She is a business woman who has made her own rules, treats people with kindness, and has put her heart into each development project – from the décor, restaurant menus, and most importantly, into the very essence of what it means to experience a stay at one of the Red Carnation Hotel Collection properties. 12 Upscale Living Magazine |

Beginning her career in the kitchen preparing starters and desserts in their first hotel property in Johannesburg called The Nugget, newlyweds Bea Tollman and her husband Stanley Tollman set out to create something based on a dream and desire. It was 1950 and the immense glamour of supper clubs in New York City were all the rage. It was the absolute place to be and be seen. Waiters whisked by, with chilled champagne en route, as dazzling couture dresses, laughter and flashbulbs of society writers lit the room. To witness a place such as this in New York and then set out to create an establishment equal in stature in South Africa took vision, and most importantly, belief in ones self. “Here I was, this young bride, with little life experience. I had initially set out to be a schoolteacher, and imagined that my life would be fulfilled in this way. But our trajectory was placed in hospitality, which is really the business of caring for people, and I just jumped right into it” says Mrs. Tollman. She soon took on more responsibility in the kitchen and learned to fuse the best of local cuisine, with elements of European and traditional comfort food. Word spread like wild fire, and soon people were asking to meet the illustrious, if reclusive, chef of The Nugget Hotel, but at the time this could not be. “There were no women chefs at the time! And we didn’t yet have

