The Maxwell Pumpkin Farm is hosting its annual Fall Days with its giant corn maze as the centerpiece, every Saturday and Sunday now through Oct. 31. This annual tradition has grown from a small 5acre pumpkin patch to a vast 80acre venue that hosts more than 30 events for families to enjoy. Annually, the farm attracts more than 60,000 visitors and was one of the few venues that was able to accommodate families when COVID19 was at its peak last year due to the space it provides outside. More than 40,000 people still came to participate in last year’s fall festival, even with socialdis tancing guidelines. “This is oldfashioned fun. People can bring their camera to capture the experience of having fun in the outdoors,” said Kim Wagner, the “pardnership coordinator” and marketing director for Maxwell farms. Among the traditional attractions will be an obstacle maze, sunﬂ ower ﬁ elds, bunny village and multiple slides and bounce house areas for kids to enjoy. There will be apple can nons and a paintball target area for those who want to test their marksmanship. Added this year were Corn Hole Acres, Barnyard Bubbles and a low ropes course to challenge those that want more physical activities.

For those who want to capture the beauty of the farm, there are various photo opportunities throughout the vast landscape. Animal feeding will be available as well with don keys, llamas and other barnyard friends. Many traditional fair foods will be available such as corn dogs, kettle corn and funnel cakes. There will be a new build ing that will be serving various kinds of barbequed items. On Oct. 23, the farm will have a ﬁ reworks display begin ning at 8:45 p.m. each of these nights. Larry Borger, who has owned the pumpkin farm for the past 14 years, spoke glowingly of having families come and enjoy his farm and said he continues to try to make it as great an experience as he can for the whole family. “It’s just so good to have the opportunity to host family and friends outside on our 80 acres to move around and spread out to make memories with each other,” Borger said. Farm Pass tickets are $15.95 (plus taxes and fees) if pur chased in advance online, or $20.95 if purchased at the gate. Children ages 2 and younger are admitted for free. Super passes and season passes are also available for purchase for a slightly higher fee. West Texas wine industry

used to make bottles of grape juice—at least not technically. These are wine grapes, most of which are grown in the Texas High Plains American Viticultural Area. The Texas High Plains AVA is the second largest

However, most people would not equate West Texas with wine; most would think of cot ton farming or oil production. While the Texas wine industry is young, it has rapidly expanded to a multibilliondollar industry, with wineries and tasting rooms popping up all over the high plains, including Lubbock, Canyon and beyond.

A long history The history of wine in West Texas begins centuries ago; Spanish missionaries estab lished some of the ﬁ rst vineyards in North America in 1659, near what is now Juarez, ac cording to The History of West Texas Wine by Katherine Crain and Neil Crain. These grapes were planted by Father Fray Garcia for sacra mental wine. Once planted, it can take two or three years for vines to produce wineworthy fruit. The ﬁ rst record of wine in the area is in 1662. Father Garcia planted, what is believed by historians to be, a Spanish Black, or Lenoir grape, native to Europe, according to Crain and

Crain. Centuries later, Old World varietals, or grape varietals native to Europe, ﬂ ourish on the High Plains. The Texas Agricultural Experiment Sta tion in Lubbock conducted a grape growing study in the High Plains from 1909 to 1937, according to Wine Enthusiast. The experi ment was eventually sidelined, as the sta tion turned its attention to cotton produc tion. Interest in grape growing was renewed in the 1950s by Dr. W.W. Yocum, a horticul ture professor at Texas Tech. He began planting vines in research plots around campus. Texas Tech underwent expansion in the 1960s, and the construction threatened some of the plots. Robert Reed, a professor of horticulture, salvaged some of those San giovese vines and planted them in his back yard for ornamental cover and shade in 1962. By 1966, those vines produced wine ready grapes. Reed, and eventual business partner, Clinton “Doc” McPherson, knew they were on to something. McPherson, a chemistry professor at Texas Tech, began planting grapes in 1966 to determine which varietals were well suited to the arid climate. His ex perimental vineyard contained more than

This experimentation paid off , and McPherson and Reed opened Llano Estaca do Winery, the fi rst postProhibition winery in Texas, in 1976. The Texas Wine industry exploded fol lowing McPherson’s initial experimental vineyard; by 1990, 1,300 acres of the high plains were producing 17 wine varietals, ac cording to Wine Enthusiast. Two years later, McPherson submitted a whopping 112page

application, which would designate the Texas High Plains AVA. This application in cluded information detailing the climate, geology and history of the area. The AVA was offi cially established on March 2, 1993. In the last 30 years, the Texas wine in dustry has experienced exponential growth; Texas is now in the top fi ve largest producers of wine in the United States. The state’s wine industry accounts for more than $13 billion worth of economic value to the state and there are now hundreds of wineries, according to an article in Seven FiftyDaily in July 2018. When we can fi nd the original source, let’s cite that instead of other media There is a strong connection between Texas Tech and the wine industry, said Ed Hellman, a professor of Viticulture and Enology based at the Hill Country Univer sity Center. Hellman entered the Texas wine scene in 2000 and has seen remarkable transforma tion in the last two decades, he said. Many other states tried experimenting with wine making and grape growing, but nobody’s in dustry has grown more rapidly or exponen tially than Texas. “And, you know, Texas is becoming

known as a wine state,” Hellman said. “And where I’m at, here in Fredericksburg, it’s a wine tourist destination. I mean, people are coming here speciﬁ cally, to visit the winer ies and taste the wines. So, I mean, that’s a remarkable transformation.” A contributing factor to this economic prosperity was a direct shipping bill passed by the Texas legislature in 2005, according to a June 2021 article in The Lubbock Ava lancheJournal. This bill allowed wineries to ship products directly to consumers both in and out of state. Prior to the bill, there were just 40 wineries in Texas; now there are more than 400.

as ﬁ ve million acres of it are planted on the Llano Estacado but many cotton farmers capitalized on the wine boom by adding grapes to their crop portfolio. Grapes are more durable than cotton and require a frac tion of the water. The annual rainfall in West Texas is nearly enough to support the vines, so vineyards can rely on supplemental irri gation for their crops. The High Plains AVA extends from just east of the New Mexico border to just south of Amarillo. The AVA intersects with the Lla no Estacado, which is the ﬂ attest plain in the western hemisphere and larger than New England, according to Wine Enthusi ast. The AVA is characterized by long, hot days which allow grapes to mature and rip en fully. The cool desert nights balance

acidity, Hellman said. The sandy, clay soil is well suited for grape growing because it is easily irrigated. The soil is also low in nutri ents, but this actually allows grape growers to have more control over their product by allowing farmers to determine what unique cocktail of nutrients to add for the best tast ing results. This combination of factors creates a “fa vorable growing environment,” Hellman said. There is an abundance of sunlight, and the warm weather makes for a long growing season. Pests and diseases are not a signiﬁ cant concern because there is little humid ity in the region. West Texas is able to grow European va rietals, which has helped the Texas wine in dustry sell more wine, Hellman said. Other places with colder winters are not able to

grow Old World wines and must rely on hy brid grapes. “And those are good, but they’re diff er ent,” he said. “And there’s not the consumer familiarity with those varieties. And so, it’s a much harder sell and a harder climb into becoming a signifi cant wine region. This is not a battle that we had to fi ght because we can grow the European wine grape varie ties. That was something that the Texas Tech pioneers that started Llano, that’s something they fi gured out fairly early on.” From nutrient cultivation to grape ripen ing, to blending and aging winemaking is an art. Some varietals, like the everpopular Ca bernet Sauvignon are strong and bold, while others like Riesling are lighter, Pierre Helwi, a viticulture regional specialist at Texas

A&M said. Helwi specializes in the West Texas wine region. A winemaker must have an idea of how the fi nal product should taste; everything is a conscious decision starting with when the grapes are harvested, Helwi said. The Brix is a measurement of sugar con tent in grapes, and sugar determines a lot about the fi nal wine. If the Brix is around 22 or 23, then the wine will have bright, fresh fruit aromas like strawberries, cherries and raspberries, he said. But waiting to harvest grapes increases sugar content. Brix of 24 or 25 will give a wine riper aromas and rich, jammier fl avors. The Texas High Plains AVA has a hot growing season, so sugars build quickly in grapes, leading to wine with a higher alcohol content, said Greg Bruni, the head wine maker at Llano Estacado Winery.

