I
t’s a cookie…it’s a cake…it’s a pie! It’s a Whoopie Pie… and it’s delightfully delicious! “Whoopie Pies are the new cupcake!” proclaims Tammy Wiertzema, owner of Wild Whoopie Bakery, as of April 13th, the newest tenant in the newly-renovated former Tri-State Creamery building. Wiertzema, who was born and raised in Maine, says Whoopie Pies are a treat that can be found at almost every gas station, convenience store and Mom & Pop establishment in the New England area. Living in Sioux Falls since 2000, she hadn’t realized that no one here knew what they were until she brought some of the tasty treats to work. No one there had ever had them nor heard of them. After being laid off from her job, she checked into this further, and found neither “Whoopie Pies” nor anything similar available throughout the Midwest. Wiertzema then decided to turn her love of baking into action. “I had been making cakes forever — at least for the last sixteen years — and every time I baked a cake, people would tell me I ought to open my own bakery business. I would always just nod and agree.”

The “wild” in Wild Whoopie Bakery” came from that wild idea, and the rest, of course, from its specialty name sake, the soft cake-like cookies with the fluffy center. As legend has it, during the Great Depression, leftover cake batter was the inspiration for Whoopie Pies. Put into farmer’s and worker’s lunches as an extra special treat, the recipients would exclaim “Whoopie!” when taking the treat out of their lunch boxes. Wiertzema admits that the “Whoopie” in the “Whoopie Pie” name “makes some people a little uneasy. Amused at how many people avoid saying the word “whoopie” when placing their orders, she says, “We should change our vocabulary to say Whoopie more!” Dubbed “The Whoopie Lady” by some, she says it’s perfectly fine with her, and encourages customers to please feel free to call her “whatever makes you happy”. After all, “that’s what a Whoopie Pie is supposed to do — make you happy!” Wild Whoopie Pies come in pumpkin (with cream cheese filling), original chocolate, peanut butter, mocha, red velvet, banana nut, and chocolate chip. made from a mix.” Always experimenting, working on developing new flavors, Wiertzema also encourages the many visitors to her website to suggest new flavors. Some of the suggestions for new flavors are: coconut strawberry-rhubarb, key lime chocolate with orange cream cheese filling, peanut butter cake with chocolate crème, macaroon, and chocolate cake with mint crème. Wild Whoopie Pies come in two sizes: either a 7 oz original size or a 3.5 oz party size…perfect for birthdays, graduations, holidays, celebrations and special occasions, and of course, weddings. Wild Whoopie Bakery has already developed quite a loyal following, many of whom are transplants to the Sioux Falls area, originally hailing from or having resided for a time in New England. Wiertzema recently received and filled an order for a record number of Wild Whoopie Pies — shipments of 400 and 200 to be mailed out to Grand Forks, and Georgia. ark Greeno, Outdoor Wellness Instructor, along with Avera McKennan Fitness Center staff, will lead a week of outdoor adventure for adults, July 20 - 24, at Lee Valley Ranch in the Black Hills of South Dakota. The all-inclusive week provides lodging and meals at Lee Valley Ranch, day adventures of kayaking, biking, hiking and rock climbing for all levels of fitness, equipment rental for these adventures, Tai Chi, Zumba and Yoga sessions, twilight movies and campfire crooning Attendees can choose to participate in as many or as few activities as they wish. Relaxation and de-stressing are as much a focus of this week as are challenge, fun and adventure.

newly-launched local social network geared toward health and wellness discussions will provide patients, physicians and the general public a new way to find and share health care information. The Living Well Community, sponsored by Avera McKennan, was developed by Click Rain as a way to network people around health in a regional online community setting. “Social media and health care are overlapping more and more,” said Paul Ten Haken, president of Click Rain, Inc. “The bottom line is that people trust other people and appreciate online discussions. They want to hear about experiences and share their thoughts with others in a community setting, whether it be the hotel they stayed at, some new shoes they recently purchased,

A balanced look is obtained by an exterior rock and siding combination as it overlooks the hillside through a window of evergreens. The Bluffs in this case are known as a steep overhanging of land,

