’t be beaten!” / BJ

Consumers want to push the boundaries of traditional taste profiles. There will be more fruit flavour profiles blended with spiciness or sweet heat fusions. Mango habanero, maple jalapeno and honey chipotle banana are some ideas to inspire bakers to create sweet heat options for their consumers.

Whole Foods Market’s Trends Council predicts complex heat as one of their top 10 food trends for 2024. Cathy Strange, Ambassador of Food Culture for Whole Foods Market and member of the Trends Council, says, “From specific product ingredients and flavour trends, to growing movements in the food industry, we can’t wait to see these trends gain momentum in the year ahead. Complex heat continues its evolution with global peppers taking off in every aisle – and the trend is only getting hotter. Even Tajín is expanding from candies and cocktails to spicing up grocery store sushi, desserts and more.”

A substantial 76 per cent of North American consumers recognize the essential role of improving gut health for overall health – from a boost in immunity to enhanced mental well-being. In fact, 66 per cent express interest in food products designed to enhance and enrich gut health. Sourdough emerges as an unwavering symbol of this trend, holding its position as one of the most popular goods in this category among consumers. Along with human health, planet health is a priority for consumers. Lu Ann Williams, Global Insights Director at Innova, says, “From regenerative agriculture to farming conditions for livestock, brands which highlight a bond with nature and the environment are achieving cut-through with consumers. We identified ‘Nurturing nature’ as our number-two trend (for 2024), and we feel this type of story can be a tiebreaker between competing products. For example, over the last four years, our analysis found an astonishing 40 per cent annual increase in food and drink products making some sort of water usage claim.”