Honing their craft Bruni spent most of his life making wine in Central California, he said. But in the

early 90’s, it was time for a change. He and his wife began looking to move out of Cali fornia when he found an opportunity in Texas. “And I saw the making of a lot of poten tial, the quality of the wine was very good,” Bruni said. “And it seemed like an opportu nity to be a pioneer. And so that was back in ‘93. So, we made the move in ‘93.” Bruni has decades of winemaking expe rience. When it comes to wine grapes, there are two key factors: ripeness and maturity. Ripeness is making sugar, but maturity is making ﬂ avor, he said. The heat ripens the grapes quickly, but the vines must be man aged to extend hang time for full grape ma turation “And so, there are principles that we need to use in the vineyard to postpone ripening a little bit, slow it down a little bit, so that we can have maturity catch up to ripeness, and you get the ﬂ avors that you want plus the sugars that you want to produce the wines that you want to produce,” Bruni said. Wines can either be a blended or varietal

wine. When the wine industry began pick ing up in the United States in the 80s, the European labeling style was confusing for unfamiliar Americans, Hellman said. The European labeling system is geography based, which is why wine from regions like Bordeaux are named after the region rather than the type of grapes used to produce the wine. Rather than produce a Napa or Sonoma wine, American winemakers opted to make varietal wines to help consumers with name recognition. This made it easy for varietal wine like Merlot and Chardonnay to become widely known, he said. In the last decade, however, there has been a trend among winemakers to return to blending, as it allows more artistic license and greater control over the ﬂ avors and pal let, Hellman said. “It gives the winemaker an opportunity to make better wine, frankly, because they’ve got more tools to work with,” he said. “It’s like a painter, with a very diverse palette of colors to use in their painting. If they’ve basically only got one color, you know, there’s a limit on what you can do. And maybe you can’t make a very complex product. “But with blending, that’s where the real art and winemaking comes in. You can cre ate a better wine—why? Because there is no perfect wine grape variety. And so, by blending, you can get the best of each of each variety by blending in certain percent ages. And so, we’ve seen a lot of blended wines become a more signiﬁ cant player in the marketplace, throughout the US—and Texas has done the same thing too—it actu

ally works really well for us.” Texas is poised to create wine that the world has never seen before, Hellman said. Because so many types of grapes fl ourish in the state, winemakers have the opportunity to blend create wines that are geographical ly impossible in other places. Texas can grow wines from southern France, Italy and Spain in the same area, and produce an en tirely unique concoction. “And so, people are exploring these dif ferent blends that have never had never been done before,” he said. “And so, it’s pret ty exciting. It’s not hard to fi nd a wine that you’ve never had before in Texas because they’re experimenting with these unique blends.” After the grapes have been harvested and the winemaker has selected the perfect fl avors, the science side of winemaking takes over. The grapes are crushed, or pressed. There may be intermediary steps based on the type of wine being created, like the du ration of contact the juice has with the skins, or must, which contributes to tan nins, fl avor and color. Then, yeast is added to the juice and it begins fermenting. The yeast convert sugar to alcohol, which is why a higher Brix level yields a higher alcohol wine. Following the initial fermentation, the wines are carefully monitored for oxygenation using inert gas ses like nitrogen, Bruni said. This helps wines retain nice fruity characteristics while it stabilizes. Stabilizing wine is a way of protecting the product from extreme temperature fl uctua tion which, if not done properly, could lead

to wines being ruined, Bruni said. If a con sumer buys a bottle of wine and forgets it in their trunk on a sweltering day, stabilizing the wine can protect it from “protein haze.” Likewise, if a bottle of wine is left forgotten in a freezer, potassium tartrate crystals can create a grainy precipitate. Stabilizing the wine is a way of protecting from both ex tremes. “And then the wines are prepared for bot tling and then they’re bottled under strict conditions and quality control conditions,” he said. Red wine and white wine creation are diff erent processes: red wines have extend ed contact with the must, and the juice is circulated twice per day for full fl avor and tannin extraction. “The seeds and skins are like a tea bag, you extract fl avor and color from the skins,” he said. Reds undergo a second fermentation, malolactic fermentation. This softens a red wine, Bruni said. Finally, the wine is aged in barrels, which, depending on the aging vessel, can add even more to the fl avor.