with pockets of trees and grassy hills covering it. Further east is Spring Creek Golf Course, putting this home, located on Spring View Court, close by the action. When Tom and Amy Menage planned their home from top to bottom, they started with a floorplan they’d used the first
time they chose to build. They liked the idea that the view behind the property would be preserved — as it’s too difficult to build further into the bluff and still support water services and plumbing. This home was thought to be where the Menages would reside on a permanent basis, but a job change closer to
family means they’ve put their home for sale. Now the goal will be to replicate this design once again after they relocate, as there are many things about it the Menage family appreciates. don’t know much about the bond that exists between a father and a daughter since I only have boys, but I do know that my father-in-law was a man who treated his daughter like a princess; protected her when she needed protecting, and let go when she needed her independence. It’s truly a remarkable bond. With my boys, they are always trying to emulate me. There’s nothing else like it in the world. Jaxon, my 5-year-old, keeps asking me when he “gets to shave.” Berent, my 6-yearold, thinks I own the country club. He also thinks I am the “best driver in the world!” Dante, my 8-year-old, was asked recently to perform at a violin recital. His instructor told him he should wear nice clothes like he would wear to church on Easter. He responded, “Oh, you mean old clothes like my dad wears: a jacket and tie.” The point is the best Father’s Day present I receive every year is becoming my sons’ idol more and more as they grow. To be their role model, mentor, coach, friend, dad, is the greatest gift I could ever receive. Now it’s my turn to give a gift to you all the fathers out there. If you are a mom reading this, please pass this on to your significant other as he’s taking a drink of his ice cold beer this summer. Maybe a glass wine is just what the doctor ordered. Dutch researchers followed 1,373 men for more than four
decades, noting their eating and drinking habits. Men who had about 20 grams of alcohol daily — equivalent to a half a glass of wine — had 2 1/2 years added to their life expectancy at age 50, compared with men who didn’t drink at all, according to research published in the Journal of Epidemiology and Community Health. Men who consumed only wine had twice as much added longevity. “In this study, 70 percent of all wine consumed was red wine,” the researchers, led by Marinette Streppel of the University of Wageningen in the Netherlands, said. “This suggests that the cardioprotective effect of wine could be due to a protective effect of polyphenol compounds in red wine, but other explanations cannot be ruled out.” Polyphenols are chemical substances found in plants such as tannins and flavonoids. Deep red wines like Cabernet and Zinfandel have a lot of tannins, which is a natural preservative found in the skins of red grapes. The research, dubbed the Zutphen Study after the Dutch town from which the participants were recruited, followed men born between 1900 and 1920 and examined them several times between 1960 and 2000. So what does all of this mean? Well, according to this study

Lemon Lime Cooler
1/2 cup margarine, softened 1/4 cup powdered sugar 1 cup flour 5 cups fresh sliced peaches
1 1/2 cups graham cracker crumbs 14 Tbsp. margarine, melted and divided 1 1/4 cups sugar divided 1/2 gallon vanilla ice cream, softened 1 quart lime sherbet, softened 2 eggs, beaten 1/4 cup lemon juice
Glaze: 2 Tbsp. sugar 1 Tbsp. cornstarch 1/2 cup orange juice 1/2 cup peach jelly Cream margarine and sugar in a mixing bowl until fluffy... will take 4-5 minutes. Add flour and mix well. Pat this mixture on to a pizza pan, poke holes with a fork and bake at 350˚ for 10-13 minutes or until golden brown. Cool completely. Place sliced peaches on the crust. In a heavy saucepan mix the sugar and corn starch and now add the orange juice and jelly. Bring to a boil over medium heat and cook and stir for 2-3 minutes or until thickened. Remove from heat and allow to cool for 5 minutes and then pour over the peaches. Chill for 2 hours before serving. May garnish with whipping cream or ice cream. Serves 10-12.
In a bowl combine cracker crumbs, half the melted margarine, and 1/4 cup sugar and mix well. Press this mixture into the bottom of an ungreased 9x13 inch pan and freeze for an hour. In a mixing bowl, combine ice cream and sherbet and pour over the crust and freeze for another hour. In a heavy saucepan combine the eggs and remaining sugar. Stir in the lemon juice and remaining margarine and cook over low heat until mixture is thickened and reaches 160˚. Cover and refrigerate until cool. Spread the cool glaze over ice cream and freeze overnight. Serves 12.
Blueberry Delight 8 oz. package cream cheese, softened 1 cup powdered sugar 8 oz. carton frozen whipped topping, thawed 16 oz. prepared angel food cake, cut into 1 inch cubes Two 21 oz. cans blueberry pie filling Beat cream cheese until smooth and fold in whipped topping and cake cubes. Spread evenly into a 9x13 inch baking pan and top with pie filling. Cover and refrigerate 2-3 hours before serving. Serves 12-15.

K, I admit that I’m not a picky eater. That said, I know good food – and I like to eat good food. What if my love of food could be an environmental movement of its own? It can be if the food we choose is produced locally. By supporting local producers and growers, we can feed our families knowing that our dinner didn’t travel across the country – or further. If you share my love of food, then eat local through farmers markets, your grocer and even local eateries. During the summer, farmers markets offer an opportunity to shop locally not just for veggies, but for meat, eggs, honey, baked goods, jam, coffee beans, flowers…you get the idea. I decided to hit all three markets one Saturday. I started at the Western Mall Farmers Market in the parking lot behind Scheel’s where I found veggies such as radishes, asparagus, and rhubarb. They also had a large variety of plants and flowers. When I had decided on a Mona Lavender, the lady in front of me in line assured me I’d picked a good one. She gave me a few gardening tips and assured me I wouldn’t kill my new plant before we parted ways.
On to the Sioux Empire Farmers Market which meets in the 8th and Railroad Center parking lot on Saturday mornings (Tuesdays at the Kohl’s parking lot 3-6 PM). They offered veggies, plants, and even crafts. I stopped at the Cider Hill Farm Bakery stand. The man in front of me chose two berry scones from the assortment of cookies, pastries and breads. I decided on a Honey Wheat Flax loaf and was on my way. Final stop was the Falls Park Farmers Market which was temporarily being held on Weber Avenue while finishing touches were made to its newly renovated space at Falls Park on East Falls Park Drive. When you read this, it should have made the move home, but check out the website at the end of the article for location info. I first purchased a 5lb bag of sweet onions for just three bucks at the Hackberry Hollow Farm stand. As I wander the different booths looking for more good deals, I saw families creating memories. One father explained they have a Saturday tradition of Bratwurst Breakfast at the farmers market. I’m tempted, but decide to take a more traditional approach at the Hebda Prairie Kitchen stand where they have shelves lined with

