Stefan Antoni takes the helm at SAOTA, founding the firm in the late eighties and growing from strength to strength ever to since. His love for design was borne, when as a child, he had a magical encounter in a huge cathedral under construction and knew then he wanted to be an architect. On completion of his Bachelor of Architecture degree at the University of Cape Town in 1985 (which he passed with a first class pass), he went on to set up Stefan Antoni Architects , the architectural practice which is known today as SAOTA - Stefan Antoni Olmesdahl Truen Architects. “In the eighties, the architecture scene was very flat. I was totally naïve and enthusiastic, but always had little private jobs on the go – an alteration here and an addition there – and I built up clients that way,” says Antoni. “Since then, the architecture industry has developed incredibly and become much more competitive. Clients are better informed and the Internet exposes us to what is happening in the world, so it has become an international playing field as opposed to in the eighties, where we only worked locally.” Sharing his passion for design and architecture are senior partners / Directors, Philip Olmesdahl, Greg

Truen and Phillippe Fouché, who each bring their own knowledge, expertise and flair to the business. After graduating from the University of Natal in 1995, Philip moved to Cape Town and began working for Stefan Antoni Architects in the same year. Superb organisational skills, exceptional design and excellent management abilities saw him moving quickly through the ranks and he was made partner in 2002, with a key role in running the business. Greg Truen completed a Bachelor of Architecture at the University of Natal in 1991 and practised in Durban joining Stefan Antoni Architects as a Project Architect in 1995. Three years later, he was made partner, where his interest in current affairs and creative innovation continue to contribute towards the success of the firm. On completion of a Bachelor of Architecture at the University of Pretoria in 2001, Phillippe gained extensive experience in institutional, educational, residential, and urban design projects, before joining the SAOTA team as a Project Architect in 2008. With a strong interest in vernacular design, sustainability and a responsive design approach, Phillippe’s forté is to explore unique solutions that both meet the client’s requirements and fit into the context as a whole.

revamp of a popular bar called the Fireman’s Arms to the breath-taking behemoth homes of Fresnaye and Clifton, the firm also has a number of international masterpieces to boot, including Zilwa by the Banyan Trees, Sushi, Popenguine and Sinndia by Baobabs and a few very sculptural villas in Switzerland. Inspired by Jean Nouvel, who is always coming up with great new ideas, Antoni strives to create ‘timeless works of great spaces, simplicity and the least amount of fuss to make a great and powerful statement, even if it is an understated one’. When asked what he thought contributed towards being a Leading Legacy Brand, Antoni feels that one needs to be distinctive. “People must be able to identify work that is being produced is something a little bit special or exceptional. To me, it’s all about building a community or family of people that feel like they belong to something special.” This principle echoes throughout the firm’s 110-strong workforce. Merging their passion and enthusiasm for design and creative expertise, they are able to tackle challenges head-on and produce the exceptional work we see.

“We are all architects,” says Antoni, “we split the projects up between ourselves and are all involved in design. Philip and Greg oversee the two main teams consisting of project leaders and teams that see projects through from inception to completion.”

“Everyone who joins our company is passionate about design and in this way, we grow each other. We challenge each other to be better and drive our love of design to greater heights. In this way, it’s not a job really, it’s our passion and we live and breathe it.”

Focusing on Guido Canali Guido Canali is a modern architect. His architecture, never boastful, welcomes nature, buildings where the protagonist is the environment and not the author, places where people can work well, a space where light is central. Canali remains a true architect even when he puts his designer’s hat on, engaging with the creation of serial objects, however small and linked to daily life. The handle designed by Canali for Smeg for the first time in 1988 is a bold statement. Its form imprints in our unconscious and categorize its origin even before we see the six circles and the four characters that compose the famous trademark. And yet, that small object is a very refined movable architecture: a formal note, a relief that enhances the ‘graphic’ of the glass and steel facades where it stands out. Nevertheless, the collaboration between Smeg and Guido Canali is not focused on developing products, it’s a relationship that goes even further and that resulted in the creation of Smeg’s headquarters. The structure has, in fact, been heralded as a true icon of innovation in Italian architectural design. Winning different prizes as an example of Bio-architecture it also featured at the International Architecture Exhibition of the Venice Biennale, one of the most prestigious cultural institutions in the world. Designed with a shared vision to truly enhance the relationship of the building with nature, it is a synthesis of architectural beliefs and care and concern for local environs and people who live near the site. The Nile crocodile is a resident reptile in many of South Africa’s game reserves, but no longer roams free in the country Le Bonheur offers an interesting insight, unrivalled views and safe interactions with this fascinating creature.

