What inspired you to create Andronis Fine Jewellery, and how has your vision evolved over time?
A journey to a destination like Santorini is, for many, a once-in-a-lifetime experience. It is always special to preserve these memories through objects we carry with us—objects that remind us of the beautiful and unique moments we have lived. The more extraordinary the moment, the more precious the object that keeps it alive over time. The creation of Andronis Fine Jewellery was born from precisely this idea: to offer visitors a handcrafted Greek piece that will forever remind them of the most special journey of their lives.
Santorini is a place full of light, colour, and energy. How does the island influence the aesthetic of Andronis Fine Jewellery?
It is true that Santorini is a place of light, colour, and a distinct energy. It is also true that it has a unique aesthetic that makes it one

of a kind in the world. Our jewellery follows this philosophy. Vibrant gemstones, designs that break away from traditional jewellery forms, and a distinctive aesthetic that merges simplicity with the craftsmanship Greek goldsmiths have perfected and passed down through generations—while also embracing a modern approach to classic jewellerymaking techniques. A place where frescoes depict jewellery dating back more than 3,000 years can only be a continuous source of inspiration for us.
Which precious stones do you believe best capture the soul of the island?
Santorini is a living island, one with a character of its own—one that changes several times within the same day. Those fortunate enough to visit can sense the shifts in energy surrounding them, as though the island itself has a mood that profoundly influences the emotions of those who experience it. With this in mind, more than one gemstone can be said to capture the soul of the island. When the blue of the sea reflects against the white of the caldera, Aqua Marina, sapphires, and blue topaz seem the most fitting choices. As the island’s mood shifts and the early evening hours prepare to give way to the world’s most famous sunset, deep orange citrines, Imperial topaz, and Canary diamonds take centre stage. Then, there is another side of the island—one shaped by the
winds of the Aegean, where the white crests of the waves stand against the backdrop of black volcanic lava. Here, white and black diamonds echo the interplay between the landscape and our memories. But perhaps the most beautiful aspect of all is that every visitor is invited to choose from a rich collection of gemstones based on their own personal memory—on “their Santorini”.

It is a great privilege in life when people from all corners of the world choose you to be part of their most unique moments. 250g minced beef
250g minced lamb
100g onions, finely chopped
3g fine salt
2g oregano
6g garlic, grated
1 egg
50g tomato juice
20g parsley, chopped
40g extra virgin olive oil
80g stale bread, dried
For the Tomato Sauce:
2 large ripe tomatoes, grated
40g tomato purée
100g onions, finely chopped
10g garlic, finely chopped
50g olive oil
3g sugar
3g salt
1g pepper
For the Finish:
100g feta cheese, crumbled
4g mint leaves, finely chopped
INSTRUCTIONS
Preparing the Meatballs:
Soak the stale bread in water for 5-10 minutes, then drain well.
In a pan, sauté the onions over
low heat until softened.
In a large bowl, combine all the meatball ingredients and mix until well incorporated.
Shape the mixture into small meatballs (approximately 30g each).
Lightly flour the meatballs and fry at 160°C until golden brown.
Preparing the Tomato Sauce:
Heat the olive oil in a small saucepan over low heat.
Sauté the onions and garlic until softened.
Stir in the tomato purée and cook for 1 minute.
Add the grated tomatoes and sugar, then let the sauce simmer on low heat until thickened.
Season with salt and pepper.
Bringing It All Together:
Transfer the fried meatballs into the saucepan with the tomato sauce. Let them simmer for 2-3 minutes, allowing them to absorb the sauce. Remove from heat and stir in the chopped mint leaves.

2 litres vegetable oil (for frying)
For the Béchamel Sauce:
1 litre milk
150g flour
100g butter
2 eggs
200g grated Gruyère cheese
Salt & pepper (to taste)
METHOD
Preparing the Meat Sauce:
- Heat some olive oil in a pan and sauté the onions and garlic until soft.
- Add the minced beef and cook, stirring, until it browns.
- Pour in the white wine and let it reduce.
- Stir in the tomato purée and chopped tomatoes.
- Add the bay leaf, salt, pepper, and a pinch of sugar.
- Pour in enough water to just cover the meat and allow it to simmer over a low heat until the liquid reduces.
- Once cooked, stir in the chopped parsley and adjust seasoning if needed.
Preparing the Vegetables:
- Fry the aubergine slices in vegetable oil until golden brown.
- Fry the potato slices until softened.
- Drain the fried vegetables on kitchen paper to absorb excess oil.
Assembling the Moussaka:
- In a baking dish, arrange a layer of potatoes, followed by a layer of aubergines.
- Spoon over the cooked minced meat, making sure to drain off excess juices to avoid a runny sauce.
- Repeat with another layer of potatoes and aubergines.
Preparing the Béchamel Sauce:
- In a saucepan, melt the butter and stir in the flour, cooking for about 2 minutes while stirring continuously.
- Gradually add the milk, whisking constantly, until a smooth, creamy mixture forms.
- Remove from the heat and whisk in the eggs, some of the grated Gruyère, salt, and pepper.
Final Assembly & Baking:
- Pour the béchamel sauce evenly over the layered ingredients in the baking dish.
- Sprinkle the remaining Gruyère cheese on top.
- Bake in a preheated oven at 170°C for about 35 minutes, or until golden brown.