the means to fly in a chef from Paris, so I was it!” says Mrs. Tollman with a laugh, “We had to always make something up. Usually we told them that ‘he’s just left for the night’ or something like that to dodge people”. With four young children, Bea Tollman remembers their foray into the hotel business with fondness. It took immense flexibility on her part, to get the children off to school, get off to work at the hotel, and then in the evenings she would put them to bed and get back to work in the restaurant, but she could see the bigger picture beginning to take shape. The signature elements of their properties, and continued success in the industry, were being formed. “I knew that I firstly, wanted to create an experience for guests. I would not have rooms that look the same. I didn’t feel inspired by an all-neutral palette – I wanted something different for guests. I knew that there was this vision inside of me and I set out to create it”. Just as she did when stepping into the role of chef, Mrs. Tollman took the reins as the visionary behind the décor. Each guestroom is different, in the idea that guests can have a different experience with each stay, or find a style that most feels like home to them. At times when it would have been immensely easier to create a more typical lobby with stone floors and a floral arrangement at the entrance, Mrs. Tollman would dare to dream. “I would come up with these grand ideas – like having these beautifully painted red ceilings, with colorful rugs brought in from my travels. I wanted it to feel unique, and to have moments that guests will never forget,” she says. Mrs. Tollman always keeps her eye out for unique furniture and décor elements, and the majority of pieces in the hotel are purchased on her travels. Bea Tollman is a woman who undertakes great responsibility with grace, charm and strength. With her lilting accent and chic personal style, she is a conversationalist and cares deeply about her family and also her staff. At a time filled with social media and the fast-paced lives that we all live, speaking to Mrs. Tollman and hearing her musings on a life well lived is such a welcomed experience. I’ve learned a great deal from her about being a woman in business. “There is no point of being a woman in business while changing yourself to act like a man” she says “Ask for help when you need it, but always treat people with respect. This will get you farther than something like acting harsh when this isn’t your nature. Use all of your strengths, from your compassion, to your creativity and multi-tasking ability” she says. A woman’s whose life’s work revolves around creating ambiance and style, I had to ask Mrs. Tollman to share her thoughts on creating the perfect room, and personal wardrobe. 14 Upscale Living Magazine | Issue 39 www.upscalelivingmag.com
How to set up the perfect room: “It doesn’t have to be grand, but it does have to be comfortable. There is something lost today as everyone is so busy, we rarely have the chance to enjoy each other’s company. Even if you live alone, you should be charmed by your surroundings”. - Place a simple candy dish filled with beautiful chocolates on a side table - Flowers. It doesn’t have to be a brimming bouquet; even a simple bud or two will brighten and bring life to a room. A few favorites are orchids, iris, and roses. - Gather your favorite books and subscribe to a magazine that interests you, whether it is fashion, design, travel or the arts. Then talk to your partner about something that you’ve read and enjoyed – share in simple experiences - As I said, the space does not need to be grand but it must have beautiful lighting. Even one or two table lamps and a simple white candle will do the trick. A dimply-lit room at the end of a long workday will be a simple oasis from the world. - Design in a way that is a nod to yesterday, a hint of today, but not too far in the future. You don’t want the room to be far too modern and stark. Look at the architecture and history of the home for clues. If a color provides happiness, surround yourself with that. - Antiques shops and pieces found while on travels will give your space a sense of your own personal style and will recall happy memories Mrs. Tollman’s musings on personal style: “Keep it simple and tailoring is key. Have your pieces fitted to best compliment your body. Choose a few meaningful accessories, and a nice pair of shoes. This doesn’t mean that you need a huge wardrobe, but find a few timeless pieces that can be held on to for years to come. Chanel heels, an Armani blouse – these will take you through countless seasons”. When asked about one of her favorite jewelry pieces, she mentions something utterly unique. “A broach in the shape of a frog” she says, “I love it because it really lifts the mood of a simple blazer and it’s a piece that provides an opportunity for conversation”. With a hotel group that spans continents; from London to Geneva, Ireland to South Africa and the United States, what began as a vision to create memorable beauty for guests has become a lasting family empire. That’s all I kept thinking, as I first viewed the hydrotherapy area that went on forever. For a moment, I felt sad, knowing no words could do it justice - just one more reason you have to visit yourself. I fell so in love with the clay room and the ice room that I could have stayed there indefinitely if not for the multiple hydrotherapy pools calling my name. Treatments blend the finest modern amenities with the best of ancient practices, and the products center around ingredients important to the Mayan culture. I was treated to the Bacal Massage, an authentic Mayan body treatment using corn, one of the Mayan’s most sacred plants. It uses a detoxifying honey exfoliation and an essential oil massage that utilizes Mayan corncobs for pressure. During my travels, I have had massages utilizing golf balls, bamboo, poultices and more, but the corncobs seem to hold something in them that was unspeakable. I am so thankful to the Westin Playa Bonita in Panama for enlightening me to my love of a pediluvio. Find most anything your spa visit requires from a Russian Banïya to a Kid’s Club. My day of cycling through the arrondissements of Paris had left me in need of a spa visit. Here one can refresh in their Eucalyptus steam room or head up to the roof where a lovely terrace is just off the side of the pool. I found the spa at the St. Pancras Renaissance hotel in London a Subterranean Sanctuary near this throbbing transportation hub. Here though I found something truly spectacular for the weary traveler. A spa on the lower level. Check-in was a calming experience itself with a cup of green tea and a magical mushroom-like growing hand towel. After my check-in, the spa attendant guided me to the changing area, which housed a locker with the most luxurious robe I have ever found. After changing, I flowed toward the relaxation room. This room was so relaxing, I feared I would drift off to sleep before the attendant called my name. Miraculously (even with jetlag & a late night trip through the chunnel via Eurostar), I was still awake when the attendant arrived to lead me down the dim hallway to my treatment room. Within the spa itself is a Victorian-tiled relaxation pool with hydro loungers, which creates a sophisticated and tranquil oasis. Perfect for reviving a traveler is the spa treatment called “Arrive and Revive.” The treatment journey starts with soothing and relieving sore muscles, softening the skin and boosting the circulation. Whooshing Out of Town | By Mark Gallivan

SCAPING THE PIED-À-TERRE on a Friday afternoon for the beach house has never been such a palaver. Not long ago it was perfectly alright to whoosh out of town in the Phantom or Mulsanne. But now sentiment has simply run amuck. Today, more conscious egalitarianism appears better form which leaves one in a bit of a dilemma. How do you still maintain that Kim Jon-un separation from the outside world without feeling you’ve been unceremoniously dumped in coach? Mercifully, ULM is at hand to advise. We’ve picked our four favorite flagship vehicles that do, by and large, what a Royce does without the – are you kidding me - price tag. There’s considerably more expensive versions of the models featured here, but we’re shopping at ground floor here. Three are German and one is British (well, owned by India’s Tata). Right then, best get a move on.
THE BMW 740I | Our first choice is the newest. Only available in long wheel base in the US, the 2016 7 Series starts with the 740i at $81,300 and sports about as much gizmos that an engineer can cram into a luxury barge. For instance, with Gesture Control simply wave your hand in front of the central screen to magically activate functions. It sure sounds great in practice but its application isn’t flawless on the move. Unnecessary, really. The list goes on – for the first time a Mercedes inspired perfume dispenser is available so your 7 smells divine even if your passengers don’t. If super-duper technology is your thing, the new BMW Display Key allows you to park your car remotely while standing outside it. Might be a good conversation starter outside the Four Seasons, that one. What does impress us more though is the extensive use of carbon fibre throughout the car’s structure reducing 190 pounds in weight – now that’s proper engineering. To drive, the big BMW is a more responsive car than a Mercedes S-class but still, after generations of trying, never quite as smooth. Lastly, to the car’s appearance. It may be new, but we still remain divided as to whether it’s somewhat cheesy, chrome laden external fripperies look special enough for the money. Performance $81,300 (base), 3.0 litre, 6-cylinder, 320hp, 0-60mph in 5.4 seconds, Top speed 130mph. Typical owner: Corporate raider. Likes: Tom Ford. First class anything.■