The Cape’s Winelands offer more than just world-renowned, award-winning wines and spectacular scenery - tucked away amongst the rolling vineyards in the tiny hamlet of Simondium is the Le Bonheur Crocodile Farm. Home to over 1,000 Nile crocodiles, plenty of babies. Le Bonheur Crocodile Farm is a wonderful way to spend a day with the family, learning more about the ancient Nile crocodile and enjoying the picturesque surroundings. The Nile crocodile is a resident reptile in many of South Africa’s game reserves, but no longer roams free in the country, so Le Bonheur offers an interesting insight, unrivalled views and safe interactions with this fascinating creature. Run by the same family for generations, the farm’s French name translates to ‘happiness’, which is jokingly described by passionate tour guide Stephan Braun as being so because, “everyone is happy when they come back alive from the croc pond.” While this might ring true, the real joy behind a visit to this fascinating farm is the chance to experience something uniquely different just a scaly tail’s length from home. Owner of the farm, Rachel Elizabeth Van Zyl (known to the family, locals & frequent visitors as aunt Rice) tells the story of the farm’s humble beginnings.

“I was one of twelve children in a large family that moved around a lot. We lived all over the country, including Namibia and finally came to settle in Paarl. I had a love of teaching, so went to Stellenbosch University to study an education degree and got a teaching post in Gouda, where my boyfriend had a farm.” After getting married and living in Gouda for a while, their farm was bought out by a huge conglomerate from Natal and they decided to move on, finding a charming piece of land that was once part of an old wine farm in Babylonstoren. And the rest they say, is history… “It was a wonderful piece of land – 43 hectares of good farming land, orgrinally used for wine farm, then converted into a fruit & olive, finally decided to turn it into a crocodile farm. My husband fell in love with the idea of breeding and farming crocodiles after visiting his brother in Johannesburg and that was that!” The first crocodiles arrived on the farm in 1986 from Natal and were introduced to their new home. “I have to admit I was scared of them at first, but my husband loved them! We had a scary experience once, when we were

moving one of the crocodiles into another pen and it turned and bit my son, but luckily it wasn’t a fully grown crocodile and he survived the bite!” However, there were a few challenges to overcome with introducing and breeding crocodiles in the Cape. Being cold-blooded creatures, the Cape winters would prove too cold for crocodiles to breed and stunted their development, making their growth rate very slow. After a few years of trial and error, they decided to open another farm in Mpumalanga (Transvaal) to breed the crocodiles, as the weather was warmer and more conducive to breeding, which is where all the breeding for the farm take place today. “All of our crocodiles are bred up north due to the warmer weather and better breeding conditions, and the farm down here in the Cape is merely for tourism purposes – for people to come and visit, experience and learn more about these magnificent and beautiful creatures.” Guided tours take visitors over open dams along a series of ramp ways where the toothy grins and jagged backs of the crocodiles can safely be viewed in their natural environment, against the backdrop of the magnificent Cape Winelands surrounds. Deceptively cute baby crocs can be held and touched by volunteering visitors and during the summer months, live feeding frenzies of these fresh water carnivores can be viewed in awe.