jellies, jams, and salsas. I browsed the assortment of caramel and cinnamon rolls, cookies and pies. I chose fruit filled kolaches and ginger snap cookies. I made a final stop at The Goosemobile where I heard a woman explain she found the closest thing to her grandmother’s jam. While they had a variety of products including bedding, meats and even Ostrich eggs, I decided to go with Prairie Pantry Raspberry-Rhubarb. It even says “made from scratch� right on the jar. They too get their milk and cream from Burbach’s and also choose to get honey, apples and veggies locally. They don’t even make their carrot cake until their growers have the carrots ready. I’ve tasted it – it’s worth the wait. You can eat local even when eating out. Ask your favorite place if they shop local. I’m not one to pass up food, especially when it is local. Make your own green-food traditions with your family and friends whether it is a trip to the farmers market on summer Saturdays, a run to buy a gallon of milk or breakfast at your favorite coffee stop. I
t was the moment in spring that I could palpate the steady, driving beat of beauty. I was in our backyard assessing the scope of spring cleanup in a little woodland created by the towering trunks and still-bare, overarching branches of several fifty-year-old black locust trees (Robinia pseudoacacia*). Black locusts grow rapidly, four to six feet a year. As with other members of the pea family, specialized bacteria live among their roots, take nitrogen from the air, and fix it to the soil – built-in fertilizer. The thick old boles leaned slightly, this way and that, as they paralleled skyward. They were the main thoroughfares for the squirrels that day as they played hide and seek, almost within reach. Siberian squill already carpeted the future shade, and the furled tips of bloodroot cautiously peaked from beneath a layer of red oak leaves. Various sized sticks and twigs crunched beneath my feet. Mature black locusts occasionally shed a large, brittle branch from great heights. My normal “green” routine is to leave the smaller branches where they fall, break up the larger ones, and throw them back – built-in mulch. Canadian ginger, hosta and myriad other shade-loving plants will soon hear the beat, get their groove on, and quickly cover it over.
But this year our yard will be on the tour of gardens sponsored by the Master Gardeners*. As it looms ahead, mean Ms Dubious demands my attention. Picture perfect gardens are out of my reach, I remind her. They do not compute. Mother Nature encourages my laissez-faire practices, and it’s not nice to fool Her. I hope summer visitors won’t be disappointed. Black locust trees arrived to the Central Plains via their native Massachusetts. Early settlers planted millions of them during the dust bowl as erosion and wind stabilizers and for a source of rot resistant wood. It is among the hardest and most decay resistant wood in North America. Fence posts and railroad ties; wagon wheel axles and rims; support timbers for bridges, mines, and barns; and even paving blocks were turned from their trunks. Along a Massachusetts harbor one summer, my husband and I watched as a seaman repaired the black locust hull of a large old schooner. He told us that another ship, Old Ironsides, the USS Constitution of 1797, still floats with its original hull constructed of black locust and Georgia live oak. A long, long way from the east coast, the highest canopy of our black locust trees spill wisteria-like clusters of pea-like flowers, only in white, not blue. On a few calm days, they saturate our

neighborhood with a sweet fragrance. Once bumblebees and butterflies pollinate the blossoms, they shrivel and drop, powdering the bright green grass. Later, one hardly notices the papery, three-inch seedpods. They flutter down like propellers and are lost amongst the leathery leaves of periwinkle. On some late summer evenings, long after the flowers had fallen, hoards of monarch butterflies occupy black locust branches for an overnight roost. In fall, when the lacy, compound leaves detach, they are golden streaks against dark trunks, especially effective when a pale blue sky is flushed with the creamy glow of a southeast sun. Finally, throughout bare winter, the low sun will direct the long shadows of their tall, stark trunks into my kitchen where they snake across the pantry door like cold, slow pythons. Finally, some caveats to my praise of these black locust trees. Very young trees sport small thorns that disappear when the bark develops its corky texture. In a few states black locust is on lists of noxious species, generally when sandy soil is involved. But it could be the word “sucker�
