Greetings from Costa Rica!

Bayer’s Costa Rica Greenfield (CRGF) Program continues to make great progress toward our goals, because of the collective efforts from our team members around the globe.

Under the very unique circumstances of a global pandemic and its impact on our personal and professional lives we have worked in a virtual fashion, spanned large time zone differences and navigated the language and cultural variety in our teams. All these challenges have helped us form a strong, diverse team, working together for a worthy cause!

As we have gotten to know each other, one common passion has stood out: FOOD! Regardless of where we live in the world, we bring a shared love of food and its connection to our families, friends and memories.

Our shared passion spawned an idea to create a digital cookbook, to share our “recipes for success” from colleagues around the world. We invite you to use this cookbook to experience the world beyond your own kitchen, learning about the foods and memories that our team members cherish.

We also look forward to our site canteens in Finland and Costa Rica (and possibly other Bayer sites?) occasionally preparing recipes from this cookbook. Even though we won’t all be seated at the same table, the foods will remind us of our interconnectedness, diversity, and reliance on one another to enable achieving our company vision of “Health for All”.

We are excited to share this digital cookbook as a gift with you as part of our official groundbreaking event on October 5, 2021. We hope you will prepare and enjoy these recipes and experience great health and joy!

• Jugo de Limón 500 ml • Culantro 100 g • Cebolla 100 g

Ceviche

• Chile Dulce 100 g • Sal y pimienta 1 tsp • Pescado 1 kilo

En un recipiente de vidrio, exprima el jugo de limón, corte en trozos pequeños el pescado, y agréguelo al jugo de limón. Pique el culantro, la cebolla y el chile dulce y agréguelos a la mezcla. Agregue sal y pimienta. Déjelo marinar durante la noche.

Sírvalo con salsa de tomate, mayonesa, galletas saladas, aguacate y disfrute.

• Lemon Juice 500 ml • Cilantro 100 g

Ceviche

• Onion 100 g • Chile Dulce 100 g • Salt and pepper 1 tsp • Seabass 1 kilo In a glass container, squeeze the lemon juice, cut the seabass in small pieces and add it to the lemon juice. Chop the cilantro, onion and chile dulce and add to the mix. Add salt & pepper. Let it marinate overnight.

• 16 oz de filete de pescado de bacalao grueso (2 x 8 oz) • ½ taza de pan rallado estilo panko sazonado (o puede usar ½ taza de galletas Ritz Crackers trituradas) • ½ taza de queso parmesano rallado • 1 cucharadita de pimienta negra • 2 cucharadas de mantequilla (salada) en rodajas pequeñas • 2 huevos (batidos / revueltos • 1 pizca de tu mezcla de especias de pescado favorita Mezcle el pan rallado, las especias y el queso en un tazón. • 1 taza de frijoles rojos cocinados • 3 tazas de arroz blanco cocinado • 1 cebolla picada finamente • 1 chile panameño

Frijoles y Arroz Caribeño

• 4 ajos triturados • 1 cucharada de jengibre rallado • 3 ramas de tomillo fresco • 1 ½ taza de leche de coco • ½ taza de caldo de pollo o pescado • 2 cucharadas de aceite vegetal • Sal y pimienta En una sartén, sofría la cebolla, el chile, el ajo y el jengibre.

Luego incorpore la leche de coco y el caldo. Sazone con sal, pimienta y tomillo.

Añada el arroz y los frijoles y mezcle todos los ingredientes muy bien.

• 500 gramos de frijoles cubaces (rojos grandes) ya cocidos • 300 gramos de arroz blanco, ya cocido • 500 gramos de chicharrón de cerdo • 1 kilo de tomates • 1 paquete de cilantro • 1 cebolla grande • 2 limones • 1 aguacate

Chifrijo

• 1 paquete de tortillas tipo Nachos • Sal Para hacer el pico de gallo: se cortan los tomates, la cebolla y el cilantro lo más pequeño posible. Se coloca en un bol, se remueve y se le añade limón al gusto.

El arroz y los frijoles se cocinan como usualmente se hace. Los frijoles dejándolos en remojo toda la noche antes de cocerlos, y el arroz blanco, con ajo y sal.

Freír los chicharrones en abundante aceite. Reservar en papel absorbente para retirar el exceso de grasa.

Para montar el plato: en un plato hondo se colocan los frijoles con algo de su caldo.

Luego se sirve arroz por encima, trozos de chicharrón, después el pico de gallo y bordeando el plato los triángulos de tortilla. Se cortan rodajas de aguacate y se colocan una o dos en cada plato.

Para una máxima experiencia, sírvase con una cerveza.

Reis und Bohnen werden wie gewohnt gekocht. Die Bohnen vor dem Kochen über Nacht einweichen lassen, und der weiße Reis mit Knoblauch und Salz.

Die Schweineschwarte in reichlich Öl anbraten. Auf saugfähigem Papier aufbewahren, um überschüssiges Fett zu entfernen.

Zubereitung der Schüssel: Die Bohnen mit etwas Brühe in eine tiefe Schüssel geben.

Dann wird Reis darauf serviert, Schweineschwartestücke, dann der Pico de Gallo und die Tortilla-Dreiecke, die den Teller begrenzen. Avocadoscheiben werden geschnitten und ein oder zwei werden auf jeden Teller gelegt.

Sin esperar a nada, cogió un plato y le colocó frijoles, arroz, unos chicharrones que había y por último le agregó pico de gallo, o chimichurri. El cocinero probó esta combinación y le gusto.

Personalmente es una de mis comidas favoritas y suele servirse durante fiestas familiares. Cuando viajo fuera del pais, uno de los primeros platos que busco consumir es un buen chifrijo con una cerveza.

Chifrijo is a recipe created in the nineties in a well-known bar in the capital of Costa Rica, San José. Cerdo a la pimienta picante

Ingredientes principales: cubos de cerdo y mucho amor Otros ingredientes: 1 libra de cerdo, 1 cebolla morada, 1 cucharadita de pasta de ajo y jengibre, 3 cucharaditas de guiso en polvo o pimienta en polvo, 2 cucharaditas de vinagre, 1 bolsita de azúcar o edulcorante, ½ cucharadita de sal, 2 bolsitas de salsa de tomate, 3 cucharaditas de aceite, 2 hojas de cilantro.

Hubo un concurso de comida en una organización sin fines de lucro en 2019 y decidí inventar algo propio y participar en el concurso de comida. Para mi sorpresa, obtuve el primer lugar en el concurso y decidí compartir esta receta aquí.

Dukra es cerdo y DukraMass es cerdo en mi idioma nativo. Vi que había puntos adicionales para la creatividad y traté de ser creativo al nombrar el plato. Nombré el plato como DukrAss. My favorite meat is pork and beef and I love spicy food. There was a food contest in a non-profit organization in 2019 and I decided to invent something of my own and participate in the food contest. To my surprise, I got the first place in the contest and I decided to share this recipe here.

Salmón Toscano

•3 Tbsp butter •1.5 c cherry tomatoes (halved) •2 c baby spinach •0.5 c heavy cream •0.25 c parmesan cheese •Salt, pepper, basil, parsley (to taste) Season salmon fillets w salt and pepper. Add EVOO to pan… sear med-high heat (skin side up) for 5 min. Flip and cook additional 2 minutes. Remove from pan.

Add butter and garlic, cook for 1 min. Add in tomatoes, salt/pepper. When tomatoes begin to ‘burst’, add spinach.

Turn heat to low, add heavy cream, parmesan, and herbs.. Simmer 3 min.

Return salmon back to pan, spoon sauce over the fillets, simmer 3 min.

Plate and serve with your choice of vegetables and rice/pasta dish (it is great with a mushroom risotto!)

Toskanischer Lachs

Esta receta es heredada de mi abuelo y luego de mi padre. Es sencilla pero siempre fue un delicioso postre que al ser tan facil de hacer estaba presente en las reunions familiares mas importantes.

Zum Servieren Puderzucker, Apfelmuß Eiweiß mit dem Schneebesen steifschlagen, dabei 50 Gramm Zucker einrieseln lassen bis Eiweiß fest ist und seidig glänzt.

Zur Seite stellen. Eigelb mit Vanillezucker, Salz verrühren, abwechselnd Mehl und Milch hinzufügen, nur so lange rühren bis alles vermischt ist.Jetzt vorsichtig das Eiweiß unterheben.

In einer großen Pfanne 30 Gramm Butter mit dem Öl erhitzen. Teig einfüllen und bei mittlerer Hitze goldgelb backen- etwa 5-8 Minuten, immer wieder schauen, dass nichts anbrennt. Dann den Teig in vier Stücke teilen, in der Pfanne wenden und ebenfalls goldbraun backen. Anschließen Dann den Kaiserschmarrn mit zwei Pfannenwendern in mundgerechte Stücke reißen, die 30 g Butter hinzufügen und die restlichen 45 g Zucker darüber streuen. Die Hitze auf mittlere bis hohe Stufe stellen und die Stücke mit einem Spatel etwa 3 bis 4 Minuten lang gelegentlich wenden, bis der Zucker karamellisiert ist.

Zum Servieren mit Puderzucker bestäuben und Apfelmuß separat reichen.

Nach Geschmack können noch Rumrosinen während des Backens auf den Teig gegeben werden