The farm is a CITES registered breeder and tanner of the African Nile crocodile with a working, on-site tannery that produces a range of crocodile products from one of the world’s most sought after exotic leathers. A resident retail outlet offers an extensive range of Nile crocodile leather product, such as designer belts, wallets, handbags and furniture made from all colours of this magnificent hide, and a lovely waterfront restaurant serves a full day breakfast and an interesting menu of crocodile meat dishes, including their famous homemade croc pie. The well-stocked dam teems with bass and tilapia and offers catch and release fishing during the day. Burnout is described as ‘the condition of someone who has become very physically and emotionally tired after doing a difficult job for a long time’, while ‘digital burnout’ stems from living in two parallel worlds – that of the present and physical existence and that of the virtual and digital existence. On top of living out a physical life of work and play, we add to that the virtual world of digital, which is fast taking up precious time that should be spent unwinding and relaxing. With ‘fast’ being the operative word, nothing in the digital world happens slowly, which is what ultimately makes us feel that life seems fly by faster and faster every year, thus causing a mental and physical breakdown and finally, burnout. “This ‘always on, always connected’ lifestyle is what is fuelling digital burnout. It has rewired our brains to be on a permanent multi-tasking mode,” says Chang. “Just watch people at an airport, or any place where they are required to wait for any length of time: they

will no doubt, be locked into their mobile devices. No one simply stares into space anymore.”

Living in two worlds means double the amount of work – whether it is physical or mental and, not surprisingly, this type of burnout is on the rise. “We now essentially work the equivalent of 24 months in 12, and because it stems from our virtual existence, we don’t see it coming, with potentially devastating results.” Which is why Change believes a mid-year break is crucial. “A mid-year break is the answer to coping. Some are snatching an odd long weekend away, and bush breaks are becoming more popular because of their non-digital nature. When someone takes a mid-year break or long weekend, it is no longer seen as an indulgence, as it might have been five years ago. In a digital age, a mid-year holiday is now a necessity, and ‘digital detox’ the new buzzword.” However, once there, the road back from digital burnout can be a long one. Once you are hit, a fortnight’s holiday won’t help, and Chang warns that even a three-to six-month break might not restore you to digital wellness. “It takes some people three years to recover and five years before they feel happy again.” While prevention is better than cure, this might be easier said than done in today’s world. Thus, the interesting new movement known as the ‘Modern Mindfulness Movement’ is helping people to stay present. An ancient technique used by Buddhists for thousands of years, this non-spiritual and non-religious meditation practice is ironically becoming ‘an essential life skill in the digital age’. “One of the most popular mindfulness exercises is eating a single raisin, in 6 slow steps: from observing it (as you would if you were an alien visitor), to smelling it, feeling its contours, rolling it in your mouth and then only biting and tasting it. For many this sounds absurd, but for those who have tried it, will tell you how surprisingly difficult it has become to focus on a single task. It is the lost art of omni-tasking,” With a unique ability to see the world from a different perspective and gauge trends ahead of the curve, as well as an innate ability to question and shift an audience’s perspective, Dion is in great demand, with corporate companies turning to him as a brand consultant and specialist activator. Question & Answer with Dr Maureen Allem You were one of the first to give clients an alternative to lengthy and expensive procedures, but how was the “injectable” concept received by the public? I’ve had great clients from the start, and some of my very first clients still come to me for treatments. I suppose it’s like anything – there are those who believe and then there are those who don’t. As a whole though, South Africans are definitely more conservative than the rest of the world. Where did the idea and passion come from, did you always want to be a Cosmetic Dr.? I qualified as a medical doctor in 1987 and after 10 years in the conventional medical profession, where I ran a medical ward in a provincial hospital, I made a move into the executive health field for 7 years, where I did annual medicals and life-style assessments for top executives nationally. Through my involvement in my patient’s life-style choices, I became more and more interested in aesthetics and in particular in the non-invasive treatments to rejuvenate the face and body.