THE AUDI A8 L | Next up, the most left-field choice of them all. A favorite for movie action films like Ronin and the Transporter franchise the A8 has garnered a separate coolness away from the default luxo-barge choices. The D4 Audi A8 is Ingolstadt’s third generation of big luxury sedans and if you’re new to the A8’s charms there’s three things that make this car different – all aluminium construction for lightless, standard Quattro all-wheel drive and the most pleasing interiors this side of Bentley Flying Spur. Entry into the A8 L starts at $81,500 and after a mid-term facelift since its launch in 2009, the big Audi is starting to groan a bit under the 7 series and S-class tech-heavy overload. Coming with Audi’s Quattro four
wheel drive, this is the sedan that keeps on-a-moving when it’s deep and crisp and even. The 2016 A8 handles well, with an agility that trumps the S-class and just the 7 series for handling poise and involvement. It’s a glamorous thing too, being the most athletic looking of the four vehicles features here. A ULM recommended purchase for independent thinkers. Performance $81,500 (base), 3.0 litre, 6-cylinder, 333hp, 0-60mph in 5.5 seconds, Top speed 130mph. Typical owner: Advertising mogul. Studied medicine, dropped out. Likes: Apple. ■
THE RANGE ROVER | It’s likely British engineers Spen King and Gordon Bashsford never envisaged what they were unleashing when they produced the first Range Rover prototype in 1967. Now in 2016 the Range Rover remains the undisputed king of the super-luxury four by fours in the fastest-growing luxury vehicle segment in the world. Mercedes, Porsche, Audi, Jaguar, Bentley, and even Maserati for goodness sake, are trying to topple the big Ranger. Stepping up at $85,940 base it comes in a diesel variant but we’ll stick to the petrol one here. And stepping up is what it’s all about in Range Rover world - the true go-anywhere, classy luxury vehicle. Twelve months ago we would have said it was like
a Bentley in there, but you can’t ford every stream in one of those, now can you? It seem Crewe were listening by launching the Bentley Bentayga SUV. Game over for the Range Rover so? Not exactly, the Bentayga starts at around $232,000. Which is why we adore the Range Rover. From its flawless engineering, subjectively sensible entry price, supreme comfort and English Royal connotations, if you’re swapping the condo for a chalet at weekends this is your vehicle. THE MERCEDES S550 | The Sonderklasse (S-class) is the default luxury sedan that mixes just the right degree of subliminal menace, hidden megalomania and power in one go. Choose a Black one and the world quietly keeps its distance as you waft around. With origins from the Ponton model of 1954, the S has an unbroken lineage from 1972 and has enjoyed a continual embrace from moneyed and influential. The latest S-class broke cover in 2013 unceremoniously booted all the competition outside to the rain. Available with Magic Body Control, Active Body Control and Distronic Plus it drove like nothing out there. It’s smooth, serene and utterly divorced from the road. It’s also painfully dull to hustle offer-

