With Taking Taste Further, we’re looking beyond the kitchen and starting at the true source – from the soils and climates that nourish your fruits and vegetables to the diet and lifestyle of the animals that produce your meats and dairy.

Food production often prioritizes volume over quality, nutrition and taste. And this has consequences.

For instance, increasing tomato yields has been shown to decrease the antioxidants responsible for flavour and aroma. Tomatoes grown outdoors likewise have twice as much vitamin C as ones grown in greenhouses.

Similarly, high-quality soil produces berries that are more nutritious and stay fresh longer than overfarmed soil. Fruits and vegetables are living organisms that continue developing after they’ve been harvested. While most people believe that the supermarket’s 'fresh produce' is less than four days old, it’s usually closer to nine days by the time it hits the shelf.

This means that most vegetables have lost up to 45% of their nutritional value by the time they’re brought home. Compare that with locally-sourced produce, which is tastier, more nutritious and keeps its natural texture. This is because local produce is grown seasonally, meaning every fruit and

vegetable tastes exactly how nature intended. Local produce also isn’t picked prematurely to survive long shipments or storage periods that decrease flavour and freshness. By sourcing local and seasonal produce, you can enjoy every ingredient at its peak and discover new levels of deliciousness in your vegetables.

Once we understand about sourcing food, we can develop a greater appreciation of how to bring flavour to life. To do this, we must look beyond the kitchen and to the actual source of our food – the soil that nurtures our lettuce or the rearing of the animals that provide our meat and dairy products.

Heat creates taste by breaking down large molecules into smaller ones, releasing the flavours locked inside them. For instance, a browned steak tastes delicious because of the reaction between amino acids and sugars that occurs at 130°C. Too much heat causes these molecules to escape, destroying taste and texture. With vegetables, the key is to apply enough heat to burst the cell walls that contain flavour without letting the goodness evaporate into the air. When frying and braising, precise heat control is essential. Even the slightest temperature difference can determine whether a dish is a success or falls short of the mark.

That’s why different heating techniques can create significantly different tastes and textures.

Precision offered by induction heat can make all the difference when every degree and every second determine how heat is distributed through your dish.

Understanding how heat moves through meat is essential to great cooking. With steak, for example, heat excites the molecules on the outside, and is then transferred to the interior as the meat seeks equilibrium. This means your steak is actually cooking itself rather than being cooked by the heat surrounding it!

And as your steak cooks, its protein fibres contract and release moisture, nutrients and flavour. Her keen intellect and determination to succeed are the engines driving her incredible personal development and career.

She started her career at 16 and a half in consultancy. She got the opportunity to travel to Italy in her early twenties where she lived for two years. During her time there, she built relationships and contacts which she then leveraged upon her return to build a fashion business. She opened her own boutiques in Johannesburg

Today Chef Nti has grown into a larger-than-life media personality.

She hosts her own cooking show on eTV, The Perfect Ace. She also runs the Taste Kitchen in Maboneng Precinct which creates bespoke culinary experiences. In addition to that, she hosts pop-up events where she tells the many untold stories of South African cuisine. She combines the unique flavours that can only be found in South African food, with cooking techniques from other cultures to craft exceptional culinary experiences, bringing it all to life with AEG technology.