I travelled to Belgium in 2002 to train with Dr Koen de Boulle, who is considered a top injector in Europe. I started an aesthetic practice doing Botulinum Toxin (such as Botox and Dysport) and dermal filler treatments for patients. I continued to stay abreast of this dynamic and fast moving field, as I still do today. I’ve worked with some inspiring specialists in the field from whom I’ve learnt a lot. I’ve also been fortunate to train others, which kept me on my toes. The drive to expand the clinic from the one to a franchise if we can call it that, was this in your vision for yourself or how did it come about? As demand for non-invasive treatments grew, the business gradually grew too. Today, we offer anti-ageing, non-invasive treatments for the face and body. But more importantly, we promote general well-being and health for our clients. We encourage our patients to find out where a problem stems from, as apposed to just treating a symptom. I now have a team of doctors working with me in the 17 branches of Skin, Body and Health Renewal. (Also, just for the record, a medical business can’t be franchised according to South African law. The Skin, Body & Health Renewal clinics are all privately owned.) Being a Mother, what challenges were you faced as many Mom’s out there want to start a business but the thought overwhelms them. Looking back, I realize that I didn’t set enough boundaries. We spoil our kids too much trying to overcompensate, but the fact is, we don’t do them any favours by doing that. What challenges did the first Skin Renewal face as an Aesthetic Clinic and how were they overcome? At the earlier stages of the business, there was no real training available here. It took a great deal of effort to educate myself in this field, and still continue to do so today. As training options back then were very limited in this field, I took educating myself very seriously, hence the decision to train with Dr. Koen in Belguim. Since the very early days I took every opportuntiy to read articles and attend conferences that could possibly benefit me, and still spend a lot of time researhing today, to ensure that we stay abreast of this very dynamic industry. Do you feel more and more South Africans are becoming receptive to the treatments offered and the clinics? More and more South African clients are becoming receptive to the treatments and the clinics, but South African consumers are much more conservative than in the States and Europe. In comparison to the American market, only 10%. The average South African wants to know what is it that Skin Renewal offers them to better their lives, because Plastic and Aesthetic treatment is perceived as “for the rich” You want to ensure that the correct product is used, and you also want to ensure that qualified people do the treatments. There are many products available at a lower price point, often administered by an unqualified person, but this is dangerous and not advisable. You can’t hide a bad procedure with baggy clothes, so doing it right is very important. With the opening of a new clinic sees new Dr’s joining the team, what criteria is used to maintain the standards that you have set as a Brand and as a Clinic? Even for doctors with experience in this field, there is an intense training program. Once the training program is complete, they spend time with me for as long as it takes 48

for them to be ready to see their own patients. I’ve recently put a ‘Doctors Protocol Document’ together to ensure that our clients experience the same treatment from all the doctors on our team. I spend time in all the branches, and touch base with all my doctors on a regular basis. Do the Dr’s become franchise owners or how does it work? No, they are all employees. It is not allowed to franchise a medical business in South Africa. We are however investigating a share scheme for all our employees at the moment. Tell us more about your bursary programme you have running for post graduates: We work with the major beauty schools in South Africa, who all offer a 3-year course, with a 1 year post grad degree. We offer a bursary to 4 students to complete their post grad year, to the value of R60,000-00 per student. 3rd year students motivate to be granted the bursary and are selected following an interview with the team at Skin Renewal. During their post grad year, they also gain experience at Skin Renewal as part of their practical. In 2009 the Body Renewal brand was introduced, give us more detail on this please Body Renewal was started as clients wanted a body to compliment their revitalsed faces. Body Renewal has two distinct areas: weight loss and body sculpting. Weight has to be managed with a medical weight loss programme before the body sculpting technologies can be used. Complementary treatments such as cellulite reduction and fat freezing, hair and vein removal, stretch mark treatments and hand, neck and décolleté rejuvenation is also available. What sets Skin Renewal apart from other leading Clinics? We never stop researching what is happening in this very dynamic industry. B Synonymous with svelte sophistication in design and fabrication, as well as uncompromising standards in service and quality, KLûK CGDT comfortably takes its place as one of the top design brands in the country. An enterprising and evolving partnership that has been in existence for over 10 years, this dynamic duo hit the fashion scene in 2003 and haven’t looked back since. She holds a Masters Degree in Education and has plotted the curriculum in this arena at the school. Students, some dressed in kitchen whites, others in suits move between classes or take a break in the shade of the school’s ivy-covered main building. Classes are small, focused and hands-on. Beyers’ in 1991, at the International Wine and Spirit Competition, he became the first South African to win the prestigious title of ‘International Winemaker of the Year’, and did so with none other a fruity Pinotage, unknown to the rest of the world.