Working with renowned developer Simon Hirsh, Toronto-based international design powerhouse Lori Morris is bringing her vision to life with a twenty-two suite sanctuary in Toronto’s Forest Hill. Set to open its doors in Fall 2018, each suite in 200 Russell Hill will set a new standard for urban living, showcasing sophisticated, functional and stunning interiors featuring signature LMD touches. | By Diana Moss
W
e, at Upscale Living Magazine, asked Lori about this endeavour and about transforming clients’ dreams into reality. What was your vision for 200 Russell Hill? My vision was to design unique spaces that are not just pleasing to the eye, but also functional. The atmosphere we created is luxury hotelinspired living that has the intimacy and attention-to-detail of a private residential space. I went for a “sexy lounge” style, which is very French, sophisticated, and layered with intricate details. To create this feeling, I decided to use the black and white colour palette with accents of black lacquer, metal brass detailing and decoinspired furniture and finishes. Very LMD and very timeless. With this project, I had the freedom to design
a space that brings together traditional and modern elements. Within each suite buyers will be able to choose between a modern and traditional classic kitchen. Both options are stunning and layered with luxurious custom details. What was your inspiration behind 200 Russell Hill? I was inspired by the stunning location in Toronto’s Forest Hill area. Its tranquility was perfect for a French-inspired urban residence. The new 200 Russell Hill will be overlooking the Nordheimer Ravine with a gorgeous unobstructed view that transports you out of the city. This feeling is also transitioned into the suites. Spacious, sophisticated and decoinspired, all units at 200 Russell Hill will set a new standard for urban luxury living.
I love having the freedom to translate the client’s personality into a space and exceed expectations. What about the design of the amenities in the residence? Julie Ballard, Creative Director at the House of LMD and I worked together to design beyond the residences, detailing the stunning amenity spaces. For example, we created a wine lounge, where residents could relax in a private atmosphere and not feel like they are in a condo lobby. The foyer was designed to emphasize an art deco façade with high polished floors and brass detailing, while showing off incredible views of the park. And all these elements transition into the suites. LMD at its best. ■

N THE SELF-BESOTTED AGE of various iProducts, a feast of personal audio gear has brought an embarrassment of headphone riches. Snappy looking but mediocre sounding, Beats by Dre started the trend 8 years ago, and since then the market has seen a steady rise of ever-more beautifully made and sonically rewarding speakers you wear on your head. The latest entry to the field is perhaps the overachiever of the bunch, the exotically named Pryma (pronounced pree-mah). These are essentially supermodel Mensa members, a combination which isn’t really fair to the competition. They have conversation-stopping looks, are wonderful travelling companions, and perform brilliantly. There’s also a kinship to certain Italian sports cars—say the Alfa Romeo—in the sense of being an object of beauty that the user generously offers to onlookers while inside the machine. Others get to ogle the fluid form while you bathe in the sound of the music, or the voice of the V-8 engine in the case of the automobile. In truth, they also share a sense of confinement with many high end coupes: the Pryma’s earcups are designed for attractively normal-sized ears the way the cockpit of an Alfa is built for drivers of average proportions. If you want to know what the Pryma looks like in its usual context, i.e. framing a fabulous face, Beyonce can be seen listening ecstatically through a pair of special edition Carbon Masala Prymas on her “visual album” Lemonade. At $499-$550, the Pryma is unreasonably affordable—just compare the cost of a Bottega Veneta wallet whose only music is ka-ching! In an overhyped, overpriced world, this product is luxury at its most thoughtful. It starts with the packaging, a hard box that opens like a travel valise. Inside, two earpads lie under a layer of foam insulation, the separate headband placed above. The other side of the “valise” contains a drawer that you pull to discover several soft-cloth tied pouches that hold a selection of headphone jack adapters and the cable. Emblematic of the care with which the Pryma was designed, the cable is thin and light to make extended listening sessions more comfortable, but they are substantial where it counts: the insides are 99.99% oxygen-free copper, which makes them superb sound conductors of sound. How do they sound? I’m happy to report this is the rare triple-A product that aces packaging, design and build, and musical performance. Sonus Faber built the drivers to emulate their universally lauded speakers. The response is not flat, but “curated” to emphasize frequencies south of 100 hertz. They are midrange and lower-midrange rich, but transient attack is sharp, microdetail is in abundance, and treble is liquid. All in all, the Pryma is in a class of its own. Fashionistas love them, but so do audiophiles. WOM and Sonus Faber has given music lovers a chance for total beauty, from the exquisite outside to the mellifluous inside. Warmly recommended. or the very first time my eyes laid on this beautiful terrain of mountainous hill tops surrounded by the most clear and turquoise water I’ve ever seen, I knew I was in for a fabulous treat. Mustique, a small remotely private island was once the secret place for pirates to hide their ships and treasures, and later, became the place for sugar plantations, however, the plantations were abandoned and the island was left uninhibited. In 1958, Colin Tennant, Scotland’s third Baron Glenconner, purchased the undeveloped island for $67,000; and in 1960, a 10-acre plot of land was given to Princess Margaret, Queen Elizabeth’s sister, as a generous gift on her wedding day by Lord Glenconner himself; soon thereafter, Mustique became the social escapades of royalty, celebrities and jet-setters alike. As I exited the twin engine aircraft on the island’s small grass-lined airstrip, I was excited to see what laid ahead. Climbing into a golf cart, the only means of guest transportation, we were taken to the hilltop to what used to be David Bowie’s home, now a rental villa overlooking stunning views of Britannia Bay. As we were pulling into the villa, I couldn’t help but noticed the beautiful and meticulous landscape

