By filling all the 5 compartments with water you will obtain the highest humidity effect. The spacer ring must be inserted between the aluminum water pan and the ceramic food pan to grant enough room for water.

Riempiendo con l’acqua tutti i 5 scomparti otterrete il massimo grado di umidità. L’anello distanziatore da posizionare fra la vasca-acqua in alluminio e la vasca portavivande in porcellana è necessario per lasciare sufficiente spazio per l’acqua.
By filling all or some of the 4 side compartments you will control the amount of humidity. In this case the ceramic food pan will sit on the aluminum water pan.

You can use the water pan without water. The thick aluminum water pan enables a good and even heat distribution, avoiding the overheating of the food pan.