With a reputation that has gone beyond that of mythical proportion, Beyerskloof Wine Estate has comfortably taken its place among the award-winning wine estates that South Africa so proudly calls their own. Nestled in the heart of the glorious Cape Winelands, just outside of the well-known town of Stellenbosch, Beyerskloof is co-owned by the man who rescued the one true ‘mzansi’ cultivar from a destiny of brandy distillation and bulk jug wine. Beyerskloof Cellar Master Beyers Truter was the first South African to win ‘International Winemaker of the Year’ in 1991, and much to the international viticulture community’s surprise, did so with Pinotage, a varietal that had been written off by British wine masters visiting South Africa in the 1970s. Inspired by top-quality oaked Pinotages he had previously tasted, and doggedly determined to prove them wrong, he devoted himself to working around the clock in an effort to perfect the misunderstood varietal, believing resolutely in the yet-untapped promise of its character. “In the early days no one else followed up, but I experimented,” says the now-renowned winemaker. “Pinotage is a great varietal in the vineyard, and I felt that if you just treat it well, you can make it work.”

Since then, Beyers has grown in leaps and bounds and taken the humble Pinotage with him to new and lofty heights through hard work, determination and an absolute passion for the robust red grape. Beyerskloof Farm’s original name was Nooitgedacht, which for five generations belonged to the Beyers family before Jan Andries Beyers sold it in 1895. A direct descendent of Jan Beyers, and the sixth generation to farm this land, Beyers Truter clearly has the ‘Midas’ touch. He did not always want to be a winemaker. As a child, he dreamed of being a professional rugby player and later in life, his love of people and wanting to make a difference in their lives drove him to study medicine to become a doctor. However, after six months of trying to combine rugby, student life and studying – a precarious combination as best – he decided to pursue a career in winemaking instead. After graduating from Stellenbosch University with a degree in vini- and viticulture in 1978, he started working with the Deciduous Fruit Board, monitoring the quality control of export table grapes, before joining Kanonkop Wine Estate as winemaker in 1981. Gaining invaluable


knowledge and expertise – his first Cabernet Sauvignon was awarded the best table wine at the Stellenbosch Wine Show - he went onto to co-found the Beyerskloof farm in 1988 where he has successfully cemented a grand – almost legendary – reputation in the industry as the quintessential ‘king of Pinotage.’

“I like red wines, but Pinotage is my favourite of course. If you handle Pinotage with love and care, it will produce an excellent wine, with classic balance and will last 20 years and longer. I recently had a Lanzerac Pinotage 1963—it was great.” The story of Pinotage is not as sweet. Initially cultivated almost by accident in the earlier part of the 20th century, Pinotage – the result of a marriage between Pinot Noir and Hermitage (also known as Cinsaut) – claims a contentious and tumultuous past. For many years, due to mass planting and poor production, the robust red was relegated to the wayside as a cheap, low-quality quaffing wine, one that could not be taken especially seriously, and suitable only for blending, bulk consumption and brandy distillation. However, Beyers’ passionate commitment and steadfast trust in the underdog paid off and in 1991, at the International Wine and Spirit Competition, he became the first South African to win the prestigious title of ‘International Winemaker of the Year’, and did so with none other than a Pinotage, a cultivar that was not only deemed ‘dead’ a decade earlier, but that, until then, was quite unknown to the rest of the world. The secret to his success? Truter firmly espouses the belief that what you put into the vineyards, you get out in the wine. “You have to have passion and you have to work hard, but wine is God-given,” says Truter, a reverent man who puts on no airs and graces. “Farmers and surfers must have bruised knees from praying.” It is this belief, coupled with a commitment to innovation and forward thinking, and a drive to constantly improve and increase their offerings that have won the estate an impressive array of awards over the years, ranging from a Michelangelo and a Gold Veritas to numerous trophies at the International Wine and Spirit Competition. “We make an effort to stay creative all the time,” explains Beyerskloof’s marketing manager. “So we started experimenting with Pinotage and doing things with it that you wouldn’t normally expect, like making Port” Thus, in addition to developing well-oaked, top-of-the-range takes on South Africa’s signature variety, the farm also produces both a berry-rich Pinotage Rosé and a crisp Brut version of this Pinotage-based pink. Beyerskloof also started to engineer a solid selection of world-class red blends, including the well-balanced classic Cape blends Synergy and Synergy Reserve and the award-winning Bordeaux-style Field Blend. Similarly, the estate itself has grown and evolved over time and is now home a new visitor centre featuring a larger contemporary tasting room, an intimate hearth-warmed lounge area, conference facilities and the ever-popular Red Leaf Restaurant. A true family-run business, Beyers owns and works at Beyerskloof with his son, Anri who joined him after his studies at Elsenburg and his daughter, Corné, who is involved in the hospitality side of things at the Red Leaf Restaurant.