surrounding the property, lovely Koi fish ponds were embracing the entrance to this mystical oasis. We were each taken to our rooms and shortly thereafter our luggage was delivered by their diligent and friendly staff. I couldn’t believe my eyes, I was definitely in paradise! After unpacking and unwinding for a few minutes, we were taken for a tour of Mandalay Estate, once again, I felt I was transported to another part of the world. Throughout the home, one can appreciate many authentic Balinese and Japanese styles, bamboo vaulted ceilings, alfresco dining, colorful living room, carved columns, games & study room, waterfalls, several garden decks and a card room decorated with mussel shells, and even a performance stage for added entertainment. It seemed everywhere you look was extraordinary. That night, we all met for cocktails at Tea Deck and had a delicious meal, one of many culinary delights I experienced throughout my stay. For the next six days, we had breakfast at leisure, plates full of mangos, papayas and many other delicious Caribbean fruits; if we wanted our 54 Upscale Living Magazine |

eggs poached, we got them; Fried? But of Course! Perhaps today I was craving quiche? Whatever we wanted we got it, all made and prepared by our own private Chef who created the most delicious meals, and served graciously by our friendly butler who always displayed pleasant manners, and a friendly smile. I remember hearing the ever so familiar sound of a drum, still lingering in the horizon today, announcing our meal was served; royalty treatment throughout. As we were eager to explore the island, our guide was gracious to take us to the many beautiful beaches throughout, while enjoying the uniqueness that each of these spot offered. “Lagoon beach and Endeavour beach were fantastic, however, my favorite was Macaroni Beach, famous and preferred by many for its calm waters and seclusion. It is the ideal place for swimmers, for those who enjoy snorkeling and diving since there is a reef about a quarter of a mile offshore and of course for sun lovers like myself “Imagine laying out capturing the rays of the hot sun, turquoise waters and white sand, while enjoying a glass

