The Memphis Hightailers Bicycle Club!

Third Annual Walking Challenge Gets Employees Moving The Health and Wellness Program at Regional One Health provides employees with many opportunities throughout the year to increase their physical activity and learn healthy habits. Regional One Health employees are focusing on health and wellness by taking part in employee health screenings, health fairs, and wellness classes. The Coopwood Walking Challenge, named for Regional One Health President and CEO Dr. Reginald Coopwood, has become a favorite annual event, allowing employees to step up their physical activity through friendly competition. This year’s third annual Coopwood Walking Challenge included 780 participants on 65 teams. The walkers wore pedometers and logged steps from November 3 to December 14. Challenge participants walked 123,991,240 steps, which is equivalent to 58,707 miles. The EEC’s came in first place with more than nine million steps, beating last year’s first place team total by more than one million steps.

GET YOUR BLOOD FLOWING Venous disorders are exceedingly common, with more than 50 percent of the population showing some manifestations of these disorders, such as varicose or spider veins, by age 65. Venous disorders are often simply unsightly, but in many cases can cause leg pain, swelling, phlebitis, nonhealing ulcers of the skin, and other serious problems. Despite the very widespread and sometimes serious nature of venous disorders, they are not aggressively diagnosed or treated. Part of the problem is that venous reflux, the most common cause of venous problems, is poorly understood. Most health care professionals don’t understand the pathophysiology of the disease, and that often results in delays in getting the proper treatment.

UNDERSTANDING LAPAROSCOPIC GASTRIC BYPASS SURGERY I was recently asked by a colleague why I perform so many laparoscopic gastric bypasses — I did more than 50 last month alone. I simply answered, “Because it works.” Laparoscopic roux-en-y gastric bypass is still the gold standard that all other bariatric procedures are compared to not only in terms of weight loss but complication rates as well. That said, it’s also one of the most technically complex procedures and should only be done by a surgeon specifically trained to do it. Unfortunately, I have discovered a local perception that gastric bypass is “risky” and “unsafe,” which could not be further from the truth. I am frequently confronted by patients that have been misinformed about this procedure from a variety of sources. I am trying to reeducate the Memphis area about the safety and benefits of this amazing, life-saving operation. The truth is that an overwhelming body of evidence-based medicine supports the gastric bypass procedure. For example, the three-year outcomes from the STAMPEDE (Surgical Therapy and Medications Potentially Eradicate Diabetes Efficiently) study strongly advocate gastric bypass for treating morbid obesity and type 2 diabetes. This is one of the most closely followed and well-respected ongoing surgical studies in the world. “The three-year data confirms that bariatric surgery maintains its superiority over medical therapy for the treatment of type 2 diabetes in severely obese patients,” said the study’s lead investigator from the Cleveland Clinic Bariatric and Metabolic Institute. “We looked at quality of life, because ultimately it is all about helping our patients live a healthier, happier life. When compared to sleeve gastrectomy and medical therapy, gastric bypass patients achieved greater weight loss, were on fewer medications, had a higher success rate controlling diabetes, and had an improved quality of life.”

THE HEART OF A FIGHTER Anita Williams thought she had the flu. It was 1994, and Williams had just given birth to her youngest son a few months earlier. While giving him a bath she began feeling ill, but thought she must have caught a virus or the flu. “After I dressed my son, I sat down for a moment,” Williams said. “My left arm was tingling and began to ache all the way down to my hand. I knew the symptoms all too well.” Her father passed away at age 51 from heart disease, and Williams realized her symptoms were similar to what her father had experienced before his death. She told her husband they needed to go to the emergency room immediately.

“When we arrived, my blood pressure was at stroke levels,” Williams recalled. “Back then, heart disease was not thought of as a woman’s disease, and the emergency room physician asked me if I had used cocaine.”

According to the American Heart Association, one in three women will die of heart disease, which continues to be the leading cause of death for women. In 2004, the American Heart Association launched the Go Red for Women campaign to increase women’s awareness that heart disease is their leading killer. Since her first procedure in 1994, Williams has had triple bypass surgery and a second stent procedure.

Cardiovascular Foundation, suggested Williams follow a low-sodium diet as a part of her heart-healthy diet plan. The American Heart Association recommends a daily sodium intake of no more than 1,500 mg. “When I go out to eat, I will ask for yogurt so I can add lemon juice and make my own dressing for my salad,” she said. “It makes for a really nice dressing, and you are not getting all the sodium you get from typical salad dressings.”