Question Amongst the gadgets that you own, is there something that you wish you hadn’t bought? Why? Anwser A very expensive location flash head kit, I really do prefer natural light and over the years have learnt to manage any natural light situation with skill and sometimes a glass of wine! Question What is your favourite location that you have worked at? Answer Definitely Lourensford Wine Estate, endless locations for any shoot, great weather and beautiful light the whole year round. Question Who is the most famous person you ever photographed and what kind of shoot was it? Answer My hero Nelson Mandela, for the World Wildlife Fund, a very short portrait session.

Question Whose work has influenced you most? Anwser I have been inspired by many amazing photographers. Some that come to mind are Sybrand Cilliers’s “bridal landscapes” , Jean Pierre Uys’s Black and Whites, Sue Bryce’s posing techniques, Brooke Shaden’s artistic expression, Anne Lebovitz’s style of lighting and use of bold colors ……and many many more. I try NOT to imitate the style of others…. I use photographs I admire as a source of inspiration and encouragement. I try to recognize the stylistic consistency of other photography masters and strive for the same consistency in my own work.

Question What would you describe your style of photography as? Anwser Dramatic! Glamorous! & Good lighting! ….. I think creating a visual style is important and that other can recognize that style. I see myself as a photographic artist. I rarely take traditional shots but prefer to find artistic ways to photograph, people. I try to capture images with lots of drama, artistic beauty and a touch of glamour. I like to utilise dramatic backgrounds, creative lighting and glamorous styling techniques to achieve this. Question What is the one thing you wish you knew when you started taking photos? Anwser I love this Bible verse…. “There is nothing better if life for people than to be happy and to do good while they live. That each of them may eat and drink, and find satisfaction in all their toil—this is the gift of God.”

A star-studded evening at the Private Hotel School in Cape Town saw the announcement of the winners of our Extreme Makeover Competition that was held earlier this year.

After a difficult judging process, five nominees were selected and were whisked to the hotel school in chauffeur-driven style. They were greeted with canapĂŠs and a glass of bubbly on arrival, before enjoying a delectable gourmet dinner and world-class service. Hosted by Leona Erasmus, who chatted amicably about true inner beauty and always looking for the silver-lining in life, the

The Beauty Within - Charmaine Sam

Born and bred Capetonian Charmaine Sam was the winner of the recent Extreme Makeover Competition that was held earlier this year at the Private Hotel School in Cape Town. We caught up with Charmaine after her win and got to know more about this superstar mother and grandmother whose life is all about family! How did it all start?

“I was born in Woodstock to a large family. My father was a construction site manager for a large construction company and we moved around a lot following his work. He would build houses in developing towns, so I got to see many of South Africa’s little towns growing up. We were in Tulbagh in 1969 during the earthquake and people were living in tents – it was quite something!” Were you a close family?