of chilled champagne, “Will you pinch me? I asked one of my traveling friends “I want to make sure I am not just dreaming this”. From having fabulous lunches on the beach, to cocktail nights and lobster grilled barbecues, our days were filled with excitement and new experiences, then came the time to visit the Cotton House, yet another pleasant surprise. It was on a Tuesday night, all dressed up and heading to this establishment, recognized as one of the most exclusive and romantic inns of the Caribbean, we entered the Great Room for the weekly cocktail party, a tradition attended by many villa owners and resort guests. Mingling with the guests, we met a few interesting people who shared with us the on-going feeling of peace and tranquility that this island brings to their lives every time they visit. As all things must come to an end, at least for now, we packed our bags heading back to the airport, before we said our “Goodbyes” and “See you soon” to each of our traveler friends. So here it is to you, Mustique Island, with your beautiful majestic palm trees, white sandy
beaches, friendly people and the most beautiful turquoise waters, a place that I will surely recommend for those who seek simple sophistication, tranquility and mystic outcomes. uilt up with anticipation, I prepared my suitcases quite a few days before my departure to London. It has been a while since my last visit to England, and I had visions of rolling hills, great shopping and beautiful architecture in my mind. My journey began at the airport, where I was transported to The Milestone Hotel in London overlooking the beautiful Kensington Palace and Gardens. Upon my arrival I was welcomed by Andrea, concierge of the hotel, and Andrew Pike, the General Manager, who greeted me with such sincerity and made me feel right at home. Soon thereafter, my luggage was taken to my room, and after a welcome glass of bubblies, I retired to unpack and freshen up. The Harlequin Suite was going to be my home for the next few days, a bold yet tastefully designed suite inspired by 15th century pantomime, decorated in black and white color scheme, plush carpets throughout, and unique furnishings including two gorgeous French diamond-quartered bedside tables and a gold bed board with a wall-to-wall mirror behind the bed. A nicely equally decorated hall led me to a spacious and magnificent black tiled marble bathroom with fresh flowers, Penhaligon’s toiletries, plush bathrobe and slippers, and soaps from world famous perfumeries. The magic just began! I told myself. After a few moments of taking in the beauty which surrounded me, I headed to the lobby to meet with our other travel friends for a nice meal at the award-winning Cheneston’s restaurant. showcasing fine traditional décor, rich mahogany furniture and warm wood paneling, a room that conveyed character and style. For my main meal, I ordered the Gressingham Duck Breast with fondant potatoes, sautéed spring vegetables, rhubarb and green apple puree and balsamic jus, and for dessert, the Milestone Rice Pudding which consisted of sweetened vanilla rice folded into Chantilly cream with salted caramel and candied nuts, absolutely to die for! Everyone was raving how superb their meal was, and the staff was always within a short distance making sure we had what was needed. A few minutes later, we all headed to Stables Bar where we shared a night cap and reflected on the day. My first night in London was fabulous! And I couldn’t wait to see what surprises awaits us all. For the next few days, I truly enjoyed British hospitality. I visited Tate Modern, Britain’s modern & contemporary art museum located on the banks of the Thames River, after exploring and admiring the beautiful artwork of famous artists, we took a 6-minute walk to The Swan Bar & Restaurant for lunch, another wonderful culinary experience. I ordered a pair of cider battered oysters as a starter, and for the main course, the Cornish cod, tomatoes & spring onion cassoulet with parsley crumb and a side of heritage potatoes, a tasty and fulfilling meal I must say. “Now where to?” I asked, “Off to see The View from the Shard”, yelled out one of our traveling friends, London’s highest building where you can see unparalleled 360-degree views for up to 40 miles.