Her diet has also led to her family changing their eating habits. Her sons are both physically active and follow plant-based diets. Although life has not always been easy, Williams maintains a positive and fearless outlook. “Heart disease has made me have the attitude that if I can fight this, I can win at anything,” she said. Mishala Bryant is a communications intern for the American Heart Association.

“As the mother of two boys, I was not going to let heart disease affect my children’s lives experiences,” Williams said. Diet and exercise are important lifestyle changes to make to fight heart disease, and Williams began to exercise regularly and follow a heart-healthy diet plan.

The question shocked the young mother, who had never used drugs of any kind. She was then admitted for further tests.

“I walk on the treadmill for an hour every morning,” Williams said. “On weeknights I alternate between Zumba and core training, and then I will walk on the weekends.”

Between working out on their own and teaching classes together at the YMCA, the pair is involved in a number of different fitness activities both as a couple and individually. From interval and sprint training to boot camp and spin, they choose to live an active lifestyle to be good examples for their children and maintain a healthy lifestyle.

HOW DOES BEING ACTIVE HELP YOUR RELATIONSHIP? JULIE: With three children and demanding jobs, it’s hard to find time to fit everything in. By teaching classes and working out together, we can spend time with each other while doing something good for ourselves. PHIL: Since we’re both into fitness, we understand the demands that come with training. It’s great to be able to support each other’s goals and encourage each other to stay on track.

DO YOU WORK OUT TOGETHER OR SEPARATELY? PHIL: We enjoy teaching a sprint class together on Saturdays and an interval training class one Friday per month. We also participate in obstacle course races together. As for weight training and other workouts, we typically go to the gym separately so one of us can stay home with our three children.

WHAT’S YOUR TYPICAL DATE NIGHT? JULIE: We enjoy going out for sushi and to a movie. Sometimes we’ll even just slip away for a coffee date to catch up with each other.

TERRI: Fitness is just a way of life for us, and a normal, routine part of our relationship. Plus, as a family nurse practitioner, I try to help motivate and encourage my patients to lead a healthier life. With opening my own medical practice, I need to be physically fit to show my patients I live by what I teach. KEN: We run together 3-4 days per week. It’s nice to have someone to motivate you and hold you accountable. We support each other’s accomplishments, like when Terri ran six miles for the first time last fall with Sisters in Motion. Running gives us the opportunity to spend time together, while also clearing our minds and relieving some stress. Ken is an Anatomy and Physiology instructor at Southwest Tennessee Community College and plans to retire this year to work full-time in the medical practice.

DOUGLAS & NICHOLE SCARBORO Scorpio + Sagittarius On the heels of Douglas turning 40, he and Nichole, 39, decided it was time to get in better shape. After having their two children, Nichole wanted to lose the rest of the baby weight, and her husband Douglas wanted to shed a few pounds as well. Although the two had always worked out at the gym, they needed a new challenge to push their limits.

RECENT FITNESS ACCOMPLISHMENT: Competing in their first bodybuilding competition.

HOW DID TRAINING FOR THE BODYBUILDING COMPETITION HELP YOUR RELATIONSHIP? NICHOLE: Training for the competition was a new challenge that helped us set new training goals. We trained together three times per week, as usual, but we trained harder and also changed our diet. Doing the diet and training for the competition together helped keep us focused and motivated to do our best. DOUGLAS: Bodybuilding can be an isolated and lonely sport, but training and competing together made it fun and very doable.

HOW DO YOU KEEP THINGS EXCITING AFTER BEING TOGETHER 18 YEARS? DOUGLAS: We celebrate everything — every holiday, every birthday, every anniversary. We never skip an opportunity to buy each other gifts or go out for a special dinner. We also enjoy cooking and traveling together.

HOW TO SET RUNNING GOALS Your New Year’s resolution was to start running. You’ve laid the foundation over the past few weeks and have been fit for proper running shoes, but now you find yourself wondering what’s next. How do you keep going, or what should you work toward? As with any new endeavor you take on, it’s important to have goals in place to measure your progress and keep you on track for success.

BE REALISTIC.