Wine tourism has been on the rise, Hell man said. Fredericksburg is in the heart of the Texas Hill Country, the only AVA in Tex as larger than the High Plains AVA. Texas Hill Country is attracting outofstate and international wine tourism. Smaller, lesserknown regions may shock tourists with stellar wine, such as Bar Z Winery in Canyon. Bar Z Winery uses 100% Texas High Plains AVA grapes in their winemaking, manager Tara Munjekovich said. “A lot of people that come into the winery here are surprised that we have that capa bility to not use grapes from California or other areas,” she said. “And they’re sur prised that everything we do is in the High Plains area of Texas, and they’re surprised by the quality of the wine we make.” Most outoftown visitors stumble upon the hidden gem of Bar Z Winery; many are in the area on weekend trips to Palo Duro Can yon and are unaware of the quality of the wine, Munjekovich said. Munjekovich was one such tourist; she visited West Texas on vacation from Wash ington and found Bar Z Winery online by looking up fun things to do on a Sunday, she said. Her love for wine initially drew her in,

which lead to an afternoon spent with Mon ty Dixon, founder, and vintner of Bar Z Win ery. The next thing she knew, she was being off ered a job as a manager, and a month lat er found herself relocating to West Texas. Munjekovich loves wine and has been building her expertise as a manager and learning about the winemaking process from Dixon. “Monty uses diff erent varietals to create blends, while at the same time, always striving to create a wellbalanced wine that has a lingering fi nish,” she said. Bar Z Winery has been recognized for several impressive wines, including their Pinot Noir, Munjekovich said. “Bar Z, here was the fi rst Texas grown Pi not Noir to win a gold medal at a competi tion,” she said, “which was the San Francis co Chronicle International Wine Competi tion.” But tourism is only one factor in the Tex as wine industry success; Texans are anoth er. “And because Texas has such a large pop ulation, it’s one of the top few winecon suming states in the country,” Hellman said. “Now, not on a per capita basis. We still

drink a lot of beer and a lot of whiskey, but because we have such a large population, it is a big wine market.” Pride has propelled the wine industry by fostering a sense of community, Helwi said. Texans want to drink something they pro duced. Texans have been producing wine for more than 40 years now, and they have picked up a trick or two, Hellman said. They are producing good wines that are winning prestigious international competitions in blind tastings. That pride has pushed winemakers to create superior products which improved tremendously over the last three decades, evident by the awards Texas wineries are winning, Bruni said. Texans are capable of highquality grape and wine production with an expansive range of ﬂ avors. “I just like to say that I think the best ones in Texas haven’t been made yet,” Bruni said. “We’ve got a lot to look forward to. In the end, I’m going to say that it’s mostly due to not only better winemaking principles, but also, it’s all having to do with what’s going on in the vineyards. Now, we’re at a very ex citing time in viticulture.” e

Center City of Amarillo and ‘Hoof Prints’ around town The Hoof Prints project began nearly 20 years ago, as a partnership between Center City of Amarillo and the American Quarter Horse Association. The project started downtown, spread throughout the city and has now expanded to nearby communities including Canyon, Dalhart, Dumas, and Canadian. “In Amarillo, businesses started want ing them and they became a landmark. We have visitors who take pictures of all of them. We have people who call and write us to get our brochure. We have hits on our website for the digital tour. What I like is it experiences our Western heritage with public art. The great thing about public art is that it’s not in a gallery, there’s not an ad mission fee, it’s found art. You are going down the street and you see it … It gets ev erybody involved with art,” said Beth Duke, executive director of Center City. Duke’s personal favorite is a mother with its colt, called “Refl ections of Love,” at the Women’s Health Care Center off of Coulter. The full, shiny mosaic also refl ects