Salt and pepper, to taste
Knorr chicken paste
Water
100ml olive oil
INSTRUCTIONS
- In a saucepan, add the fava beans, white onions, and carrots.
- Pour in enough water to cover the ingredients and add a spoonful of Knorr chicken paste for extra depth of flavour.
- Season with salt and pepper and bring to a gentle simmer.
- Cook until the fava beans are soft and the mixture has thickened.
- Once cooked, blend or mash until smooth, gradually adding olive oil for a velvety texture.
- Serve warm or at room temperature, drizzled with extra virgin olive oil and accompanied by warm bread or crisp vegetables.

Koukoudakis’ Take on Steamed Cod
INGREDIENTS
For the Cod:
1L water
70g salt
600g cod fillet (150g per portion)
For the Aliada (Garlic Potato Purée):
1kg potatoes, peeled and boiled
2 cloves garlic
200g olive oil
100ml lemon juice
Salt & pepper, to taste
For the Seasonal Wild Greens:
300g seasonal wild greens
50g olive oil
20ml lemon juice
For the Beetroots:
3 red beetroots
2 cloves garlic
100g olive oil
20ml vinegar
Salt & pepper, to taste
METHOD
Preparing the Cod:
In a bowl, mix the water and salt to create a brine.
Clean the cod by removing the scales and entrails, then take off the skin and fillet the fish. Submerge the fillets in the brine for 10 minutes.
Rinse the cod under fresh water and cut into 150g portions.
Steam the cod for 10 minutes until tender.
Preparing the Aliada (Garlic Potato Purée):
Boil the potatoes until soft.
While still hot, place the potatoes, garlic, and lemon juice in a blender and blend until smooth.
Gradually add the olive oil and blend again until fully incorporated.
Season with salt and pepper to taste.
Preparing the Seasonal Wild Greens:
Wash the greens thoroughly and drain well.
Heat the olive oil in a pan and sauté the greens for a few minutes.
Add the lemon juice and mix well.
Preparing the Beetroots:
Clean the beetroots and bake them in the oven at 170°C for 1 hour, or grill them until tender. Once cooked, peel and slice them thinly.
Marinate the slices with olive oil, vinegar, finely chopped garlic, salt, and pepper.
Plating the Dish:
Select a deep plate and place the steamed cod in the centre.
Arrange the beetroots on the left side of the cod and the wild greens on the right.
Spoon the aliada over the cod to complete the dish.

Anastasios Tsantilas’ Take on Trahanas with Greek Sausage, Gruyère from Paros, and Fried Egg
INGREDIENTS
160g sweet trahanas
100g Greek sausage
580g chicken stock
2 tbsp olive oil
4 tsp butter
60g spring onion
40g leek
80g baby spinach
2 tsp lemon zest
2 tsp chives
2 tsp fresh thyme
80g Gruyère from Paros 2 eggs
80g Greek feta
3g sea salt
1g black pepper
METHOD
Preparing the Trahanas
Heat a pan over medium heat and sauté the sausage with olive oil.
After 5 minutes, lower the heat and add the leek and spring onion, cooking until softened.
Increase the heat, add the trahanas to the pan, and cook for 1 minute.
Pour in the chicken stock and cook for 10–12 minutes.
Once the trahanas is ready, remove from the heat and stir in the lemon zest, fresh thyme, butter, baby spinach, and grated Gruyère until the mixture thickens.
Season with salt and pepper.
Preparing the Eggs
In a frying pan, heat a little olive oil over medium heat and fry the eggs until the whites are set but the yolks remain runny.
Assembling the Dish
Spoon the trahanas into deep plates and place the fried eggs on top.
Garnish with finely chopped chives and crumbled feta cheese. Serve with toasted sourdough bread and a drizzle of fresh olive oil.