When it comes to running, you need to first be realistic with where you are on your journey and where you want to go. Know your physical abilities now and be honest with where you think you will be in one, two, or six months. Set your goals accordingly. If you’re just getting into fitness and running, deciding to complete an Ironman this year may be a stretch. But crossing the finish line of a 5k or being able to run for 30 minutes straight could definitely be doable.

MAKE YOUR GOALS MEASUREABLE.

Whether it’s being able to run consistently for 30 minutes or run one mile in 10 minutes, set a specific goal that you can measure. Ambiguous goals make it harder to track progress and can make you feel like you aren’t moving forward in your running journey. Pick a set distance or time goal and plan to achieve it. Also be sure to track your progress daily or weekly so you can see how far you have come since you started. Having a record is good for the harder days when it feels like you haven’t improved.

PICK A RACE.

If you’re currently walking or doing walking/running intervals, it may be a good idea to focus on an upcoming 5k. If you’re currently running 3-5 miles, maybe it’s time to take the leap and train for a half marathon. Sit down with a calendar and determine how long it would take to train for an upcoming race and decide which one you would like to participate in.

HAVE SOME ACCOUNTABILITY.

Tell your friends and family what your running goal is. Better yet, have a friend who is working toward a similar goal help hold you accountable. Join a running/walking group to be around like-minded people who will motivate you and encourage you to succeed. Knowing you have people waiting on you to go for a walk or run or having people ask when your next race is will help you stay on track.

FAVORITE FITNESS ACCOMPLISHMENT: Finally running a half marathon in less than two hours (1:57:06) after missing it by 1-2 minutes three races prior. I wanted to celebrate because all of the hard work and determination had paid off. MOST MEMORABLE WW MOMENT: Running the 5k and half marathon with my run team, Black Men Run, in Chicago. It was the most fun and stimulating run we’ve ever had at a race. The run wasn’t about individual achievements. We ran as a group and encouraged other runners throughout the race. That alone made me proud to be a member of Black Men Run. RACE DAY RITUALS: I ride a stationery bike for 5-10 minutes to warm up before stretching. I do a variety of stretches for 15-20 minutes to make sure my legs are good and loose. A protein shake and oatmeal is my race-day meal. Then I say a prayer for the safety of all the race participants and go hit it! WW GEAR: Hoka is my choice when it comes to running shoes — they are the Bentley of running shoes, and Nike Dri-FIT all day, everyday when it comes to run apparel! It’s just that simple. I also wear a TomTom multi-sport watch with matching band. CELEBRITY CRUSH: Halle Berry, Janet Jackson, Jennifer Lopez, and Demi Moore. PET PEEVE: Race participants who start in the first few corrals of a race and are walking within the first mile! Really?

HEART-HEALTHY PASTA Try this heart-healthy quinoa pasta made with a variety of colorful vegetables. Quinoa and veggies provide a good source of dietary fiber and are high in carotenoids and phytochemicals, which are linked to the prevention of coronary heart disease. The creamy vegan nut sauce contains heart-disease-fighting vitamins and minerals like vitamin E, folic acid, magnesium, and potassium. A healthy alternative to traditional dairy pasta sauce, and it’s delicious!

— Preheat oven to 400 degrees. — In a large bowl combine the prepared vegetables with 2 Tablespoons of olive oil and sprinkle with salt (optional). Line a baking sheet with parchment paper and roast vegetables for 10 minutes. Stir and roast for an additional 10 minutes. — While the vegetables are roasting, cook the quinoa pasta according to directions on the package being careful not too over cook. Drain the pasta and set aside.

q 4 cloves garlic – minced

q ¼ head cauliflower, cleaned and cut into bite sized pieces

q 1 cup raw cashews soaked for at least an hour and up to overnight.

q ¼ head broccoli, cleaned and cut into bite sized pieces

q 2 cups unsweetened almond milk

— Heat 1 ½ tablespoons olive oil in a large sauté pan over medium-low heat. Add the garlic and sauté for 1 minute.

q 4 Tablespoons olive oil, divided

q 1 cup fresh baby spinach, chopped

q Q uinoa pasta – 8 ounce package

q 1 Tablespoon fresh oregano, chopped

— Sprinkle with fresh oregano and serve!

q 2 carrots, cleaned and cut into thick coins

— Place the cashew meal in a blender with the almond milk, 2 tablespoons lemon juice, ½ teaspoon salt and 1 teaspoon onion powder. Puree until smooth.