the light. Founded in 1991, Center City of Amarillo is a nonproﬁ t, nationally recognized Texas Main Street organization dedicated to revi talizing the city’s historic downtown. Duke, who came to Center City in 2005, says Hoof Prints began in 2002: Artist Do ris Alexander, who was president of Center City at the time, had seen public art pro jects in other communities, and she was very impressed with the idea. Alexander realized that Quarter Horse replicas would be the perfect ﬁ t for a public art project in Amarillo. “She had the great idea to partner with the American Quarter Horse Association,” Duke said. “The way it worked was in the beginning, the Quarter Horse Association bought 20. They kept 10, and they had an auction and had commissioned paintings, and that’s how they used their 10. For our 10, we had businesses buy them, and then we kept investing that money, to now, there’s more than 100.” “They are all over the Panhandle, and it’s exciting for me because our board of direc tors said ‘as long as it’s popular, we’ll keep doing it,’” Duke added. “Last year, we sold

about six.” “I think Doris was visionary because she realized, being the home of the American Quarter Horse Association, that was a way for us to celebrate,” Duke said. “When peo ple come to Texas, particularly the Panhan dle of Texas, they want that Western heri tage. Look at our attractions: The Big Tex an, Palo Duro Canyon, horseback riding, all the diﬀ erent things. They want to experi ence that. Although here, living in Amaril lo, we are accustomed to it, we may not even think about it that often, when tour ists come, that’s what they want. To be able to see that with the ﬁ berglass horses, it’s an exciting way to say ‘you’ve arrived in the West.’” Each horse replica is unique. Business owners who buy the horses work with an artist to create a special design. Once the horse is installed, the business gets to name its horse. “Many people use the horses as clues for scavenger hunts or photo safaris,” Duke ex plains. “They have really become impor tant landmarks for our community.” “What’s been exciting for me is some of

the newer businesses, even chains, who’ve said, ‘We want to show we are part of the community. We want a horse, and we want people to know we are proud to be in Ama rillo,’” Duke says. She relays, “Each horse is a fullsize ﬁ berglass replica of an American Quarter Horse. The Hoof Prints project is a great way to remind people about AQHA and its continued importance to our city.” Hoof Prints honors the American Quar ter Horse used on ranches surrounding Amarillo today. The world headquarters for AQHA, the largest equine breed associa tion in the world, calls Amarillo home.

Future location over AQHA - ‘Yea’ or ‘Neigh’ (a little horse humor) At the May 25 Amarillo City Council meeting, the council approved a location incentive agreement from the Amarillo Economic Development Corporation to keep AQHA in Amarillo for 10 more years, after there were conversations that the as sociation was considering moving to Fort Worth. Kevin Carter, president and chief executive oﬃ cer of Amarillo EDC, noted at

the time that the association “is a large part of our fabric here in Amarillo.” “Amarillo is home of the International Headquarters of the American Quarter Horse Association, which services more than 226,000 members worldwide,” said Chad Pierce, AQHA interim executive vice presi dent and chief legal counsel. “We are so proud to continue to have our headquarters here in this ﬁ ne, historical city.” “Throughout the decades, the American Quarter Horse Association has become a part of Amarillo – part of this community and part of the Texas Panhandle,” said Am arillo Mayor Ginger Nelson. “The unique combination of public and private invest ment led by the Amarillo Economic Devel opment Corp. speaks volumes as to how much the Amarillo community values the AQHA – from an economic perspective and a cultural perspective.”

AQHA celebrating 75 years in Amarillo Among other things, the American Quarter Horse Association sanctions com petitive events, maintains the oﬃ cial reg istry and sponsors educational programs, as well as maintaining the American Quar ter Horse Hall of Fame and Museum.