I was one of nine children – ‘one for each town’ as we always used to joke - so yes, we were close. My husband, Desmond was an only child, so it was quite an experience for him to join such a huge family, but he immediately became one of us.” And you now have your own beautiful family? “When we got married, Desmond and I decided we wanted to have a large family as well and had five

wonderful children. Looking after all of them was a full time job, so I became a housewife and dedicated my life to my family.” “As wonderful as a large family is, there are always trials and tribulations to deal with and it hasn’t been easy road. One of my sons unfortunately got involved with drugs and at the same time, my husband fell very ill, which was a difficult time for all of us. I just prayed for both my son and husband and trusted that God would deliver them from their troubles. My husband sadly passed away soon after my third son’s wedding, but we were so grateful that he was able to share that happy day with us all.” “My youngest son also fell very ill and was taken from us, which hit the family very hard, after the passing of their father – ‘Tubs’ had a good heart and contagious laugh. However, my prayers were answered when my second son fought for his life in rehab and is now on the road to recovery. He has his own business and is doing so well, which makes me very happy.” Charmaine Sam now lives with her daughter and three sons and has six grandchildren who visit every weekend and on holidays. Her house is filled with the love and laughter of children, as it was when she was growing up, and she is famous for her delicious cheesecake and other delectable homemade treats that she bakes herself.

In 2007, Isabel Carstens-Roos was awarded the Médaille du Mérite (National Order of Merit) for high standards and professionalism by CIDESCO. Says Stephan, who traded a professional football career in Whales for the equally pressurized and intense métier of saucier due to an injury: “The landscape and estate is beautiful, but if the food is bad, you fail the whole experience. We strive to bring the freshness of outside into the meal. You need to please all kinds of clients by creating the experience - the executive for a meeting, the holiday goers, people visiting the Spa, restaurant goers and special occasions. The deli is a totally new experience to the estate. Clients have the option of enjoying a relaxed outdoor lunch on the terrace or sitting inside with cheese platters. We cater for both the local and international palate by culminating South African cuisines and flavour with European style.”

Perfect Collaboration

In a fun, new wine project that follows in the footsteps of the previous launch of an ambrosia called ‘Collaboration’, well-known chefs and business partners, Bertus Basson and Craig Cormack have once again teamed up with winemaker Louis Nel to produce another easy-drinking white wine for all occasions. Made from Stellenbosch’s finest chenin blanc varietal, and light-heartedly called ‘Betsie Says’, the trio set out to create ‘a food-friendly wine with complexity, that would not overwhelm a dish’, and they have done just that. A tropical, fruity mix of apricot, dried peach and citrus characters greets the nose and continues onto the palate, with ‘a subtle nuttiness and a lingering finish.’ Not the first collaboration of its kind, chef Bertus Basson of Overture fame and his catering company partner Craig Cormack opened Sofia’s at the wine and olive estate of Morgenster in Somerset West in 2010, as well as creating

and launching their first wine project with a label called ‘Collaboration’. As well as heading up the kitchen at Overture Restaurant, Bertus offers a range of services from restaurant consultations and culinary workshops to catering for private events, while business partner, Craig Cormack, owns a successful catering company named The Goose Roasters, as well as a brand of imported salts called Amoleh. Craig and Bertus also own Die Wors Rol, one of Cape Town’s über-cool and super-trendy food trucks, forming part of the fast-growing ‘Food Truck’ scene in the city. Borne from their love for hot-dogs and desire to create an informal dining concept, this little culinary caravan can be found at stylish weddings, special functions, and local markets.

Johannesburg-born, Claudia grew up with a passion for the beauty and wellness industry. After completing her post-matric studies, she joined the ever-popular world of cruise ship employment to work as a beauty therapist, where she gained her first insights to the industry. Far from glamorous, hours were long and hard and Claudia found that while the salons were exceptionally busy, clients never received the pampering and nurturing that should be expected from a spa or beauty treatment.


With this in mind, and the goal of wanting to give customers more than ‘just a massage’, Claudia returned to South Africa to open her own salon on a game farm in Johannesburg. Working against all odds and kicking off her business in just one small room, Claudia’s hard work paid off and the spa grew in leaps and bounds. Eventually Claudia was the proud owner of a four-storey spa with no less than 10 treatment rooms, an indoor heated pool and a small on-site restaurant, where she continued to work for six years. The dream of one day living on a vineyard and the desire to create a better life for her son drove her to pack up her life in Johannesburg and make a move to Cape Town, where she is currently based today.
