You Asked for It After Floyd Mayweather Jr. won his 50th fight, a few us at Sporting View headquarters wondered aloud: Who from history could have beaten him? Not Hearns, and not Hagler, we decided, but we all agreed that Sugar Ray Leonard would be up to the task. That begged the question: What other “superfights” were out there that we’d pay to see? Here’s an abridged version of what we came up with: Mike Tyson (50-6, 44 KOs, 5-foot10, 71-inch reach) vs. Joe Frazier (324-1, 27 KOs, 5-foot-11, 73-inch reach) We thought about bringing in Sonny Liston to fight Tyson, but decided that “Smokin’” Joe Frazier would provide better optics. Frazier would come in low, ducking and weaving, swinging his left hook with bad intentions, hoping to catch Tyson in the ear behind his famous Cus D’Amato-inspired “peek-a-boo” defense. Unfortunately for Joe, it’s unlikely it would have worked. When Tyson was at his peak, he was even scarier than Foreman or Liston at their meanest. Tyson would walk Frazier down, Frazier would be swinging from his heels and Tyson would lower the boom by launching him off the floor with one of his trademark combinations that ended with an uppercut. The first zone is when you’re body to body, maybe in the clinch, and you’re trading blows on the inside, usually uppercuts that sting but don’t have enough power behind them to knock you out. The second zone is when you’re a foot or two away from the other boxer and you’re really wheeling and dealing ... hooks can land, combinations are king. The third zone is what is called “the pocket.” This is where the boxer has his reach calibrated to the opponent’s head. The fourth zone is from way outside, keeping your distance from your foe, a launching ground for the boxer to come in with overhead power punches. Probably more than any heavyweight boxer in history, Joe Louis excelled in that second zone. His shots were deadly accurate and he would hit you with combinations that seemed otherworldly and with lots of power because he knew how to plant his feet. But Louis would have a major problem against Ali. During an interview between the two, Ali made one thing clear: “You’re too slow, Joe.” And he was right. Against Louis, Ali would have danced out of any trouble spots, and would have dominated both the third and fourth zones. Their fight may have gone the distance, but there is little doubt that Ali’s speed would have neutralized Louis’ power (Ali had a great chin), and he would have been the busier puncher. Garden Fresh Spanish Rice September is National Rice Month. Whether you enjoy long-grain rice or one of the many wild rice blends, rice is a nice change of pace in your daily diet. 2 1/2 cups peeled and chopped tomatoes 1/2 cup chopped green bell pepper 1/2 cup chopped onion 1 cup finely chopped cabbage 1 tablespoon Brown Sugar Twin 1/8 teaspoon black pepper 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley flakes 2 cups cooked rice

1. In a large skillet sprayed with butterflavored cooking spray, saute tomatoes, green pepper, onion and cabbage for 10 minutes, stirring often. Stir in Brown Sugar Twin, black pepper and parsley. Add rice. Mix well to combine. 2. Lower heat and simmer for 5 minutes, stirring occasionally. Makes 4 (3/4 cup) servings. Breakfast for Busy Days With the new school year upon us, it may be difficult to maintain a healthy meal schedule. Nutrition plays an important role in a successful school year for children and a productive workday for adults. Nutrition and mental alertness go hand in hand. It’s often said that breakfast is the most important meal of the day, yet 35 to 40 percent of all Americans skip breakfast. The statistics for children are just as alarming — as many as 48 percent of girls and 32 percent of boys do not eat breakfast every day. Additionally, for many children, breakfast is a trip to a convenience store or a vending machine for a soda and a high-fat, high-sugar pastry. This is definitely not the best choice for the nutrients they need, nor is it cheap. Children who are nutritionally fit are more likely to have the energy, stamina and self-esteem that enhance their ability to learn. But, as they run out the door with thoughts of seeing old classmates, joining new clubs, participating in school sports and getting good grades, they might not be paying much attention to the proper nutrition needed to accomplish all of this. For children and teens, a morning meal is especially important to prepare them to meet the challenges of learning. Many studies have shown that those who eat a morning meal tend to perform better in school, score higher on tests, have higher school attendance and less tardiness, and have better concentration and muscle

coordination. Also, children who eat breakfast have fewer hunger-induced stomachaches and are less likely to be overweight. You can make breakfast fun by planning it with your child. Decide who prepares what and work together to get it done. If your child doesn’t like traditional breakfast foods, don’t worry — breakfast food can be any food they like, even a slice of pizza. Keep quick-to-fix foods on hand or get breakfast foods ready the night before, such as mixing a pitcher of juice. If children say they’re not hungry, start them out with something light like juice or toast, and send them off with a nutritious mid-morning snack such as yogurt, cheese or a bagel.

