At the conclusion of a fishing trip, the king crab is sorted and cleaned. All king crab is cooked to perfection before being dipped in a quick freshwater rinse, which creates a protective glaze. The final step for fish and king crab is a flashfreezing process that locks in perfect taste and texture.

3. PACK

Your order is packed in insulated, eco-friendly boxes with liners, air cushions and more than 5 lbs. of dry ice to keep every item in great condition until it arrives at your door the next day (and if you’re not home it will stay frozen until you get home from work, too).

4. SHIP

We ship everything overnight because we insist on quality — and the best way to guarantee perfection is to minimize touch points and maintain temperature. Any opportunity for preemptive thaw (think: your grocer’s chill chest or a three-day shipping estimate) degrades the quality.

5. ARRIVE

Nothing says “fun get-together” like a table full of crab legs waiting to be devoured! Wash down the exquisitely rich, buttery decadence of king crab legs with a crisp pilsner. Together, each elevates the other’s flavor, taking your next crab feast to a whole new level.

Since this dish’s fish is typically fried in a thick batter, it’s best to balance that with a lighter, easy-drinking beer like a pale ale. Plus, the floral and citrus notes in a pale ale complement the lemon and vinegar you’ll spritz atop your fish.

TIPS & TRICKS TO MAKE YOUR OWN CEVICHE SAFELY AT HOME

AVOID FRESHWATER FISH

Eating freshwater fish raw can come with some additional risks, so it’s best avoided. Stick to fish from the sea that has been sustainably caught and sourced.

USE FROZEN FISH

Ceviche is a fresh, flavorful and delicious way to eat seafood born from coastal South American cuisine. More specifically, it’s a seafood dish where diced cubes of raw fish marinate in a lemon or lime juice mixture, and the reaction of the citrus juices cures the fish protein and causes it to become opaque and firm while absorbing flavor that achieves the a similar effect from heat cooking. While traditional ceviche uses white fish — typically grouper, rockfish or sole ­— you can use a wide variety of seafood to prepare it, including shrimp and even crab. With the proper high-quality seafood you can make this refreshing summertime treat at home.

It might be tempting to get fresh fish to make your ceviche, but frozen actually comes with less risk. And for ceviche, higher quality is always better. Look for a wild caught and flash frozen white fish, like cod or halibut. You want the texture to be firm and the flavor subtle.

USE A VARIETY OF CITRUS

While lime is the most commonly used citrus for ceviche, a combination of citrus yields the best flavor. Try combining three parts fresh lime juice, two parts fresh lemon juice and one part fresh grapefruit juice for variety. Make sure you have enough juice to fully soak the chunks of fish.

PRACTICE PATIENCE

Ceviche takes time to marinate. In order for the citrus acid to effectively cure the fish, you should let it soak in the juices for at least 30 minutes, but ideally longer. However, it’s a fine balance: too long and your fish might start to pickle. Aim for the sweet spot of around one hour, but no more than two. And don’t forget to zest your citrus and include that in your mix — it’ll enhance the flavor even further.

Vegetables like tomatoes, onion, jalapeño and corn, as well as seasonings like cilantro and salt, are essential for making your ceviche as delicious as possible. Play around with combinations and flavors that you like until you find your perfect formula.

Shrimp or Prawns?

learn the difference between the two From being different species, to coming from different habitats, these tasty crustaceans each have distinct qualities that make them ideal for different occasions. The most noticeable differences are size and taste. In most cases, prawns are larger than shrimp and tend to have a slightly sweeter taste. No matter what you decide, quality is always most important. The majority of farmed shrimp comes from regions where regulations are limited. That’s where we come in!

OISHII WHITE SHRIMP

These shrimp are processed fresh and by hand, ensuring they arrive in your kitchen with the highest quality color, taste and texture. In addition to being responsibly and sustainably sourced, Oishii shrimp are also free from artificial preservatives, added hormones, phosphates and antibiotics. Backyard Lobster Rolls

Add a touch of sophistication to your backyard gatherings this summer. With just the right fusion of lemon zest and tarragon flavor, we’re willing to bet you won’t find a recipe as close to the real thing without heading up North.

Backyard Lobster Rolls INGREDIENTS: 1 cup mayonnaise 2 Tbsp tarragon white wine vinegar 1 garlic clove, grated on a microplane 2 lemons, zest and juice of Kosher salt (to taste) 2 celery ribs, diced small 36 tarragon leaves, cut in thirds; crosswise 12 tarragon leaves (for garnish) 16 oz cooked lobster (try our Australian Lobster Tails) FOR THE DRESSING: Add the mayonnaise, white wine vinegar, garlic, lemon juice and zest from 1 lemon, salt and crosswise cut tarragon leaves in a medium-sized mixing bowl. Taste and add salt or additional lemon juice to achieve the desired flavor. FOR THE TOASTED BUN: Add a generous sprinkling of salt to the split-top buns and toast/broil then top with clarified butter. Add another sprinkle of salt as the butter heats to ensure maximum flavor. FOR THE GRAND FINALE: 1. Place cooked lobster in a large mixing bowl. 2. Season with four pinches of kosher salt and add 1/2 cup of lobster dressing. 3. Toss in diced celery. Mix to coat. Taste. 4. Achieve your desired consistency by gently adding more dressing for a thicker consistency or a teaspoon of lemon juice (at a time) to thin the dressing’s consistency. 5. Add a small pinch of salt after each adjustment. 6. Add an equal portion of dressed lobster salad to each of the toasted, split-top buns. 7. Garnish each sandwich with remaining tarragon leaves, and enjoy!
