CREAMY TOMATO SOUP & SOURDOUGH GRILLED CHEESE

Tomato Soup Ingredients:

6 cups cherry or grape tomatoes (about 2 pints)

2 medium onions, quartered

4 garlic bulbs, tops removed

2 tablespoons olive oil

1 bunch fresh thyme

1 bunch fresh rosemary

1 tbsp dried oregano

Salt and freshly cracked black pepper, to taste

4 cups vegetable or chicken broth

1 cup grated Parmesan cheese

1/2 cup milk or coconut milk

Fresh basil for garnish (optional)

Sourdough Grilled Cheese Ingredients:

8 slices sourdough bread

2 tbsp softened butter or mayo (for spreading)

1 ½ cups shredded sharp cheddar cheese

1 cup shredded mozzarella (or Gruyère for a twist)

Optional: a pinch of garlic powder or truffle oil

Instructions:

1.Roast the tomatoes. Heat oven to 450°F. Quarter the tomatoes (or halve them, if they are small) and arrange them cut-side-up on a baking sheet. Drizzle evenly with 2 tablespoons of the olive oil and season with a few pinches of salt and black pepper. Bake for 30 to 40 minutes or until softened, then transfer baking sheet to a wire rack

2 Sauté the onion and garlic. Meanwhile, heat the remaining 1 tablespoon of olive oil in a large stockpot over medium-high heat Add the onion and sauté for 5 minutes, stirring occasionally Add the garlic, smoked paprika and crushed red pepper flakes and sauté for 2 more minutes, stirring frequently

3.Put it all together. Add the broth, basil, and the roasted tomatoes (once they are ready) with their juices and stir to combine.

4.Purée. Using a handheld immersion blender (or see instructions below for using a traditional blender), purée the soup until it reaches your desired texture.

5.Season. Taste the soup and season with extra salt, pepper, and/or smoked paprika as needed Add shredded parmesan cheese and heavy cream

6 Make the sandwiches: Warm up your griddle butter the sourdough and add a little bit of truffle oil if you like Add the cheddar and mozzarella and brown until it has a gooey center and browned bread

7 Serve. Serve warm, garnished with any extra toppings you would like, and enjoy!

BISHOPS LODGE

My little family had the opportunity to visit Bishops Lodge over the Fourth of July I couldn't help but highlight it as a fall destination as the fall leaves and laid back vibes of Santa Fe would be the perfect weekend getaway We found Bishops Lodge was perfect for bringing little people and even dogs! The pool was spectacular, and on-site hiking trails were a plus. You’ll want to curate your own Bishops Lodge style back with you as their decor is divine!

FALL VIBES ON THE RANCH

The air turns crisp as the first hints of fall settle over the ranch, and with it comes a rhythm that feels as old as the land itself. The mornings are cool enough to see your breath, and the sun rises slower, casting long golden shadows over the fields. The horses’ coats grow thicker, and the cattle seem to sense the change, moving with a quiet urgency as if they know winter isn’t far behind.

Fall is a season of preparation. The hay is stacked high, a testament to the long summer days spent cutting, baling, and hauling. The smell of it lingers in the air, sweet and earthy, mixing with the faint tang of wood smoke from the stove. There’s a comfort in knowing the animals will have enough to eat when the snow comes.

Fall Gathering

The work of finding and shipping cattle back home is no small task it’s a dance of patience, grit, and a good bit of luck. Fall is the season for it, when the air is sharp and the land begins to whisper of winter The cattle, scattered across the open range, have spent the summer grazing, growing strong on the grass Now it’s time to bring them in, to gather what’s ours and send them on their way.

There’s no artist like the Good Lord Himself, and nowhere is that more evident than in the colors of fall on the ranch. It’s as if He takes His brush and paints the world anew, each stroke more breathtaking than the last. The land, so familiar and steady, transforms into a masterpiece that feels almost too beautiful to be real.

GODSARTWORK

The cottonwoods along the creek are the first to change, their leaves turning a brilliant gold that shimmers in the sunlight like coins scattered by a generous hand The aspens follow, their yellows so bright they seem to glow, even on the cloudiest days The oaks and maples add their own hues to the palette deep reds, fiery oranges, and rich browns that remind me of the earth itself. Together, they create a patchwork quilt that stretches as far as the eye can see

The grasses in the pastures take on their own autumn tones, fading from summer’s green to shades of amber and rust. When the wind moves through them, it’s like watching waves on a golden sea, each ripple catching the light in a way that makes you stop and marvel Even the sky seems to join in the display, its blues deeper and more vivid, as if to frame the colors below.
