Steak, Mushroom & Ale Bone Broth Stew Warm up this winter with this deliciously hearty, one pot, slow cooked, beer bathed bone broth stew!


What you’ll need: A handful of dried porcini mushrooms (10 g) – optional, but recommended! 3 tbsp fat– beef or bison tallow, grass-fed butter or grapeseed oil, divided 2 lbs of stewing beef cut into large chunks 2 large onions, roughly chopped 4 cloves of garlic, minced 4 large carrots, roughly chopped 1 stalk of celery, roughly chopped 2 large potatoes, chopped 2 tsp sweetener– monk fruit, palm sugar or honey, etc. 4 tbsp Bob Red Mills 1:1 gluten free flour 300 ml dark ale 2 cups High-Vibe Organic, grassfed & finished beef or bison bone broth 4 sprigs of thyme 2 bay leaves A dab of grassfed butter 300 g mushrooms– if large, cut in half 1/2 cup of frozen peas, thawed Parsley, minced What to do: 1. If you’re using the porcini mushrooms, cover 10g of mushrooms in boiling water for 20 mins, then squeeze out, but keep the soaking water. 2. Heat oven to 320 degrees f, then on the stovetop, Heat 1 tbsp of the fat in dutch oven & brown the steak cubes really well in batches, setting aside. 3. Add 2nd tbsp of fat to the dutch oven pan, then add the chopped onions, carrots and celery, cooking on a low heat for 5 mins until coloured. 4. Add the soaked porcini mushrooms & garlic for 1 minute, then sprinkle over 2 tsp of sweetener and 4 tbsp of flour, stirring until the flour turns brown. 5. Add the braising steak and any juices back into the pan, along with chopped potatoes and give it all a good stir. 6. Pour in 300 ml dark ale, 2 cups of High-Vibe bone broth, and the porcini mushroom soaking liquid. 7. Season the stew with salt and pepper, thyme and bay leaves, and bring everything to a simmer. 8. Cover with a lid and place in the oven for about 2 hours, until the braising steak is really tender. 9. Add a dab of butter to a pan over med heat, and cook the mushrooms for 4 mins until golden. Remove from the heat and stir into the stew, along with peas. 10. Top with minced parsley, and serve with a loaf of ancient grain bread, and the rest of that dark, delicious beer!

Top Tips for an Eco-Friendly Holiday Season Nothing compares to the holiday season, right? Twinkling lights, the pleasing smell of a Christmas tree, family and friends getting together, baking holiday cookies, and the joy of giving. Although, this magical time of the year doesn’t just bring about waves of happiness and love, it can also mean lots of unsustainability. But don’t let that bring you down! 1. Buy a Real Christmas Tree (and compost it afterwards!) Known as a primary irritant to skin, eyes and lungs, it penetrates the skin very quickly and may encourage liver and kidney issues. Petroleum Jelly, Petrolatum, Soft Paraffin, Mineral Oil - A synthetic emollient, it’s the most extensively used ingredient in body care products and the single greatest cause of breakouts in women who use a new product. While covering the skin, it clogs pores and traps toxins and wastes inside the skin layers preventing the skins ability to respire. Phthalates - Phthalates (pronounced tha-lates) are industrial plasticizers known to be one of the foremost dangers found in cosmetics and personal care products. Dozens of studies have shown that phthalates disrupt and inhibit normal hormonal functions, causing infertility and birth defects. Synthetic Colours - The chemical colours used in shampoos and scores of other products are labeled as FD&C or D&C followed by a color and a number. These synthetic colours are made from coal tar and contain heavy metal salts that can deposit toxins onto the skin and cause cancer. Artificial Fragrances - Artificial fragrances can generate a variety of instant adverse reactions including headaches, dizziness, rash, redness, violent coughing and vomiting. These chemical fragrances often contain a toxic cocktail of more than 200 chemicals including endocrine disrupting phthalates. CANDY CANE NICE CREAM


Ingredients: Nice Cream 2 frozen bananas 1/4 cup coconut cream 2 tbsp Yoso Coconut Yogurt 1 tsp organic peppermint extract 1 organic candy cane broken into small pieces

Instructions: 1. Blend all nice cream ingredients until smooth and creamy. 2. Add to a bowl and top it all off with the candy cane pieces. 3. Enjoy!


