Paysan Breton belongs to the 7,000 dairy farmers who work in the cooperatives which produce the milk used in our products. The aim of our cooperative is to ensure that there is always a market for the milk produced by our members, to guarantee the future of its farms and to promote regional development. We collect all of the milk produced by our farmers and transform it at our production sites in Brittany and Pays de la Loire.

Butter is the ultimate Breton product, and very few dishes do not include it. It enhances the scents and flavours of food without affecting their essence, and it smoothens dishes, making them more appealing to the tongue.
Brittany’s butter is unique, usually salted and made using salt from Guérande. That is due to two factors. First, butter is primarily composed of milk (particularly cream), and Brittany is a major producer of milk. Second, the region was previously exempt from the salt tax.
Brittany combined these two items to insure that its butter would last longer. That is also why Breton butter retains the sweet flavour of the milk.
Every day, our dairy farmers make sure their cows get the best possible care to produce a high quality milk, since this is the raw material for all Paysan Breton products. Good farming practices = good milk: cow feed, animal care and storage conditions are crucial.

Paysan Breton L’Original Brie
Paysan Breton L’Original Brie hails from Brittany, France. Though made by one of the larger Brie producers in France, this Brie goes back to its traditional roots. This is a lactic, as opposed to a stabilized Brie. It also uses traditional rennet and a slower coagulation. This all amounts to a cheese that ripens beautifully and develops a full, mushroomy flavour. We may never be able to find AOC Brie in Australia but, with age, this one comes pretty close. Full flavoured and robust, this is the Brie we’ve been looking for.

Known as the ’foie gras of cheeses,’ Brillat Savarin is a luxurious triple–cream cheese with a soft texture and fresh hazelnut flavours. It has a white, bloomy rind and a dense, moist, slightly chalky interior. Its flavour profile includes butter, salt, cream, and hints of mushrooms, nuts, and truffles. Named after the famous French food writer Brillat Savarin, it contains a minimum of 75% butterfat and pairs perfectly with sparkling wines.

For generations, this raw sheep’s milk cheese has been crafted by expert cheesemakers, maturing in natural rock cellars at the base of the Combalou mountains. Its rich, creamy texture with blue veins and velvety pockets offers a strong, distinctive flavour.
Made in the Auvergne region, this is a natural rind cheese with a minimum four week affinage, the pate is soft whilst also being slightly crumbly. This is a well balanced blue.

Dating back to Gaul, Cantal AOC is one of France’s oldest cheeses. Cantal Entredeux, an aged variety, offers flavours of green pastures and buttery, creamy aromas. After three months of ripening, Cantal develops its signature character, while the well-aged Cantal Vieux—with its thick crust—is a true delight for cheese connoisseurs.
Beaufort AOP summer wheels are available just once a year, crafted in small quantities by individual cheesemakers using only summer milk.

Comté (also called Gruyère de Comté or Comte Fort Saint Antoine) is a French cheese produced in the Jura Massif region of Eastern France. The unpasteurised cow’s milk used is mainly from Montbeliarde Cattle or French simmental (or cross breeds of the two). This hard mountain cheese is matured to perfection in the silence and darkness of special caves where the cheese gets its unique taste, texture and colour. There are several maturing cellars in the region where Comté is ripened for a minimum of 4 months to 18 or 24 months.
Comté was one of the first few cheeses to receive an AOC (Appellation d’origine controlee status in 1958. It is one of the most popular AOC cheeses in France with around 40,000 tones of annual production. Considered one of the finest cheeses in the world, a wedge of Comte reveals a pale yellow interior and a texture that can vary from silky, flabby to crystalline.
Since 1860, Rivoire-Jacquemin has perfected the art of selecting and aging Comté cheese. Each 40 kg wheel requires 400 liters of milk, with origins traced back to the specific farmer and cheesemaker. Their long-standing relationships allow them to choose only the finest Comtés for aging. A master ripener oversees each wheel as tradition dictates, ensuring it receives meticulous care: salting, rubbing with exclusive Guérande salt, turning, and quality checks.
In their 38 cellars, Spruce planks from Jura are used for the shelving. State of the art air conditioning technology allows cellar managers to fine tune temperature and humidity to optimize ripening respecting the great cheese traditions. After four months, the most thorough grading is done.

