According to the American Society for the Prevention of Cruelty to Animals, approximately 3.2 million cats enter animal shelters across the United States each year. A sizable number of cats also enter shelters each year in Canada, where Humane Canada® reports just under 61,000 cats were taken in by shelters in 2021. Beat the heat with smoked pulled pork

Outdoor cooking is a staple come the warmer weather. When the dog days of summer arrive, few people want to spend time turning on the oven or standing by the stove. That’s when mastering grilling or barbecuing becomes so essential.

Many people now have smokers in their outdoor cooking arsenals. The slow and low style of cooking imparts rich, smokey flavor and can create tender, fall-off-the-bone results wrapped in a delicious bark. Brisket and ribs are some of the foods associated with barbecue, but a perfect pulled pork recipe can yield juicy sandwiches or main courses accompanied by cornbread or cole slaw. Get barbecue ready with “Competition-Style Pulled Pork” from “BBQ Revolution” (Quarto Publishing Group) by Mitch Benjamin, author and Char Bar restaurant owner.

Competition-Style Pulled Pork Serves 12 to 14

10 to 12-pound bone-in pork butt (Boston butt)

1 cup Meat Mitch Competition WHOMP! Rub

1 cup pork injection, mixed according to the package directions (optional) Apple juice

1 bottle (16 ounces) Stubb’s Pork Marinade (optional)

1 bottle (21 ounces) Meat Mitch

WHOMP! Naked BBQ Sauce

1 tablespoon honey

Greens (Such as parsley, lettuce, or kale to create a serving bed)

Fire up your smoker to 225 F with a good smoke rolling and get ready for battle. The meat will have a big fat cap on it, and you should trim that down to a thin layer. The meat contains a large amount of fat throughout, so don’t worry about it drying out; it will be plenty moist. Then, you need to focus on the money muscle, trimming the meat to look like a log, which exposes as much money muscle as possible for seasoning, smoke, and bark.

Once you have trimmed the meat, it’s time to inject. This is the fun part — load up your injector or syringe and pump that bad boy full of juice, injecting it randomly all over the meat, until it is packed full. After you have loaded it up, make sure to pat the meat dry with paper towels. Then, cover liberally in Meat Mitch Competition WHOMP! Rub and let it sit for about 30 minutes to sweat.

With your meat ready and your smoker rolling at 225 F, place your meat inside the smoker. Feed the fire with some unlit charcoal and chunks of pecan and cherry. Close it up and make sure you have plenty of charcoal and pecan and cherry wood. You’ll be smoking for approximately 6 hours. Every 30 minutes, open up the smoker and spray the meat with apple juice. (Put about 1⁄2 cup of apple juice in a spray bottle for this.) After about 6 hours, check the meat to see if you’ve achieved that mahogany bark.

When this bark is achieved, lay the pork on a big sheet of aluminum foil. Pour the Stubbs Pork Marinade around the base of the meat, close up the foil, and return the meat to the smoker. This step essentially steams the meat and breaks it down

to achieve the tenderness you want; keep the smoker at 225 F. This stage usually lasts 3 hours, but it can always vary. At the end of the cook, you are watching for internal temperature to reach the target goal of 197 F. You don’t want it so tender that the money muscle falls apart. Remove the meat from the pit and open up the foil to let out the steam. Then, close it back up and place it in a dry cooler to rest for at least an hour. (I have let it rest for up to 4 hours, and it was great.)

Next, doctor up your barbecue sauce. Take a bottle of Meat Mitch WHOMP! Naked BBQ Sauce and pour it into a pan along with enough apple juice and honey to thin the sauce and make it slightly sweeter. Also, the honey adds to the shine. Remember, judges eat with their eyes first. Heat the pan on the back of the smoker box, making sure to stir frequently so it does not burn.

Finally, it’s time to break down the meat. Carefully carve out the money muscle, keeping it as a perfectly shaped loaf, move it to a separate pan, and cover it with foil to keep it warm. It’s time to remove the bone. It should slide out easily and clean — if so, job well done! Chunk the remaining meat, paying close attention to the bark, trying to capture the best pieces. Separate the meat into nice barky chunks and tubes and then pull and slightly shred the remaining pork. Lightly glaze the meat with sauce, making sure not to add too much. Cover the pan with foil and set aside. Turn your attention to the money muscle. Brush the muscle with sauce; add just a light coating. It should glisten with the honey in the sauce. Next, carefully slice it into even pieces, but make sure to keep the loaf shape

Grilling season presents ample opportunities to explore new culinary horizons. Just about anything that can be cooked indoors also can be prepared outdoors over an open flame. And many foodies insist that grilling produces unique flavors that simply cannot be replicated when cooking via other means.