Some children believe skipping breakfast may help them lose weight, but just the opposite is true. Skipping meals often leads to overeating later in the day. Getting too hungry can lead to a lack of control and the inability to determine when you are full. This can result in consuming more calories than if you had eaten a good breakfast. Good nutrition is crucial for social, emotional and psychological development. Teaching children how to eat healthy will enable them to establish a foundation of good nutrition and healthy lifestyle habits that will benefit them for the rest of their lives. This easy, make-ahead recipe for peanut butter and jelly scones can be a quick breakfast along with a cup of milk or a smoothie, a lunch-time treat or an after-school snack. It’s also a fun way to teach your children basic baking skills!

Heat oven to 400 F. Line a heavy baking sheet with parchment paper. 2. Combine the flours, brown sugar, baking soda, cream of tartar, cinnamon and salt in a food processor. Pulse to combine. 3. Add the peanut butter by spoonfuls to the flour mixture. Pulse until the mixture is combined and looks like sand. Transfer to a mixing bowl and stir in the berries. 4. Stir the yogurt and egg together in a small bowl and add to the flour mixture. Stir with a spoon until combined. Use your hands, if necessary, to ensure that all of the flour is incorporated. 5. Transfer dough to a lightly floured work surface and gently pat into a circle about 1 inch thick. Cut the dough into 8 equal wedges. Arrange wedges on the baking sheet and bake for 15 minutes, or until lightly browned. Let cool slightly and serve warm. Makes 8 servings. A friend of mine in England was telling me about this new series called “The Halcyon,” which she described as “Downton Abbey” in a hotel. Will that show ever come to the States? If not, do you know where or how I can see it? — Lottie F., via email “The Halcyon,” which is produced by Chris Croucher, who also produced “Downton Abbey,” is similar to “Downton,” but it’s quite different in most regards. The acclaimed U.K. series, which tells the story of a bustling and glamorous five-star hotel at the center of London society during World War II — premieres Monday, Oct. 2, at 10 p.m. ET on Ovation with eight one-hour episodes. I spoke with series star Kara Tointon recently, and she gave me the inside scoop. Kara revealed: “It’s such a compliment to have a comparison to anything that’s been so successful like ‘Downton Abbey.’ I can see the similarity because you’ve got the upstairs/downstairs element, but it’s a completely different backdrop of the hotel and storyline-wise and character-wise. The best way to watch anything is just to go in completely fresh-eyed, and just take it for what it is; you’ll get the best outcome when you do that. It’s a really warm show with a great heart, and it’s fun to get carried up by the journey.” Kara also told me about her fond memories on the set, saying: “I remember the atmosphere — there’s something about that time, as awful as it was, but it was electric and beautiful. You have the music and people just wanting to have fun; life was pretty tough, and people were just gathering together. There was a lot of love, and a lot of good things sometimes come from bad times. I just remember it being a lovely atmosphere. It was a great cast and crew, and everyone just enjoyed being at work. Choosing a Taxidermist By Craig W. Armstrong

For many people hunting and fishing is a way of life. Not that most of them survive off of the game they hunt, but rather they look at hunting and fishing as more than just a hobby. So in many case these folks want trophies of their hunts or fishing trips. That’s when they find a taxidermist to preserve their fish or animals. Choosing a taxidermist can be a very important decision. If the quality of your mount is important to you, you’ll need to do your homework. Arguably the best way to find a good taxidermist is by word of mouth. Talk to fellow hunters or fisherman. Who have they used? Are they happy with their work? Ask to see the mounts they have had done. If you have a good relationship with the person, then their recommendation is going to be trustworthy. Aside from a direct recommendation, there are many other ways to choose who preserves your prize. Try interviewing potential taxidermist and be prepared to ask a lot of questions. First, determine if they are a licensed taxidermist. In some states they must hold not only a state license, but a federal license as well. Let’s face it, with things like YouTube, there are instructional videos on just about anything. Next, ask about their years of experience. Just because they hold a license, doesn’t mean that they have experience. Ask to see examples of their work. This is the real test. If they have done quality work, they should be anxious to show it off. This will give you a good idea