The farmers at Kaamps Estate use only the highest quality milk from happy and well-cared-for-free-range cows. Even as the farm has grown into a much larger, well-run business, it has maintained its sustainability and use of traditional ways. Cheese is still prepared primarily by hand using “dayfresh milk,” which means that cows and goats are milked and the milk is then processed into cheese.
White Kaamps Estate produces a range of sweet and savoury cheeses, but Boer’n Trots is truly one-of-a-kind. Though some may be put off by the fact that is it prepared using goat’s milk, I assure you that it is well worth the flavour. A heavy drizzle of honey is added to the curds in the early stages of manufacture, really toning down that distinctive goat-y flavour. After the wheels are created, they are handwashed in a honey mixture and aged for around 20 weeks to perfection. The end product is a genuinely melt-in-yourmouth sensation with a somewhat sweet undertone. Boer’n Trots is an excellent match for most white wines and IPAs, and it pairs well with rustic crackers or grain bread and salted almonds.

A washed rind cheese from Holland with Maple Syrup Whiskey. This one–of–a–kind wash imparts a distinct flavour to this cow’s milk cheese! Made from Dutch cow’s milk, this cheese is creamy and flavourful. It has also been aged for at least six months. We highly recommend pairing this with a drink of your favourite whisky.

The history of Achnagal Farm, the producers of Cypriota Halloumi.
In 1977 Lefteris Eleftheriou, a man born in Achna village in Cyprus, decided to turn his passion for cheesemaking to business. Lefteris had already finished his studies as a cheesemaker in Greece and he started Achnagal with a clear vision: to re–discover tradition and find the best ways of offering superior quality.
Over the years Achnagal has grown significantly, numbers have grown to a considerable scale, and the once home based production has been transformed to modern premises.
However, all days long, Lefteris is always in the production, but now his children are working with him. All his children studied different fields of science, however all of them now are working together in synergy and harmony and are taking Achnagal to new heights.
Here is WHY our Hand-Crafted Halloumi is Different:
1. Made with the highest quality of sheep milk coming from our area and mainly from Cyprus’ native sheep breeds.
2. The cow’s milk added is coming from our own cow’s farm from jersey breed cows that are fed with grass.
3. The cooking of the curd is longer and smoother; this results on a halloumi that stands the heat better and develops toasted butter aromas.
4. Our halloumi is delicately salted on the bench like in the old days.
5. Our halloumi is perfumed with mind, according to the tradition.

For the Dough:
1 3/4 cups (245g) all-purpose flour. 3/4 teaspoon sea salt; if using table salt use half as much by volume.
1/4 teaspoon baking soda.
3 tablespoons (40g) lard or shortening. 1/2 cup (355ml) whole milk, warm. Olive oil for pan.
For the Filling:
1 tablespoon (15ml) extra virgin olive oil.
1 tablespoon (15ml) balsamic vinegar. Sea salt.
Freshly ground black pepper.
1 cup stracchino.
4 cups rocket.
1. Preheat oven to 120 degrees Celcius and set the rack to the middle position.
2. In a medium bowl, whisk together flour, salt and baking soda. Pinch lard into the mixture until pea-sized or smaller. Stir in mild to form a shaggy dough.
3. Knead dough on a clean surface for 3-5 minutes until smooth. Shape into a ball, cover loosely with plastic wrap and let rest for 20 minutes.
4. Divide dough into 4 equal pieces, shape into balls, cover loosely, and rest for another 20 minutes.
5. Roll each ball into a 10-inch circle (1/4 inch thick), pricking one side lightly with a fork about 8 times. Cover and set aside.
Cooking Instructions
1. Preheat a dry 12-inch pan over mediumhigh heat until very hot (2-4 minutes). Lightly oil the pan.
2. Cook each dough round for 30 seconds per side until spotty brown and puffed. Keep warm in the oven while repeating with the remaining rounds.
1. Toss rockets with olive oil, balsamic vinegar, salt and pepper.
2. For stracchino, dollop and spread cheese evenly over piadina, leaving a 1/2 inch border.
3. Top with 1 cup of dressed rocket. Fold in half, press gently, and repeat for the remaining piadine.
4. Slice and serve immediately.