Next day was a guided tour through the beautiful Kensington Gardens, taking in Kensington Palace where I enjoyed viewing the Fashion Rules exhibit which explored how three royal women, HM Queen Elizabeth II, Princess Margaret and Diana, Princess of Wales navigated the fashion “rules” defined by their royal duties in unique style. After appreciating the exhibit, I headed to eclectic Notting Hill and into Kensington High Streets for some shopping, and of course, visiting Harrod’s was on the top of my list. Again, the excitement did not end with the shopping, but later that evening, we attended UK’s Greatest Classical Spectacular Show at the Royal Albert Hall, only a 10-minute walk away from The Milestone Hotel. What an astonishing show with thundering cannons and indoor fireworks! Totally spectacular! While at The Milestone Hotel, I had the opportunity to meet with Mrs. Tollman in the conservatory room for afternoon tea. She truly is the epitome of grace. Elegantly dressed and radiating an aura of simple sophistication, I approached Mrs. Tollman and happily began conversing with her. She was as eager to learn about me as I was to learn about the passion that drove this wonderful woman to the success of The Red Carnation Hotels. She told me how it all began, the love affair, becoming a young bride with little life experience and taking the responsibility in the kitchen while learning to fuse the best of local cuisine at their very first hotel, “The Nugget”. her voice while sharing with me her story, amazing and moving. After enjoying London to the fullest, it was time to head to Dorset’s charming Summer Lodge Country House Hotel & Spa in the glorious English countryside, also part of The Red Carnation Hotel Collectionand esteemed member of Relais & Chateaux. This luxe Georgian country house was magnificent! The property sits in the picturesque village of Evershot, in the heart of Dorset. Charles Lotter, the General Manager, welcomed us, and graciously took us for a tour of this beautiful hotel. My room was beautifully decorated with blue & white hues with simple but elegant décor. As I walked to the back of my room, it displayed a beautiful glass conservatory with a private walled garden, an appealing blend of originality, airy grandeur and warm. All rooms are individually styled and most feature antique furniture and gas fireplaces and every single suite comes with en-suite bathrooms, flat-screen TVs, DVD players and complimentary Wi-Fi, as well as tea and coffee making equipment, free bottled water, fruit and biscuits, I was more than pleased with the accommodations. Today, dinner was going to take place at the Summer Lodge Country House Restaurant, and prepared by award winning Executive Chef, Steve Titman, while wines were being served by Eric Zweibel, the world’s No. 1 Sommelier. Our meal consisted of delicious tasting menu of Roast Breast and Confit Leg of Quail, pickled red cabbage and Jerusalem Artichoke, others enjoyed the Cornish Sole with Octopus and Serrano Ham, and the list goes on. was excellent! After dinner, we headed to The Whisky Bar for a nightcap, a warm and cozy setting in which to relax and enjoy while learning about the impressive choices of their collection of over 300 of the finest whiskies from around the world, 1400 wines and 100 brandies. Next day was an early rise, and after a nice and enjoyable breakfast, we headed to explore our surroundings. Sherborne in Northern Dorset, is a beautiful and small market town which combines history and culture. Sherborne Abbey is one of only 18 churches awarded 5-stars in Simon Jenkins’ England’s Thousand Best Churches. He writes “I would pit Sherborne’s roof against any contemporary work of the Italian Renaissance” We also drove by Cerne Abbas Giant, a 15-minute drive from Summer Lodge, a huge chalk carving of a naked male giant cutting a striking figure among the hills of Dorset, its identity is unknown, however, it certainly spices up a country stroll! Also visited Max Gate, Hardy’s home of his own design and his cottage birthplace hidden in woodland nearby at Higher Bockhampton. After a long and fascinating day, we headed back to Summer Lodge Country House for more delicious meals and remarkable cocktails, but not before The Spa for a welcomed 80-minute massage. The Spa at the Summer Lodge Country House Hotel creates the ultimate relaxation experience in which you can rejuvenate body and mind; a sanctuary from the pressures of everyday living. Next day I headed to explore Lyme Regis, about a 45-minute drive from Evershot, and situated at the heart of the Jurassic Coast, the perfect place to visit if you love geology and history, or just taking in the spectacular coastal scenery. I walked around admiring its beautiful sites; perfect spot for coffee, lunch, afternoon tea or dinner. I relaxed at the beach soaking up the bright and sunny day. It was spectacular! The remaining of my stay consisted of visiting the surroundings, special dinner at The Acorn Inn, which served a range of exceptional seasonal dishes, enjoying getting together with friends at the Whisky Bar and learning all about the famous selection of 27 Artisan Cheese from the South West with the exception of the Stilton. As all good things have to come to an end, I packed my things and was ready for my transfer to the airport and back to the States, however, I will have to say, without a doubt, that experiencing The Red Carnation Hotels “The Milestone Hotel” and “Summer Lodge Country House Hotel” turned out to be an exuberant and gratifying experience. The brand itself has it all; from exquisite décor and furnishings, sumptuous meals, and an ever-welcoming and accommodating staff who deliver the most professional and memorable experiences during my stay. itness-inclined travellers have endless classes and gyms to use. There are Body fit classes, cross training and Muay Thai not to mention Thai boxing. Easier venues all round are the basic commodities of the beach and sea. Climbers can enjoy Krabi’s coastal limestone formations, and just outside Chiang Mai, the lesser-known crag called Crazy Horse Buttress offers climbing routes for beginners and pros. But spas are more and more catering to couples as the male gender learns at last to benefit from the experience. I inspected and experienced four of the top hotel spas in Thailand, based in and around the island of Phuket. Here are my findings.

INDIGO PEARL The ‘Coqoon Spa’, set in a wonderful ‘bird nest’ adapted its treatment to suit my jetlagged needs. Not the proposed manicures or pedicures for me but lots of neck and shoulder work! Not to mention the soothing pungent choice of oils such as eucalyptus, peppermint, lemongrass, sesame, coconut and bergamot orange.

KEEMALA I had a facial in one of the eight ‘mala’, massage rooms. My face was first steamed to open the pores, then cleansed, then steamed, then cleansed again with lotions to stimulate the blood vessels, bringing me out, or so I felt, in a more youthful glow. And why not! How odd that it’s a part of the body so often under pampered.

SAROJIN The ‘Pathways Spa’ is positioned close to the beach in order for the lapping of the Andaman Sea and bird songs to be incorporated into the experience. Pathways floats over the central energy lay line of the resort and has been lovingly created by the owners Andrew and Kate Kemp to look through a coconut grove and over and beyond to the Andaman Sea. You get there by a discrete wooden walkway and the Spa forms a key part of The Sarojin’s wellness experience. There are four open-air treatment pavilions (two doubles and two singles). There are rain showers, in keeping with the philosophy of the owners’ wish to embrace the natural surroundings. There are also couples’ baths, as well as an air conditioned facial treatment room, and an open air post spa relaxation area.