of their skill level. Give the mounts a good look and ask how old they are. The older they are, the more likely they have dried out, if they are not tanned. Which bring us to the next question, do they tan the skins or use dry preservatives. Some taxidermists have success with dry preservative. The goal, of course, is to preserve the skin. Dry preservatives accomplish this, but excessive humidity or in the presence of moisture the skins can still decompose. Tanning, which entails a process of pickling and salting, removes biodegradable matter and gives the skin a better chance of staying preserved. Next, talk price. This can be very telling. If the price seems low, that probably reflects the quality you’ll receive. We have all heard, “you get what you pay for,” and we have all heard it, because it’s true. If they say they can do it cheap, get a few more estimates and compare. If they are all the same price, it may be fine, if the other bids are higher, there is probably a reason. You should be talking to more than one taxidermist anyway. If you are proud enough to get this animal or fish mounted, do it right and don’t scrimp on the quality. Finally, ask them if they have won any awards and if so, which ones. Were these amateur or professional competitions? Ask to see the awards. The art of taxidermy is just that, art. Not everyone has the skill and imagination to make these trophies come back to life…so to speak. These trophies not only show your skill as a hunter or fisherman, they will be a lifetime reminder of the adventure you had when you took them. Take your time, talk to people, do your research and pick a professional who will give you the quality you deserve.

It’s this usage of sodium that requires the purchase of salt. Water softener salt consists of either sodium or potassium chloride and comes in different forms. The type of salt needed depends on the type of water softener used, the number of people in the home, the amount of water used and how easy the softener is to access and maintain. The types of water softener salt include: • Evaporated salt comes from mining underground deposits of dissolving salt from which the moisture is then evaporated. It is the most expensive type of salt but leaves less sediment to clean up. • Rock salt is a naturally occurring mineral in the ground. It is cheaper than other types of salt, but because it contains some non-water soluble material, the softening reservoir must be cleaned on a regular basis. • Solar salt occurs naturally through evaporated seawater and comes packaged in pellets or crystals. It has more water-soluble material than evaporated salt and will cause faster buildup if salt usage is high. That means the reservoir must be cleaned more often. Some softeners are designed for the use of specific products, and using salt other than what is recommended could affect the performance of the softener. If evaporated salt is used instead of rock salt or mixed with it, the softening reservoir could become clogged. It is best to use the salt that is recommended, and if that is not possible, it is best to wait until the softener is empty before using a new type of salt. When shopping for a water softener, make sure you go in armed with knowledge of what you need. Do some comparisonshopping and buy from a reliable dealer. Make sure the warranty is reasonable and find out if installation fees are included in the cost. Don’t be afraid to ask the dealer for customer names and check with them to see if they were happy with the equipment and service.

Rust Be Gone By Tresa Erickson

As a vehicle owner, you have probably dealt with rust at some point. No matter how well you take care of your vehicle, rust spots may appear, and the longer you own your vehicle, the more likely you are to encounter it. Fortunately, there are ways to deal with rust and help prevent it. To protect vehicles from rust, manufacturers apply a variety of protective coatings, including lacquers and resistant paints. The thicker the coatings, the better chance the vehicle will not rust. However, common nicks, scratches and

dents will penetrate coatings and expose the surface to corrosive elements, like water, dirt and salt. Over time, the surface will develop rust. If left untreated, the rust may eat through the surface, leaving unsightly holes. The most common areas where rust occurs include doors, bumpers, chrome-plated trim, hinges and brackets, and any other places prone to nicks, scratches and dents. There are several measures you can take to protect your vehicle. First, cover paint nicks quickly. If you don't have any touchup paint on hand, use some clear nail polish to seal the area. Then get to an auto supply store for some touchup paint. For the exact color of your vehicle, check the identification plate for the paint code number. If you don't know where the identification plate is, consult your owner's manual. Keep in mind that unusual paint colors may have to be ordered. Next, mend any scratches you see. Pick up a scratch repair kit at an auto supply store and follow the instructions. Finally, repair any dents that occur. Unless you're an auto body specialist, you probably won't be able to fix the dents yourself. Ask around and find a service specializing in paintless dent repair. Preventive care is key in deterring rust. Avoid parking your vehicle outside for long periods of time. Elements, like the sun and rain, are hard on a vehicle's surface. Wash and wax your vehicle often. Make sure you use a cleaner and a wax that is appropriate

for your vehicle's finish. If you live in an area with harsh winters, consider having your vehicle, especially the undersurface, professionally undercoated. Rust can make any car look old. Fortunately, keeping it at bay isn't difficult. With some maintenance and preventative care, you can keep your car free of rust and looking like new for a long time.