CRANBERRY PECAN OATMEAL CO Ingredients: 1 cup Bob’s Red Mills 1-2-1 Gluten-free Baking Flour 1/2 cup raw pecans 1/2 cup naturally sweetened cranberries 1 cup gluten-free oats 2 eggs 1 tsp organic vanilla extract ½ cup coconut oil(melted) ½ tsp baking powder ½ tsp baking soda pinch sea salt ½ cup coconut sugar

Instructions: Preheat Oven to 350 degrees Fahrenheit. In a bowl add flour, oats, baking powder and soda, sea salt and coconut sugar and mix. Melt coconut oil and whisk into a separate bowl with the eggs. Add egg mixture to the dry and mix well. Fold in pecans and cranberries. Add parchment paper to two cookie sheets. By the tablespoon drop the dough onto the cookie sheets and form with a fork. Bake for 8-12 minutes or until the cookies are golden brown. Transfer to a cooling rack to let cool and enjoy. Makes about 20-24 medium size cookies.

GINGERBREAD CUPCAKES WITH C


COCONUT VANILLA ICING Ingredients: For the Cupcakes: 2 cups gluten-free Bob Red Mills 1-2-1 baking flour 2 tsp baking powder 1 tsp baking soda ½ cup molasses 2/3 cup coconut sugar 3 free range eggs pinch of sea salt 2 tsp ginger powder 1 tsp cinnamon 1 tsp vanilla powder 1 tsp cloves ½ tsp allspice 1 cup unsweetened canned pumpkin puree 1 cup olive oil For the Icing: 2 cups coconut butter 1 tsp vanilla powder ¼ cup cold unsweetened coconut or almond milk ½ cup coconut icing sugar or Swerve Natural Sweetener


Instructions: 1. Preheat oven to 350 degrees Fahrenheit 2. Grease a large muffin tin with coconut oil. 3. In a large bowl for the cake add flour, baking powder and soda, coconut sugar, ginger, cinnamon, vanilla powder, cloves and allspice and mix well. 4. Then add molasses, eggs, pumpkin puree and olive oil and whisk well. 5. Add batter to the pan and bake in the oven for 25-28 minutes or until it comes out clean with a toothpick and let cool fully before icing. 6. In the mean time in a large bowl with a mixer OR a high speed blender add coconut butter, vanilla and milk of choice and blend well until smooth and creamy. 7. Add coconut icing sugar and mix well. Adjust to your taste. 8. Ice cupcakes with a beautiful thick layer of icing and then let set in the fridge for about 10 minutes and serve! 9. Makes about 12-16 cupcakes





Mini Apple Bunt Cakes Ingredients: 1 2/3 cup gluten free flour blend 1 tsp baking powder 1/2 tsp cinnamon 1/3 tsp nutmeg 1/3 cup Swerve sweetener 1/2 cup raw walnuts, finely chopped 1 honeycrisp Apple, shredded 1/3 cup melted coconut oil 3 large eggs 2/3 cup coconut milk

Instructions: Preheat oven to 350 degrees. Spray or grease a 12 mini bundt pan. In a stand mixer add oil, eggs and Swerve beat well. Add the dry ingredients except walnuts and apples and beat. Add coconut milk and beat until batter is smooth. Stir in walnuts and shredded apple. Spoon batter into each mini bundt. Bake in oven for 18-20 minutes. Remove and cool.



Gingerbread Cake Ingredients: 1 1/2 cups gluten free flour blend 2/3 cup monkfruit golden sweetener 1 tsp ginger 1 tsp cinnamon 1/4 tsp cloves 1/2 tsp baking powder 1/2 tsp baking soda 6 Tbsp sofened vegan butter 2 large eggs 2/3 cup organic molasses 1 tsp vanilla 1/4 cup coconut milk 1/2 cup dried cranberries 1/3 cup raw chopped walnuts

Instructions: Preheat oven to 350 degrees. Line a 9x9 square baking dish with parchment paper. In a stand mixer add the vegan butter and sweetener. Mix. Add the molasses, vanilla and eggs and beat. Scrape sides of bowl to incoporate all. Beat again. Add the flour, spices, baking powder and soda and mix. Add the coconut milk and beat cake batter. Stir in cranberries and walnuts. Pour batter into lined pan and bake for 25-30 minutes. Remove and cool.