AMANPURI This spa is wonderfully located in a secluded coconut grove complete with water features and outside pavilions (‘salas’) comprising aromatic varnished teak, for yoga, meditation and pilates. The vegetation and bird-life clings and sings in an attractive fashion beside the delightful features and therapy rooms. It’s a hillside retreat that uses its own specially prepared, pure natural products. It is dedicated to nourishing in unison the body and soul. I spent a highly beneficial hour here.

RED Steakhouse Elegant Upscale Dining

ooking for a good Steakhouse restaurant in Miami Beach is always a treat and an exciting adventure as there are plenty of them to choose from, however, I was looking for the crème-de-la-crème, a Steakhouse that was going to meet and please my taste buds. RED, The Steakhouse, located in Washington Street, boasts stunningly chic and smart décor, and a bar offering a selection of over 500 wines and handmade signature cocktails. Soon upon our arrival, we were pleasantly lead to our table by a courteously host. As champagne is my drink of choice, I ordered a flute of the bubbles and slowly sipped on it while looking through the menu. Choices and more choices! Everything looked superb, and although I wanted to taste the entire menu, I settled for the Burratta and Heirloom Tomato salad with drizzling rich and sweet balsamic vinegar, one of the finest I’ve ever tasted! If that was my appetizer, I couldn’t wait until the meal! What’s next? As I was longing for steak, I ordered the bone-in New York strip minus the bone, just perfectly seared, thoughtfully seasoned and pleasantly tender; my friend chose the Alaskan King Crab Cake, which had the biggest chunks of crab I’ve ever seen in this type of dish (this item is only available during the short fresh king crab season, during which they fly it directly from Alaska). Our side dishes consisted of lobster mac and cheese, which is made with not one, but six different types of cheese! the Risotto Du Jour, Truffle Whipped potatoes and green beans with pancetta, pepper flakes & pine nuts. Everything was delicious! We were so happy with the choices we made, we requested if the Chef could come by our table as we wanted to congratulate him for these lovely meals. Soon enough, Co-owner/Executive Chef Peter Vauthy came to our table and shook our hands; after a few moments of conversing, we learned his passion for cooking was instilled in him at a very young age, having his first cookbook when he was just 4 years old. We also learned that Chef Vauthy brings only the freshest products to craft his menus and features only the finest Certified Angus Beef Prime on and off the bone, which one can appreciate when tasting his remarkable plates. I didn’t think I was going to have any room left for dessert, however, I couldn’t resist after Chef Vauthy recommended we try the molten chocolate cake and the crème brulee trio with frozen Meyer lemon soufflé, however, the hot, puffy doughnut dusted with powdered sugar and served with caramel, chocolate and strawberry dipping sauces was what made for a decadent ending to our meal. As we headed out of the restaurant, we couldn’t help but talk about this wonderful experience, and how much we are looking forward to our next visit to this splendid restaurant. Strange as it sounds, the sweet wine that we know as Port owes its popularity to the fact that the French and the British were squabbling in the 18th century, and the British blocked the French harbors to shipping which shut off french wine exports like a tap. The British turned to Portugal for its requirement. The Portuguese began fortifying their wines with local brandy to raise the alcohol level so that the wine would not spoil as it was shipped in barrels to be bottled on site. This brandy stopped the fermentation leaving a higher sugar level than traditional wines, a sweeter taste and a higher alcohol level. Since it was shipped from the Douro River city of Oporto it became known as Port Wine. There are three main types of port wine: White, Ruby and Tawny. White Ports are meant to be drunk young, although some of it does get aged mostly in stainless steel barrels. Ruby Port is wooden barrel aged, also intended to be drunk while young and tends to have a ruby color from the barrels, and fruitier flavor. Tawny Ports are aged in smaller barrels and have a tawny color and a nutty flavor. Just because anything this rarefied could not possibly be so simple, there are dozens of sub categories to each of these types including Vinho Verde, Vintage and LBV (Late Bottled Vintage). While on the Viking Douro River cruise we visited a winery almost every day and sampled offerings from Burmester, Sanderman, Taylors and Croft as well as many blends. There is a very wide variety, really something for every palate. In addition, the portugese use these wines for desserts, as well as mixing lemon and seltzer with some which I found wonderful on a hot day. ■