The AQHA’s website says that in 1946, the Association moved to Amarillo after being founded in 1940 in Fort Worth, and in 1984, the international headquarters for AQHA opened its doors to the facility it cur rently occupies in Amarillo. While the American Quarter Horse As sociation celebrated its actual 75th anni versary in 2015, it will be celebrating its lo cal 75th anniversary in September as an important milestone and rich connection with the city. To mark the occasion in 2015, the AQHA did join with Breyer Animal Creations for a commemorative collection, which can still be found at Quarter Horse Outﬁ tters and Breyer retailers. ‘Deck the Herd’ In 2017, Center City celebrated the 15th anniversary of the Hoof Prints project with a “Deck the Herd” contest. After decorating their Hoof Print horses, owners submit a photograph to Center City, which posts the photos on its Facebook page and encour ages people to vote for their favorite horse. Duke says this gets businesses involved and gives them the chance to showcase creativity, changing up the landscape for the holidays. Business that helped art community is struggling amid pandemic fallout

Sonya’s on Historic Route 66 opened its doors more than three years ago. After the closing of the Arts in the Sunset center for renova tions, Sonya Lukas, owner of Sonya’s on Historic Route 66, realized that Amarillo had lost an outlet for the art community and transformed her antique business into a gal lery. “Early on, I didn’t have very much on the walls and I boohooed and I said, ‘God, could you just bring me some wall paintings? These walls are so ugly,’” Lukas said. Now, the establishment is covered from ﬂ oor to ceiling in artwork from local artists, as well as threedimensional pieces displayed throughout the gallery. The gallery hosts a 2nd Friday Art Walk each month to celebrate the art community and bring in art enthusiasts. “We have such a diverse group of artists, such a diverse type of media,” Lukas said. “We have photos, paintings, sculptures, and jewel ry.” She also discussed the gallery’s more exotic pieces such as bullet jewelry and kaleido scopes created by artist David Corbin. Unfortunately, since the outbreak of the COVID19 pandemic, the gallery has been neg atively impacted due to the lack of tourism and has seen a drop in sales.

The pan demic has also hit Lukas more personally as she and her husband, Jay, who is also very involved in the gallery and created the space for the art to hang, both contracted the virus last month, resulting in Sonya closing the gallery until she was able to recover. Jay Lukas is still recovering. To help the gallery, Dana Crandell, a pho tographer whose work is on display in the gal lery, and who is a friend to Lukas, created a GoFundMe account on behalf of the Route 66 gallery. “She became interested in displaying art, and it blossomed,” said Crandell. “She’s been struggling to keep the doors open at no proﬁ t, so we as an art community tried to get together to do something. “It’s truly a family atmosphere,” Crandell said, urging the public to visit Sonya’s or do nate to the GoFundMe. Amarillo staple The Big Texan Steak Ranch has been celebrating two milestones: being open for business for more than 60 years and the accomplishment of having 10,000 people complete the Free 72 oz. Steak Challenge. The steak challenge was created in Novem ber 1960, just eight months after the restau rant’s doors opened in March. According to co owner Bobby Lee, his father R.J. Lee had opened the original diner on Route 66 after moving here from Chicago. R.J. Lee had liked the area, after seeing Am arillo in stopovers on ﬂ ights while working for Marriott Food Service. After the Amarillo sto

pover was no longer needed, Lee opened the diner with a western theme and named it The Big Texan. “Because it was a couple blocks over from the stockyards, the cowboys would come over after work, and he (R.J. Lee) would sell nickel beer, and cash their paychecks. He put them in the center of the dining room, and these real cowboys were the things that made The Big Texan,” Bobby Lee said. “The tourists would come in, and there would be real cowboys in the center of this dining room drinking beer, trying to outdo each other, dancing on the ta ble drinking tequila.”

60 years past, future The Big Texan changed locations from the Amarillo Boule vard to its current location in 1968 after Route 66 was bypassed by Interstate 40. According to Bobby Lee, his father had bought some land outside Amarillo city limits to sell alcohol on the weekend, because it was illegal to do so in town on the week ends, and he reestablished The Big Texan oﬀ the old Dallas highway, where it is today, not knowing that I40 would be built. The Lee brothers both reminisce at the changes made to the steak ranch in the past 61 years, including additions such as the brewery, the museum of oddities, the gift shop, the hotels, and the cowboy dragon out front, which coowner Bobby Lee had acquired while visiting Dallas. Both the brothers call the establishment “uniquely ugly” and hope for another 60 years with The Big Texan as it becomes a thirdgeneration, familyowned establishment when both Bob by and Danny’s sons take over the Steak Ranch. e