— Pour the cashew cream into the pan. Bring to a low bubble, whisking frequently, until it thickens to desired consistency, about 7 to 9 minutes. If it thickens too muck add splashes of almond milk to thin. Season to taste with additional salt and lemon juice. Add the cooked pasta, roasted vegetables and baby spinach and stir to distribute the ingredients.

A RECIPE FOR ROMANCE:

APHRODISIACS IN THE KITCHEN By Robin Beaudoin

An aphrodisiac is a substance that increases sexual desire when consumed. Do you remember the first time you ever tried oysters on the half shell? Did someone playfully warn you of the aphrodisiac qualities of the slippery, salty seafood? Maybe you added a dash of hot sauce or a little horseradish for heat. If oysters don’t do it for you, there are plenty of other libido-boosting foods that will. Named for Aphrodite, the Greek goddess of love, aphrodisiacs have been exciting diners around the world for centuries. They include asparagus, honey, bananas, almonds, avocado, basil, chocolate, figs, garlic, and oysters, among others. Why do these foods have this effect on us? Various chemical

compounds, hormones, nutrients, or even textures can stimulate the body and brain. I’ve found that traditionally “sinful” foods also spark romance. These are the foods that are out of the norm, or that we just don’t have in our calorie-restricted diets. Long, dictionconscious descriptions of dishes and dimly lit menus can make the mouth water just as well as the dishes themselves. Just read these words aloud and notice how they tickle the tongue: gooey, cheesy, succulent, fresh, sautéed, tender, molten, au jus, barbecued, simmered, saucy, chocolate, gravy, reduction, flash-fried, bitter, salted, caramel, smoky, bubbly, crispy — how does your mouth feel now?

This Valentine’s Day prepare my light and flavorful menu, guaranteed to awaken the palate and warm the heart. Enjoy them, but don’t over imbibe on food or alcohol, as a full stomach is a sleepy one. Cooking with your partner can be sensual. Begin the evening with room temperature figs, stuffed with a bit of blue cheese, and add a drizzle of honey. Figs have sweetness and a delightful seedy crispness that tickles the tongue. Salty blue cheese complements a light, sweet touch of honey. Pour a glass of champagne or wine and get things cooking.

HONEY GLAZED ROASTED LEMON AND GARLIC CHICKEN

q 2 large chicken hindquarters, with skin and leg and thighbones intact q 1 /3 cup honey q 2 Tbsp. coconut oil or butter q O live oil q 1 Tbsp. brown sugar q 3 /4 tsp. salt q 1 head of garlic q 1 large lemon

q 2 Tbsp. fruity white wine, such as Sauvignon Blanc

— Preheat oven to 400 degrees. Cut off top 1/4 of garlic, leaving the cloves in place. Remove ends of lemon, making a flat surface so that lemon can stand on end. Halve lemon, and place in small oven-safe, non-reactive pan with the garlic, openside up. Drizzle generously with olive oil, and bake for 35-40 minutes, or until soft. Remove garlic from hot pan using tongs, squeezing to remove the roasted cloves, removing any remaining garlic skin, and set aside. (This roasted garlic is also great on hot bread.) — Using tongs, squeeze the hot lemon juice into the pan, picking out any seeds, and stir in the honey. — Oil a glass baking dish, and place chicken quarters in dish. Carefully slide your fingertips underneath the skin of the chicken, and slip roasted garlic cloves between the meat and the skin. Don’t worry; the garlic will be sweet, not

pungent. Rub the outside of the skin with coconut oil (or butter), brown sugar, and salt. — P our the hot pan sauce over the bird, and bake at 400 degrees for 30-35 minutes, or until internal temperature reaches 180 degrees. Optional: broil for 15-30 seconds to achieve a dark, crisp skin. — D rizzle chicken with pan sauce, and serve with a light salad. You will savor the sticky glaze from your fingertips as you pluck the flavorful meat from the bone. Let the dishes soak, and pull out the cutting board. Enjoy some chopped bits of dark chocolate with fresh juicy berries for dessert. Dark chocolate contains trace amounts of both tryptophan, the sleepy, relaxing chemical, and phenylethylamine, a stimulating chemical believed to be released in the brain concurrent to feelings of love. The dishes can wait.