Individuals looking to stray from grilling season staples like hot dogs and hamburgers can try this recipe for “Mojito Fish Steaks” courtesy of Andrew Schloss’ “Cooking Slow: Recipes for Slowing Down and Cooking More” (Chronicle Books).

Mojito Fish Steaks Makes 4 servings

4 firm-fleshed fish steaks, such as salmon, swordfish, kingfish, or sable, each 6 to 8 ounces, about 3⁄4inch thick

2 tablespoons olive oil, plus more for brushing

Sea salt and freshly ground black pepper

For the Mojito Mop:

3 tablespoons light rum Juice and finely grated zest of 1 large lime

1 tablespoon canola oil

1 teaspoon hot-pepper sauce

1 tablespoon sugar

4 tablespoons chopped fresh mint leaves

Light a grill for indirect low heat, about 200 F. If using a charcoal grill, build a small charcoal fire at one end of the grill. If using a gas grill, set a burner at one end of the grill to medium-low. Put the grill grate on the grill and clean the grill grate with a wire brush. Coat the fish steaks with 2 tablespoons olive oil and season with salt and pepper. Set aside for 5 minutes. Meanwhile, make the mop: In a small bowl, stir together the rum, lime juice, canola oil, hot-pepper sauce, sugar, and 3 tablespoons of the mint leaves. Brush the grill grate with olive oil. Put the fish on the grill away from the heat, spoon 1 tablespoon of the mop over each fish steak, cover the grill, and cook until the fish steaks flake to gentle pressure, about 1 hour, basting with mop about every 5 minutes. Serve each fish steak scattered with the remaining chopped mint and the lime zest.

Memorial Day weekend travel tips

Certain times of year inspire more travel than others. Memorial Day weekend certainly fits that bill. AAA estimated 44 million people traveled during Memorial Day weekend in 2024, and that popularity is at least in part due to the holiday’s reputation as the unofficial beginning to summer.

A Memorial Day weekend getaway can be just what people need to get into the summer swing of things. With summer set to kick off, even if only unofficially, travelers can consider these tips to make the most of this popular time to travel.

• Book early. Whether Memorial Day weekend travelers are flying or traveling by bus or train, it’s important to book reservations as early as possible. Flights on popular travel weekends fill up quickly, so booking early can increase the chances flyers will be able to depart and return at the time of their choosing. The same goes for bus and train travel. Lodging also can fill up quickly, so book hotel reservations or reserve stays through sites such as Airbnb as early as possible. Booking early can help travelers ensure they aren’t shut out of their desired destination, and it also can save money, as rates tend to go up the closer one gets to the travel weekend.

• Time your travel. Memorial Day weekend motorists might want to get on the road before the sun rises. Leaving early, when there are fewer cars on the road, reduces the chances of being caught in a traffic

jam. If pre-dawn is simply too early, AAA indicates it’s best for Thursday and Friday travelers to be on the road prior to 11 a.m. Leaving after 7 p.m. on Thursday or 8 p.m. on Friday is best for those who must travel at night. Travelers taking to the air or the rails might also benefit by leaving on Thursday and/or returning on the Tuesday after Memorial Day to reduce time spent in crowded airports or train stations.

• Expect delays. Travel delays can be stressful, but they’re nearly inevitable during peak travel periods like Memorial Day weekend. Parents traveling with young children can plan for travel delays by packing extra snacks and downloading extra entertainment onto kids’ tablets. Adults traveling without children can build delays into their itineraries and consider them before booking dining or entertainment reservations on the day of their arrival.

• Limit luggage. Memorial Day weekend tends to feature ample sunshine and warm weather, which makes it easier to travel light. Air travelers can pack just a carry-on so they don’t have to wait at the luggage carousel or worry about potentially lost bags. Car and train travelers also can pack light so they have more room to maneuver.

Memorial Day weekend is a busy time to travel. A handful of strategies can make this year’s travels a little more manageable.

• RIDE SINGLE FILE: ride two abreast only if you’re not impeding the normal flow of traffic, or if you are both on the shoulder.

• BE VISIBLE: Never assume Motorists see you or that you have the right of way. Use a headlight, tail light and reflectors at night and early morning.

• SHOUT IT OUT: Colorado law requires you to give and audible cue when approaching or overtaking another trail user. A friendly “Hello- on your left” or ringing a bell is appropriate.

• WHO YIELDS ON A TRAIL: Bicyclists, skaters, walkers and others yield to equestrians, Bicyclists and skaters yield to walkers, Bicyclists yield to skaters, Downhill users yield to uphill users, faster users yield to slower users.

• THINK GREEN: Respect wildlife, never spook animals and leave no trace. Stay on existing trails and don’t create new ones. Pack out at least as much you pack in.
